Tips For High School Students

My son will be a freshman in high school next year. I can’t believe it.  Not only do I have to start worrying about high school, but I now have to think about college. But he’s only going to be a FRESHMAN! Oh, I know. I started college preparation when he was just 6 months old with a Florida Prepaid College Plan, now it’s his turn to make sure he is ready.  It’s time to kick it into high gear.

We went to a Class Introduction night at his high school already, where they went over classes and schedules. Since he is Honors classes, it is imperative that he stays on that course, that can help when it comes to scholarships! But he also needs to look into what clubs he can participate in and what sports he wants to try out for. Oh and he needs to volunteer! Not only is it good for him, but colleges like to see that as well. SO many things to think about and get ready for and he’s still in 8th grade! Talk about stressful. Ok, deep breaths. In through your nose and out through your mouth. We got this. We can do this.

So, I have made a College Preparation checklist for you all. It’s one I will be using myself, as I want to make sure I am giving my son as many opportunities to succeed as possible. My neighbor has a daughter that is a Junior in high school right now, and these are things that the high counselor talked to them about as well, so many of these college preparation items will remain the same through the high school years (and with each year you will add some, like testing prep!), but make sure you start them as soon as possible.

High School Students College Preparation Checklist

  • Research high schools.
  • Visit the high school before high school starts, this gives you and your parents added confidence.
  • Enroll in a college preparatory classes. Not sure what those are? Call the school, they will happily help.
  • Study HARD. Understand that your grades from this point on are on your permanent record and will count towards college. Be sure to do your best.
  • Start saving.  We have found that Florida Prepaid College Plans was the best way for us to save for college. Even if your parents have already started saving for college for you, you should as well.
  • Research colleges, you don’t have to pick one already, but starting to get comfortable with the idea.
  • Get to know your high school counselor. They are there to help you in every way possible, so take advantage of that.
  • Research ways to earn potential scholarships and awards.  And apply for as many as possible.   Your high school and career counselor can tell you were to research.
  • Get involved in extracurricular activities, like clubs at school and sports.
  • Volunteer. If you are a Florida resident, you may have heard of our Bright Future Scholarships, to qualify for the top tier available, you need to have 100 volunteer hours by graduation. So, before your schedule gets crazy with sports, friends and driving be sure to get in as many volunteer hours as possible.
  • Start thinking about what careers may interest you.
  • Visit colleges. You don’t have to do tours already, but maybe go to a play or concert with family and friends just so you can walk around and get a little idea of what college is like.

I just love strawberry season and all the fun strawberry recipes I can create, like these strawberry muffins made from scratch!  I live about 30 minutes from the Winter Strawberry Capital of the World, Plant City, that means I am always looking for the Fresh From Florida sticker on my strawberries.  Fresh from Florida strawberries means that I am not only supporting local farmers, but that I am getting strawberries from right up the road!  You can get produce fresher than that.

Homemade Strawberry Muffins

I grabbed the strawberries and other few ingredients for my strawberry muffins from Winn-Dixie, they partner with the families and farms that harvested the land for generations, because they know what  customers love and share Winn-Dixie’s commitment to stunning quality and freshness. I guess they would have to be dedicated to freshness considering that Southeastern Grocers sells more than one million locally grown strawberries per month during season.   That is a LOT of strawberries!

Not only are strawberries delicious, but they are a great source of vitamin C, manganese, potassium and they are rich in antioxidants.  Plus, a whole cup of strawberries has less than 50 calories, that means we can indulge and not feel guilty 😉

If you know me, you know that I am not a baker.  I can whip a batch of brownies from a box, no problem, but when things start to get complicated, I am out.  So, trust me when I tell you that these Easy Strawberry Muffins are just that.  Easy.  You need very few ingredients for these strawberry breakfast muffins and the prep time is less than 15 minutes. And most of your prep time is dicing up the strawberries. Easy Strawberry Muffins With Streusel Topping

These easy strawberry muffins with struesel topping are the perfect breakfast or afternoon snack. Made with fresh strawberries, these muffins are absolutely delicious!

Ingredients

Ingredients for Muffins

  • 2 cups diced fresh strawberries
  • ½ cup sugar
  • ¼ cup butter softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup non fat vanilla Greek yogurt
  • cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt

Ingredients for Streusel Topping

  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold butter cubed

Instructions

Instructions for streusel topping

  • In a medium bowl, combine sugar, brown sugar, cinnamon, flour and chilled cubed butter
  • Stir with a fork or pastry blender until the mixture is crumbly
  • Set in the fridge until ready to use

Instructions for muffins

  • Preheat oven to 350 degrees
  • Line a 12 cup standard muffin tin with paper liners or coat with nonstick spray, set aside
  • In a large mixing bowl mix the butter and granulated sugar until light and fluffy
  • Add egg, vanilla extract and yogurt, beat until well combined
  • Sift in the flour, baking powder and pinch of salt, beat on low speed until just mixed
  • Gently fold in about half of the strawberries
  • Fill muffin liners ¾ full with batter, top with remaining strawberries and then sprinkle streusel crumble on the top
  • Bake for 20-25 minutes, until the muffins are lightly browned on top and a toothpick inserted in the center comes out clean.
  • Enjoy!

How To Make Homemade Marinara Sauce

Have you made marinara sauce at home before? I mean no canned goods, all fresh ingredients simmering on the stove to utter deliciousness. My husband and daughter did it last weekend and it turned out amazing! It is definitely more involved than opening a jar from the store, but I will admit that you can taste the difference.

We used all fresh ingredients: tomatoes, a little green pepper, garlic, onion, basil from our garden, some seasonings and chicken broth. The hardest part (just because we have never done it before) was blanching the tomatoes.  Which actually isn’t that bad.

How to blanch tomatoes:

  • Fill a large pot with water and bring the water to a boil.
  • Cut a shallow X on the bottom of each tomato. This helps the tomato skin to split so you can get the skin easily with your fingers once the tomatoes have cooled.
  • Prepare a large bowl of water with ice.
  • Add the tomatoes to the boiling water.
  • Cook for 30 to 60 seconds or until the tomato skins start split open.
  • Using a slotted spoon, transfer tomatoes to the large bowl of ice water.
  • When the tomatoes are cool enough to handle, use your fingers to peel the skin off the tomatoes.

For this spaghetti sauce recipe, we also removed the seeds. To remove the seeds from the blanched tomatoes simply cut them in half and gently squeeze them to get the seeds out.

We actually made homemade pasta too, which was also incredible but you can serve your homemade marinara sauce on any noodle you prefer. Or just grab a loaf of bread and dip it in the sauce…I may or may not have eaten a half loaf of bakery bread 😉

How To Make Homemade Marinara Sauce

Make your own marinara sauce at home with deliciously fresh ingredients! The aromas will leave your house smelling amazing all day!

Ingredients

  • 1 tablespoon olive oil
  • 1/4 large medium onion diced
  • 4 cloves of garlic diced
  • 10-12 fresh tomatoes approx. 2-2.5 lbs., blanched, seeded and chopped
  • 1/4 green pepper diced
  • 1 tablespoon Italian seasoning
  • Salt
  • 3-4 basil leaves chopped
  • 16 oz chicken broth

Instructions

  • Heat olive oil in large pot on medium low flame.
  • Add the diced onion with a pinch of salt. Cook until translucent, make sure they don't burn!
  • Stir in the garlic and stir for about 30 seconds.
  • Add the tomatoes, green pepper and basil to the pot.
  • Bring everything to a gentle simmer.
  • Partially cover with a lid and cook down until reduced, approx an hour or so. Be sure to stir a few times.
  • For a less chunky sauce, add everything to a food processor and blend until smooth. We did this, my house does not like chunky tomatoes.
  • Transfer back to the pot, add in chicken stock and Italian seasoning.
  • Allow sauce to simmer until deserved thickness.
  • Season with salt as needed.
  • Serve with over favorite pasta with fresh basil or transfer to jars and refrigerate up to one week.
  • Enjoy!

That’s my son, Steven. He will complete his first year of high school this year. That means that graduation cap he is holding, he will be wearing one very similar in just a few short years.

In fact, I also enjoy these strawberry tacos as my midday snack. You can easily prep extra strawberries and the sweet cream cheese mixture so that they are ready to go throughout the day and for the next few mornings.  I swear everyday come 3 PM I am starving and looking for something to snack on, and most of the time what I grab isn’t the healthiest option, so now I am getting in the habit of making one of these strawberry tacos. They satisfy my sweet tooth and that hunger pain.

Simply Sweet Strawberry Cheesecake Tacos

These strawberry cheesecake tacos are easy to make, delicious, and nutritious! These strawberry tacos are great if you are on the go or looking for an easy breakfast at home.

Ingredients

  • 2 cups Fresh From Florida strawberries quartered
  • 4 oz 1/3 less fat cream cheese softened
  • 1/2 cup non fat Greek yogurt
  • 1 tablespoon honey
  • 1 tsp vanilla extract
  • 1 teaspoon ground cinnamon
  • 6 flour tortillas 6 inches
  • Butter

Instructions

  • In a small skillet, heat a small amount (approx 1 teaspoon) butter over medium-low heat.
  • Add one tortilla to the skillet and cook each side until light golden brown, 1-2 minutes.
  • Remove from skillet and set aside.
  • Repeat with remaining butter and tortillas.
  • Mix together cream cheese, honey, cinnamon and Greek yogurt until blended.
  • Spread sweet cream cheese mixture on top of tortillas.
  • Top with strawberries.
  • Sprinkle with cinnamon if desired.
  • Enjoy!

Notes

Prep extra strawberries and the sweet cream cheese mixture so it’s ready to go for the next few days to make breakfast or snack time even easier!

I’m not sure if you have noticed, but I don’t post many dessert or sweets recipes. It’s not because I don’t like them. The problem is that I like them too much. If I have cookies or chocolates in the house, I can justify eating about 10 of them without even thinking about it. That’s why I only make sweet treats when I can share them, like Christmas Cookies or these delicious oreo truffles for Valentine’s Day. In all reality, you can make these delicious one-bite cookie morsels just about any time of the year and I am sure that whoever you share them with will be grateful. Or, you don’t have to share them…I won’t judge 😉

Easy Oreo Truffles – Only 4 Ingredients!

Grab your favorite chocolate sandwich cookies and turn them into a delectable truffle! You only need 4 ingredients and about 3o minutes to make about 24 oreo truffles.

Ingredients

  • 1 Package Chocolate Sandwich Cookies Oreos
  • 1 8 oz package cream cheese
  • 1/2 of 1 24oz package of white Almond Bark
  • Red or Pink Sprinkles – if desired…Or any color will do!

Instructions

  • Using a food processor or blender, grind cookies until fine consistency.
  • In a stand mixer, combine cookie crumbs and room temperature cream cheese.
  • Beat until soft dough forms.
  • Form dough into balls and place on wax or parchment paper.
  • In a double boiler, melt almond bark.
  • Using a fork or toothpick, dip the chocolate balls into melted chocolate.
  • Decorate with sprinkles or candies of choice.
  • Place in refrigerator until chocolate is completely firm.
  • Enjoy!
  • Serve when ready or store in airtight container in refrigerator.

Notes

Dip just a couple cookie balls at a time then add sprinkles – chocolate hardens quickly.
The prep time includes the dipping and decorating time. This is a NO BAKE recipe.

Ingredients

  • 5 large frozen strawberries approx 3/4 cup
  • 1 ounce simple syrup
  • 3 ounces vodka
  • 1 teaspoon lime juice
  • Fresh strawberries for garnish if desired
  • Sugar or Salt for rim if desired

Instructions

  • Place strawberries, simple syrup and lime juice in a blender. Blend until smooth.
  • Use a flexible spatula to press blended strawberry mixture through a fine mesh sieve into a small bowl or measuring cup. Discard seeds and pulp.
  • Add strawberry purée and vodka to a measuring cup or cocktail shaker. Stir or mix well.
  • Pour into 2 chilled martini glasses.
  • I sugared my rim and garnished with a strawberry, feel free to salt your rim if you prefer or leave it bare. Either way, it will be delish!

I put that it makes 1-2 martinis…that all depends on how big your make yours 🙂

You will notice that I used frozen strawberries, I love buying fresh strawberries when they are on sale and sometimes I just can’t manage to eat them all before they go bad, so I freeze them. I always have a bag of fresh frozen strawberries in my freezer, you can use fresh ones if you would like, just make sure those martini glasses are nice and cold and be sure to chill your vodka. Martinis are meant to be served cold, for that smooth finish. You can also toss all your ingredients into a cocktail shaker with ice before serving too. Not matter what you decide, your strawberry martinis will be the hit of your next Happy Hour 🙂

Do you know how simple Simple Syrup is to make? I guess that’s why it’s named…SIMPLE SYRUP. But really, I didn’t realize until a few days ago that simple syrup is simply sugar and water and it’s ready in just a few minutes. And since you can use simple syrup in all sorts of fun cocktail recipes and other delicious drinks, I thought I would share the simple recipe and share a few infused simple syrup recipe ideas.

Simple Syrup

All you do is use equal amounts of sugar and water then simply bring the sugar water mixture to a boil so that all the sugar is dissolved and the liquid is clear.

Once the syrup is ready, you quickly remove it from the heat and put it in the containers that you will be storing it in.

You can make your own flavor infused simple syrup, that part is also very simple 😉 All you have to do is add the additional ingredients into the container as soon as you pour the mixture in.  You leave the add-ins in the simple syrup until it cools, be sure to cover the jars with the lids while steeping.  Once it is cool, remove the added ingredients.

You can keep simple syrup in an airtight container in the refrigerator for up to 3-4 weeks, or 1-2 weeks for the infused/flavored simple syrups.

  • Add the sugar and water into a pot and heat the ingredients until dissolved.
  • Stir the mixture over medium heat until the liquid is completely clear, not cloudy.
  • Immediately remove from the heat source.
  • If you are batching a few batches so that you can add flavor, pour the liquid into jars and promptly added your additional ingredients and close the lid on the jar to steep.
  • Once the mixture is cool, remove the additional ingredients.
  • Store your simple syrup in an airtight container, in the refrigerator, until ready to use.
  • Basic simple syrup can stay in the refrigerator for up to 4 weeks, and flavored simple syrups are good for 1-2 weeks.

Chardonnay is typically a dry, medium to full-bodied white wine with moderate acidity and alcohol. Its flavors range from lemon and apple to pineapple. This white wine can also shows notes of vanilla when it’s aged with oak.

An Introduction To Chardonnay

Chardonnay is a white wine grape that is grown in vineyards throughout the world. In fact, it is the world’s second-most planted white grape variety. Wherever wine is made, you’ll find Chardonnay, it is originally from France, and there are many different French expressions of chardonnay. California is also renowned for being a lover of this grape variety.

California Chardonnay

Though chardonnay wine has been made in France for centuries, it truly became an internationally recognized grape after it became wildly popular in the United States, particularly in California, during the 1990’s. California currently grows more Chardonnay than any other grape variety, red or white.

Because California’s climate is quite warm, chardonnay grapes ripen very well, and this often translates to flavors of tropical fruits in the wine, such as melon, pineapple, mango, and guava. However, there are some cooler regions in California, such as Sonoma County and the Russian River Valley, that make Chardonnay with the more traditional, crisp flavors of apples and pears.

Oak Aging and Malolactic Fermentation

Californian Chardonnay is famous for being “oaky” – winemakers often age Chardonnay in American oak barrels, which gives it characteristic aromas of vanilla extract, honey, toasted bread, and pastry crust. Many American winemakers also put their Chardonnay through malolactic fermentation, which is a secondary fermentation that converts the wine’s tart malic acid (similar to the tartness in a green apple) to creamy lactic acid (the same type of acid that’s in milk). Malolactic fermentation gives Chardonnay a buttery, smooth, rich mouthfeel.

However, there has been a trend towards “unoaked” Chardonnay: the wines are aged in stainless steel rather than oak, and they do not undergo malolactic fermentation. These wines are very fruit-forward and dry.  Personally, I prefer an unoaked Chardonnay.

Chardonnay Throughout the World

Chardonnay isn’t a fussy grape to grow, so many young wineries start out by growing this variety. In the last 40 years, Australia has started growing a lot of Chardonnay, and their version tends to be similar to the oaky American style.

Chardonnay is also grown in Canada, South Africa, and throughout South America. The styles range from dry and crisp to oaky and buttery. In particular, Canada’s Niagara region tends to make Chardonnay that is more like the crisp, French version, whereas Chile and South Africa often use some oak and malolactic fermentation in their chardonnays to make them more similar to the Californian style.

What foods pair well with Californian Chardonnay?

Oaky, buttery chardonnays pair well with bolder-flavored dishes. Classic food and wine pairing is an oaky Californian chardonnay paired with lobster dipped in butter. This style of Chardonnay is also good with crabcakes, and any kind of pasta served with cream sauce.

Crisper, unoaked chardonnays pair very well with seafood dishes, especially shellfish like clams and oysters.

French Chardonnay

White Burgundy

Chardonnay is thought to have originated in the Burgundy region of France several centuries ago; the grape is commonly referred to as “white Burgundy.” The most famous white Burgundy appellations are the grand crus of Montrachet, Meursault, Puligny, and Chassagne. These wines are often very expensive, but there are also lots of good inexpensive white Burgundies on the market. (They will just say “Bourgogne” on the label.)

White Burgundy usually tastes very dry and crisp. It is traditional for the wine to be aged in neutral oak barrels, which do not impart any additional aromas or flavors to the wine – instead, they allow the fruit flavors to really shine through. In recent years, many producers have started using stainless steel tanks for aging their wines instead of oak barrels, as stainless steel is also neutral, but it costs much less than barrels.

White Burgundy typically has aromas and flavors of pears, apples, citrus fruits, and sometimes hazelnuts. It is also commonly described as “minerally” – it tastes of the stony soil that the grapes are grown in. These wines also tend to have very high acidity.

Chablis

Chablis is another famous region that mainly produces chardonnay. These wines have aromas of flowers, crisp green apples, and minerals. The Chablis area used to be the bottom of a primeval sea (the Kimmeridgian sea, to be precise), so the soil is comprised of fossilized limestone, chalk, and marl. This can make Chablis taste minerally, like white Burgundy. Some people say that you can taste the seashore in this wine – and if you pick up a handful of dirt in a Chablis vineyard, you can even see tiny fossilized seashells in it!

Blanc de Blancs Champagne

Chardonnay is one of the three grape varieties that may be grown in the Champagne region of France (the other two are pinot noir and pinot Meunier). If a Champagne is made from 100% Chardonnay, it is called “Blanc de Blancs.” Chardonnay-based Champagne has aromas of citrus fruits, green apples, and yeast or fresh biscuits. When Blanc de Blancs Champagne is cellared for a few years, it often acquires earthy aromas of fresh mushrooms and damp soil.

What foods pair well with French Chardonnay?

Chardonnay is an excellent food wine that pairs well with a number of dishes. Since most French chardonnays tend to be dry and crisp, they are very good with seafood, especially white-fleshed fish and shellfish like oysters and clams. A classic combination is Chablis with oysters on the half shell. French chardonnay is also good with vegetarian dishes and mild cheeses like mozzarella, young gouda, chèvre, and feta.

Champagne is a great food wine, as the high acidity and carbonation cleanse the palate very well. Blanc de Blancs Champagne pairs well with dishes that mirror its flavors, such as a mushroom tart. It is also good with foods that are high in oil and fat, such as pan-fried shrimp, sashimi, and even buttered popcorn and plain potato chips!

How much is Chardonnay?

The cost of a bottle can vary from $7.99 to $60 and up.  The more expensive Chardonnays will come from wineries that make limited quantities. White wines are less expensive than red wines (a bottle of Cabernet Sauvignon can easily go for over $75).  White wines tend to be less expensive than red wines because the grapes are easier to grow and white wines aren’t aged like red wines are.

Pinot Grigio is a popular white wine, originating as a spin-off of its cousin Pinot Noir. Its light, fruity flavor has fueled an impressive sales growth. Pinot Grigio is a light to medium-bodied white wine often with aromas of citrus such as lemon or lime, pear, and even a touch of peach or apricot.The finish is typically fresh and crisp, which is one of the reasons it is so popular.

Pinot Grigio originated as a variation of its “cousin” Pinot Noir in the Northeastern regions of Italy around the end of the nineteenth century after the grape that makes up the wine was discovered in Alsace, France. In modern-day Italy, the wine is produced with two distinct end markets in mind: one that attempts to achieve authentic expression of the flavor of a particular region and one that seeks high volume sales with the use of standard varieties. The latter production goal has resulted in the spread of Pinot Grigio’s popularity in the United States, particularly with such varieties as Santa Margherita.

Pinot Grigio wine varieties in the U.S. became increasingly popular due to their versatility, light fruity flavor-alternative to Chardonnay and Sauvignon Blanc, and unique combination of freshness and drinkability.  Pinot Grigio is one of my favorite wines to drink in the summer, it is often light and refreshing, and a bit fruity.  There are some in the market that are too sweet, but most of the time, my philosophy is that you can’t go wrong with a Pinot Grigio.  Some of my favorite Pinot Grigio brands are Veterra (which is actually a Michigan wine), CK Mondavi and Family, and Ecco Domani. One of the things that make this white wine so popular is the price point, you do not have to spend over $20 to get a delicious bottle of wine. In fact, most of the time you don’t have to spend over $10.

As a result of Pinot Grigio’s rising popularity and the U.S. imported sales trends, several California based wineries began a surge in their production of the grape responsible for the wine’s creation. From 1996 to 2000, California’s land devoted to growing Pinot Grigio’s grape grew from four hundred to more than sixteen hundred acres.

Even though Pinot Grigio has firmly established itself as a viable player in today’s wine market, serious wine drinkers tend to publicly shun it. According to Jay McInerney’s article Giving Pinot Grigio Another Go, the primary reason has to do with flavor dilution. McInerney states the opinion that due to its popularity and mass production, most of what is called Pinot Grigio is a “lemonade-like food lubricant/buzz delivery system.”

However, McInerney does seem to think that certain varieties of Pinot Grigio are redeemable and worth their consumption. Of the opinion that the most notable varieties stem from the Italian province of Friuli, McInerney recommends a list of mid-priced versions originating from Italy, Slovenia, and Santa Barbara, California.

Whether a particular wine is accepted by the masses or revered by the experts, the enjoyment of its flavor is a subjective experience. Pinot Grigio wines come from a history of veneered fruit that has spurred quality wine varieties such as Pinot Noir. Pinot Grigio’s versatile, refreshing taste has resulted in impressive sales volume and adoption of U.S. based versions.
