We have all been there. That moment when you look at the clock and you realize it’s 5 o’clock and you haven’t even thought about dinner yet. Seriously, wasn’t it just noon? You look in the refrigerator to see what you can come up with and the first thing you see is the Bays English Muffins. Aren’t English muffins just for breakfast though? Nope. English muffins are great any time of day and Bays chefs are proving the versatility of English muffins with creative recipes like Bacon, Beer & Cheddar English Muffin Wedges, sandwiches, pizzas, melts, paninis, and even burgers.
I made these Individual BBQ Chicken Pizzas in about 15 minutes, and I had just about everything already in the refrigerator. We had a rotisserie chicken for dinner the night before and there was some leftovers, so I simply shredded that up, added our favorite BBQ sauce, chopped up a slice of red onion tossed all that on Bays Sourdough English Muffin halves and then sprinkled on some cheese. Sounds delicious doesn’t it?
All you have to do it bake it for about 13 minutes at 400 degrees and then enjoy! You and the family will love it, and no one has to know it took you less than 30 minutes to make these BBQ Chicken Pizzas 😉

Individual BBQ Chicken Pizzas - Easy Meal Idea
Ingredients
- 4 BAYS English Muffins any variety, split, untoasted - I used Sourdough
- 3/4 cup barbecue sauce
- 1 cup shredded cooked chicken
- 1/3 cup shredded smoked gouda cheese
- 1/3 cup shredded mozzarella cheese
- 1 tablespoon finely chopped red onion
- 1 tablespoon chopped cilantro
Instructions
- Preheat oven to 400°F.
- Mix barbecue sauce and chicken in medium bowl.
- Mix cheeses in small bowl.
- Place muffin halves on baking sheet.
- Top evenly with chicken mixture; sprinkle with onion and cheese.
- Bake 12 to 14 minutes or until cheese is melted and lightly browned.
- Sprinkle with cilantro.
- Enjoy!

Just think of all the different ingredients you can add to your individual pizzas, get creative with your Bays English Muffins! I want to add some apples or pears to a pizza…maybe drizzle on some balsamic…YUM!
Don’t get me wrong, I still LOVE having an English muffin for breakfast with a little butter and Maple Syrup Sugar, or on the weekends as the perfect breakfast sandwich with eggs, cheese and a sausage patty, but adding English muffins to the lunch and dinner menu makes meal time a bit easier and a lot more delicious.
