How To Roast Bell Peppers

Love roasted peppers? Me too! I also love that roasting peppers is so easy.  I know many of us roast red peppers, but you can actually roast just about any pepper! You can roast bell peppers, jalapeno peppers, serrano peppers, poblano peppers – just about any pepper you can think of! Actually, roasted vegetables are my favorite way to eat vegetables…the kids too!

Why roast peppers? Simple, the roasting deepens their flavors.  Which makes them extra delicious in recipes! Bell peppers are in season here in Florida November – May, so that’s the perfect time to stock up and make some roasted bell peppers.

How To Roast Peppers in the oven:

Preheat oven to 450 degrees.

Cut the bell peppers in half and clean out the seeds and membrane.

Place the pepper halves on a foil-lined baking sheet.

Roast the peppers for 15 – 20 minutes, until the skin is dark and the peppers have collapsed.

Once the roasted peppers have cooled, you peel off the skin and then your roasted red peppers are ready for whatever creation you would like.

Notes

I have read some recipes where people place the peppers in a paper bag or a covered bowl to steam the peppers to help remove the skin, I did not find that necessary, the skins easily came off once the peppers were cool enough to touch.

You can store the roasted peppers in the refrigerator in an airtight container for up to about a week. If you store the roasted peppers covered in oil in the refrigerator they will keep for at least 2 weeks.

Yes! You can freeze roasted peppers if you want them to last even longer.

I used this Fresh Mint & Peach Vinaigrette Dressing on my Sweet and Salty Grilled Peach and Bacon Salad and it was the perfect accompaniment to the grilled delicious.

I also used this Fresh Mint and Peach Vinaigrette Dressing on our favorite salmon salad. I substituted out the fresh strawberries that I usually use and diced up a fresh peach. YUM!

It would also make for a great marinade. In fact, that’s my plan for the next batch I make 🙂 I try to have a salad everyday, and this Peach and Fresh Mint Vinaigrette Dressing has been my go-to dressing for the last week, so it’s time for me to make it again.

To make this homemade salad dressing you only 7 simple ingredients and about 10 minutes.

You will need:

  • Fresh Mint
  • Peach
  • Fresh lemon juice
  • Extra virgin olive oil
  • Red wine vinegar
  • Honey
  • Salt

I also get creative with my Florida peaches, like peaches are amazing in my morning smoothie, on top of ice cream for dessert, in cocktails, in salsa, in breakfast casseroles, and so much more! Who would have guessed?? 😉 I also added some goat cheese for that creamy bite of deliciousness and I made a Fresh Mint & Peach Vinaigrette Dressing that is the perfect accompaniment to this salad. The Mint & Peach Vinaigrette Dressing is light and doesn’t take away from the grilled flavors of the peaches and onion.

I added a bit of sweet and heat to the bacon, some brown sugar and red pepper flakes, which just added another layer to the flavor profile of this amazing grilled peach and onion salad.

Sweet & Salty Grilled Peach Salad with Bacon

Warm up the grill and make this delicious Grilled Peach Salad! Add in the crispy bacon and grilled onion for a plate of sweet and salty amazingness.

Ingredients

Ingredients for Grilled Peach Salad

  • 6 Florida Peaches pits removed and cut into 1/2 - 1 inch wedges
  • 2 large sweet onions cut into 1-inch-thick slabs
  • 5 slices of bacon
  • 1/4 cup light brown sugar
  • 1 teaspoon red pepper flakes
  • Extra-virgin olive oil for brushing the onion slices and peaches
  • Crumbled goat cheese

Ingredients for Fresh Mint and Peach Vinaigrette

  • ¼ cup chopped fresh mint
  • 3 tablespoons fresh lemon juice
  • cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 tablespoon honey
  • ½ teaspoon salt
  • 1/2 Florida peach pit removed

Instructions

  • Preheat oven to 400 degrees
  • Line a large rimmed baking sheet with parchment paper or aluminum foil
  • Pour brown sugar and red pepper flakes on a large plate,mix it around
  • Coat each side of bacon in the brown sugar and red pepper mixture
  • Place the bacon on the prepared baking sheet *I place mine on a baking rack so that the grease drops down but you don't have to*
  • Bake for aprrox. 20 minutes, until caramelized (the bacon will crisp as it cools).
  • Let cool, then cut the bacon into large bite-size pieces.
  • While the bacon is baking, light the grill and heat to medium high heat.
  • Brush the onions with olive oil and season with salt and pepper.
  • Grill onions, turning occasionally, until softened and browned, approx 10 minutes.
  • Put the onions on a plate and side aside.
  • Put the peach wedges in a large bowl and pour on extra virgin olive oil, gently stir to coat the peaches.
  • Grill the peaches over moderately high heat until tender, approx 2 - 4 minutes.
  • Transfer to a plate.
  • Separate the onions into rings.
  • On a large serving plate place the grilled onion rings and grilled peaches, sprinkle on the bacon pieces and goat cheese.
  • Drizzle with Fresh Mint & Peach Vinaigrette Dressing.
  • Enjoy!

Mint & Peach Vinaigrette Instructions

  • Combine chopped mint and lemon juice in a small saucepan.
  • Bring to a boil and remove from heat.
  • Let steep for about 10 minutes.
  • Put remaining dressing ingredients (olive oil, red wine vinegar, honey, salt and peach) into a high powered blender or food processor and blended thoroughly.

There are many different regions around the world where grapes are grown to make delicious and unique bottles of wine. Some of the main factors for determining how a bottle of wine will taste are the types of grapes that are used and the regions in which they are grown. So let’s talk about some of the best global wine regions that are producing your favorite wines.

Popular Wine Regions

France

France tends to be the first country we think of when thinking about wine and where it is made. There’s a good reason for this as wine is produced all over France, and in fact, 7 to 8 billion bottles are produced in France each year. The French have been producing wine since 6 BC and they are without a doubt the producers of some truly delicious wines.

There are quite a few different wine regions in France that you might be familiar with, and these include Bordeaux and Burgundy. The Bordeaux region of France is famous for producing some of the most notable wines in the world. Several grape varietals are grown here, but the most notable are Merlot and Cabernet. The coastal climate here as well as the soil featuring limestone, gravel, sand, and clay. Bordeaux offers a lot of unique activities and history to explore in addition to the wineries here. Bordeaux is filled with quaint homes, gorgeous landscapes and lots of vineyards.

The Burgundy region of France is known for producing some of the most expensive wines in the world. Many people ask what type of wine burgundy wine is and it is a delectable Pinot Noir that happens to be grown in the Burgundy region of France. Did you know that there is also a white Burgundy wine? White Burgundy wine is made from Chardonnay grapes grown in the Burgundy region. The soil here is made of limestone, clay, and stone soil, and the climate is mostly mild, with summer temperatures near 70 and winter temperatures only as low as 35 degrees. The Burgundy wine region is also home to the city of Beaune, where you will find yourself steeped in history, nature, markets, and of course wine!

California, USA

California most certainly comes to mind when one is thinking about where wine comes from around the world. There are more than 3,500 wineries in the great state of California which means that more than half of the wineries in the United States are located in California.

Napa Valley, California is home to many wineries and they produce a variety of different wines. Most notably you will find Cabernet, Chardonnay, Merlot, Pinot Noir, Sauvignon Blanc, and the ever famous California Zinfandel. There are a variety of different soil types found in the Napa Valley from rich fertile soils down in the valleys, to more rocky soils that struggle to produce the best grapes but deliver an incredible amount of flavor in each bottle. The climate in the Napa Valley is a dry Mediterranean one that is perfect for growing the grapes needed to produce world famous wines.

Sonoma, California is also a destination high on the list of most wine lovers to visit. There are over 400 wineries in Sonoma alone. The climate in Sonoma is mild which provides for a long growing season, and the temperature rarely dips lower than 40 degrees. The soil in Sonoma is predominately Goldridge soil which is extremely well-draining and produces fine healthy grapes. The wines made in Sonoma include Pinot Noir, Chardonnay, and Cabernet Sauvignon, Merlots, and Zinfandels. You can read about our favorite Sonoma wineries here.

Australia

Australia might not be one of the first countries that you think of when it comes to growing grapes and producing wines, but there are some delicious wines produced here. In fact, in the Barossa Valley, you will find some of the oldest living Shiraz vines in the world. Australian Shiraz may also be called Syrah. This wine-growing region was originally established by the British and the Mediterranean climate is perfect for these full-bodied red wines, and also produces some very robust white wines. The soil here ranges from clay loam, to sandy, to red, or grey clays, and while they drain fairly well they are not particularly fertile making the wines that come from this region even more special.

The Yarra Valley is blessed with a seven month growing season where the weather is cooler than Bordeaux but warmer than Burgundy, France. There is a maritime climate here and the landscape varies across the region. This variation in the landscape causes the soil to range from clay and sandy loams to crumbly, loose volcanic soil. These differences in the soil can be tasted as you travel to different wineries in the regions. The production here consists mainly of Pinot Noir, Syrah, and is best known for it’s Chardonnay.

Popular Global Wine Regions

New Zealand

New Zealand is another country that you might not think of when it comes to wine, but there are some fabulous wines to be found there. There are 11 different wine regions in New Zealand, but here we are going to explore two of them. The Central Otago wine region has a beautiful landscape with pristine lakes and gorgeous mountains. They also have vineyards that are producing Pinot Noir, Chardonnay, and Sauvignon Blanc. The area is a tourist destination so there are plenty of activities and restaurants that are beginning to set the bar when it comes to fine dining. The soil here is very unique in that it is old windblown silt, that was formed over consecutive ice ages, by glaciers grinding down rock into a consistency of fine flour. The silt also contains river gravel and sand at varying depth levels due to erosion. The climate in Central Otago is semi-continental which means that they experience harsh winters and a very hot, but short summer.

Nelson is another wine-producing region in New Zealand. The region is small and known for producing boutique wines in recent years. The area was first planted with vineyards by the Germans in the mid-1800s. The region is known for producing some delectable Chardonnay, Pinot Noir, and Sauvignon Blanc wines. The climate here is mild because it is near the sea and sea breezes keep the temperature very comfortable. There is very little risk of frost here, but heavy rains in the Fall occasionally prove problematic. The soil in Nelson is comprised of a gravelly silt loam over a clay base which means it holds water very well. Nelson is a very artisanal community with wineries, breweries, galleries, cafe’s, restaurants, and places to stay.

Top Global Wine Regions

Italy

Italy probably does come to mind when you are thinking about wine-producing regions around the globe. There are a lot of world-renowned wines that come out of Italy, and that makes sense because incredible Italian food should be accompanied by an Italian wine. There are approximately 20 different wine regions in Italy, but today we are only talking about two Tuscany and Veneto.

Tuscany should come to mind when you think of wineries still using classical practices to make their wines such as stomping on the grapes with their bare feet. Tuscany is well known for it’s Chianti, Cabernet Sauvignon, and Merlot. The red grape varietal Sangiovese is featured prominently in these wines and grow extremely well in the region. Tuscany has been blessed with a fairly mild climate thanks to coastal breezes in some areas and mountain winds in others. The soil in Tuscany is varied depending on which part of the region that you are in and this contributes greatly to the different flavors in the wine here. Tuscany is where you will find some of the world’s most notable wine regions. Just a few of the wines produced here include Chianti, Brunello di Montalcino and Vino Nobile di Montepulciano. Tuscan wines are also considered some of the most high quality wines you will ever have the pleasure of sipping.

The Veneto region produces several different types of wine but is known the world over for the Prosecco that comes from here. Prosecco is a sparkling wine derived from the Glera grape and differs from champagne in that the secondary fermentation process, the one that causes the bubbles, happens in metal vats and not in the bottle as Champagne does. This allows Prosecco to be sold at a more consumer-friendly price than many Champagne brands. The climate in Veneto varies depending on what part of the region you are in, the lowland areas are typically cooler with warmer, but still fairly mild temperatures near the coast. Veneto does get a lot of rain in certain months so if you are planning a trip you may want to check the average forecast. The soils in Veneto are very fertile though rocky in some areas. The loose soil contains chalk and volcanic sands that help contribute to the quality of grapes grown in Veneto.

Spain

Spanish wine and Rioja go almost hand in hand, the region is famous for producers such as bodegas Faustino available in almost every supermarket and wine bar, to the prestigious Marques de Murrieta.  Whilst not all the wines of the Rioja region are aged or even red, it is the region aged red wines that Rioja has become famous for.

The region uses the concept of age as a key way of classifying its wines:

Crianzas – These are the youngest wines in the classification system. Red wine must be aged for at least two years, one of which must be in oak. White wine must be aged for six months in oak.
Reservas – Wines of medium age. Red wines must be aged for three years, one of which must be in oak. White wines must be aged for one year and a minimum of six months in oak.
Grand Reservas – These are Rioja’s classic aged wines. Red wines must be aged for five years, and of these two years must be spent in oak. White wines must be aged for four years, six months of which must be in oak. Rioja is famous for its Tempranillo grape; it is not, however, used exclusively in blends of the region.

Here are the major grapes used in Rioja wines.

Reds:
Tempranillo – Spain’s most famous grape and the one which makes Rioja the wine-producing region it is. Tempranillo is the dominant red grape used in all red wines of the region. Tempranillo stands up particularly well in the process of long oak and bottle aging.
Garnacha – Referred to as Grenache in other parts of the world, the grape adds both alcohol and body to the blend.
Graciano – This is a minor grape used in Rioja blends, the grape adds delicate notes to the nose of wine and is a great compliment to Tempranillo.

Whites:

Homemade Roasted Red Pepper Dip

Bell peppers are delicious, aren’t they? Bell peppers are good in so many dishes like: pasta, pizza, eggs, salads, stuffed peppers and in this delicious roasted red pepper dip 😉 We always keep bell peppers on hand at home, they are so versatile and since Fresh From Florida bell peppers are in season right now, I always grab a few when I am at the grocery store.

Roasted Red Pepper and Garlic Dip

We love to spend time with family and friends and this past weekend was no exception. We had plans with several neighbors for Saturday and it was my turn to bring the appetizers, so I opened up the refrigerator grabbed out some Fresh from Florida bell peppers, an onion, garlic and some cheese and turned the oven on. I wanted to make a simple, yet flavorful dish that the adults and kids would enjoy and when my husband asked me where I bought the roasted red pepper dip, I knew I succeeded.

Roasted Red Pepper and Onion Dip

The roasting of the garlic, onions, and red pepper does take a bit of time, but it’s totally worth it. A fresh roasted bell pepper is about 100 times better than a jar of roasted red peppers. Roasted garlic, is just amazing…if you haven’t had it before, you really need to, something magical happens to garlic when it’s roasted, it turns into a soft, almost sweet bite of heaven. Now imagine the roasted garlic and roasted bell pepper together. YES, it’s that good. I also roasted my onion, I didn’t want raw onion overpowering the roasted magic.

Roasted Red Pepper Dip

While I roasted my veggies and garlic, I cut up some Fresh from Florida vegetables to serve with my homemade roasted red pepper dip. I served this homemade roasted red pepper dip with green bell peppers, yellow bell peppers, red bell peppers, zucchini and yellow squash. All the colors of the fresh Florida vegetables were absolutely beautiful served with the roasted red pepper dip! Almost too pretty to eat…almost 😉  You really have to appreciate the fact that Florida Farmers work so hard to make sure we can eat all this amazing fresh produce year-round.

Roasting peppers is really easy.  All you have to do is cut the bell peppers in half and clean out everything inside and then place them on a foil-lined baking sheet.

After about 15 – 20 minutes at 450 degrees, you will have perfect roasted peppers.

Once they have cooled, you simply peel off the skin and then your roasted red peppers are ready for whatever creation you would like.  I recommend this roasted red pepper dip, of course.

Easy Homemade Roasted Red Pepper Dip

You will see that the recipe only calls for one red pepper, but feel free to roast more than the one pepper, roasted red peppers are delicious in pasta, on top of pizza, folded into scrambled eggs, on salads and more! They are the perfect to have in your refrigerator at all times, because you can basically use them all the time 😉 You can store the roasted red peppers in the refrigerator in an airtight container for up to about a week. If you store the roasted peppers covered in oil in the refrigerator they will keep for at least 2 weeks, if you want them to last even longer, freeze them.

Homemade Roasted Red Pepper Dip

With a few deliciously fresh ingredients you can have this Roasted Red Pepper dip ready to serve in about an hour. This dip is way better than store bought!

Ingredients

  • 1 Fresh From Florida Red Pepper
  • 4 cloves peeled garlic
  • Half small yellow onion - peeled
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh black pepper
  • 1 8 oz package cream cheese, softened (I used light cream cheese)
  • 1 teaspoon red pepper flakes
  • 1/2 shredded sharp cheddar

Instructions

  • Preheat the oven to 375 degrees.
  • Put the garlic cloves and onion into a small bowl and mix with olive oil (about 2 tablespoons, add more if you need it, you want it well coated) and salt and pepper.
  • Foil line baking sheet and place the garlic and onions on it.
  • Toss it in oven at 375 for 30 min. The garlic and onion will be a little brown and soft.
  • Preheat oven to 450 degrees.
  • Cut the peppers in half and remove the stems, seeds and membranes.
  • Lay the peppers on a foil-lined baking sheet, cut side down.
  • Roast the red peppers for 15-20 minutes or until the skins are very dark and the peppers have collapsed.
  • Remove the peppers from the oven.
  • Allow the peppers cool for a few minutes until they are cool enough for you to handle, then peel the skins off and discard them.
  • You may have to place your peppers on a piece of paper towel to dry them off, I did.
  • Place garlic, onion, red bell pepper and next 4 ingredients in processor and blend well.
  • Place all ingredients (roasted pepper, onion, garlic, cream cheese, cheddar cheese and red pepper flakes) in your food processor or blender.
  • Blend together until smooth.
  • Transfer dip to a small bowl. Cover and refrigerate for at least one hour before serving.
  • Serve with Fresh From Florida Bell Peppers, Squash and other delicious vegetables.
  • Enjoy!

Upside Down Coconut Lemon Bars

Yep, you read that right. Upside Down Coconut Lemon Bars. Are you thinking…”Wow, Upside Down Lemon Bars sounds fun!” or “Why the heck are the Coconut Lemon Bars Upside down?” Well, these lemon coconut bars are fun, and absolutely delicious. Why are they upside down…well, that was my faux pas. But, since the recipe was still a success and I decided that many people out there may do the same, I decided to embrace my “uniqueness” and celebrate my Upside Down Coconut Lemon Bars. Now, if you don’t want to be as “unique” as me, I will let ya know how to not make yours upside down:)

Upside Down Coconut Lemon Bars

With Spring coming I wanted to make a light and delicious dessert and when Voortman Bakery sent me a package of their Coconut Cookies (baked with REAL coconut and no artificial color or flavors and no high-fructose corn syrup #momwin) I immediately thought of pairing it with lemon. A little bit of citrus, a little bit of sweet and a little bit of coconut all screams Spring dessert to me. And that’s what these Lemon Coconut Bars are…even if they are upside down 😉

Easy Coconut Lemon Bars

I will confess that these lemon coconut bars are also delightful with a cup of coffee for breakfast. Well, since I am confessing I will say that they are great with a cup of coffee, as a late afternoon snack when you need something sweet and for dessert. So, basically this lemon bars are perfect all Spring long…and beyond!

How to make Coconut Lemon Bars

For this simple Spring dessert recipe, you actually only need a few ingredients, many of them you may already have in to pantry and refrigerator. The only ingredients I had to go out to the store for was extra lemons and shredded coconut.

Now, let me address the “upside down” part of this recipe, when you prepare the crust for these coconut lemon bars you have to make sure you do a few things:

  • Press the crust down FIRMLY into the baking firm, make sure there are no cracks or nooks and crannies.
  • Bake the crust before adding your filling for 15 minutes at 350 degrees.
  • Pour the lemon filling on the crust while it’s HOT out of the oven, which causes the layer that’s in contact with the crust to cook immediately, and this helps prevent the upside down lemon bars.

I won’t say that my bars are “wrong” because they were AMAZING, but if you prefer to have your cookie crust on the bottom, pay careful attention to those steps. But, don’t be sad if your lemon ends up on the bottom…your coconut lemon bars are not ruined! They are extra special!

Ingredients

  • Coconut Cookie Crust Ingredients:
  • 12 Voortman Bakery Coconut Cookies
  • 4 tbsps butter
  • Lemon Coconut Filling Ingredients!
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 tbsp lemon zest
  • 1/2 cup freshly squeezed lemon juice approx 4 large lemons
  • 1/2 cup flour
  • 1 cup shredded sweetened coconut
  • Garnish!
  • Lemon slices if desired

Instructions

  • Preheat oven to 350 degrees and spray a 9x9 baking pan with cooking spray (or line with non-stick foil, feel free to spray it as well, just in case!).
  • In a food processor, chop coconut cookies and butter until you have crumbs.
  • Firmly press coconut cookie crust in an even layer into the bottom of the pan.
  • Bake for 15 - 20 minutes. The edges will start to brown.
  • While the crust is baking, mix eggs, sugar, lemon zest, lemon juice, and flour together.
  • Once combined, pour over HOT crust. Sprinkle with 1/2 cup of coconut (saving the other 1/2 cup).
  • Turn oven down to 325 degrees.
  • Bake for 15 minutes.
  • Sprinkle the top of the bars with the remanding 1/2 cup of coconut, and continue baking for 10 more minutes (25 minutes total) or until the filling has set.
  • Remove from oven and allow to cool on a wire rack.
  • Allow bars to cool COMPLETELY before slicing.
  • Top each bar with a lemon slice if desired.
  • Enjoy!

Notes

The lemon bars are best eaten within 24 hours, but may be covered and refrigerated for up to 3 days. They taste amazing cold!
If you end up with the lemon on the bottom, IT'S OKAY! It happened to me too! They still taste absolutely delicious, just tell everyone that you made Upside Down Coconut Lemon Bars...that's what I did 😉

An Introduction To Carménère Wine

The star of Chilean red wines and the grape that gives the locals Cabernets their distinction, Carménère has had enjoyed a storied history.

Chile’s signature grape, Carménère (sometimes spelled Carmenere), is the “lost grape of Bordeaux.” Known also as “grand vidure,” it was originally one of the major grapes of the Médoc region. Even under the best of circumstances, it was a difficult grape to grow in Bordeaux, since it needed more heat to ripen than other Bordeaux grapes and, worse, it often caught coulure, a disease that caused the grapes to drop long before they were ripe for harvest. An 1870s plague of phylloxerae (vine-munching, aphid-like insects) that destroyed several million acres of European vineyards finished off Carménère for good. Or so everyone thought.

Bordeaux Rootstock

Cabernet Sauvignon, Cabernet Franc, and Carménère among them – were brought to Chile 20 years before the outbreak, when the first Chilean vineyards were developed. The local aristocratic gentlemen wine growers thought Carménère was a Merlot, and they planted accordingly, interspersing it with the Merlot grapes, although its pink-red flowers, and off-merlot taste, indicated otherwise.

Bizarrely, it wasn’t until 1994, nearly 150 years after the first quasi-merlots were bottled, that Jean-Michel Boursiquot, a visiting French ampelographer (an expert in identifying and distinguishing vines) had an “aha!” moment; DNA testing three years later confirmed what he’d already established: Carménère was alive and flourishing in Chile, more successfully than it ever had in Bordeaux.

The valleys of Central Chile, surrounded by the Andes, cooled by the Pacific and blessed with warm, dry, sunny days followed by up to 40-degree drops in temperature at night, are an ideal environment for bringing out the full, rich flavor of grapes since they’re forced to ripen very slowly.

Because Carmenere is able to thrive in Chile from the originally imported vines (in Bordeaux and California, it has to be grafted onto insect-resistant vines in order to reach maturity), today Chile is acknowledged as its ideal home.

Now that the newly rediscovered grape is being properly harvested, which is to say, several weeks later than the Merlot grapes, the range of its flavor and versatility is suddenly being appreciated. Once only blended with Cabs and Merlots, it’s now being bottled alone, with a dark red color and an amazing breadth and range of flavors, from green pepper to blackberry to chocolate, and textures that are entirely distinctive from one vineyard to the next.

Viña Tarapacá’s Carmenere, for example, is from the Maipo Valley and has a full, round feel and the distinctive bite of peppers and jam; Viñedos Terranoble’s Reserva, from the Maule Valley, is dark and full in a way that Merlot drinkers dream of but don’t always find; and De Martino’s Legado Reserva, also from Maipo, springs up from the tongue like a berry-laden jack-in-the-box.
