What if you don’t have the time to chop up the extra veggies? What if your friends just pop over on a beautiful summer afternoon to say HI and 2 hours later you need to serve up a quick snack?

Ingredients

  • Flour Tortillas - I used the smaller size
  • Wholly 100% Chunky Avocado minis
  • NatureFresh Farms Greenhouse Tomatoes - sliced
  • 1 tablespoon of corn - I used canned corn
  • 1 tablespoon of black beans - I used canned black beans
  • Fresh cilantro
  • Litehouse Homestyle Ranch Dressing

Instructions

  • Preheat oven to 400 degrees
  • Lightly brush EVOO on tortillas
  • Place on a baking sheet and bake for 3 - 5 minutes until crispy
  • Remove from oven and let cool for a minute or two

Back To School Checklist For Parents

Back To School time is quickly…and I mean QUICKLY approaching. Are you ready? I know that I am getting phone calls from the kids’ school just about daily now giving me reminders and constant updates with where the kids need to go on the first day, when schedules will be ready and where to find the dreaded back to school shopping supply list.   1. Get and Review Class Schedule(s) – Our school has two dates for when parents and students can come in and get their schedules. If you don’t know your dates yet – call the school or look on their website!
  2. Buy school supplies – Before my kids were even out of school, the Back To School supply list was already posted! Mind you, I just barely looked at the list a few days ago…BUT it was there 😉
  3. Back To School Clothes and Shoes Shopping – Source the sales and deals because I can promise you that the kids grew this summer and there are things in their drawers that definitely don’t fit anymore. And that includes shoes….I don’t think my kids have had on a pair of sneakers since school got out!
  4. Walk The School – Most school allow parents and kids to walk to school, and even your child’s class schedule before school starts so that kids are a little familiar with where to go and what to do…and where the lunch room is on the big day.
  5. Organize School Supplies – This is another big task, once you have everything bought, organize everything according to class. And be sure to do this for each child 🙂
  6. Get the House Ready – It’s time to review where back packs get hung, where lunch boxes go and when lunches are made.
  7. Plan After School Activities – Schedule when homework is supposed to be done and review sports’ schedules.
  8. Set Goals – Start the school year off with goals. Your child should make their own, with a little guidance from you. Is there a class they need to work harder in? Is there a sport they want to try out for? Is there a certain amount of books they would like to read?

Camping Essentials | What To Pack For A Camping Trip

Summer is all about spending time with family and friends and enjoying the outdoors. Every summer we camp with family…in fact, most years there are over 30 of us that make the trip from all over the country so that we can all get in some quality family time together!  We have actually been doing this family camping trip for over 30 years now, I drive from Florida to Michigan to make sure we don’t miss out on the family fun.

Camping trips make great memories, whether it’s a college group or a family, getting out and enjoying nature is always fun and will be remembered for years to come.

Of course, the region of the country that you’re planning to camp in is important in helping to decide what tips are good for an improved camping experience. The best rule of thumb for beginners is the old Boy Scout motto to “be prepared.” Be prepared for the activities that you want to do while camping and the events most likely to occur that could ruin your camping trip. Here are a few good tips to help beginners prepare for a great camping trip.

First of all, make sure to take enough food and water for the proposed length of the trip. Make sure to include all the necessities for meal preparation such as campfire grill rack, cooking utensils, pot holders, plates and cups, storage bags, spices, and all the things necessary for preparing planned meals. Make sure to bring enough drinks and water, unless there is drinkable water available at the campsites. Coolers should only be half full of food, leaving sufficient space left to ice down properly for safe food storage. You don’t have to worry about this one if you are traveling in a RV, since they have refrigerators, just make sure it’s on 😉

A sharp kitchen knife and cutting board are considered mandatory, also long reach tongs and spatula are both suggested for cooking over a hot campfire. A campfire ring is often required for building campfires in many areas and is usually provided in most official camping areas. A simple one can be made by placing rocks or brick in a circle around the campfire. Some places here in Florida, like the Disney’s Fort Wilderness Campground, don’t allow campfires. Read the posted rules for the area you plan to camp at, for a safe and hassle-free stay.

Next, consider your sleeping environment, taking into consideration the region of the country and the weather expected during the trip. Make sure that your tent is sound without major rips and tears, and that all required tent poles and stakes are still available. Since weather is always subject to change, it’s usually recommended to bring a large tarp to set up over your tent to act as a waterproof barrier over your tent.

Some nylon rope and a few tent stakes can be used to securely establish this tarp as a rain roof over your tent, or it can be used to shade the eating area from direct sunshine if rainfall is unlikely. Most tents are not waterproof and will leak in heavy rainfall, which can ruin a camping trip if you aren’t properly prepared.

Enough sleeping bags or comforters for everyone to sleep on or in, with just sheets for covers in hot conditions, is of the utmost importance. Although camping is called roughing it, sleep is still important for everyone’s well-being and enjoyment. Older campers, those with back problems or anyone that prefers to be a bit more comfortable may want to consider bringing an air mattress with a built-in air pump. This small investment in a good night’s sleep will be money well spent to ensure you are ready physically and mentally for hiking, fishing, or whatever day activities are planned.

If you really want to rough it with a primitive camping venture, get experience first, to know what required limited essentials are to be taken on this type of camping trip.

Other required essentials for a fun camping trip include enough flashlights and good batteries for most adults to have their own flashlight. It’s also recommended to have several lanterns; one bright one for the outside camping area and a smaller version for inside the tent is plenty.

A propane gas camping stove with extra gas tanks is necessary for cooking in case of insufficient or wet firewood due to rainfall. Even with a good campfire, this camp stove allows you to cook coffee or soups without slaving over a roaring campfire. A campfire rack that can be set up over hot coals or at the edge of the fire is another essential for cooking to most experienced campers. Eating good food cooked over an open campfire is one of the great joys of camping, so make sure to have all the necessities for a functional “camp kitchen” is mandatory.

One more thing to consider is camping tools needed; a good sharp hunting knife, a hatchet or an ax, and a small camp shovel are the bare essentials for any camping trip that includes campfires. A good walking stick can be found at your campsite for those who enjoy hiking and used to chase away any unwanted animals.

Another thing to mention for preparing for an enjoyable camping trip is to have a well-stocked first-aid kit. A kit that includes the essentials, such as antiseptic, Band-Aids, anti-itch cream for insect bites, aspirin, rubbing alcohol, and a burn ointment, is a good start. Other items that should be considered for inclusion are sunblock, insect repellent, maybe even a snake bite kit.

Planning for possible problems in the outdoor environment is part of making the overall trip good, in spite of minor difficulties. A wise man prepares for unseen problems. Experience in the outdoors and various camping environments will help to ensure that your camping equipment and supplies are sufficient to make it a memorable trip.

We love camping and since we have been doing it for so long, I thought I would share a list for camping essentials that I always make sure we have when we go on a camping adventure.  Hopefully it will help you out the next time you load up the car for a road trip!

What to pack for a camping trip

Here is Your Camping Essentials Checklist:

  1. Tent or something to sleep in (we have a RV). This may seem obvious, but it is definitely your #1 essential for camping!
  2. Air mattress or something to sleep on. Thankfully we have beds!  When you are packing for a camping trip, there are a lot of things going on and it actually pretty easy to forget a sleeping bag or air mattress, so be sure to double check before you head out.
  3. Blankets and Pillows.  We have forgotten pillows countless times!  As they are normally sitting on your bed at home, it’s an easy one to not think about, but blankets and pillows definitely have to be on your camping essentials list.
  4. Flashlights and/or Lanterns.  When it gets dark, the only light you will have will be the stars.  While I love star gazing, it’s a must to have a light so you can see where you are going and what you are doing after the sun goes down.
  5. Bug Spray.  When you are enjoying the outdoors, the bugs and insects are usually too, be sure to have bug spray when you pack for your camping trip so that you don’t end up itchy and miserable.
  6. Campfire Supplies or know of a local place you can get wood. And be sure to bring a lighter!  Campfires are one of my favorite things to do while camping.  There is nothing quite like sitting by the fire to stay warm and enjoying a s’more or two with friends and family.
  7. Plates, plastic ware, something to cook with (pots/pans). Eating is definitely a camping essential, so make sure you have something to cook with and put all those campfire eats on.
  8. Something to cook ON…grill is always nice if you have the room!  Otherwise a campfire works 😉
  9. Food, snacks, drinks and water.
  10. Clothing (pack for all weather conditions), pjs, swimwear.  When we are camping up in Lake Leelanau Michigan, the temperatures can easily go from 80 degrees during the day to 50 degrees at night, so make sure you pack clothes for everything!
  11. Sun protectionSunscreen, sunglasses, and hats.  No one likes to be sunburn, plus it’s not good for you!
  12. Toiletries.  Yes, tell the kids that they still have to brush their teeth while camping 😉
  13. Games – We bring board games, cards, corn hole and ladder ball.  While we love exploring the outdoors, sometimes having games on hand helps keep you and the kids away from technology for an extra few minutes.  I also created fun camping game printables that you can bring along on your camping trip that can keep the kids entertained in the car or at the campsite.  It’s 5 pages of fun!

The only way to keep all of us boating, skiing, tubing, swimming, biking, playing corn hole, sitting by the campfire, enjoying everything that camping has to offer and just getting in all that quality family time is by having easy snacks ready to go at a moments notice.  No one wants to stop having fun because it’s time to make something to eat. That’s why when I pack for our camping trips I make sure I have all our favorite NABISCO products, like Family Size OREO Cookies, Family Size RITZ Crackers, and SWEDISH FISH.

I made sure I had the Family Size RITZ Crackers when it was time to enjoy tasty impromptu appetizers because there is always a large group of us. We made crab dip with leftover crab from crab legs, we had a yummy cheese dip with jalapenos, and smoked whitefish pate…all were perfect on a RITZ cracker.  Just because your camping doesn’t mean you can’t eat delicious foods!  Honestly, I think we eat better when we are camping than we do at home sometimes 🙂

Pizza is one of my favorite food groups.  I love putting all sorts of fun toppings on mine, from pineapple to hot peppers to BBQ sauce and chicken to blackened steak and blue cheese, but a tried and true pizza that my husband and I both love is a Margherita Pizza. Pizza Margherita is so simple yet so flavorful. The fresh mozzarella blends perfectly with the pizza sauce and the fresh basil is deliciously aromatic with a scent of pepper and the taste is sweet but savory. Like I said, Margherita Pizza is simply delicious.

Especially when you grill it! Have you grilled pizza? I know your first thought may be to turn on the oven, but once you make a grilled pizza you will never look back. Grilling a pizza will give you that crispy crust you long for, perfectly melted cheese, the best tasting toppings and a slightly smoky flavor. Plus, it’s actually really easy!

Using a pizza stone makes it really easy in fact, the pizza stone helps you get that crispy crust because it absorbs moisture while cooking.

Here’s how to grill your pizza using a pizza stone:

Place your pizza stone on grill – Warm it up on medium heat with the lid closed. Leave the pizza stone for at least 30 minutes. You will cook your pizza at a high temperature, so let the grill get up to 500 – 550 degrees. You want it over 425 degrees for sure!

Prep your pizza toppings – While the grill and pizza stone are warming up, get your toppings ready. For a Margherita Pizza you will need your favorite pizza sauce, slices of fresh tomato, fresh mozzarella, and fresh basil.

Make your pizza – Shape your pizza dough and place it on a plate or paddle with a bit of flour underneath to prevent it from sticking. We bought our pizza dough in the bakery section at our local grocery store, it was already rolled out for us and everything! Top with sauce and all your goodies.  If you are making a Margherita Pizza too, save the basil for the end!

Cook your pizza – You can dust the pizza stone with a little cornmeal, this will help to prevent the dough from sticking, then gently transfer your prepped pizza onto your warm pizza stone by sliding it on. Close the lid and let your perfect pizza cook for about 10-12 minutes or until the crust has browned and the cheese is nicely melted.

Enjoy – Once your pizza is ready, remove it from the stone using a paddle. You can leave your pizza stone on the grill ready to cook the next one or if you’re done, let it cool down with your grill. Don’t forget that it’s HOT, don’t touch it!!  Now is the time to add that fresh basil and enjoy your grilled pizza.

Best Homemade Margherita Pizza

Now that you know how to grill your pizza to perfection, here is my Margherita Pizza Recipe. It’s simple, yet full of flavor. This is by far one of our favorite pizza recipes.

Grilled Margherita Pizza Using a Pizza Stone

Ingredients

  • Store bought pizza dough
  • 1 jar of your favorite pizza sauce
  • 1 fresh tomato
  • 8 oz fresh mozzarella
  • fresh basil
  • olive oil

Instructions

  • Place your pizza stone on grill - Warm it up on medium heat with the lid closed. Leave the pizza stone for at least 30 minutes. You will cook your pizza at a high temperature, so let the grill get up to 500 - 550 degrees. You want it over 425 degrees for sure!
  • Prep your pizza toppings - While the grill and pizza stone are warming up, get your toppings ready. For a Margherita Pizza you will need your favorite pizza sauce, slices of fresh tomato, slices fresh mozzarella, and fresh basil.
  • Make your pizza – Shape your pizza dough and place it on a plate or paddle with a bit of flour underneath to prevent it from sticking. Top with sauce, slices of cheese and slices of tomato. Save the basil for the end!
  • Cook your pizza – You can dust the pizza stone with a little cornmeal, this will help to prevent the dough from sticking, then gently transfer your prepped pizza onto your warm pizza stone by sliding it on.   • Top your pizza with fresh basil, you can cut it into small pieces or leave the leafs whole.
  • Drizzle with olive oil if desired, we used a herb infused extra virgin olive oil on ours
  • Enjoy!

As you can see I paired our Grilled Margherita Pizza with CK Mondavi & Family’s Pinot Grigio. Since a Pizza Margherita is delicate, you don’t need a bold red to accompany it, the light and fruity Pinot Grigio is perfect as the pizza and the wine compliment each other nicely. Pizza that is topped with a rich tomato-based sauce, tomato, or such fresh herbs as basil, oregano, and parsley pair fantastic with fruity, rich wines with mild tannins. This is because the acidity in the tomatoes works well with the wine’s fruit notes and balances out the tannins. If you want to try a red wine, I recommend trying Barbera, a medium-bodied red from Italy’s Piedmont region.

An Introduction To Bordeaux Wine

While there are red Bordeauxs and white Bordeauxs, the name is usually associated with the red wine blend, in fact over 90% of Bordeauxs are red.  Red Bordeaux is a wine that is made from blending Merlot and Cabernet Sauvignon together.

Bordeaux wine is from Bordeaux, France and are medium to full-bodied red wines. You will find aromas of plums, black currant, and earthy notes of gravel. With your first sip you will experience the dark fruit and mineral notes that lead into mouth-drying tannins. The tannins in Bordeauxs are often high enough that wines can age for decades.

Store Bordeauxs below room temperature, around 65 °F, in fact, you should store all your red wines below 65 °F. Before serving this wine, you should decant it or at least open it and let it breathe for 30 minutes before pouring.

You will find that Red Bordeaux is actually a fairly affordable red wine, much less than some Cabs. You can spend $25–$30 for an excellent bottle of Bordeaux.

Most red wines pair well with meat and Bordeaux is no different, however you do want enough fat to counteract high levels of tannins. Here are some meats that will pair nicely with a Red Bordeaux; venison, pork roast, beef brisket, duck, dark turkey meat and steak.

Introduction To Bordeaux

History of Bordeaux Wines Classifications

It all started when Napolean III decided that France needed a classification system for Bordeaux’s wines. The classification system would be designed to rank the best of Bordeaux’s wines and would be applied in time for the 1855 Exposition Universelle de Paris. Wine brokers then ranked the wines by quality – with first growths ranked as high, and fifth growths ranked as low. The brokers based their decisions on a chateau’s reputation and trading price.

First Growth Classified Clout

Since then, this ranking system has largely determined how much money Bordeaux chateaus could charge for their wines and set up an advantage for those chateaus who had the money and clout to market their wines.

The favored first growth chateaus of Medoc, a region of Bordeaux:
Chateau Lafite-Rothschild
Chateau Margaux
Chateau Latour
Chateau Haut-Brion
Chateau Mouton-Rothschild (which was upgraded from second to first growth in 1973)

These first-growth Bordeaux represent some of the most expensive wines on the planet.

Bordeaux Wine Critics

Peter M. F. Sichel, the owner of Fourcas-Hosten, a Cru Bourgeois Supérieur in Listrac, states: “The old system has held up pretty well, though any objective examination would not assign, in a number of cases, the same numerical classification to the classified growths today.”

He goes on to say that, “The classified growths are still the best wines, with very few exceptions, made in the Médoc, as they were in 1855,” Sichel says. “There should also be a periodic reassessment of the classifications, to enable some Cru Bourgeois to move up, and classified wines that have deteriorated to move out.”

According to New York Times, Americans buy by the numbers, and the numbers he refers to are the critic’s numbers. He muses that for the next 150 years, scholars can decide if the 1855 classification system influenced wine guru Robert Parker’s 100 point grading system.

A Bit About The Complex Wine Ranking System

There are many who believe the system is in need of a complete overhaul, or at the very least, tweaked a bit.

One of the problems is that the system has evolved into an exceedingly complex tangle of wine classifications that often leaves the average wine consumer baffled. Currently, around 7000 winemakers use over 12,000 chateau names to classify their wines.

The government is trying to simplify the complex labeling system and make it easier for the consumer to understand. Winemakers in Bordeaux have been told to stop using several different chateau names for the same wine that has been bottled at the same property.

A spokesperson for the Federation des Syndicats des Grands Vins de Bordeaux (FGVB) stated that “A chateau may use only one name, with the possibility of a second if it can be proved it was in use before 1983.”

Many winemakers want to use premier chateaus labels on their Bordeaux wine because it would bring them more prestige and more money.

What’s the difference between Bordeaux and Napa Valley Cabernet Sauvignon?

While France arguably grows the best oak for winemaking, it was California that pioneered the use of new French oak barrels, probably due to the explosion of new wineries in the 1970s and the years following. Most Bordeaux wineries were already established by then and were filled mostly with older barrels, adding new barrels as the winery expanded.

The Role of Oak in Fine Cabernet Sauvignon

Napa Valley wineries quickly understood the singular contribution that new French oak barrels make to the complex palette of flavors and aromas possible in a Cabernet Sauvignon. New oak imparts a secondary spectrum of aroma and flavor to the inherent characteristics of the wine: spice, vanilla, clove, mushroom, leather, tobacco, cedar, chocolate, coffee, etc. It may have been these very characteristics that helped propel Napa Valley Cabernet to its historic triumph over the great growths of Bordeaux in the celebrated blind Judgment of Paris tasting in 1976.

Traditional Bordeaux Style

Established understanding of red Bordeaux wines, whether left bank (Médoc) or right bank (St. Emilion, Pomerol), characterizes these wines as lean, tannic upon release, moderately light on the palate, and requiring long aging to fulfill their great potential. The best examples often require 20 years to fully develop, and all are very long-lived and sturdy. They do not show particularly well upon release and, after a few years, may enter a “dumb” stage during which the fresh fruit flavors are transformed into the “Bordeaux nose,” most often characterized by their signature strong cedar and cigar box aromas. When mature, these wines are typically beautifully layered, offering a complex mix of alluring aromas and flavors along with softened tannins and the aromatic benefits of extended bottle age.

Traditional Napa Valley Cabernet Style

When Americans discover a new good thing, they tend to overdo it. So traditional Napa Valley Cabernet Sauvignon has often been overly subject to the contributions of new oak. The climate here is warmer and steadier, leading to higher sugar levels at the point of optimum ripeness. So Napa Valley Cabernet, while starting out with alcohol levels similar to their French counterparts, has abandoned the 13% standard in order to achieve riper, more flavorful fruit. Traditional Napa Valley Cabernets are strongly fruit-driven, voluptuous, mouth-filling wines that have a slightly sweeter aspect than French Cabernets. Alcohol levels have risen as high as 15%. These wines are delicious as stand-alone pleasures or with very aggressive food courses.

The Effects of Globalization

The world has shrunk. Regional differences are being diluted or even erased in today’s world of widely available data, wine reviews, swapped technologies, and instant communication. The French have learned from the Americans, and the Americans have learned from the French. The result? What was once very clear distinctions between red Bordeaux and Napa Valley Cabernet are becoming blurred. French wines are rising in alcohol levels, now averaging a full point higher than in the past. They are gaining in richness and are much less austere upon release. Napa Valley Cabernets are now beginning to mimic the aroma and flavor profile of Bordeaux as a result of judicious blending and an increasingly refined understanding of the role of oak. The upshot is that today’s Napa Valley Cabernets may be the finest ever made.

Bordeaux vs. Napa: Pricing

The finest red Bordeaux from a great recent vintage is now approaching $2,000 a bottle. Napa’s Screaming Eagle is bringing a comparable $1,800. The more affordable second and third-tiered wines are also priced similarly at $50-90. And these wines may score almost as high as the top choices. There are bargains in the Second Growth wines (Leoville, Pichon-Longueville, Ducru-Beaucaillou, etc.).

These beauties are available in the $150-350 range—a considerable bargain compared to the First Growths. Bordeaux reds below this classification are often in the $50—75 range. Comparable Napa Valley Cabernets are typically around $50, and there are some spectacular bargains available in the current economic climate.

Living in Florida we have some of the most beautiful beaches in America. There’s nothing quite like the sun shining down, sand in between your toes, and cooling down in the water. But a beautiful day can end up being a really bad one if you head out and you forget the beach must haves!

I have packed for Beach days on numerous occasions, and I have definitely forgotten a few must haves in the past, and it always ends up with us having to leave early, sunburned, or starving! So I thought today I would share my top things that you have to bring with you in your beach bag! Now, I do usually end up going with kids, but I think this list pertains to you either way!

So, the next time you are ready to relax in the sun, be sure to have all of these beach day essentials with you.

What to bring to the beach

What To Pack When You Go To The Beach:

  1. Swimsuits – If you aren’t wearing them to the beach, make sure they are in your beach bag!
  2. Beach Bag – I recommend one with various pockets so you can find your keys and phone when you need them without having to dump out the whole bag.
  3. Gallon size ziploc bags or plastic grocery bags – To protect your phones, keys and money from getting sandy and wet. Plus, they are great for putting wet swimsuits in on the way home.
  4. Towels – For laying out or drying off.
  5. Blanket/Sheet – For something to relax on when it’s snack time or time to relax.
  6. Sunscreen – And more sunscreen, and be sure to grab the SUNSCREEN! I always bring spray and face sticks, and don’t forget to reapply!
  7. Protective Clothing/Hat – Swim shirts or always a good idea when your skin needs a break from the sun. My husband won’t go to the beach without his. Hats protect your ears, face and eyes, be sure everyone has one!  Learn more about Sun Safety For Kids.
  8. Sunglasses – Don’t forget a pair for you and the kids.
  9. Shade – If you plan on being there all day, it doesn’t hurt to bring a small umbrella that you can stick in the sand or a beach tent. We actually sat in our beach tent one time when it started to rain and had our lunch until the rain blew over.
  10. Snacks – You and the kids are bound to get hungry at some point. I suggest healthy snacks like Concord Fresh Success freeze dried veggies, apples, sandwiches, trail mix, etc. Don’t forget to cut up your sandwiches, you probably won’t have a knife with you on the beach, plus bite-size is always better as the kids will probably only come in from the water for a quick bite then be off again.  An easily portable salad is a good option too.
  11. Water – Stick a few bottles in the freezer the night before you go to the beach so they stay cold longer. Plus, you can put them in your cooler with snacks and they act as ice packs.
  12. Cooler – You need something to put those snacks and water in!
  13. Radio – A small portable radio or make sure you have Pandora or iHeartRadio on your phone so you can enjoy some tunes if you would like to.
  14. Book or Magazine – Some light reading material to enjoy while you are relaxing.
  15. Chairs – We always bring a few camping chairs with us, they are easy to carry and fold up nicely.
  16. Toys – A few sand toys, a frisbee and maybe a football are always a good idea.  My son loves to bring his kite to the beach.
  17. Something to float on – The kids like to bring their boogie boards, some like to bring floats.
  18. $20 – Just in case.
  19. Something to carry everything in – Wagon or a beach cart. We have a Wonder Wheeler and LOVE it, it holds our chairs, small cooler, toys, and bags.
  20. First Aid Kit – It’s never a bad idea to be prepared. Cuts and scrapes happen.
  21. A jug of water or baby powder to keep in the car – To help get rid of the last of the sandy feet before you get in the car.
  22. Change of clothes – I usually just grab the kids’ pjs! It makes for a dry, sand-free, comfortable ride home.

Beach Safety Tips

A day at the beach can create happy memories for your kids but it can also end in tragedy if you are not careful.

  • Have you ever noticed how hard it is to walk straight forward towards the ocean? The motion of the water seems to pull you in its direction. Imagine your young child doing the same thing and ending up a ways down the beach and out of your sight. It happens every year! One minute they are building a castle and the next they are in the water. Always keep an eye on your child when at the beach.
  • The sun and its heat can also be another danger. You should ensure everyone drinks plenty of fluids. Use sunscreen appropriate for each age and skin type. Wearing hats will help avoid sun stroke and go into the shade or inside where there is air conditioning often to cool off. Sunstroke happens quickly and before you know it, you are sick for the night and maybe the next day. You can even end up in the hospital, depending on its severity.
  • Some beaches also might have rip currents. These are very dangerous especially to young children. They cause many drownings every year. Teach your child not to panic if they get pulled under. Just go with the current and hopefully they will be okay. This is hard because it is your natural reaction to panic when something has a hold of you. A life jacket will certainly help in this situation. If they do get into trouble tell them ahead of time to wave for help.
  • Don’t depend on the lifeguard to watch your child for you.
  • If you are at the beach and you have more than one child, make them stay together. There really is safety in numbers. If one of them gets into trouble, the other one can call for help. Never swim alone and don’t consume alcohol while you are in the water or plan to be. It is a dangerous combination.
  • Always abide by the beach signs. If they say the tides are too strong or there are other dangers posted, stay out of the water. They put up the signs for a reason. Don’t take the warnings lightly.
  • Pack your drinks in plastic containers or bring frozen juice boxes. Do not bring glass on the beach. If it breaks it will end up in someone’s foot. Common sense is really your best defense for ensuring a great day at the beach. 

If you are cautious and pay attention to your surroundings, you will have a great day at the beach. Sign up for some surfing or other lessons with your kids and that will ensure you stay together and enjoy a fun day at the beach!

I think coleslaw is an under-appreciated dish. You see coleslaw as a side dish at many summer parties, BBQs and picnics, but it is also one of my favorite “condiments”. Coleslaw is delicious on fish tacos, burgers, and even sandwiches!

I love adding mango to my coleslaw, it gives it a touch of sweetness and some added texture. Making coleslaw is as easy as 1-2-3! I mean, seriously, it’s quite possibly one of the easiest dishes to make. It’s also very inexpensive to make. For my coleslaw recipe I used Concord Foods Fresh Success Original Coleslaw mix, mayo, a bag of coleslaw and a mango. You can grab the Concord Foods Fresh Success Original Coleslaw mix in the produce department of your favorite grocery store for around a buck, a bag of coleslaw is usually under two bucks, you can get mangoes on sale for around a buck and if you have mayo in the refrigerator at home you can make this whole dish for under $4! Simple, delicious, tasty and inexpensive…I’m in!

  • Add the pre-shredded coleslaw to a large bowl
  • Stir in the mayo mixture
  • Sprinkle on the diced mango
  • Cover and refrigerate for approx 30 mins or until ready to enjoy!
