Spicy Caprese Pasta

This easy penne pasta dish is tossed with juicy cherry tomatoes, fragrant garlic, fresh basil, and melty mozzarella for the perfect combination of light and comforting. Made with Carbe Diem penne, it's a flavorful, lower-carb option that comes together in just 20 minutes!

Ingredients

  • 12 oz your favorite pasta - I used Carbe Diem cooked according to package and drained.
  • ¼ cup Olive Oil divided
  • 5 cloves garlic minced
  • ½ tbsp fresh basil
  • 10 oz cherry tomatoes
  • 8 oz mozzarella cheese, cubed
  • 1-2 tsp Red Pepper flakes to taste
  • Optional- fresh basil sliced

Instructions

  • Heat drizzle of olive oil in a saute pan over medium-high heat.
  • Add in the garlic and cherry tomatoes.
  • Saute for about 7 minutes or until the tomatoes are soft and start to split.
  • Remove from heat and add in the cooked pasta, fresh basil cubed mozzarella, and red pepper flakes.
  • Add in the other 2 tablespoons of olive oil (or more to your liking) and gently stir to combine.
  • Serve warm with fresh basil if desired.
  • Enjoy!
