Is there ever a bad time for a margarita?  Not that I can think of 🙂  But, your traditional margaritas are loaded with calories, so I will admit that I typically avoid them.  So, with Cinco de Mayo right around the corner and with my love for making wine cocktails, I decided to make my very own Winearita.  This Margarita Cocktail has lots of flavor, a tad less tequila (so you can have more than one without…well, you know the song..1 tequila, 2 tequila, 3 tequila…floor), and less calories than your traditional margarita mix.

As you can tell by the name, I added wine to my margarita cocktail, I used CK Mondavi and Family Sauvignon Blanc because it’s refreshing citrus notes would pair perfectly with the orange and lime juices and… I had a bottle open after making my white wine vinaigrette 😉

Wine A Rita Cocktail

This Margarita Cocktail is a tad different than your traditional margarita...it has wine in it! Making it a light, yet delicious wine cocktail with a fun margarita twist. Make yourself a WineARita today, cheers!

Ingredients

  • 1 oz. silver tequila
  • 1 oz. Sauvignon Blanc - I used CK Mondavi and Family
  • 1 oz. fresh lime juice
  • 1 oz. orange juice
  • 2 - 3 oz. ginger beer cold
  • Lime wedge for garnish
  • Ice cubes
  • Salt for rim if desired

Instructions

  • Combine the tequila, wine, lime juice, orange juice and a few ice cubes in a cocktail shaker and shake for 10 seconds. *If you don't have a cocktail shaker, pour the mixture from one glass to another.
  • Pour into glass over ice. *Salt rim first if desired
  • Top off with the ginger beer.
  • Garnish with a lime wedge.
  • Enjoy!

Every Work at Home Mom Needs To Get Stuff Done…Including Me

I love being able to work at home.  It is a luxury that many don’t have.  I can wake up and get my kids breakfast, make their lunches and talk about what is on their calendar for the day while I sip on my coffee.  I can also walk my daughter to the bus stop and go on field trips without taking a “scheduled day off.”  Oh, and I don’t have to sit in 2 hours of traffic everyday.  And while all those things are amazing and I wouldn’t change them for the world, there are some disadvantages to working at home…like getting distracted by the dishes in the sink, or the ever-growing pile of laundry.  In order to keep me focused and on task, I have found that a dedicated “home office” or even “home office area” where I can work truly helps.

And in the home office, there are a few things that I need to keep me working and successful.  So, I wanted to share my home office essentials.

12 Home Office Essentials

  1. Coffee and creamer –  Now, I don’t have to have a coffee pot right next to me, but let’s be honest folks…I can’t function without a good cup of coffee in the morning.  With flavored creamer 😉
  2. Laptop/PC – Have laptop will travel!  A laptop or some form of computer device is essential for just about every job now-a-days.
  3. Printer – and paper.  It’s also a good idea to have some labels on hand to make mailings easier.
  4. WiFi – I would guess that’s a given, but it’s definitely essential.
  5. Desk/Table – Dedicated desk space or table where everything you needs fits without being too crowded.
  6. Comfortable Chair – We spend a lot of time sitting, so make sure you are in a comfortable chair.  On that note, I strongly recommend getting up and standing throughout the day too.  It’s good for you 🙂
  7. Calendar – Everyone seems to have a different version that works for them and that’s totally fine.  Me, I am old-school and like to actually write things down still.  My calendar has to have room for work and home life.
  8. Sticky Notes – This is when I admit that just because it’s written in my calendar doesn’t mean I’ll remember it.  I need to have sticky notes on write down the things that need to be done right away or the ones that I can’t forget.
  9. The Basics – Pens, paper, pencil, pen holder and stapler.
  10. Music – Listening to tunes has been proven to make you more productive.  You don’t need to have a dance party, but a welcome mental distraction always helps.
  11. A Window – Being able to see outside and get some natural light is good for the mind, which in turn will make you more productive.
  12. Somewhere to work NOT at home – One of the beautiful things about being able to work at home, also means that I can work just about anywhere.  Sometimes, you just need to get out of the house, so map out a few local places with WiFi that you can go to if you just need a change of scenery.

Now, your specific job may require some additional things, this list is just to help you on that journey of being able to work at home.  And if you happen to be self-employed don’t forget to look into potential tax deductions.

An Introduction To Red Wine Blends

Winemakers started blends wines because it gave them the opportunity to design a wine. Each red wine has it’s own distinctive characteristics, and when they are blended together you create something brand new. Red blends currently make up a decent amount of the wine market and are becoming more and more popular. One reason is that they tend to be more cost-effective than a wine that is composed just one type of grape.

In the interest of protecting their wines from fraud, most European countries modeled their labeling laws after the extremely restrictive French appellation contrôlée laws, which specify required alcohol levels, place of origin, and the varieties that may be used in blended wines. The European Union (EU) is attempting to streamline all the various national appellation of origin laws into a single set of regulations for its member countries.

American wine regulations adopted the general model of concentric appellations (i.e., America, California, North Coast, Sonoma County, Dry Creek), but rejected controls over which varieties may be planted and what varieties may be used in a proprietary blend. As a result, American winemakers have more latitude than their European counterparts in developing their blended wines.

Traditional Red Wine Blends

A handful of red blends have achieved traditional status: the Bordeaux blend, the Rhône blend, the Rioja and Chianti blends, the Zinfandel/Petite Sirah blend. These are standard blends that appear year after year. Their formulas are fairly consistent except for the Rhône blend, particularly in New World versions.

The basic varieties used are Syrah, Grenache, and Mourvedre, but in varying proportions. Often a small amount of other southern Rhône varieties, such as Counoise and Carignan, are included. The inconsistency of New World Rhône blends gives each one an individual character.

One of the finest examples of a New World Rhône blend is Clautiere Vineyards’ Estate Mon Beau Rouge. Intensely aromatic with medium ruby color. Complex nose of ripe Bing cherry, clove, cocoa, and white pepper. Delicious mouth-filling flavors that would provide stiff competition to a top Châteauneuf-du-Pape at less than half the price. A superb New World Rhône blend of 52% Syrah, 23% Counoise, 18% Grenache, and 5% Mourvedre. Very highly recommended.

Cutting-Edge Blends

One of the trends in blended red wines involves the blending of varieties that have never been combined in traditional winemaking. A blend of Cabernet Sauvignon and Syrah by Caliza Winery was awarded 96 points by Robert Parker back in 2006. RN Estate Vineyard & Winery offers a delicious blend of Syrah, Cabernet Sauvignon, and Zinfandel. Kiamie Wine Cellars specializes in blended wines. Its top offering is its Kiamie Kuvée, composed of a blend of Cabernet Sauvignon, Merlot, Syrah, Malbec, and Zinfandel.

One of the most unusual red blends came from Paso Robles’ Lone Madrone Winery. It’s a Zinfandel blend, called Barfandel, that is composed of 53% Zinfandel, 26% Petite Sirah, and 21% Barbera. The nose on this wine showed cocoa and sour cherry. In the mouth are tasted of smoky oak, loganberry, chocolate, and spice. This wine had great balance with chewy, soft tannins, backed up with beautiful acidity and a long, complex finish. Unfortunately, they don’t make this particular blend anymore, but you can find several others worth trying on their website and at the winery.

If you’ve never heard of any of these wineries, it’s because they are all small producers who sell their products to local restaurants and through their tasting rooms, wine club lists, and through their websites. They represent a important chapter in winemaking and blending wines.

What are Red blend wines

Red Wine Blends are becoming more and more popular, so you don’t have to necessarily just go to wineries to find them (however that is always a good idea!).  You can find a variety of red wine blends at your local grocer, wine store and your favorite restaurants.

A few highly rated red wine blends that are definitely worth a try are Kendall-Jackson Napa Valley Vintner’s Reserve Red Wine Blend (priced around $15), Ancient Roots California Red Blend (priced around $8), The Prisoner Napa Valley Red Blend (priced around $47) and 19 Crimes Australia Red Blend (priced around $10).  You can find all of these at your local wine store.

Riesling is a wine varietal that typically displays flowery aromas and has high acidity. Riesling grapes are used to make dry, semi-sweet, sweet, and even sparkling white wines.

Considered one of the “noble” winegrape varieties, Riesling used to be judged in proportion to its sweetness. Traditional German Rieslings were always low in alcohol, often less than 10%. At the bottom of the quality scale, but judged better than table wine, were the driest Rieslings. These were labeled Trocken (dry) or Kabinett and were by modern standards off-dry. They were the product of the first harvest of the season.

When weather permitted a second pass a few weeks later, sweeter fruit was obtained. These grapes went into wines labeled Spätlese, or late harvest wine. A third pass rendered the prized Auslese Rieslings.

Even sweeter wines were obtained by very late harvesting of individual grape berries—the Beerenauslese Rieslings. And in those occasional years when the grapes stayed on the vine long enough to shrivel up and become attacked by Botrytis, the so-called “noble rot,” the world’s most expensive and highly prized white was obtained—Trockenbeerenauslese.

What does Riesling Wine taste like

That was then. Those designations are still used, but tastes have changed, largely as a result of the experiments of New World winemakers in various winemaking regions such as; Washington State, Australia, and South Africa. While older Germans may still favor low alcohol and sweetness, the younger generation has now fully embraced drier styles.

Back in the days when California wineries typically offered a selection of a half dozen different varieties, an off-dry Riesling was the most commonly offered white variety after the ubiquitous Chardonnay. And it was relatively expensive. Many wineries turned to Gewürztraminer and Muscat Canelli for their off-dry white variety.

But over the past several decades, these wines all dropped off most winery offerings in favor of drier, softer whites such as Pinot Gris, Pinot Blanc, and the Rhône whites, Roussanne, Viognier, and Marsanne.

However, times have changed. Riesling is now one of the fastest-growing whites wine in the United States. This spectacular awakening of interest in Riesling is due largely to the efforts of Chateau St. Michele in Washington State, which pioneered the variety in the Pacific Northwest.

This winery offers a range of Rieslings. Their 0.7% residual sugar Dry Riesling sold tens of thousands cases last year. Their sweeter 2% Riesling sold a whopping 600,000 cases a year in the past, and they continue to grow. But the crown jewel of Chateau Ste. Michele’s Riesling program is their internationally renowned Eroica Riesling, a joint effort of Chateau Ste.-Michelle and Germany’s Dr. Loosen.

This splendid dry Riesling is clearly a New World product, bearing little resemblance to traditional Kabinett level wines. It’s varietal true, dry, and complex. Its current vintage contains 12.5% alcohol— lower than most New World whites but higher than traditional German Rieslings.

American winemakers have become concerned with the general confusion among potential Riesling consumers with regard to the sweetness level. If the label doesn’t say what style of wine the bottle contains, those seeking a dry wine often pass it up in favor of a more predictable product. In answer to this dilemma, the International Riesling Foundation has proposed a graphic patterned after the thermometer found on many hot pepper sauces and salsas that shows the relative heat of the product.

The Riesling graphic was said to list five degrees of sweetness, ranging from dry to sweet. These categories would correspond roughly to the German designations Trocken, Kabinett, Spätlese, Auslese, and Beerenauslese, but replacing the unpronounceable German words with English.

It’s doubtful that European wineries will adopt the graphic, and some American marketing firms are concerned that the term “dry” is a positive marketing term, and purchasers may shy away from any wine declaring itself to be otherwise.

So, to decide if you enjoy one of the different tastes that Riesling white wine offers, I recommend doing a tasting. I mean, who is better to tell you if you enjoy this white wine than you?

I will admit that Riesling is not one of my favorite wines, but I do have the stereotype that they are all sweet wines. Sweet wines are not my favorite. I will, now and again, try a dry Riesling when I am at a winery, but my favorite white wines are typically the unoaked Chardonnay, Pinot Grigio and Sauvignon Blanc.

With Toasted Walnuts and White Wine Vinaigrette Dressing

I have ordered roasted beets in restaurants a few times, and I am always amazed on how roasting them brings out a sweetness in them that is just delicious.  So, when CK Mondavi and Family asked me to prepare a Spring dish that was light, healthy, and full of flavor to pair with one of my favorite wines, I decided it was time for me to make my own Roasted Beet Salad.

Now, if even if you don’t like beets, or think they are a bit too “earthy” tasting for your liking, I encourage you to try this recipe.  You may just change your mind.  Not only is it beautiful, but the light white wine vinaigrette dressing, paired with the smooth goat cheese and toasted walnuts will make this a dish you add to your meal plan real soon.

The beets are really the star of this salad, I used microgreens and a mixture of the greens from the beets as a simple topping with the goat cheese and toasted walnuts, I really didn’t want anything heavy or overpowering to take away from the sweetness of the beets and the dressing.

The beets, goat cheese and toasted walnuts all really just melt in your mouth, I will openly admit that I had this roasted beet salad for 3 days in a row.  And I will definitely be making it again when I go back to the store to get more beets 😉  I used red and gold beets in my recipe, I love the color contrast, but you can use just red or just gold if you prefer.

This Roasted Beet and Goat Cheese Salad With Toasted Walnuts and White Wine Vinaigrette Dressing a perfect spring dish. The roasted beets are a bit sweet, the goat cheese is creamy perfection, and the walnuts add the perfect crunch.

Equipment

  • Oven

Ingredients

Ingredients for Roasted Beets

  • 1 large red beet
  • 1 large gold beet
  • salt and pepper
  • 2 tablespoons corn oil - evoo would be fine as well

Ingredients for Toasted Walnuts

  • 1/4 cup unsalted chopped walnuts
  • 1 teaspoon corn oil - evoo would be fine as well
  • salt and pepper

Ingredients for White Wine Vinaigrette

  • 2 tablespoons CK Mondavi and Family Sauvignon Blanc
  • 1/4 cup corn oil - evoo would be fine as well
  • 1 teaspoon lemon juice
  • 1 teaspoon lime juice
  • 1 teaspoon sugar
  • dash of salt and pepper

Salad Toppings

  • 2 ounces fresh goat cheese
  • 1/2 cup microgreens or greens from beets or the greens of your choice

Instructions

Roasted Beet Instructions

  • Preheat oven to 375 degrees.
  • Place a dash of oil, salt and pepper in the center of a piece of aluminum foil.
  • Place the beet on the oil, cover completely.
  • Place beets on baking sheet, bake for 45 minutes - 1 hour until tender. You will be able to easily stick a fork into the beets when they are done.
  • While the beets are in the oven, prepare the white wine vinaigrette and toasted walnuts.

Toasted Walnuts Instructions

  • Toss the chopped walnuts in the teaspoon of corn oil and a dash of salt and pepper.
  • Place on a baking sheet and put in oven for 5 - 6 minutes.
  • Remove and let cool.

White Wine Vinaigrette Dressing Instructions

  • In a small bowl, whisk the CK Mondavi and Family Sauvignon Blanc, 1/4 cup of corn oil, lemon juice, lime juice, sugar and a dash of salt and pepper.
  • Set in refrigerator until ready for use.

Plating Instructions

  • Once the beets are tender and cool, peel and quarter them. Feel free to cut them thinner if you used larger beets.
  • Transfer the beets to a bowl; if using golden and red, put them in separate bowls.
  • Toss the beets with the vinaigrette, season with salt and pepper and arrange on a platter.
  • Crumble the goat cheese on top and sprinkle with the toasted walnuts and greens.
  • Drizzle the white wine vinaigrette over the top.
  • Enjoy!

As a parent of a teenager who thinks that in a few years he can just walk into a car dealership and buy a new Ford Raptor, my husband and I have been trying to explain the importance of saving money a lot lately.

When I was a kid, I would be so excited when I found a quarter on the sidewalk because that meant I could go up to the corner store and get a popsicle. I understood that I needed money in my hand to buy something. I had my first job at 14 years old, and I saved just about every penny I made. At 16 I bought my first car for $500 and with the help of my dad we cleaned it up and sold it for $1000. I put that profit into the bank and saved it for college.

I feel like nowadays kids would walk past that quarter on the sidewalk because they don’t see the “value” in it. I will openly admit that my kids have everything they and more, and when we walk into a store and they “need” something, I end up buying it. And most of the time I am buying it with my debit card, so they never actually “see” the cash transaction. There is something to be said for the actual “cash transaction,” going from having money in your hand to having none. There is a lesson to be learned there, a lesson to be valued, a valuable lesson that we have to start teaching our kids.

As parents we have to teach our children that they need to grow up to be financially stable adults.

As National Teach Your Child to Save Day rolls around, now is the perfect time to start teaching best practices for saving. And with the graduating class of 2020 about to walk the stage and get ready for college, it’s urgent that parents make sure their teens have the information they need to manage their money. We want them to be able to take care of us one day, right? 😉

Of course, before we can expect kids to happily start saving their money, they might need our help understanding a few things to make it all make sense.

Here are 5 Tips On How To Teach Teens To Save Money:

  1. Help Them Create a Budget

While you may have encouraged your kids to save money for big purchases, many teens still don’t understand all the “whys” behind saving. They’ve never had to pay for things such as unexpected car repairs or monthly expenses like a utility bill.

TRY THIS: If your teen isn’t working or doing chores already, get them started right away…like TODAY — and begin paying for some personal expenses, such as gas and weekend entertainment. I have my son help with cutting the grass and both kids are responsible for the dishwasher and helping with laundry.  Work together to create a budget of monthly income and anticipated expenditures to help create a clear picture of “money in” and “money out.” If your child is headed off to college, discuss which living expenses he or she will be expected to cover and how to accomplish that.  This will help them get a better understanding of the value of money.

  1. Open a Bank Account If They Haven’t Yet

  1. Explain the Concept Of Interest

Your kids may not realize that “smart” saving is more than just sticking cash in a jar on a shelf. Which is exactly what my son does!!  That’s why we must explain the idea of compound interest to them: When you save, you earn money on the funds you’ve stashed away. Just don’t forget to stress that the reverse is also true: When you borrow money, you pay money on the money you’ve been loaned.

TRY THIS: Use an online calculator to show how money saved will grow exponentially with various interest rates. One way to make the idea of interest more real to teens is for you to make contributions to their savings as they reach their goals.

Disney World’s Magic Kingdom Park is breathtakingly beautiful. It is home to the world-famous Cinderella’s Castle. The Magic Kingdom is Disney World’s original park, and it’s most famous. It is a great day for the whole family and the most ideal of any of Disney World’s parks for the little visitors.

Disney World Parks: The Magic Kingdom FastPass+ Rides

One of the most important factors in getting the most out of your day at any of Disney World’s parks is the smart use of your Fast Passes. Fast Pass is included with any park admission.

You got to the Fast Pass kiosk at any of the more popular rides, insert your “key to the world” (for Disney World resort guests) or your park ticket, and you will receive an appointment time to return to the ride. The appointment time will be a one hour window, and the wait will be much shorter than getting in the regular – or “stand-by” – line.

As soon as you enter The Magic Kingdom, have a plan for which ride you most want to experience. It will likely be a FastPass+ ride, so make your way there and get your Fast Pass tickets right away. Then, once you’ve ridden that ride, head to choice #2 and get a Fast Pass there, and so forth. In between Fast Pass rides, check out the rides and attractions that have shorter lines.

Disney World Parks: Magic Kingdom Places to Eat

As in every Disney World park, there are plenty of places to eat in The Magic Kingdom. For quick-service food, though, it’s tough to beat Casey’s Corner. Their mini corn dogs are great stuff, and the atmosphere is lots of fun.

Tony’s Town Square is a bit more expensive but has a great selection and some really tasty choices.

Disney World Parks: Magic Kingdom Things Not to Miss

Along with the big, obvious things to see and do at The Magic Kingdom, make sure not to miss some of the lesser-known – but equally cool – attractions.

If you have little ones, definitely look into the Bibbidi Bobbidi Boutique for the little princes and princesses.

The “Monsters, Inc. Laugh Floor” is a great time. It is a “comedy club,” with your host, Mike Wazowski. It is a collection of pratfalls, jokes, and some really fun audience interaction. Don’t miss it.

“Stitch’s Great Escape” is another fun show. From the moment you enter the queue (waiting area), the show begins. The show has a wonderful setup, and once inside the main attraction, the effects are really good. The whole family will have fun at this one.

An Introduction To Sauvignon Blanc

Sauvignon Blanc, one of the world’s most distinguished wine grape varieties, is seriously underappreciated. Because the demand for it is low compared to more popular white varieties such as Chardonnay and Pinot Grigio, the price per ton of Sauvignon grapes is among the lowest of any of the so-called “noble” varieties. This keeps the price per bottle also comparatively low, making it one of the best values in fine wine.

Sauvignon Blanc, historically known simply as Sauvignon, is an ancient grape believed to have originated in Bordeaux. In 1997 DNA fingerprinting established Sauvignon as a parent of Cabernet Sauvignon, along with Cabernet Franc, and both Sauvignon and Cabernet Sauvignon share certain aromatic characteristics, most notably a certain herbaceousness. Cabernet Sauvignon is thought to be the result of a natural field crossing sometime in the 18th century.

Introduction To Sauvignon Blanc White Wine

Sauvignon in the New World has experienced a rocky career. Since the variety is prone to heavy yields that dilute the grape’s distinguishing characteristics, early examples were unremarkable, somewhat thin, and a little acidic—not the kind of wine to woo a market unaccustomed to drinking wine. Softer, sweeter white wines such as Chenin Blanc did much better.

Today we see the full spectrum of wines. This remarkable variety is capable of rendering, and it is now one of the most widely planted fine white winegrapes worldwide.

Popular Sauvignon Blanc Wine Regions

Bordeaux

Sauvignon is usually bottled as a single variety of dry wine but partnered with Sémillon; it renders some of the world’s greatest dessert wines. White Bordeaux is probably the most elegant style of Sauvignon, achieving a superb balance of fruit, depth of flavor, and acidity. It’s also the most expensive with top examples approaching a hundred U.S. dollars a bottle. White Bordeaux is a superb wine to pair with light food courses since it is much less aggressive than other major examples, and its lighter body is less likely to compete with the delicate flavors of many fish dishes.

Sancerre

Sauvignon found a very happy home in the eastern Loire, and many consider the Sauvignons of Sancerre and Pouilly-Fumé to represent the archetype of this grape’s potential. These wines are fuller-bodied than white Bordeaux and brighter. If we might offer a color analog, Sancerre compared to white Bordeaux is like increasing the contrast and saturation of a colorful photo. These wines are striking and a little aggressive, making food pairings a little more challenging.

New Zealand

New Zealand Sauvignons, particularly those from Marlborough, have enjoyed almost cult-like status ever since Cloudy Bay Sauvignon Blanc hit the market in 1986. These wines are like Sancerre reduced to primal elements. The most noteworthy characteristic of New Zealand Sauvignons is a strong gooseberry flavor that presides over a range of herbal rather than floral notes. Not a wine for the meek, but highly prized by Sauvignon lovers and attractively priced.

California

Sauvignon remained unfashionable in the U.S. until Robert Mondavi changed its name to Fumé Blanc in the early 1970s. His example was an excellent wine in style very unlike the French versions. It was richly flavored but not overly acidic. The flavor spectrum was more balanced, and the typical herbaceousness understated. The wine was gently oaked to give it around, mouth-filling quality. This wine remains one of the top-selling California Sauvignons to this day, along with Ferrari Carano’s Fumé Blanc, made in a similar style. The term Fumé Blanc is often reserved for Sauvignons that have received oak finishing and tend to be a little more expensive than stainless steel fermented examples.

California offers the widest range of Sauvignon Blanc styles that any other region worldwide and several wineries have made a specialty of it. Dry Creek and Brander are great examples. Brander in Los Olivos offers a full range of Sauvignon styles, which include some of the finest Sauvignon Blancs in California, including single-vineyard bottlings.

Other Regions

Excellent Sauvignon Blancs are now coming to us from various wine regions such as; Italy, South Africa, and Slovenia. The world is beginning to appreciate the quality and usefulness of this variety, and as palates tire of the sweet finish of so much of the world’s Chardonnay, Sauvignon Blanc is bound to offer an increasingly attractive alternative.

Are you like me? Are you skeptical of the ease and deliciousness of the claims of sheet pan recipes? I mean, really…can a delish meal that the whole family will love really be created with little mess in the kitchen and be ready in less than an hour? Not only that, can these sheet pan recipes also be filled with vegetables that the whole family will enjoy? I grabbed a bunch of fresh vegetables…and an apple (why not add in some fruit too!)…at the local Farmer’s Market, some skinless (no need for that fatty skin) chicken thighs, Mazola® Corn Oil and I was well on my way to making my first sheet pan meal. A recent study has found that adding Mazola® Corn Oil to one’s diet resulted in lower cholesterol levels than Coconut Oil. You all know that I really strive to make meals in my house that are flavorful, easy, and better for us…so, I gave the sheet pan craze a try.

Easy Sheet Pan Oven Roasted Chicken And Vegetables

Here’s what I found out:

Serrano Peppers are SPICY. My family and I love hot peppers, so I thought a roasted sheet pan recipe was the perfect way to add some flavor and spice to our day. WARNING! Serrano Peppers are even hotter than jalapenos! On that same note, my son ate his whole without flinching, while my daughter and I required two glasses of milk and the removal of seeds 😉 And they still gave me hiccups…

Sheet Pan Meals are very versatile. You can basically add whatever vegetable you want as long as they are cut to a similar size, you just want them all to cook at about the same rate.

You don’t need to deep-fry your chicken to make it crispy. Baking your sheet pan meal at a high temperature makes the chicken tender and full of flavor.

You don’t need the skin on your chicken. I know, I know, you are all thinking that’s where the flavor is…but it’s NOT. The flavor is in the marinade and all those amazing roasted fruits and vegetables.

Sheet Pan Meals are indeed easy. I was prepped in under 30 minutes and our meal was cooked in about 40 minutes. That means a meal complete with vegetables and protein was on our dinner table in about an hour.

One Pan Oven Roasted Chicken And Vegetables

Oven Roasted Sheet Pan Chicken Dinner With Roasted Vegetables

This Oven Roasted Sheet Pan Chicken Dinner With Fresh Roasted Vegetables is full of flavor and is on the dinner table in less than an hour. Plus, clean up is a breeze! Enjoy.

Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs
  • Baby potatoes - cut in halves or quarters making them all similar in size
  • Baby carrots - I used 1/2 bag
  • Serrano peppers - with tops cut off
  • 1/2 red onion - cut in chunks similar to the size of the potatoes
  • Bell pepper - I used an orange one cut into thick slices
  • 1 Apple - I used an Envy apple
  • Salt and pepper or an all purpose seasoning such as Dust by VooDoo Chef

Marinade Ingredients

  • 1/4 cup Mazola® Corn Oil
  • 2 tbsp lemon juice
  • 1 tbsp pure maple syrup
  • 1 tbsp spicy mustard
  • 1 tsp minced garlic
  • 1 tsp dried red pepper flakes
  • 1/2 tsp dried rosemary

Instructions

  • Preheat oven to 425 degrees.
  • Mix marinade ingredients together.
  • Place chicken in a ziplock bag and pour marinade in, close bag tightly and massage the marinade into all the chicken pieces and then set aside.
  • Prepare a large sheet pan (with sides) by lining it with foil. This makes for easier clean up.
  • Arrange the prepped vegetables and apple on the sheet pan. Sprinkle with salt and pepper and drizzle with Mazola Corn Oil.
  • Place chicken thighs on top of the vegetables and drizzle with remaining marinade.
  • Bake for 30 - 40 minutes or until chicken is done and registers at least 165 degrees on a meat thermometer.
  • Broil 1 - 2 minutes.
  • Enjoy!
