Breakfast. The most important meal of the day, but also the meal that gets the least amount of attention or is even forgotten about entirely. And why do we forget about it? Well, for me at least, it’s because the mornings are so rushed. I am usually trying to get the kids ready for school, get in a few sips of coffee while it’s still warm, open up the computer to see what’s on my work agenda for the day and get out the door to make it to exercise. The kids usually get cereal or something that I can throw in the toaster while we are getting lunches ready and if I happen to remember to grab something for myself it’s a breakfast bar (or cookie!). UGH.

So, having breakfast ideas that are easy, can be taken “to go” and are nutritious is a huge plus in my world. And that’s exactly why I love these Strawberry Breakfast Tacos. They are ready in less time that it takes whatever I usually toss in the toaster for the kiddos and since they are naturally sweet, the kids think they are getting a treat and I know they are eating a healthy dose of fruit.

Living in Florida I can usually pick up my favorite fruits and vegetables year round…locally. I love shopping local and supporting the farmers right here in the sunshine state. So, of course Fresh from Florida Strawberries are the star ingredient in my breakfast tacos. Did you know that it’s strawberry season right now? That means you are getting the best berries right now! Start adding them to your smoothies, salads, desserts or just leave a bowl out so they are easy to snack on.

Why are strawberries good for you? Well, not only are they sweet and delicious but they are loaded with vitamins, fiber, and antioxidants. Strawberries are also sodium-free, fat-free, cholesterol-free, and are low in calories.

That being said, let’s great started on my Fresh Strawberry Breakfast Tacos 😉 You only need a few ingredients, which you may have on hand right now and about 5 minutes to have this yummy breakfast ready for you and your family. In fact, I also enjoy these strawberry tacos as my midday snack. You can easily prep extra strawberries and the sweet cream cheese mixture so that they are ready to go throughout the day and for the next few mornings.  I swear everyday come 3 PM I am starving and looking for something to snack on, and most of the time what I grab isn’t the healthiest option, so now I am getting in the habit of making one of these strawberry tacos. They satisfy my sweet tooth and that hunger pain.

These strawberry breakfast tacos are easy to make, delicious, and nutritious! These breakfast tacos are great if you are on the go or looking for an easy breakfast at home.

Ingredients

  • 1 cup Fresh From Florida strawberries quartered
  • 2 oz 1/3 less fat cream cheese softened
  • 1 tablespoon honey
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup Greek vanilla yogurt
  • 6 flour tortillas 6 inches
  • Butter

Instructions

  • In a small skillet, heat a small amount (approx 1 teaspoon) butter over medium-low heat.
  • Add one tortilla to the skillet and cook each side until light golden brown, 1-2 minutes.
  • Remove from skillet and set aside.
  • Repeat with remaining butter and tortillas.
  • Mix together cream cheese, honey, cinnamon and Greek yogurt until blended.
  • Spread sweet cream cheese mixture on top of tortillas.
  • Top with strawberries.
  • Enjoy!

Notes

Prep extra strawberries and the sweet cream cheese mixture so it’s ready to go for the next few days to make breakfast time even easier!

    Can these be prepared ahead of time for a brunch, or should the tortilla shells be fresh and warm? Ie. Prepare and take to a brunch rather than at your home.

    1. Hi Alisa! I actually love the tortillas at room temp, so no warming needed! My only concern about making them too far in advance is that the yogurt will soak into the tortilla and get a little soggy. BUT, if you are only making them and then transporting them – you will be totally fine! I hope that helps…and be sure to let me know how they turn out 🙂

    They turned out fantastic. I precut the strawberries and made the spread the night prior. I then fried the tortillas in the morning and took everything with me to the brunch where assembled quickly there upon arrival (just wanted to be safe to not be soggy). They were a big hit! My 20 year old son tried the leftovers later even and likened them to a crepe. Thank you for a quick, easy and delicious idea!!
