So you will find a lot of recipes here on Food Wine Sunshine, and quite a few of my recipes call for an all purpose seasoning. You know, that seasoning that will give your recipes an extra burst of flavor…And it can be hard finding a seasoning that will be good in just about everything. But I found it. And I put in just about everything. And I mean everything. From simple roasted vegetables (our favorites are cauliflower and broccoli) to breakfast casseroles to sauteed chicken to fried gator bites to our Thanksgiving turkey.

I use Dust by VooDoo Chef. In fact, when my mom came to visit she got hooked on it and when my sister-in-law came to visit she got hooked on it and when my mother-in-law came to visit she got hooked on it! Even when Jackie Calloway from abc Action News came to my house to do segment, she asked what I used in my recipe and where she could find it!

Where to buy the BEST All Purpose Seasoning

I now buy at least 3-4 extra bottles of VooDoo Chef’s Dust whenever I find it in store or when I am ordering it online because my friends and family are always asking for it. I have been using it for years! Chef Erik Youngs, the VooDoo Chef, is a Tampa local who does a lot for the community besides just making amazing barbecue sauces, hot sauces, seasonings, relishes and even a killer Bloody Mary mix, he is also the Lead Instructor of the Culinary Division at Erwin Tech.

So, if you are looking for the one must have seasoning for your pantry…that can replace just about 90% of those other ones that you use a few times a year…Dust is it. I will openly admit that Dust and Peppercorns are basically the whole two seasonings that I buy more than once a year.

I was pondering my December work schedule when my mom texted me this picture adorable picture of cups made from peppermint candies. Isn’t she good at staging??

HOW CUTE ARE THOSE???? I called her immediately. She made peppermint candy shot glasses for my family’s annual Christmas tree hunt and I decided I HAD to make them. Now, she will be filling hers with peppermint vodka or bailey’s but I decided that these adorable peppermint candy cups would make for the perfect “bowls” for dessert too! You all know my love of chocolate and peppermint, so what better filling for these peppermint candy cups than an easy chocolate mousse?

And when I say easy…you will have this chocolate mousse ready in about 5 minutes. Now, the peppermint candy cups…those take a little more effort.

I am not saying that they are hard to make…or that they aren’t worth the effort. Because they are fairly easy to make, and they are totally worth the effort but there is a bit of a science to the timing to make them work. I will openly admit that my first 3 peppermint cups ended up in the trash. I tried to peel them off the parchment paper to early that they were too sticky. When I called to mom to pout, she said that I could re-melt them, but since I kinda destroyed them I didn’t give that a try.

Then my 4th peppermint candy cup melted perfectly and I peeled it off the parchment paper with ease but then I pressed it a little too firming against the shot glass to cool, so when I went to take it off the glass the peppermint candy bowl broke.

Fifth time is a charm 😉 So, from my previous failed attempts I learned:

  1. Allow your melted candies to cool for right around ONE MINUTE on the pan before you attempt to peel them off. If you try to peel them off too soon, it will be a sticky mess. If you try to peel them off much after one minute they will start to harden.
  2. When you place your melted candies over the bottom of the shot glass to form and cool, do not press the candies so tight to the glass that you won’t be able to take it back off.

My mom used 5 candies per peppermint shot glass, I used 7. You place one in the middle, then place the other candies around it, you want them all to be touching so that you don’t end up with any holes in your glass/cup.

How to make Peppermint Candy Shot Glasses

I used parchment paper, my mom did not. I did try it both ways and in my opinion, using parchment paper was indeed easier. After letting the candies cool for the one minute, I picked up the paper and just used my fingers to gently peel the melted peppermints away. If you don’t use parchment paper you have to use a spatula. Which is totally doable, that’s how my mom did it, I just found the parchment paper way easier.

Now, here’s how to make these Peppermint Candy Cups filled with Chocolate Mousse. And if you know me, you know that I will totally be making more and filling them with a delicious holiday liqueur soon 😉

Fill peppermint candy cups with this easy chocolate mousse recipe or your favorite liqueur! Happy Holidays!!

Ingredients

  • Peppermint candies - 7 per every bowl/shot glass you would like to make

Ingredients for Chocolate Mousse

  • 1 box instant chocolate pudding mix
  • 1 container 8oz whipped topping - I used Lite
  • 1 1/2 cups skim milk

Instructions

  • Preheat oven to 300 degrees.
  • Place 2 pieces of parchment paper on a baking sheet.
  • Unwrap peppermint candies.
  • Place one candy in the center and place the other candies around it so that they are touching.
  • Place the two sets of candies into the oven.
  • Bake for 9 - 10 minutes until candies are melted.
  • While candies are baking, make the chocolate mousse.
  • Allow melted candies to cool for one minute, then peel it off the parchment paper gently and place it on the bottom of a shot glass.
  • Do NOT press the candies FIRMLY onto the glass, gently form it. Pressing too hard will make it hard to take it off the glass when it's cool.
  • Prepare another two sets of candies.
  • Before the next set is done, remove the melted bowls from the bottom of the shot glasses and place them on a plate.
  • Repeat as many times as desired.

Instructions for Chocolate Mousse

  • Mix the milk and pudding mix together either by hand or with mixer.
  • Once mixed well, add the whipped topping.
  • Mix well.
  • Refrigerate until ready for use, it will thicken up while resting.
  • Fill peppermint candy bowls with chocolate mousse once they are completely cool and sprinkle with peppermint pieces for garnish if desired.
  • Enjoy!

Notes

I recommend only making TWO bowls/glasses at a time otherwise the others will cool too much and you will have to warm them back up in the oven to get them off the baking sheet.

I made homemade apple pie filling for my mini snickerdoodle apple pies and I realized that the apple pie filling is so good that it deserved a post all on it’s own 🙂 Think ice cream topping, yogurt topping, mixed with granola…or just on a spoon!  Skip the canned store bought apple pie filling and make your own at home in about 15 minutes!

This homemade apple pie filling is very easy to make, I would say that the hardest part is peeling and coring the apples! You need about 6 ingredients to these apple deliciousness as well, and I would bet you have most of them in your pantry right now. So, go ahead and grab them, because this apple pie filling tastes sooooo much better than store bought!

I used Envy Apples in my recipe because they are quite possibly the most delicious apple I have ever tasted.   You can find Envy Apples at Publix, your other favorite retailers, and online.

Equipment

  • Stove

Ingredients

  • 4 medium size apples - I used Envy Apples
  • 2 tablespoons butter
  • 1 tablespoon cinnamon
  • 3 tablespoons water
  • 1/3 cup sugar
  • 1 tbsp water
  • 1 tsp cornstarch

Instructions

  • Peel, core and slice apples. Once the apples are sliced, cut the slices in half.
  • Melt butter and cinnamon over medium heat.
  • Add in apples, sugar and the 3 tablespoons water.
  • Cover and cook stirring occasionally for 6-8 minutes.
  • In a small dish combine cornstarch and water.
  • Add the cornstarch mixture to the pan while stirring and continue to cook until apples are soft and filling is thickened. Approximately 3 - 5 minutes.
  • Let boil for an additional one minute.
  • Let cool. Sauce will thicken as it cools.
  • Enjoy on ice cream yogurt, by itself or in a pie crust!

Notes

If you would like your filling thicker, combine 1 tablespoon cornstarch with 1 tablespoon water. Add a little at a time while the mixture is boiling until you reach desired consistency.

Dessert. I would have to say that it’s my favorite “meal” of the day. Well, does wine count as a meal? If so, it would be very hard for me to pick between wine and dessert as a favorite! So, why pick when you can pair them! You all love my angel food cake desserts, so I decided to make one for the holidays. One of my family’s favorite holiday flavor combinations is chocolate and peppermint, so I made mini peppermint hot chocolate angel food cakes. I paired my mini Peppermint Chocolate Angel Food Cakes with CK Mondavi & Family Cabernet Sauvignon because it is rich and velvety, making it the perfect match for the light and chocolatey angel food cake.

Hot Chocolate Angel Food Cake with peppermint

I used hot cocoa mix because I think just about everyone has hot cocoa mix in their house this time of the year, and I wanted this dessert recipe to not only be delicious, but easy. I used angel food cake mix because it’s light, airy and lower in fat than other desserts. The crushed peppermint give the mini bundt cakes a festive touch as well as great flavor, but if you want extra peppermint flavor you could add a teaspoon of peppermint extract to the cake mix or into the glaze.

I also drizzled melted chocolate over the mini bundt cakes…because well…can you ever have too much chocolate?? I didn’t think so 😉

Easy & Light Peppermint Chocolate Angel Food Cake

Ingredients

  • 3 envelopes of hot cocoa mix
  • 1 box angel food cake
  • 1 1/4 cups water
  • crushed peppermint for garnish
  • melted chocolate to drizzle

Ingredients for Glaze - if desired

  • 1/4 cup powdered sugar
  • 1 tablespoon milk

Instructions

  • Preheat oven to 350 degrees.
  • Blend angel food cake mix, hot cocoa mix and water in mixer.
  • Pour mixture into your mini bundt cake pan. Fill each one about 3/4 full.If you fill it to the rim, it will spill over some, but don't worry about it!
  • Bake for 15 - 18 minutes or until you can stick a toothpick or knife in and it comes out clean
  • Allow to cool in pan for 10 minutes.
  • Flip onto cutting board or something similar.

Instructions for glaze

  • Mix until "glaze-like"
  • Drizzle a small amount on if desired
  • Drizzle with melted chocolate.
  • Top with crushed peppermint.
  • Enjoy!
  • Pair with CK Mondavi & Family Wines

Notes

Add a teaspoon of peppermint extract to the cake mix for an extra touch peppermint flavor.
Be sure to prep the baking pan as directed.
You can use a regular bundt pan, an angel food cake pan, or any other type of pan you desire! You may ust have to adjust the cooking time.

I made these Individual BBQ Chicken Pizzas in about 15 minutes, and I had just about everything already in the refrigerator. We had a rotisserie chicken for dinner the night before and there was some leftovers, so I simply shredded that up, added our favorite BBQ sauce, chopped up a slice of red onion tossed all that on Bays Sourdough English Muffin halves and then sprinkled on some cheese. Sounds delicious doesn’t it?

Ingredients

  • 4 BAYS English Muffins any variety, split, untoasted - I used Sourdough
  • 3/4 cup barbecue sauce
  • 1 cup shredded cooked chicken
  • 1/3 cup shredded smoked gouda cheese
  • 1/3 cup shredded mozzarella cheese
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon chopped cilantro

Instructions

  • Preheat oven to 400°F.
  • Mix barbecue sauce and chicken in medium bowl.
  • Mix cheeses in small bowl.
  • Place muffin halves on baking sheet.
  • Top evenly with chicken mixture; sprinkle with onion and cheese.
  • Bake 12 to 14 minutes or until cheese is melted and lightly browned.
  • Sprinkle with cilantro.
  • Enjoy!

Tip: Store-bought rotisserie chicken is a time-saver in this recipe.

Living With Lung Cancer – There Is Hope

​I remember it like it was yesterday. My dad called me on the last day of school before winter break while I was away at college. I answered the phone in the dorm room and he told me that I needed to come straight home when I was done with my winter break exams. No stopping at the outlet malls to check out the holiday sales and no need to stop and grab something to eat.

I knew something was wrong. But I didn’t ask. I was too scared.

On the three-hour drive home I was a nervous wreck. All sorts of thoughts entered my mind. But when I got off the expressway, I didn’t go home. I drove straight to my grandparents house. I didn’t go to the front door, I didn’t knock. I walked around the back of the house and looked through the living room window. My grandpa sat in his favorite chair all dressed up and my grandma’s hospital bed was gone from the room.

I never went to the door. I never knocked. I never let my grandpa know I was there. I ran to the car and went home. I walked in the door and my dad walked down the stairs in a suit. And I knew. I lost my grandma to lung cancer. The service was that night.

How to Live With Lung Cancer

I know she waited for me. She wanted me to finish up my exams. She wanted me home. I also know that she is still with me today. In my heart, in my soul, in special things that happen that I KNOW she still has a part in.

We lost her too early. She loved to cook, shop, travel and play golf. She was so full of life. Then one day she went to the doctors for a cough that wouldn’t go away. That day changed our lives forever. And it took hers. Too fast. She was too young. She had lots of love left to give. But lung cancer won that battle. My mom lost her mother and my brother and I lost our grandma. We lost a friend, we lost a loved one, we lost a piece of our hearts. Lung cancer won that day.

That was over 20 years ago.   Did you know that in the United States, lung cancer is the leading cause of cancer death among both men and women, accounting for approximately 154,000 deaths each year and about one-quarter of all cancer deaths – more than breast, prostate and colorectal cancers combined?  It’s true.

There are medicines that have been proven to benefit patients with specific types of lung cancer, so if diagnosed, it is critical to understand the details of your diagnosis and talk to your medical team about what treatments are approved to treat your specific type of disease. So, maybe lung cancer doesn’t have to win…not everyday, maybe not today.  It’s time to learn more. Live well.

In recent years, researchers have come to understand important details of how lung cancer grows and spreads. This has led to important new treatment options that treat cancer differently from conventional therapies, like chemotherapy and radiation. Two important types of therapy are targeted medicines and immunotherapies. In later stages of lung cancer, particularly stages 3 and 4 NSCLC, these types of medicines are changing the way cancer is treated.

Join me in spreading the word about Lung Cancer Awareness Month. Encourage others to learn more about their diagnosis, encourage them to LIVE W.E.L.L. An Introduction To Pinot Noir

Pinot Noir is described as a popular red wine and the oldest grape variety used in wine, although it is a difficult grape to grow and deal with in the winery. Pinot Noir is a lighter colored and flavored red wine. The name Pinot Noir is derived from the French words for “pine” and “black.”

Many of today’s most celebrated varieties are relative newcomers to the history of winegrapes. Cabernet Sauvignon didn’t appear on stage until the 17th century. Zinfandel wasn’t known until the middle of the 19th. But some of our most celebrated varieties have ancient roots: Sauvignon Blanc, Cabernet Franc, Syrah, and others.

No winegrape variety compares to Pinot Noir for its ability to shape such a large sector of the modern international wine industry. Its roots are lost in the mists of antiquity. Its name comes from the cluster’s supposed resemblance to a pine cone.

Pinot Noir is, of course, the classic red grape of Burgundy. The pinot noir grape is one of the oldest grape varieties known to be cultivated for the purpose of making wine. It’s got a reputation as one of the most obstinate grapes a vintner could grow. The grape often refuses to pass consistent flavor and aroma profiles on to its offspring. Many of the afflictions known to grapes are common to pinot noir. Despite thriving in cooler climates, it’s particularly susceptible to spring frosts. And if that’s not enough, pinot noir produces thin-skinned grapes that dry out quickly if not picked promptly. Pinot Noir is also notoriously difficult to turn into wine. But it has performed spectacularly in a few microclimates in the U.S. Most notably, Oregon’s Willamette Valley, California’s Santa Lucia Highlands, Santa Rita Hills, Sonoma Coast, and Russian River. An Oregon Pinot Noir from the Eyrie Vineyard bested all Burgundian entries in a celebrated blind tasting in Dijon, France, in 1975.

What does Pinot Noir taste like

Pinot Noir’s Uniqueness

Pinot Noir is one of the most genetically unstable winegrapes in the world. There are more registered clones of Pinot Noir than any other variety—by far. This could be considered a fault, but because of this characteristic, Pinot Noir has been able to mutate into a plethora of other splendid varieties: Pinot Blanc, Pinot Gris, Aligoté, and even the red Gamay Noir, the principle grape of Beaujolais.

Pinot Noir and Chardonnay

Chardonnay, in spite of California wineries’ penchant for labeling their wines Pinot Chardonnay back in the 1960s, is completely unrelated to Pinot Noir. Well, not completely. Recent DNA fingerprinting at the University of California at Davis has determined that the parentage of Chardonnay involves a natural cross between a now-obscure French grape called Gouais Blanc and—Pinot Blanc! So perhaps those old California wineries that called their wine Pinot Chardonnay were inadvertently on to something.

Pinot Noir and “Terroir”

The French have always insisted that the location of a vineyard trumps everything else, including the variety being grown there. So French wine labels (except for Alsace and parts of southern France) name the wine after the appellation, not the variety. You have to know that Eschezeau is Pinot Noir grown in the Eschezeau vineyard. New World winemakers have historically decried that notion and have labeled their wines after the variety, except for blends that carry proprietary names such as “Big House Red.”

We are beginning to learn the truth of that matter. Cuttings from the famed Romanée-Conti vineyard have been planted in several very promising locations in California, the earliest being an effort by André Tschelistcheff in the hills west of Paso Robles in the early 1970s. Another such effort is carried on in the Pisoni Vineyard in Santa Lucia Highlands.

The results have been terrific, but no competition for the original. It’s all about Pinot Noir’s tendency to mutate. It takes on characteristics associated with the very particular terroir in which it’s growing like no other variety. And so Pinot Noir from Adelaida’s HMR Vineyard (Romanée-Conti clone) and Pisoni (Monterey County, Santa Lucia Highlands) have virtually nothing in common in the final product. And neither one bears the faintest resemblance to Romanée-Conti.

When we look back to celebrate the wonderful wine varieties that Pinot Noir has parented, it’s hard not to imagine that these mutations might not be only a thing of the past. Might this distinguished grape continue to bless us with lovely new varieties? Probably not.

Winegrowing today differs from the past in one very important way. Old vineyards almost always contained mixed varieties that allowed cross-pollination. Sports and mutations are always possible, but today’s vineyards are almost always in monoculture and provide little opportunity for vines to interact with other varieties.

While Pinot Noir can be complicated at times, but when this wine works, it works brilliantly. A good Pinot Noir has a complex nose, often with an aroma of ripe grapes and black cherries.

There will often be a hint of spiciness, maybe cinnamon or sassafras. Many tasters will also describe ripe tomato, mushroom, and barnyard. This wine is full-bodied, not heavy, and low in acid and tannins. It’s full in flavor despite its delicacy. When Pinot Noir is done right, people have described it as being like liquid silk.

Next, I have a few words about choosing Pinot Noir. If this is the first bottle you’ve tried, go to the liquor store and talk to people. Liquor store employees are usually knowledgeable enough to help guide a person’s first purchase. Pay attention to the wine’s appellation. This will tell you where the grapes come from.

And just like any other food product, the better the grape, the better the wine. For now, I’d recommend Oregon, Sonoma County Califorina, or New Zealand wines. Stick to wines 2-6 years old as older wines tend to be over the hill.

In selecting a Pinot Noir wine, pay attention to several criteria such as its region, climate, flavor, year, age, food, and price.

By Region

The best quality Pinot Noirs are found in Burgundy, France, as well as California, Oregon, USA, and New Zealand. Other countries that grow Pinot Noir are Australia, Austria, Brazil, Canada, Germany, Greece, Hungary, Italy, and Switzerland.

By Climate

Pinot Noir grape is quite tolerant of the climate with warm days and cool evenings, although it can be richer when it is grown in cooler and more humid climates.

By Flavor

Pinot Noir’s complex aroma has hints of ripe grape, black cherry along with the spices of sassafras, cinnamon, and mint. Its various flavors broadly arrange from fruit (cherry, strawberry, raspberry, ripe tomato), floral (violet and rose petal), spice (rosemary, cinnamon, peppermint), the terroir (mushroom, earth, truffle, leather, meat), herbal (beet, oregano, green tea, black olive), light oak (vanilla, coconut, sweet wood) and heavy oak such as oak itself, smoke, toast, and tar.

By Food

Pinot Noir is best paired with simple and rich foods such as grilled salmon, roast beef, or any dish that features mushrooms as the main flavor element. Other main dishes that match well with Pinot Noir include lamb, pheasant, and duck. It also pairs well with vegetables and baked or grilled chicken.

By Price

Acacia Pinot Noir, Carneros about $27
Aromas of bright red cherry and cinnamon spice are followed by flavors of dark, complex fruit with a lilt of decaying leaves and mushroom/mineral.

Bouchaine Pinot Noir “Gee Vineyard” Carneros, Napa Valley about $88
Spiced inspired aromas of black cherry and mineral, and then there are flavors of cheerful red and black cherry, licorice, strawberry jam, complex spice, and beautiful mineral elements.

Castle Rock Pinot Noir, Russian River about $10
Fruit forward aromas of strawberry jam and lots of spice, then flavors of very ripe strawberry and red cherry with a touch of cinnamon followed.

Fresh Vine Pinot Noir, Califorina, about $20
Floral on the nose (think rose petals) along with dark cherry and baking spices. This ruby red wine is medium-bodied with light acidity. Fresh Vine Wine is also low sugar and low carb.

Obviously you can very different price points for this red wine, taste before you buy whenever you can. Some liquor stores offer wines by the glass, so customers don’t have to suffer through a whole bottle of wine they’re not going to enjoy. Wine can be expensive for that sort of trial and error.

When you get right down to it, experiment as much as is practical. And don’t worry if you get the occasional bottle that doesn’t work for you. Not every wine will amazing. Just ask lots of questions and try new wines whenever you can. As long as you surround yourself with knowledgeable people, you’ll have a long and rewarding relationship with this delightful red wine.

Is there anyone out there that can spread Christmas magic quite like Walt Disney World? I don’t think so. Children young and old can delight in the magic that surrounds the ironic castle on Main Street and all throughout the park over the holidays. You will experience everything from snow fall to “ice” to all the characters that you have grown to love. We have had the opportunity to attend the Magic Kingdom Very Merry Christmas Party on a few occasions, so I wanted to share a few tips that will hopefully make your visit extra magical.

Tips For Visiting Mickey’s Very Merry Christmas Party:

  1. Buy your tickets early – This event is magical and the world knows it! Buy your tickets early to insure you get your place in the Christmas magic. Dates do indeed sell out. Mickey’s Very Merry Christmas party does require a separate ticket, it is not included in regular park admission.
  2. Get there early – The party starts at 7, but you can get in as early as 4 p.m. as long as the park isn’t at maximum capacity. Starting at 6 p.m. the other guests will start to leave and the park with soon be for just for the Very Merry Christmas Party goers.
  3. Don’t miss the castle transformation – This happens at 6:15. It is magical. Enough said.
  4. Look at the event schedule – There are dance parties with Polar Bears, Christmas parades, fireworks and performances going on all night that you won’t want to miss. Learn more HERE.
  5. Plan to visit with your favorite characters – Princesses, princes and all your beloved Disney characters will be scattered throughout the park waiting to spread some Christmas joy and take pictures.
  6. Ride the rides – Since the amount of guests are limited for this event, you will find that ride waits may be a little less. We got on the new Mine Ride in just 30 minutes without the Fast Pass!!
  7. Take advantage of the free treats – There are quite a few locations around the Magic Kingdom that offer free cookies, hot cocoa and water.
  8. Plan to stay late – If you want to see everything and relax and enjoy yourself, you won’t be leaving early. So plan for that.
