Alright, now let’s discover Oregon wine shall we?

Nestled in Oregon’s Willamette Valley, a paradise for Pinot Noir enthusiasts and a coveted destination for wine connoisseurs, this region beckons with its unique climate. Rolling hills cradle a multitude of vineyards and diverse grape varieties, captivating wine aficionados nationwide.

Proximity proves essential for exploring the charms of Willamette Valley, and its close proximity to Portland makes it easily accessible. Whether you’re a local seeking a brief escape or a visitor in search of a wine-filled adventure, Portland serves as an ideal hub, offering more than just exceptional wine.

A short, scenic drive southwest of Portland reveals the heart of Willamette Valley, once dominated by farmland but now flourishing with vineyards and tasting rooms. Over the past three decades, the wine industry has transformed the landscape, replacing struggling farms with vibrant vineyards.

Oregon Wine

At the forefront of Oregon’s wine scene is the renowned Pinot Noir variety, propelled to fame by the movie “Sideways.” Flourishing in Willamette Valley’s similar latitude and climate to Burgundy, France, where the grape originates, Pinot Noir thrives in this picturesque region.

Effortlessly plan your wine-tasting journey with the online tool on OregonWine.org, allowing you to search wineries based on location and tasting room availability.

During the warmer months, Willamette Valley springs to life with a virtual wine celebration every weekend. Various wine-related events, competitions, and tastings hosted by numerous tasting rooms create a vibrant summer scene. For the adventurous, consider joining a bike tour – just remember to use spittoons during tastings to maintain your biking prowess.

Accommodations in Oregon wine country are abundant, with many wineries hosting charming bed and breakfasts. Imagine waking up surrounded by vineyards, savoring a delicious breakfast while soaking in the fragrant scenery. YES PLEASE!

Beyond the delightful tastings and breathtaking landscapes, partake in unique experiences like grape stomps during the wine-making process. Winery tours provide insights into the production process, showcasing how factors such as grape upbringing temperature and wine storage conditions contribute to diverse flavors.

Whether you’re a Portland local or a visitor planning a trip, ensure you schedule a weekend getaway during the sun-kissed days of spring and summer to explore the wonders of Willamette Valley and Oregon Wine Country.

The history of winemaking in Oregon is as rich as the state itself, producing some of the finest wines in the country. No trip to Oregon is complete without a visit to at least one of the picturesque wineries in the region!

How To Make a Mini Blueberry Galette

If you are looking for an easy-to-make dessert that is filled with your favorite in-season fruits, a galette is it! This blueberry galette recipe only has 7 ingredients and is ready in about 30 minutes.

Blueberry Galette

A few months ago…for fall, I made the most beautiful Apple and Pear Galette for Stemilt. I fell in love with how easy galettes were to make and the fact that since you only use one pie crust, you can save on the calories…Or make two 😉

Mini Blueberry Galette

What is a galette?

A galette is a French pastry. In general, a galette is a flat, round pastry that is typically made with a simple crust. The crust is usually folded up around a sweet or savory filling, often made with fruit or vegetables.

Sweet galettes are often filled with fruit, such as apples, pears, or berries, and are typically served as a dessert. Savory galettes, on the other hand, can be filled with a wide range of ingredients, such as vegetables, cheese, ham, or sausage, and are often served as a main course.

How do you make a galette?

Making Blueberry Galette

To make a galette, you simply take your pie crust and put your favorite fruits into the center and leave a little room around the edge so you can fold them up.

Tasty Blueberry Galette

Folding up the edges in a simple pattern gives your galette a fancy look after it’s baked.

SO easy!

Now that Florida blueberries are coming into season…one of my favorite seasons 😉 I decided that a Blueberry Galette was in order. And these mini ones are just too cute…I mean who can resist an individually sized dessert stuffed with in-season blueberries? Not me!

Blueberry Galette

When are Florida blueberries in-season?

Florida blueberry season typically runs from late March to early May, with peak harvest time in April. However, the exact timing of the season can vary depending on weather conditions and other factors. It’s always a good idea to check with local farmers or markets for the most up-to-date information on when Florida blueberries will be available. Personally, I look to Noble for my updates on the New Crop Florida blueberries 🙂

Blueberries are good in so many recipes! I have a bunch here on the blog, so if you went blueberry picking and ended up with more than you think you can use, here are a few of my favorite blueberry recipes:

And, you can freeze blueberries! It’s super easy and a fantastic way to make sure you always have your favorite blueberries on hand for baking and snacking.

Easy Blueberry Galette

Not only do blueberries taste great, but they are really good for us! They aren’t called the king of antioxidants for nothing!

Easy Mini Blueberry Galette

Blueberries are considered a superfood because they are packed with nutrients and have been linked to a range of health benefits.

  1. Rich in antioxidants: Blueberries are high in antioxidants, which help protect the body against damage from harmful molecules known as free radicals. This can reduce the risk of chronic diseases such as heart disease, cancer, and Alzheimer’s disease.
  2. May improve heart health: The flavonoids in blueberries have been shown to improve heart health by reducing blood pressure and improving blood flow.
  3. May help control blood sugar levels: Blueberries are low in calories and high in fiber, which can help regulate blood sugar levels and improve insulin sensitivity.
  4. May have anti-inflammatory effects: Blueberries contain compounds that have anti-inflammatory effects, which can reduce the risk of chronic diseases such as arthritis and heart disease.

Overall, blueberries are a delicious and nutritious addition to any diet.

Ready to get baking? Let’s make some mini blueberry galettes, shall we?! Oh, by the way, if you don’t want to make these mini…you can make it as a big one, just don’t cut the crust into circles…the rest of the directions would be the same!

Things High School Seniors Should Know – And Their Parents!

This post may contain affiliate links, please read our disclosure policy.

Learn from a mom that’s there RIGHT NOW! Here are some things your high school senior needs to be doing, and your high school junior should be preparing for. There is also a Florida Prepaid College Plans Promo Code, so don’t miss this opportunity to save! This post is sponsored by Florida Prepaid College Plans, through my role as a Believer Blogger. All thoughts are my own.

Things High School Seniors Should Know

Things High School Seniors Should Know – And Their Parents!

In just a few months my baby boy will graduate high school and head off to college. I honestly don’t have any idea where the time went, and I will happily admit that every cliche you heard like “Don’t blink, it goes so fast” or “Before you know it they will be off to college” is 100% true.

And I did everything I possibly could to hold off the inevitable. While my friends were having their kids think about what they were majoring in, what colleges they wanted to go to, and having them look at the requirements for the Common App (details on what that is below!) I was holding onto those last few high school days by letting him still be 17 and taking as many vacations as possible so he could (read so that I COULD) let him still be a “kid.” Because adulthood is LONG, because he will work for the rest of his life, because he have plenty of deadlines and adult-things to do for the rest of his life…why rush it?!

Would I change any of it? Absolutely not. Memories were made. But, I did learn a few things…a few things that while I will still let my daughter enjoy every last second of her “childhood” before she gets ready for college, I will start planting a few seeds to make our jump into “Holy crap we gotta do this, this and this” a little bit easier.

That being said, I thought I would share the things that we crammed in that definitely would have been easier if I wasn’t avoiding the fact that my baby boy was no longer a baby.

I also included details on why these steps are important and how to be ready for senior year of high school and beyond.

Things High School Juniors Should Know

Things we didn’t do until fall of senior year of high school, but you should do before:

Discuss potential college majors. While we always knew what his interests were, we didn’t really research what a major could be.

Look at the colleges that may be of interest and see if they have those majors. Steven is interested in either Mechanical Engineering or Architecture, which narrowed down which colleges he should apply to.

Filling out the Common App. You can start doing this July before senior year of high school.

College tours. Where my kids go to school, they get several excused absences for visiting colleges, get out there! Honestly, the colleges that my husband and I loved, the kids weren’t a fan of. *Keep your opinions of colleges and the campuses general, let your kids make their own decisions.

Important Things High School Seniors Should Know

Things I did do that helped tremendously:

Went to the informational session that our high school had about things to do and college application deadlines.

Opened a Florida 529 Prepaid Plan. Open Enrollment is ends April 30th.

Had Steven apply at his favorite colleges before the application deadline. Don’t wait until last minute.

Take the SAT/ACT as many times as they want and encourage study sessions.

Apply for financial aid. Many students and their families will need financial assistance to pay for college. High school seniors should research the various options for financial aid, such as scholarships, grants, and student loans, and complete the Free Application for Federal Student Aid (FAFSA). Are you in Florida? You must apply for the Bright Futures scholarship as well.

Found a photographer that would take senior pictures that will forever be in our hearts. They may cost more, but they will go the extra mile. I cry every time I look at his pictures…they are soooooo him.

Things Parents of High School Seniors Should Know

Things to consider:

Attend college fairs and events. High school seniors should attend college fairs and events in their area to learn more about the colleges they are interested in and meet with admissions representatives.

Florida Prepaid College Plans

Things we are doing now:

Preparing for dorm life. If your child will be living in a dorm, they should start thinking about what they need to bring and start shopping for the necessary items.

Talking about college regularly. What friends got accepted where, are there any schools we should revisit, what dorms do you want to stay in, will you bring a car, will you work. Make this transition a part of regular conversation so it’s not something “scary”, but exciting and “normal.”

Florida Prepaid College Plans Promo Code

Why visiting colleges is important:

Get a feel for the campus culture. Visiting a college campus can give your child a sense of the atmosphere, the student body, and the overall culture of the college. This can help them determine if it is a good fit. Remember to let your child make their own opinions, the one we liked best was not one Steven liked!

Learn about academic programs. You can attend information sessions or meet with professors and academic advisors to learn about the college’s academic programs and what courses are offered in your area of interest. One college we visited (and loved the campus!) didn’t offer his potential major.

Experience campus life. Visiting a college allows you to experience what life is like on campus, such as the availability of dining options, recreational activities, and student housing.

Get a better understanding of the location. It is important to know what is around the campus and what kind of community the college is located in. Are there convenient stores, restaurants, or shopping centers nearby? How is the public transportation system?

Evaluate the college’s resources and facilities. You can tour the campus to see the classrooms, libraries, computer labs, and other facilities that you will use as a student.

Meet with admissions representatives. College visits often include meetings with admissions representatives, who can answer your questions and provide more information about the college and its programs.

Visiting colleges is an important way for high school students to gather information and make informed decisions about their future. It can also help you narrow down your list of colleges and provide you with a better understanding of what to expect when you attend college.

Florida 529 Prepaid College Plans Promo Code

What is the Common App?

Oh, let me tell you….We decided that we would have a party when Steven completed the Common App! It is something that you have to set aside time for on a regular basis. There are questions after questions, essays (yes more than one) and then there’s additional things you have to do for specific colleges. It’s a LOT. Don’t rush it and do a little at a time.

The Common Application (commonly referred to as the “Common App”) is an online college application platform that allows high school seniors to apply to multiple colleges and universities with one application. It was created to simplify the college application process and make it easier for students to apply to multiple colleges with a single form.

Here’s how it works: High school seniors create a single profile on the Common App website, which includes their personal information, extracurricular activities, test scores, and other relevant information. They then use this profile to apply to any of the more than 900 colleges and universities that accept the Common App. This eliminates the need to fill out separate applications for each college, saving time and reducing the stress of the college application process.

The Common App also has a number of other features designed to make the college application process easier, such as the ability to request transcripts and letters of recommendation, to upload essays and other documents, and to track the status of your applications.

Overall, the Common App is a valuable resource for high school seniors who are applying to college. By streamlining the application process, it makes it easier for students to apply to multiple colleges and universities with one form, reducing the time and stress of the college application process.

Things High School Seniors Should Do

Why saving for college is important:

It’s never too early (or too late) to start saving for college, as the cost of higher education can add up quickly.

Start as early as possible. If you’re a new parent, starting to save for college as soon as possible can help you stay ahead of the game. We purchased a Prepaid Plan for Steven when he was just 6 months old and one for Sadie when she was 5. Both Prepaid Plans have been paid off for years and are ready for use!

Set a savings goal. Determine how much you want to save and create a plan to reach your goal. This can help you prioritize your savings and make it easier to stick to your plan. Florida Prepaid has college plans made for you, giving you the opportunity to save in a way that’s best for you. Plans start as low as $45/month.

When you are ready and have about 15 minutes, you can get started with Florida Prepaid here. You’ll be glad you did. I promise. Still have questions about Florida 529 Prepaid College Plans? Be sure to check out these Frequently Asked Questions.

How To Pair Wine With Charcuterie

This post may contain affiliate links, please read our disclosure policy.

Looking for the perfect wines to serve with your perfect charcuterie board? Here is how to pair wine with charcuterie, along with tips for building the perfect charcuterie board. While this post is sponsored by Noble Citrus, my love for charcuterie and fantastic wine is my own.

Pairing wine with tangerines

There’s just something special about putting some of your favorite foods on a board. So simple, right? But oh so perfect! The best part about making a charcuterie board is that you can put just about whatever you want on it; from fresh fruit, vegetables, meats, cheeses, chocolates, seriously, the sky is the limit! And, of course, the perfect beverage to go with your charcuterie board is wine. Let’s be honest, wine is the perfect accompaniment to most meals and snacks in my opinion 😉

Charcuterie boards have become a staple at gatherings and events, providing a variety of delicious snacks and treats to mingle over while sipping on your favorite wines. Not only are snack boards visually appealing, but they offer a variety of flavors and textures that make them the perfect pairing with wine. Whether you’re hosting a small get-together or a large party, a charcuterie board is a great way to add some sophistication and amazing snacks to your event.

how to Pair wine with tangerines

How to make a charcuterie board

Making a charcuterie board is simple and can be done with just a few ingredients. Start by selecting a variety of meats, cheeses, crackers, fruits, and nuts. Arrange them on a wooden board or platter in an attractive manner. Make sure to include a variety of textures and flavors, such as soft and creamy cheeses, crunchy crackers, and juicy fruits. You can add some greenery, such as basil or rosemary, to the board to add color and texture. Finally, arrange the items in an attractive and visually pleasing manner, leaving space between each item so they are easily accessible.

How To Pair Wine With Charcuterie

For this one, I arranged the fresh fruit (Juicy Crunch tangerines, Florida strawberries, and blueberries) to make a flower-type shape, it was super simple and just a matter of arranging them in a circle. You can watch me assemble it here on Instagram. After the fresh fruit was laid out, I added in the meats, cheeses, crackers, olives and chocolates. There was actually a pre-made charcuterie kit in the deli section at my local grocer that was on sale, so I grabbed that and just arranged it on my board in the way I thought was prettiest!

How To Pair Wine With Charcuterie boards

How to pair with charcuterie

Wine and charcuterie boards are a match made in heaven. When you have a variety of options on your charcuterie board, it can be hard to decide which wine to pair with your charcuterie board. Since the beautiful fresh fruit are the star of my snack board, I served Charles Krug Limited Release Chardonnay and Charles Krug Sauvignon Blanc.

I love Sauvignon Blanc, and I especially love it paired with this charcuterie board because the light to medium-bodied wine displays vibrant, finely balanced acidity with notes of lime and grapefruit on the nose and flavors of citrus and passionfruit on the palate. The wine was cold fermented slowly in stainless steel tanks to further its wonderfully aromatic bouquet and delicate flavor profile. Making it perfect to sip on while snacking on the tangerines and nibbling on the mild cheeses.

The Limited Release Chardonnay is crafted from pristine fruit, night-picked by hand, whole-cluster pressed, and aged in French oak. It displays a bright bouquet of lime and citrus blossom. Sur lies aging adds structure, a toasty creaminess and hints of minerality married with peach, lime and citrus notes preceding a long supple finish.

Best Wine With Charcuterie boards

When selecting wine to pair with your board, consider the flavors and textures of the meats, cheeses, and accompaniments. A good rule of thumb is to pair wine with the strongest flavor on the board. For example, a bold red wine, such as a Cabernet Sauvignon, would pair well with strong-flavored meats. Sparkling wines, such as Champagne or Prosecco, are also a great option for charcuterie boards, as they offer a light and crisp taste that complements the flavors on the board.

Best Wines to serve With Charcuterie boards

Why I love adding tangerines to charcuterie boards

Tangerines are a great addition to charcuterie boards for several reasons. First, they add a pop of color and brightness to the board, making it look even more pretty. Second, they offer a sweet and tangy flavor that balances out the saltiness of the meats and cheeses. Third, they are a great source of vitamin C, which makes them a healthy addition to the board. Finally, Juicy Crunch tangerines are easy to peel and eat, making them a convenient snack for guests to enjoy.

Best Wines to serve With Charcuterie

Charcuterie boards are a great addition to any gathering. When selecting wine to pair with your board, consider the flavors and textures of the meats, cheeses, and accompaniments. When making a charcuterie board, don’t forget to include Juicy Crunch tangerines, as they add a pop of color, flavor, and health benefits to the board. And don’t forget the wine!

Mint Chocolate Protein Smoothie

This post may contain affiliate links, please read our disclosure policy.

Ready in just a few minutes, this Mint Chocolate Protein Smoothie is nutritious, delicious and will remind you of a milkshake…but it doesn’t have all the fat and calories! While this post is sponsored by Naked Nutrition, my love for smoothies and healthy living are my own.

Mint Chocolate Protein Smoothie

You all know I love a good smoothie. Well, my kiddos are officially on the smoothie bandwagon now too! My daughter is in track and cross country, then most days she goes to the gym too. My son is constantly working outside and goes to the gym a few times a week too.

And as soon as they both get home from the gym, they both want a protein shake. Now, I will admit that they both love the ease of the blender ball thingies, but at least once a week, they want a little more to their protein shakes. This is where an easy smoothie recipe comes in 😉

I am all about adding in some extra nutrients to my smoothies, but to make one that the kids would make again and again, I needed to make sure it was thick, creamy and a little sweet…almost like a milkshake.

Mint Chocolate Protein Shake

Well, avocados make your smoothies super creamy and add little to no flavor to your blended deliciousness. What avocados do add to your smoothie is vitamins C, E, K, and B6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. Avocados also provide lutein, beta carotene, and omega-3 fatty acids…you know, the healthy fats that are good for us.

Bananas add that touch of sweetness to your smoothie, but they also make it creamy. Bananas are a good source of potassium, and they also have fiber and several antioxidants.

It’s mint to be aware of the benefits of fresh mint! This leafy herb is more than a delicious garnish or flavor enhancer. Mint is an excellent source of antioxidants like vitamin A, which can help protect cells from oxidative damage. It also contains a decent amount of iron, which helps transport oxygen throughout the body and keep energy levels up. Mint leaves are also high in fiber, which promotes digestion and regularity. Plus, mint is good source of calcium and magnesium, minerals that help keep bones strong. So, not only do fresh mint leaves make this protein smoothie extra tasty…it’s a healthy ingredient to add!

I used milk (Florida Milk to be exact!) in this mint chocolate smoothie not only because milk is loaded with vitamins and nutrients, it also lends to making your protein shake extra creamy and delicious.

Healthy Mint Chocolate Protein Smoothie

Now, why are my kids dedicated to having a protein shake or a protein smoothie after each workout? Protein is an essential macronutrient that helps repair tissue, build muscle, and make enzymes. So, making it a pretty good option to have after a good workout…a protein shake is also a great idea if your daily diet doesn’t consistent of a good amount of protein.

Tasty Mint Chocolate Protein Smoothie

Why do I love having Naked Whey Protein Powder available for the kids (and me!) to make their protein shakes and protein smoothies?

Best Mint Chocolate Protein Smoothie

Chocolate Naked Whey is sourced from small Northern California and Idaho dairy farms. Their cows are grass-fed, free roaming, and raised without growth hormones like rBGH or rBST. Each serving of Naked Whey Protein Powder includes 25 grams of protein and 5.9 grams of branched-chain amino acids (BCAAs).

How to make a Mint Chocolate Protein Smoothie

I also love that Chocolate Naked Whey is completely free of additives and artificial sweeteners. Naked Nutrition is proud of the fact that they are committed to shortening the steps between their farms and us.

And I absolutely love supporting any company that supporters our farmers. Farmers are absolutely amazing people that go to work EVERY SINGLE DAY just to make sure we can eat. They haven’t met all of us, but yet, they work for us. To provide for us. Farmers are amazing. Thank a farmer. Support the companies that support farmers.

Alright, you all ready to make that Mint Chocolate Protein Smoothie? Let’s do it! Oh, you will notice I used fresh mint, but if you have mint oil, you can totally use that, I’m just not positive of the conversion of fresh herbs to oil…but if you use mint oil, you probably do 😉

How to make a Mint Chocolate Protein Shake

Wait…one more thing, I wanted to let you know that neither of my kiddos would eat an avocado on it’s own and my son won’t even eat a banana, but both loved this smoothie!

Mint Chocolate Protein Shake

Ready in just a few minutes, this protein shake tastes just like a mint chocolate milkshake but it's much better for you!

Whether you’re serving it for a simple dinner or a special gathering, this salmon delivers juicy, tender flakes and a zesty citrus finish that rivals any glazed salmon dinner you’ll find.

Florida Juicy Crunch tangerines are in season right now, so I am not only enjoying them as a healthy and easy snack, I am loving cooking with them! My husband and I love salmon and just about anything spicy, so I got a little creative with dinner last night and combined tangerines, jalapenos and made an amazing salmon dish. This easy salmon recipe combines sweet and spicy flavors to create an amazing flavor combination that will quickly become a family favorite. The spicy jalapenos are balanced perfectly with the sweet Juicy Crunch tangerines, making it an unique and flavorful healthy weeknight meal.

Why This Works as a Citrus Glazed Salmon

Traditional citrus glazed salmon recipes often use orange, lemon, or lime to create a sweet-tart coating that enhances the richness of the fish. This version substitutes fresh tangerines for an extra bright, fruity twist — making it a refreshing take on the trending Citrus Glazed Salmon you’ll see all over social and recipe searches.

The baked citrus salmon glaze comes together in one simple step, infusing the salmon with fragrant citrus oils and sweet juicy notes, balanced by just a hint of spice. Not only does this method lock in moisture, it creates an easy clean-up, perfect for busy weeknights or effortless entertaining.

Why is salmon considered healthy?

Salmon is a fatty fish that contains high levels of omega-3 fatty acids – an essential nutrient for both physical and mental health. Omega-3s have been shown to reduce inflammation and the risk of heart disease, among other benefits.

Salmon is also a good source of protein and vitamin D, which can help strengthen your bones and immune system. It also contains selenium and B vitamins, two key nutrients for maintaining energy levels and a healthy metabolism. Additionally, studies suggest that eating salmon may even improve brain function over time! All in all, salmon packs quite the nutritional punch – no wonder it’s considered one of the healthiest foods out there!

How do you know if salmon is good?

Fresh salmon is one of the most delicious and nutritious meals you can enjoy. When selecting salmon at the store, it’s important to know what to look for in order to make sure your purchase is fresh and flavorful. Here are some tips that will help you determine if what you’re buying is good quality salmon:

First and foremost, take a look at the color of the flesh, which should be an even pink or orange color with no signs of discoloration or gray hues. The flesh should also feel firm to the touch and not slimy or sticky – this indicates that it was just recently caught but has been stored properly. Additionally, smell is key: If it smells overly fishy or like ammonia, steer clear!

When are Florida tangerines in season?

Florida tangerines are a popular and delicious citrus fruit that I know I would love to enjoy all year long, but Florida tangerines aren’t available all year!

The peak season begins in September and runs typically through April. Find out more when tangerines are in season.

Why do citrus and spicy flavors taste good together?

When it comes to tasty combinations, citrus and spicy flavors are a match made in heaven. This dynamic duo creates an explosion of flavor that tantalizes the taste buds, making for an unforgettable culinary experience. I used Juicy Crunch tangerines in this recipe because they are a sweetest and juiciest tangerines you will ever find.

It turns out there is science behind it! Citrusy flavors like lemon, lime and orange bring a tartness that helps to cut through the heat of spicy ingredients such as chili peppers or even spices like cumin and paprika. The two components work together to create a balance of sweet, sour and heat that can’t be achieved with either flavor alone. Plus, the combination makes food more interesting by adding layers of complexity to dishes.

Citrus-spice pairings are also incredibly versatile – they can be used in everything from Mexican cuisine to Asian-inspired dishes, desserts or even cocktails!

What sides to serve with salmon?

Making dinner is a balancing act, am I right?! On one hand, you want to make sure your main dish is packed with flavor and nutrients so that everyone can enjoy it but we also don’t want to spend a ton of time in the kitchen.

This tangerine jalapeno salmon pairs beautifully with a crisp green salad, citrus-drizzled quinoa, or roasted veggies for a complete evening meal. Because it’s baked instead of pan-seared, it earns its place among the most popular healthy citrus salmon recipes, delivering texture and bright flavor without extra oil or calories.

I did green beans and roasted acorn squash for my sides and they were AMAZING.

What wines pair best with citrus and spicy dishes?

A glass of wine is always a good idea in my opinion, but if you are serving something spicy and with citrus, the pairing may have you guessing which will be best. A great option is Sauvignon Blanc or Chenin Blanc – both of which offer subtle floral flavors that enhance the zesty tang of citrus. If you’re looking for something red, try Pinot Noir or Beaujolais – both have delicate fruit notes that balance out the spiciness. But, honestly, at the end of the day – the best wine is the one you will enjoy.

Salmon is a versatile fish that complements both sweet and spicy flavors, which is why citrus glazed salmon dishes are trending right now. The combination of tangerines and jalapeños gives this dish complexity – sweet, smoky, and a little spicy – all in one bite. You can easily swap in oranges or even grapefruit if you want to experiment with different citrus profiles, leaning into the broader trend of citrus infused salmon recipes.

When choosing your salmon fillets, look for fresh, sustainably sourced fish for the best taste and texture. A fresh citrus glaze – whether tangerine, lemon, or orange – will always elevate salmon and make it feel special even on busy nights.

How To Make The Perfect Mimosa

This post may contain affiliate links, please read our disclosure policy.

Is there anything better than freshly squeezed juice topped with with some bubbly? Not much! Find out how to make the perfect mimosa and get some other fun sparkling wine cocktail recipes!

Tangerine Mimosas

You may think that a mimosa is a simple cocktail. Juice and some sparkling wine or champagne. But no. There are things to consider when making the perfect mimosa. I mean, you wouldn’t make your favorite vodka cocktail with just any ole’ vodka now would you? Do you have a favorite brand of juice that you like to buy? Are you a die-hard Pepsi or Coca-Cola fan? There’s definitely taste differences!

How to make Tangerine Mimosas

And that’s exactly why when making the perfect mimosa, I say you need the perfect juice.

Best Tangerine Mimosas

And it’s not your typical orange juice.

Tasty Tangerine Mimosas

It’s tangerine juice.

And not just any tangerine juice.

How to make Mimosas

It’s the perfect tangerine juice, from the sweetest tangerines.

Noble Juicy Crunch Tangerines.

How to make the perfect Mimosa

But before I get into the perfect mimosas, I am going to share a little story about Noble Citrus and Juicy Crunch tangerines.

Back in 2021 I got to go on a tour through some amazing farms here in Central Florida with the Florida Fruit and Vegetable Association. Our first stop with Noble Citrus. Quentin Roe, the President of Noble Citrus, stood amongst his tangerine trees and spoke to our group of influencers about the importance of domestic food security and explained in-depth why we should look for that Fresh From Florida label on our produce.

While I have a huge appreciation for our farmers and what they do for us and our families, I learned so much that day. And I continue to learn more and more about the amazing produce that is grown here in the state of Florida.

Like tangerines.

Since then I have learned about the different variety of tangerines that are grown by Noble Citrus. And different ways to use tangerines in recipes. I have created tangerine cocktails, tangerine pizza, easy breakfast recipes, and more. I really never realized how incredibly versatile tangerines were. I mean, they are delicious all on their own, but you can really use them in a variety of ways!

Especially if you use the tangerine juice.

Now, I just used a lemon squeezer to get the Juicy Crunch juice out when I made my tangerine balsamic reduction on for my Sweet & Spicy Flatbread and my Healthy Tangerine Muffins.

Perfect Mimosas

But, the tangerine juice I used for the perfect mimosas….Well, that’s another story…So bear with me for a few more minutes 🙂

I had the incredible opportunity to drive out to Citrus America and meet with their insanely friendly staff and Quentin Roe where I got to taste-test some Juicy Crunch tangerines and Juicy Crunch juice.

Now, you may wonder why I drove out there to taste-test something that I have had plenty of times. Well, since I absolutely love Noble Citrus and all their products, I’ll be honest, I didn’t ask too many questions, I was just excited to go!

Well, I tasted Juicy Crunch tangerine after Juicy Crunch tangerine and they all tasted the same to me. I started to wonder what was going on, when they revealed to me that some tangerines looked different than others.

My momma taught me to not judge a book by it’s cover, so honestly that didn’t phase me at all. I mean, they tasted exactly the same…so what did I care if the peel was a little different. Lord knows I’m not perfect either 😉

So that day I learned to not judge a Juicy Crunch tangerine by it’s peel, but rather by its taste. And the taste of a Juicy Crunch tangerine is always sweet and juicy.

I snacked on Juicy Crunch all morning, then Jay with Citrus America turned on a JUICING MACHINE. Ok, now I have never tried freshly squeezed juice before…I mean, not like it’s was JUST SQUEEZED. He dumped in a case of Juicy Crunch tangerines and within minutes we had pitchers full of tangerine juice! Have you seen these fantastic juicers in stores?? OMG, they are too cool! Keep a look out for them at Whole Foods and your other favorite retailers, you can actually learn more about the Noble Stand-Apart Florida Fresh Juice Program here. They even let me taste-test the juice from less-than-perfect Juicy Crunch tangerines to see if the juice tasted different.

Best Mimosas

It didn’t.

It tasted exactly the same.

Which was PERFECTION.

So, while we sat and chatted about the beauty of Juicy Crunch and the upcoming Florida blueberry season I asked if I could take some tangerine juice home to make the perfect mimosas.

They said yes 🙂

Thank you for bearing with me and my stories….but I guess to make my long story short….to make the perfect mimosa, you need the perfect juice. And the perfect juice is Juicy Crunch tangerine juice.

I had some friends over to celebrate the amazingness, we all toasted to Juicy Crunch and the fact that we learned that not all tangerines look the same, and that’s okay…because we don’t all look the same either. And that doesn’t make us imperfect, it makes us pretty damn special.

Ingredients

  • 2 – 2 1/2 oz fresh-squeezed Juicy Crunch tangerine juice
  • 3 1/2 – 4 oz Champagne brut or other dry sparkling wine
  • Tangerine slice to garnish

Instructions

  • Pour the freshly squeezed tangerine juice into a chilled Champagne flute and slowly pour the sparkling wine over it.
  • Stir gently.
  • Garnish with a slice of orange.
  • Enjoy!

When the warmer weather hits, or if we are planning brunch, we tend to shy away from the big, heavy wines and reach for something a bit more thirst-quenching. A sip of Champagne, Cava, Prosecco, or other sparkling wine is not only a great way to beat the heat, but it also adds an element of celebration to any occasion.

Ever since the introduction of bubbly wine, people have been experimenting and mixing it with numerous other ingredients. There is now an endless list of sparkling wine cocktails that range from simple and elegant to flashy and elaborate. Any of them will be sure to impress your friends.

Here are a two traditional Sparkling Wine Cocktails that I would recommend switching the juice to tangerine juice for or adding it in:

Bellini

This cocktail was introduced in a bar in Venice, Italy, by Giuseppe Cipriani in 1948 and has now become a classic.

Bellini Ingredients:

Pureed peaches (or peach nectar) – Try Juicy Crunch tangerine juice instead!
1 oz peach schnapps
4 oz Prosecco

To make a Bellini fill a chilled Champagne flute 1/3 full of pureed peaches or peach nectar. Pour the peach schnapps over it and stir it up. Fill the glass with Prosecco.

Sparkling Cosmo

The ladies from Sex and the City made the Cosmo a staple for any party. This fizzy version is a fun alternative.

Sparkling Cosmo Ingredients:

3/4 oz Cointreau
1 1/2 oz cranberry juice – Use tangerine juice instead or add it in as a sweet addition!
3 oz Cava or other dry sparkling wine

To make a Sparkling Cosmo simply pour the Cointreau and cranberry juice into the bottom of a chilled Martini glass. Slowly top off with the Cava.

Baked Mahi Mahi with Olives, Lemon and a Killer Honey Sauce

This post may contain affiliate links, please read our disclosure policy.

This healthy Mahi Mahi recipe is ready in under 30 minutes. Baked Mahi Mahi is lightly seasoned then baked with lemons, olives a homemade honey and parsley sauce.

Baked Mahi Mahi

It’s the start of a new year…are you looking for new healthy recipes to try? Well, I basically always am. Two years ago I lost 20 pounds thanks to Weight Watchers and over the last 6 months, about half of that has creeped back on. Annoying. I know it happens. And trust me, I don’t regret one glass of wine, snifter of bourbon, or cookie…okay, maybe I regret a few of the cookies…But life happens, right??

I was talking to my friend the other day and I said I actually needed a reminder that healthy food is easy to make and delicious. We have been at parties, traveling and at restaurants for so long I feel like I forgot how to cook! Thankfully, I didn’t 😉

I was also pleasantly reminded with this baked Mahi recipe that healthy can indeed be flavorful and easy. Living in Florida, we love seafood…all seafood. Especially fish. Mahi Mahi is one of the those fish that is thick, yet when cooked right is perfect light and flaky. Mahi Mahi actually has a mild flavor, so adding your favorite toppings like this honey parsley sauce, lemons and olives, is an easy way to spice up this fish.

Did you know that another name for Mahi Mahi is dolphin? Now, don’t worry…Mahi is NOT the dolphin you are thinking of….I am 100% sure that would be illegal…and who could possibly eat flipper?? Ok, that thought process is not a good one…so, let’s go back to this yummy Baked Mahi Mahi recipe shall we?

One of my favorite things about cooking fish (all seafood for that matter) is that it’s ready pretty quick. This Baked Mahi Mahi recipe is ready in about 30 minutes…and 20 minutes of that is the baking time! Easy enough.

Baked Mahi Mahi with Olives

How does it take to bake Mahi Mahi?

It depends on the thickness of the filet, but your mahi mahi should be ready to enjoy when baked at 375 degrees in about 15 – 20 minutes.

Best Baked Mahi Mahi

How do you know when Mahi Mahi is done?

The fish will be easily “cut” into with a fork, it will flake and no longer look translucent. Not sure if it’s done? A good rule of thumb is to cook the fish to an internal temperature of 140-145 degrees.

Healthy Baked Mahi Mahi

What toppings are good on Mahi Mahi?

Feel free to experiment! I went a little Greek with this recipe with the addition of olives, I love the salty dimension it adds to the acidity of the lemon and the sweetness of the honey.

Tasty Baked Mahi Mahi

What should you serve with baked fish?

Fish is actually pretty versatile when it comes to side dish pairings, rice is always a good option, but as I mentioned above I am trying to up my healthy food consumption so I went with roasted broccoli. And I actually really like roasted broccoli, so it was a win-win.

How to bake Mahi Mahi

What other dishes is Mahi good in?

As I mentioned, we love seafood and fish! Here are a few of my other favorite mahi recipes:

How To Make The Best Tangerine Cocktail

Looking for the perfect cocktail to celebrate the season? Look no further than this Juicy Cocktail…It is the best tangerine cocktail you will ever have. Promise!

Tangerine Martini

How To Make The Best Tangerine Cocktail

Well, the recipe is simple. To make the best tangerine cocktail, you need the best tangerines. And, I am hoping that by now you all know that those tangerines come from my friends at Noble Citrus. Right now, the sweetest, juiciest most amazing tangerine is in season…the Juicy Crunch tangerine.

Juicy Cocktail

So, since Juicy Crunch is in season and what better way to celebrate than with a cocktail? You all know that I love a good cocktail…This cocktail is made with just 3 simple ingredients, so it’s a must use only the best ingredients. And that’s exactly why I used Juicy Crunch Tangerines! Sweet, juicy, low-to-no seed and zipper peel make the Juicy Crunch Tangerine a must in this Juicy Tangerine Cocktail. I also recommend a good vodka 😉 You don’t need a low quality vodka messing up the taste of that incredible Juicy Crunch!

Best Juicy Cocktail

To make this cocktail, simply peel open your Juicy Crunch Tangerine, remove three of the segments and squeeze all that high-brix tangerine juice into your favorite cocktail glass. Add in chilled vodka and top with sparkling water. I have about 5 different flavors of sparkling water in my house at all times and my favorite so far in the tangerine cocktail is orange. But lime and plain are also delicious. The sweetness juice from the Juicy Crunch Tangerine is really what makes this cocktail!

Best Juicy Tangerine Cocktail

As you can see, I also made Infused Ice Cubes. Not only are infused ice cubes pretty in cocktails, but as they melt, they add extra flavor. I simply added Juicy Crunch segments to some of the ice cubes sections, then I added Juicy Crunch and fresh mint leaves to some of the additional ice cube sections. Mint and citrus are a delicious pairing, plus, mint is pretty too 😉

Juicy Tangerine Cocktail

Now, let’s make that Juicy Cocktail shall we? I originally made this cocktail for Noble Citrus last season and I loved it so much, I wanted to share it here for you all too!

8 Romantic Destinations for Your Next Anniversary Trip

This post may contain affiliate links, please read our disclosure policy.

Celebrate your next anniversary at one of these romantic destinations! Before planning your anniversary trip, check out these 8 romantic destinations to help you decide where to go! This is a Guest post from Katelyn at Couples Travel.

Romantic Destinations

An anniversary should be a time to not only mark your time together with your partner; it should be an opportunity to visit someplace new. Every couple has been told endlessly about the need to add spice and variety to their relationship to prevent it from becoming dull and uninteresting. The trouble is that, despite best intentions, life gets in the way.

Your upcoming anniversary will give you the perfect excuse to splurge and adventure to a faraway romantic destination. Here are some of the world’s most relaxing, rejuvenating, and romantic getaways.

1. Barbados, West Indies

A trip to this Caribbean Island can turn your anniversary into a Barbados honeymoon. Barbados is well known for its beautiful white sandy beaches, which are especially gorgeous on the island’s western side. If you and your partner want to do more than lay on the beach all day, you can go over to the island’s east coast, which contains rocky coves and deep caves. Romantic boat trips, delicious rum, and calypso music are also part of the Barbadian experience.

2. Bali, Indonesia

The island of Bali is a true gem of the Pacific. It is warm, sunny, and picturesque. You can enjoy the food, luxuriate on the beach resorts, and be thrilled by the nightlife. The last of these is especially good with music and dancing in Southeast Asia’s hottest open-air clubs.

During the day, you can take in the island’s culture and historical sites. You can visit temples that go back to the 15th century. The island’s spectacular waterfalls are not to be missed, and you should take the time to relax together and enjoy Bali’s breathtaking sunsets.

3. Buenos Aires, Argentina

Argentina is known as the home of the Tango. But this is not the country’s only cultural achievement. The influence of Germany in Argentina is almost as potent as that of Spain. This has created a wonderful blend of European and Native American culture that can be seen in everything from the diversity of cuisine to how Spanish is spoken in the country.

The nightlife is brilliant in Buenos Aires — more than enough for you and yours to dance the night away. You can spend your days watching ballet or opera and visiting the many beautiful parks in Palermo.

Best Romantic Destinations

3. Cancun, Mexico

This city is best known as the Spring Break destination of high school and college students—much to the detriment of its reputation. However, it is a beautiful place to be and can be a great romantic destination outside the Spring Break season. You will still be able to enjoy Cancun’s energetic vibe, but you will do so without the noise and over-the-top partying.

Anniversary Romantic Destinations

4. Florida Keys, Florida

The Florida Keys is a perfect romantic getaway if, for whatever reason, you are not interested in leaving the country for your anniversary. The Florida Keys is billed as a resort area, but the hospitality industry is built on an old Spanish settlement. You and your partner can stroll hand-in-hand through the quaint old town section in the evening and enjoy the wonderful beaches in the afternoon. You can also indulge yourselves at world-class restaurants, atmospheric bars, and relaxing cafes.

5. Kerala, India

This is a great place to start if you have never been to India. Most of the Indian subcontinent stretches out into the Indian Ocean, which has given the country some of the most extraordinary beaches in the world. Kerala is one such place. You will find pristine beaches, tropical forests, rolling hills, and interesting wildlife.

Kerala is known for its spa and massage treatments. It is the one thing that everyone who visits the reason must do.

6. Maui, Hawaii

Maui has the best beaches in Hawaii and has always been known as an island paradise. But you can also enjoy the island’s great food and interesting sites. When you want a bit of a break from the beach, you can visit Haleakala National Park. This is the island’s highest lookout point, and it has a volcanic crater. You will have a 360-degree view of the latter from the top of the point.

If you take your anniversary trip in the winter, you will get to see humpback whales!

How to plan an anniversary trip

7. Paris, France

Paris as a romantic city is not a cliché. The reality matches the hype. Paris really is that atmospheric. Whether strolling along the Seine on a rainy afternoon, marveling at the Eiffel Tower on a clear night, or enjoying a candlelight dinner at an outdoor bistro, the ambiance of Paris will get you in the mood for love.

8. Venice, Italy

This ancient Italian city’s slow and easy pace is perfect for couples who want to get away from it all. Venice is well-known for its watery parts comprised of a series of canals. Taking a gondola ride along the latter will give you quality time together and allow you to explore the city’s unique architecture and mysterious passageways.

As you can see, plenty of romantic spots exist in the world. Proper planning is the key to making your anniversary trip to any of them a success.
