  1. Write Your Goals Down – Be as specific as possible and set short-term and long-term goals.
  2. Be Realistic – If owning 3 homes isn’t a realistic goal for 2018, don’t write it down 😉
  3. Get Support – If you are married, you and your spouse should be on the same financial road. If you aren’t married you can still find support with friends and family.
  4. Set Up Automatic Savings – No matter the amount, setting up an automatic savings deposit monthly is an easy way to save without having to think about it.

As a parent, one of the most important things in my life is my children. While I will do absolutely anything for them, I’ll be honest, they keep me busy. Very busy. Between sports, science fair projects, play dates and more, it’s a wonder us parents have any time for ourselves. And what happens when you are sick? Or when the kids are sick? That really full plate just got a LOT fuller. Not only does your entire life need to be put on hold, but there will be doctor appointments, special trips to the store for their favorite foods and don’t forget the orange juice and chicken noodle soup, and sleepless nights. There is nothing more we want than to keep our children healthy and happy, because we love them so much, but also because it makes life a lot easier. 😉

So to help you keep your sanity, and your child healthy, I wanted to share a few tips to help keep your child healthy.

Sleep – Make sure they are getting enough sleep. Kids grow when they are sleeping, and they want to be big and strong. 🙂

Eat Right – It’s impossible to control everything your child eats, it’s not worth fighting sometimes and we aren’t with them 100% off the time. But if we teach them what foods are healthy and good for them, they may make better choices. And when we are with them, encourage those fruits, veggies, and not a bunch of sugar.

Drink Water – Did you know that your brain is made up of water? Did you know that your body is made up of water too? Yep! So, to take care of our little one’s mind and body, they need to drink a lot of water. A good rule of thumb (for kids and adults) is to make sure when you go to the restroom, your pee is clear.

Exercise Together – You don’t have to take your child to the gym, but think of fun ways to get moving together! Dance, walk, ride bikes, play basketball, hide-in-go-seek – the possibilities are endless! Think outside the box.

Go to Regularly Recommended Doctor and Dentist Appointments – Routine visits and check-ups can help keep your child healthy. If I would have taken my daughter to her recommended dentist appointment, she wouldn’t have needed a tooth pulled by the young age of three. And I wouldn’t still be carrying that mom guilt.

  1. Watch What You Eat – Don’t promise yourself that you will never eat chocolate again, because who can do that?! BUT, do watch what you eat and try to make better choices.
  2. Be More Financially Responsible – Set goals for yourself. Pay off bills, plan for the future, watch what you spend. While you are planning for your future, don’t forget to plan for your kid’s future too.   5. Family Time – Get more of it. End of story. Time goes by too fast.
  6. Exercise More – More than what? You decide. Do what is right for you, just move more this year than you did last year.
  7. Read More – Remember books? They still exist! Give yourself a mental break and read a book now and then.
  8. Be Thankful – Stop and be thankful for what you have. Right now.
  9. Appreciate the Little Things – The flowers, the smiles, the sunshine. One day those little things will be big things.
  10. Travel – It doesn’t have to be far, just try to visit some place new.  We all say that we do it “some day”, well, some day never comes if you don’t make it.

If you are planning to visit Disney World for the first time, you need to research the Disney parks you plan to visit for a successful, enjoyable experience. Disney World is located in the heart of Orlando, in Central Florida.  There are many things to do at each of the Walt Disney World theme parks, in fact, you can easily spend a day or two at each one. This guide is simply to introduce you to each theme park so that you can decide which park you want to see on your visit to Disney World and how much time you think you will want to spend at each. Disney World is the most magical place on Earth, but it can be overwhelming. Do not try to see everything at every park in one visit, you will end up miserable! I have lived in Florida for over 20 years and I can honestly tell you that I haven’t experienced everything that each Disney World theme park has to offer.

If you appreciate movies, don’t miss this park. We love the “Indiana Jones Stunt Show, the “Toy Story” ride, “Star Tours,” and the “American Idol Experience.” Many parks will have special events scheduled in advance. Researching online before you leave home will ensure you are not missing a big event.  If you are a Star Wars fan, you can NOT miss this Disney Park, you will literally feel like you walked into the movie when you walk into Star Wars Galaxy’s Edge!  Disney doing what they do best….creating magic.

What are the Disney World Theme Parks

Epcot

Epcot is home to 4 amazing festivals.  Each Epcot Festival is unique in it’s own way and has incredible themed food to go with each one!  The International Flower and Garden Festival and the Food and Wine Festival are my two favorite Epcot festivals. This park sometimes seems to be more for children who are a little older. Rides not to miss are “Soarin,” “Test Track, “Spaceship Earth, “and if you appreciate a little education, “Living With The Land.” “Soarin” was definitely worth a second ride. It is well worth it to make dinner reservations in advance at one of the many diverse ethnic choices in Epcot.. Overall, Epcot is a cultural wonderland and a must-see destination.

What are the Walt Disney World Theme Parks?

Animal Kingdom

Wildlife and nature are abundant here. Don’t miss the “Kali River Rapids” if it’s a hot day, and you don’t mind getting wet. Relaxing through a show is always a nice change of pace; we almost always catch “It’s Tough To Be A Bug.” One of the greatest adventures here is the “Kilimanjaro Safari,” full of animals you would see on an actual Safari. For those with a strong stomach, the “Mt. Everest Roller Coaster” will not disappoint.  However, no trip to Animal Kingdom is complete without stepping into Pandora and experiencing The World Avatar.

What are the Disney Theme Parks?

Ah, where it all started.  The Magic Kingdom.  Depending on where you stay on Disney property, it is worth the extra effort to ride the monorail to the home of Mickey and Minnie. You are able to board the monorail at Epcot and take it all the way to the park. There is also constant Disney transportation anywhere you want to go. This park has things to do for kids of all ages, but there are special areas that the younger kids will enjoy more.

Our favorite rides at the Magic Kingdom are:  Pirates of the Caribbean, Space Mountain, Grand Prix and the People Mover.  The People Mover is a slow moving ride that gives you the chance to get off your feet and relax for a second while getting a behind the scene peek at some of the other rides.

The parades are temporarily closed at the Magic Kingdom, but check HERE for the most up to date information.

Making the most of your time is easily done if you plan ahead. Talking with your neighbors and friends who have mastered Disney will help you avoid the overwhelming feeling that comes easily in such a massive environment. Meal planning also requires some forethought, unless, of course, fast food serves you well the entire trip.

Of course, there is a TON of information available online and books available for purchase (or for free via Kindle), but try not to read everything…you don’t want to get overwhelmed and miss the magic.

As you are cruising from park to park, you may need a break…or a cocktail…so I have compiled a list of the Best Cocktails in Disney World, so be sure to make note of the ones you want to try.

Do you like cookies? Oh, I have a sweet tooth! My challenge is always creating treats that still satisfy my sweet tooth, but aren’t loaded with sugar. And with baking season here, you can imagine I run into this on a regular basis! One of my husband’s absolutely favorite cookies is Snickerdoodles, and I have never made them before because the recipe calls for so much sugar. So, I got creative in the kitchen today and came up with a soft and yummy Snickerdoodle recipe that has half the sugar you will see in other recipes.

I reduced the sugar and added applesauce, and I only used one egg and added Tampico’s Apple Punch juice drink…for an extra apple punch. If you love Snickerdoodle cookies too, be sure to give this recipe a try. It’s perfect for cookie swaps or sharing with friends and family, as it makes about 30 cookies.  That is if you have any left after your family gets ahold of them 😉

Soft, Scrumptious, Reduced-Sugar Snickerdoodles

Enjoy a classic cookie with a delicious, yet reduced sugar twist. Make these Snickerdoodle cookies today and enjoy!

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 sticks butter softened
  • 3/4 cup sugar
  • 3/4 cup unsweetened applesauce
  • 1 egg
  • 2 teaspoons vanilla
  • 2 tablespoons Tampico Apple Punch

Cinnamon Sugar Topping

  • 1/4 cup sugar
  • 2 teaspoons cinnamon

Instructions

  • Preheat oven to 350 degrees.
  • Spray or line three baking sheets with parchment paper and set aside.
  • In a medium bowl mix the flour, cream of tartar, baking soda, 2 teaspoons cinnamon and salt.
  • Mix the butter, 3/4 cup sugar, egg, vanilla, and Tampico Apple Punch in a large bowl (or your mixing bowl) until creamy.
  • Slowly add the flour mixture until combined.
  • In a small bowl mix the 1/4 cup sugar and 2 teaspoons cinnamon and set aside.
  • Roll the dough into 1-inch balls using the palms of your hands. *If the dough is too "sticky" to roll, just use a spoon scoop out the dough.
  • Roll dough the cinnamon-sugar mixture until coated and place onto the prepared baking sheets.
  • Bake for 11 to 12 minutes, cookies will look puffy when done.
  • Cool for 5 minutes before serving.
  • Enjoy!

Confession.  This is the first roast I have ever made.  If you are like anyone else I have confessed that to, you are thinking “WHAT?! HOW IS THAT POSSIBLE?!”  It’s a family staple, everyone’s mom and grandma made roasts, right?  Well, that’s probably why I never did, I had them growing up and never thought about making one myself.  I did make an Easy Chicken “Pot Roast” in the past, but for this Pot Roast recipe, I decided to go for something less traditional, more me.  I made a delicious glaze for my Pot Roast and it was…well, delicious 😉

I am new to loving brussels sprouts, so I knew I wanted those included, and what is a pot roast without potatoes and carrots?!  The brussels sprouts, baby potatoes, and carrots cooked perfectly with this Pot Roast, and the maple glaze added amazing flavor to the vegetables.

 

Tender Pot Roast

I did use CK Mondavi and Family Chardonnay as one of my ingredients in the glaze, so of course, I recommend pairing this Maple Glazed Pot Roast with the open bottle of Chardonnay, but it would also pair nicely with a Cabernet Sauvignon or Merlot.

Flavorful Maple Glazed Pot Roast

The glaze is easy to make, and the pot roast is ready in just about an hour.  I did season and sear each side of the pot roast to lock in those flavors before tossing it in the oven.  It’s a small step and only takes a few extra minutes, and it’s worth it!

Equipment

  • Oven

Ingredients

  • 2 1/2 lbs pot roast
  • 1 bag baby carrots
  • 1 lb of baby potatoes cut in half
  • 1 lb brussels sprouts cut in half
  • Salt and pepper to season
  • 1 tablespoon olive oil

Glaze Ingredients

  • 3/4 cup maple syrup
  • 3 tablespoons CK Mondavi and Family Chardonnay
  • 3 tablespoons spicy brown mustard dijon would be okay too
  • 2 tablespoons butter

Instructions

  • Preheat oven to 400 degrees.
  • Pour olive oil in large pan, heat.
  • Place roast in pan, season the side that is up, sear for 2 minutes, then flip the roast and season the other side.
  • Place beef in roasting pan.
  • Add vegetables to the roasting pan, cover and roast 20 minutes.
  • Meanwhile in sauce pan over medium heat combine syrup, wine, mustard, and butter.
  • Bring to boil.
  • Reduce heat to simmer, stir constantly, and cook until thickened about 10-15 minutes. *Glaze can easily burn, be sure to watch it carefully those last few minutes.
  • After 20 minutes, reduce oven temperature to 350 degrees.
  • Brush roast with glaze during these last 35-45 minutes (every 10-15 minutes), flipping the roast once.
  • Cook roast until meat thermometer inserted in thickest part of beef registers 140 degrees for medium-rare, 35-45 minutes.
  • Let stand 10 minutes before slicing.
  • Serve with your favorite CK Mondavi and Family wine.
  • Enjoy!

The holidays are just about here and I am guessing that you are planning our holiday menus.  And if you haven’t yet – now is the time!  I know we all jungle trying to make something delicious, and not spending the whole day in the kitchen.  Well, I have a flavorful and easy appetizer recipe to share today that will leave your guests grabbing for seconds.  You may want to double the recipe 😉

This Festively Delicious Cranberry Blue Cheese Bites appetizer recipe is ready in about 15 minutes, and you may have all the ingredients right at home.  I used Salemville Amish Blue Cheese Crumbles, which I found at my local Target, it was the perfect contrast to the sweetness of the candied walnuts and cranberry sauce.

If you don’t want to buy candied walnuts at the store, they are easily made at home by adding a tablespoon of butter and brown sugar to a saute pan and bringing it to a boil, add in the walnut pieces until coated well, and then removing from heat once it appears to start to thicken.  It will burn, so watch it closely!

Festively Delicious Cranberry Blue Cheese Bites

These Festively Delicious Cranberry Blue Cheese Bites are easy to make and filled with flavor. Add this easy appetizer recipe to your holiday menu.

Ingredients

  • 1 Crescent Dough Sheet
  • 1 package 1/3 less fat cream cheese
  • 1 egg
  • Salt and freshly ground black pepper
  • 1/2 cup Salemville Amish Crumbled Blue Cheese 2 oz
  • 1/3 cup whole berry cranberry sauce
  • 1/4 cup candied chopped walnuts

Instructions

  • Heat oven to 400°F.
  • Spray 12 muffin cups with cooking spray and set aside.
  • Unroll dough sheet onto work surface.
  • Using 2 1/2-inch round cutter (if you don't have one, use a glass!), cut 12 rounds from crust.
  • Place 1 dough round in each muffin cup, pressing down.
  • In bowl, mix cream cheese, salt, pepper and egg with fork until well-combined. *If didn't use the whole mixture, I had 1/4 left*
  • Place about 1 teaspoon of the cream cheese mixture into each round.
  • Top each evenly with blue cheese.
  • Bake 10 minutes or until edges are light golden brown.
  • Cool 5 minutes; remove cups from pan.
  • Top each appetizer with 1-2 teaspoons cranberry sauce and several candied walnut pieces.
  • Enjoy!

Notes

You will have to pick up the leftover dough pieces and flatten them to get the full 12 circles

Tasting wine is a matter of experience, not a mystical ritual that only a few of the exalted chosen can decipher. Anyone can taste wine and decide if they like the wine they have tasted.

Experiencing wine is as simple as trusting your senses. Three of your senses are used to judge wine: taste, smell, and sight. You will use these senses to gain knowledge of the wine and to store this knowledge into your memory banks.

Guide To Tasting Wine

Communicating What You Know

With your new wine knowledge, you are then able to communicate what kind of wine you like. You will be able to order wine with confidence from your friendly waiter or sommelier.

Learn to Trust Your Tongue

Concentrate on these areas of your tongue when you’re tasting wine:

The backsides of your tongue taste sour.
The very back of your tongue tastes bitter.
The middle of your tongue tastes salty.
The front of your tongue tastes sweet.

The Process of Tasting Wine

When you’re beginning to taste wine, it’s best to start out with at least two wines to compare, but no more than four. This situation is the least overwhelming at the beginning of your wine tasting experience. Taste white wines in one setting and red wines in another setting.

An Open Mind, An Open Glass

Don’t prejudge a wine before you taste it. Even though you may think you always prefer dry white wine, try to keep an open mind. There is an old Zen saying that a person with a full glass has no room for more – knowledge, that is. Therefore, try to keep your glass half full. You never know what you might have room for!

How Does the Wine Look, Smell, and Taste?

Try to isolate the smell of the wine into the basic categories of fruity, vegetable, or mineral. Some wine connoisseurs, like Michael Broadbent of Christie’s Auction House of London, have even described certain wines as smelling “like fresh bandages.” That’s fine if you would like to use that terminology, but wine is a natural thing from the Earth, and it’s best, at first, to try to classify its more earthy smells.

Now, take a small sip of wine and let it roam around your mouth. Does the sip of wine match with the color, or not? What does your mouth tell you?

Learning to taste wine is all about learning a new vocabulary that relates to wine. Listed below are some of the words experienced wine drinkers use.

Wine tasting should never be too serious. Try tasting wine with a few trusted fellows, and you will find that your wine knowledge grows exponentially. If you keep an open mind and allow your self to trust your senses, you will find that wine tasting is not a test for snobbery, but a pleasurable experience.

I’m Dreaming Of A….white Christmas?  Sure, that would be fabulous, but I live in Florida, so the likelihood of that happening is pretty much non-existent.  But, I can enjoy this beautifully festive holiday cocktail, the Peppermint Twistmas.  If I am going to have a delicious cocktail, I will probably want two, so that means it can’t be rich and heavy.  And that was my inspiration for this cocktail, the vodka and schnapps warm you up, while the Sparkling Wine lightens it up a bit.

Peppermint Sparkling Wine Cocktail

For this holiday cocktail you just need vanilla vodka, peppermint schnapps, and your favorite Rosé Sparkling Wine. Oh, and the crushed candy canes on the rim of the glass add an extra special holiday touch.

Peppermint Twistmas Cocktail

Ingredients

  • 1 1/2 oz chilled vanilla vodka
  • 1 1/2 oz chilled peppermint schnapps
  • 3-4 oz chilled Rosé Champagne or Sparkling Wine
  • Crushed candy canes if desired

Instructions

  • Wet glass rim with water or lime wedge and coat with crushed candy canes - Put crushed candy canes on a plate and twist glass into the candies.
  • Pour vodka and schnapps into the chilled glass.
  • Top with Rosé champagne or sparkling wine.
  • Enjoy the holidays!

Notes

For extra chill, put the glasses in the refrigerator or freezer beforehand, or by filling them with ice and cold water for a few minutes. Remove the water and ice from glasses before adding the cocktail.

Easy & Healthy Baked Eggplant Parmesan

A few months ago I had the amazing opportunity to have dinner with Janice Mondavi of CK Mondavi and Family and we shared an eggplant appetizer.  It was my first time having eggplant.  Can you believe that?  It was delicious.  In fact, I even thought that my kids would enjoy it.  As we chatted, Janice shared with me a baked eggplant recipe that she makes for her family regularly.  At that moment I decided I would make eggplant for my family and see what they thought.  Before I tackled Janice’s Eggplant Parmesan Rolls, I wanted to start with a simpler recipe for eggplant.

Easy Eggplant Parmesan

So, I made a healthy version of Eggplant Parmesan. I call them Eggplant Crisps and the kids call them Eggplant Pizza. But, no matter how you slice it (or say it 😉 ) this baked eggplant recipe is a keeper. In fact, I have already made it several times. You can serve these baked eggplant slices with pasta or with just a simple salad, eggplant is actually a heartier vegetable (did you know that technically eggplant is a fruit?), so you will find that you don’t need a lot of extras to serve with this.

Crispy Eggplant Parmesan

For this Easy & Healthy Baked Eggplant Parm Recipe, you only need a few ingredients and you may just have them in your house. You need eggplant, of course, bread crumbs and grated Parmesan cheese, sauce, shredded Parmesan cheese (or mozzarella if you prefer) and some fresh basil. Easy enough, right? Ok, then let’s get cooking!

Healthy Baked Eggplant Parmesan

Ingredients

  • 1 medium eggplant
  • 2 eggs
  • 1 cup bread crumbs with Italian Seasoning
  • 2 tablespoons grated Parmesan cheese
  • 1/2 cup Pasta sauce - I used a spicy marinara
  • 1/2 cup shredded Parmesan cheese - or mozzarella if you prefer
  • Fresh basil

Instructions

  • Preheat oven to 375 degrees.
  • Spray baking sheet with cooking spray and set aside, you may need two baking sheets.
  • Break both eggs into a bowl and beat.
  • In a separate bowl add the bread crumbs and grated Parmesan cheese and mix well.
  • Peel the skin from the eggplant, I just used a potato peeler.
  • Cut the eggplant into 1/4 inch slices.
  • Dip each eggplant slice into the egg and then into the bread crumb mixture, making sure to coat it well.
  • Place the coated eggplant slice onto the prepared baking sheets.
  • Continue to bread each eggplant slice until complete. Your hands will get messy.
  • Place the baking sheets into the preheated oven and bake for 15 minutes.
  • After 15 minutes remove the eggplant and flip the slices.
  • Place the baking sheets back into the oven and bake for an additional 15 minutes.
  • Remove for the oven and top each slice with approximately one tablespoon of sauce and a pinch of the shredded cheese.
  • Place the eggplant back into the oven for an additional 10 - 15 minutes to warm the sauce and melt the cheese.
  • Remove from oven, top with fresh basil if desired.
  • Enjoy!

Notes

Serve with a nice salad or pasta.

As you can see, this recipe isn’t loaded with lots of cheese, so this is a healthier version of other Eggplant Parmesan recipes you may have seen before.  And since they are topped with a little sauce and cheese, I kinda see why my kids think they are crispy eggplant pizzas 🙂

We actually enjoy this eggplant parm recipe so much we plant eggplant in the garden this season!  It purposed a least 10 eggplants so far and we have had enough eggplant for us to make several recipes with eggplant and had enough to share with friends!
