Easy & Light Peppermint Chocolate Angel Food Cake
Dessert. I would have to say that it’s my favorite “meal” of the day. Well, does wine count as a meal? If so, it would be very hard for me to pick between wine and dessert as a favorite! So, why pick when you can pair them! You all love my angel food cake desserts, so I decided to make one for the holidays. One of my family’s favorite holiday flavor combinations is chocolate and peppermint, so I made mini peppermint hot chocolate angel food cakes. I paired my mini Peppermint Chocolate Angel Food Cakes with CK Mondavi & Family Cabernet Sauvignon because it is rich and velvety, making it the perfect match for the light and chocolatey angel food cake.
I used hot cocoa mix because I think just about everyone has hot cocoa mix in their house this time of the year, and I wanted this dessert recipe to not only be delicious, but easy. I used angel food cake mix because it’s light, airy and lower in fat than other desserts. The crushed peppermint give the mini bundt cakes a festive touch as well as great flavor, but if you want extra peppermint flavor you could add a teaspoon of peppermint extract to the cake mix or into the glaze.
I also drizzled melted chocolate over the mini bundt cakes…because well…can you ever have too much chocolate?? I didn’t think so π
Now, here is my Easy & Light Peppermint Chocolate Angel Food Cake recipe, be sure to Print It and Pin It so that you can make it again and again.

Ingredients
- 3 envelopes of hot cocoa mix
- 1 box angel food cake
- 1 1/4 cups water
- crushed peppermint for garnish
- melted chocolate to drizzle
Ingredients for Glaze - if desired
- 1/4 cup powdered sugar
- 1 tablespoon milk
Instructions
- Preheat oven to 350 degrees.
- Blend angel food cake mix, hot cocoa mix and water in mixer.
- Pour mixture into your mini bundt cake pan. Fill each one about 3/4 full.If you fill it to the rim, it will spill over some, but don't worry about it!
- Bake for 15 - 18 minutes or until you can stick a toothpick or knife in and it comes out clean
- Allow to cool in pan for 10 minutes.
- Flip onto cutting board or something similar.
Instructions for glaze
- Mix until "glaze-like"
- Drizzle a small amount on if desired
- Drizzle with melted chocolate.
- Top with crushed peppermint.
- Enjoy!

Notes
Be sure to prep the baking pan as directed.
You can use a regular bundt pan, an angel food cake pan, or any other type of pan you desire! You may ust have to adjust the cooking time.
