Once you have the cranberry jello fruit mixture prepared you simply put it in serving cups, I used small dessert shot glasses. Then you allow it to set in the refrigerator for about 3 hours. I topped mine with whipped topping, but you don’t have to. Use cool whip if you want to keep it easy, or make your own with heavy whipping cream.

Ingredients

  • 20 oz crushed pineapple
  • water
  • 3 oz raspberry jello
  • 3 oz strawberry jello
  • 16 oz cranberry sauce
  • 2 apples chopped

Instructions

  • Drain the pineapple, reserving the juice
  • Add enough water to the juice to make 2 1/2 cups total liquid
  • In a medium saucepan, bring the pineapple juice mixture to a boil
  • Remove from the heat and add the jello powder, whisking until completely dissolved
  • Stir in the pineapple, cranberry sauce, and apples until well combined
  • Spoon into shot glasses, small cups or baking cups, filling most of the way
  • Refrigerate for at least three hours, until the jello has set
  • Serve cold
  • Add whipped topping if desired
  • Enjoy!

After I created my Halloween Monster Cookies, I decided that adding in some peppermint to those easy homemade chocolate chip cookies and homemade frosting would make the perfect cookie for Santa! Now, you all that I am not the best baker in the world, so please, trust me when I say that these peppermint chocolate chip cookies are EASY. In fact, so easy that I have already made 2 batches and froze some. Why did I freeze them? Well, I have a massive sweet tooth and if I leave them on the counter I will eat them 😉 This way, I make some for the kids and then I can prepare for the holidays too.

Peppermint and chocolate are by far two of my absolute holiday flavor combinations. I mean, how can you go wrong? The mint from the peppermint is the combination accompaniment to the sweetness of the milk chocolate.

In my peppermint chocolate chip cookies I just used peppermint extract to get that peppermint flavor, you can add in chocolate peppermint candies (like Andes) or even peppermint bark along with the chocolate chip or instead of chocolate chips if you would like. Again, I went the easy route. Plus, I didn’t have to buy anything extra at the grocery store. Feel free to experiment if you have mint candies at home! Again, how could you possibly go wrong with peppermint and chocolate? You can’t. Promise.

I also made a homemade peppermint frosting for my peppermint chocolate chip cookies, because well, Christmas cookies call for frosting and sprinkles.

To make the peppermint chocolate chip cookies and homemade peppermint frosting you need very simple ingredients, ones that you probably have at home right now. Especially since it’s prime baking season.

  • 2 ¼ cups Flour
  • 1 tsp Baking Soda
  • 2 Sticks Softened Butter
  • ¾ cup Sugar
  • ¾ cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Peppermint Extract
  • 2 Eggs
  • 1 tbsp Florida milk
  • 2 cups Chocolate Chips

Peppermint Frosting Ingredients

  • 1 stick butter – softened/room temperature
  • 2 cups powdered sugar
  • 1 tsp peppermint extract
  • 2 tbsp milk
  • Sprinkles or Crushed Peppermint Candies for Decorating

Instructions

  • Preheat the oven to 375 degrees.
  • In a large mixing bowl, combine butter, sugar, brown sugar, baking soda and vanilla extract using mixer.
  • Beat in the eggs one at a time.
  • Slowly add the flour 1/4 a cup at time.
  • Mix in the chocolate chips.
  • Prepare baking sheets with cooking spray or parchment paper.
  • Make small cookie dough balls, approximately 1 inch.
  • Place the cookie dough balls onto the baking sheet and bake for 10-12 minutes or until golden brown. Allow the cookies to cool completely before decorating.

Peppermint Frosting Instructions

  • In a large bowl (or in the bowl of a stand mixer), mix the butter until it is smooth.
  • Mix in the powdered sugar, a little at a time.
  • Add in in the vanilla and peppermint extract.
  • Add in 2 tablespoons of milk a little at a time too.
  • Blend until smooth.

Can you freeze homemade cookies?

Absolutely! As I mentioned above, I already have a batch in the freezer. I just put mine in a gallon size freezer bag and filled it up. Mine will only be in the freezer for a few weeks, but homemade cookies can be frozen for up to 6 months if stored properly.

Can you make chocolate chip cookie dough ahead of time?

Sure can! I actually like making it the night before and refrigerating it because it gives it a little time for all the flavors to blend perfectly together and the sugars to break down. You can make cookie dough 3 – 5 days ahead of time, be sure to wrap it and/or keep it in an airtight container and refrigerate it.

How long do freshly baked cookies last?

At room temperature and when properly stored, freshly baked cookies will last for about 2 to 3 weeks at normal room temperature. If you are at my house, they last about 3 days 😉

Can you use peppermint oil instead of peppermint extract in the dough and frosting?

Yes, however peppermint oil is much more concentrated, so from what I have read, you only use about a 1/4 of what the recipe calls for.  So, you will use less peppermint oil than peppermint extract.  In this particular recipe, you would use only 1/4 teaspoon of peppermint oil in the dough as well as the frosting.  Of course, you can adjust to your taste.

Can you use store bought frosting and just add the peppermint extract to it?

Sure!  It will save you a few minutes, but making homemade frosting is actually really easy, so give it a try sometime!

2. Campo Viejo, (aged), Rioja Gran Reserva from Logrono, Spain
This Spanish wine is fairly versatile. It pairs well with firm, mature cheese, making it an excellent red option for a wine and cheese party. It also works well with rich dark chocolate desserts. This wine might also be served for dinner with goulashes or stews. This wine costs between $17-20.

3. Flat Top Hills Red Blend from California
This red blend wine is a medium to full-bodied wine with cinnamon stick and spice components and dark fruit and bright raspberry fruit notes. This red blend wine pairs well with the smoky cheeses on your holiday charcuterie board and anything and everything BBQ. This wine costs around $16.

4. Francis Coppola Diamond Collection Claret from Califorina
This is Francis Coppola’s signature red wine, so you know it has to be good. It comes in a beautiful black bottle with gold netting, making it’s presentation perfect for the holidays. Plus, the wine is incredible. Claret is a term originally coined by the British to describe Cabernet-based wines. This Cabernet Sauvignon, Petit Verdot, Malbec and Cabernet Franc blend is alluring and sophisticated; it boosts smooth tannins and succulent flavors of wild berries, plum and anise. The wine costs around $16 per bottle.

5. Bonterra Organic Merlot from California

For those of us outside of the state, don’t worry, you can get Festivus online at Leelanau Cellars. It is predicted to sell out by mid-December so don’t delay in grabbing this silky, red blend that has classic Cabernet aromatics with black pepper and dark fruit. This festive wine pairs perfectly with…the holidays! Festivus is priced at a very giftable (and shareable) amount of just under $10.

9. CK Mondavi & Family Cabernet Sauvignon from California
This is a excellent Cabernet Sauvignon for it’s price point of only around $8. This wine has a classic, deep red color, rich with cherry and blackberry flavors with a hint of oak. This red wine will pair well duck, quail, beef and the aged cheddar and gouda on your cheese appetizer plates.

  • Feel free to add other leftovers like roasted vegetables or sweet potatoes.
  • You can top your casserole with candied pecans and fresh cranberries before serving.  It gives your casserole a bit of color and a bit of crunch…both were a perfect Thanksgiving addition, but it is just as good without them if you would rather not add them.

How Long Are Thanksgiving Leftovers Good For?

Leftovers are generally good for 3-7 days in the refrigerator and 2-3 months in the freezer, so be sure to use them before you have to throw them away.

  • Cooked turkey is good for 3-4 days in the refrigerator. If you don’t think you will use it that quickly, toss it in the freezer.
  • Prepared stuffing is good for 3-4 days in the refrigerator and about a month in the freezer.
  • Mashed potatoes are good for 3-5 days in the refrigerator. If you put them in the freezer, they will stay good for up to a year.
  • Cranberry sauce is still fresh if kept in the refrigerator for up to 10-14 days.  If you still have leftover cranberry sauce after making this delicious casserole, make this easy Cranberry Jello Salad, it’s delicious!

Ingredients

  • 4 cups leftover turkey diced or shredded
  • 8 oz cranberry sauce approx. 1/2 can
  • 2 cups mashed potatoes
  • 1 cup green bean casserole
  • 2 cups corn 1 15 oz can
  • 1 cup gravy
  • 3/4 cup milk
  • 5 cups prepared leftover stuffing

Instructions

  • Preheat oven to 350°
  • Spray a 9×13 baking pan with cooking spray and set aside
  • In a medium bowl, mix the turkey and cranberry sauce
  • Add the turkey mixture to the baking pan
  • Layer on the mashed potatoes, use a spatula to spread them out evenly
  • Layer on the green bean casserole, use the spatula to spread it out evenly
  • Sprinkle on the corn over the green bean casserole
  • In the same bowl you used for the turkey and cranberry, add in the gravy and milk, stir well
  • Pour the gravy/milk mixture over the corn
  • Add the prepared stuffing as the final layer, spreading evenly with a large spoon.
  • Cover and bake for 35-40 minutes or until warm throughout
  • Uncover and bake for an additional 5 minutes to brown the top
  • Top with candied pecans and fresh cranberries if desired
  • Serve with a cold glass of milk
  • Enjoy!

Notes

This recipe will make a full 9×13 baking pan, if you want to half the recipe, just use a 8×8 baking pan.

If you like Bloody Mary Cocktails, you have come to the right place.  I am sure you have seen everything from a traditional Bloody Mary made with tomato juice, spices and vodka to Bloody Marys served with a hamburger on top of the glass.  There’s no need to stop with just a Bloody Mary. The original cocktail is a great jumping-off point for other drinks.

Not that there’s anything wrong with the classic Bloody Mary, of course. It’s one of the great classic drinks of the 20th century. How To Make A Bloody Maria

1 1/2 oz. tequila
4 oz. tomato juice
juice of 1/2 lime
4 dashes Cholula*
2 dashes Worcestershire sauce
pinch of salt
pinch of pepper
Pinch of horseradish

Mix all ingredients in a cocktail shaker with ice. Pour into a tall glass and garnish with a celery stick.

*Cholula Hot Sauce is a pepper sauce made in Chapala, Jalisco, Mexico – also the birthplace of tequila. Its taste is different and distinctive from the traditional tabasco sauce.

How To Make A Bloody Bull

2 oz. vodka
2 oz. tomato juice
2 oz. beef bouillon
6 dashes tabasco sauce
1 tsp. Worcestershire sauce
dash of black pepper

Combine all ingredients and mix well. Pour over ice in a tall glass.

How To Make A Danish Mary

1 1/2 oz. Aquavit
2 oz. tomato juice
6 dashes tabasco sauce
1 tsp. Worcestershire sauce
1 tsp. grated onion

Combine all six ingredients and mix well. Pour over ice in a tall glass and garnish with a sprig of fresh dill.

How To Make A Highland Mary

1 1/2 oz. Scotch
2 oz. tomato juice
6 dashes tabasco sauce
1 tsp. Worcestershire sauce
1 tsp. grated onion
dash of black pepper

Combine all ingredients, mix well, and pour over ice in a tall glass. Garnish with a sprig of fresh rosemary, crushed slightly.

How To Make A Borscht Mary (or Russian Mary)

2 oz. vodka
2 oz. tomato juice
2 tbsp. plain yogurt
6 dashes tabasco sauce
1 tsp. Worcestershire Sauce
1 tsp grated onion
dash of black pepper

Combine all ingredients and mix well. Pour over ice in a tall glass and serve garnished with a sprig of parsley.

2 oz. vodka
2 oz. tomato juice
2 oz. clam juice
6 dashes tabasco sauce
1 tsp. Worcestershire sauce
dash of black pepper

Combine all ingredients, mixing well. Pour over ice in a tall glass and garnish with a celery stalk.

1 1/2 oz. gin
4 oz. tomato juice
of 1/2 lemon
dash of Worcestershire sauce
2-3 dashes tabasco sauce

How To Make A Irish Bloody Mary

1 1/4 oz. Bailey’s Irish Cream
6 oz. tomato juice
of 1/2 lemon
1 tsp. Worcestershire sauce
4-5 dashes tabasco sauce

Combine all ingredients and mix well. Pour into a tall glass over ice and garnish with a pickle spear. Optional: rim the glass with celery salt.

How To Make A Classic Bloody Mary

2 oz. vodka
4 drops Worcestershire sauce
2 drops tabasco sauce
dash of horseradish
dash of lime juice
pinch of salt and pepper
tomato juice

Combine all ingredients except the tomato juice in an old-fashioned glass half-filled with ice cubes and stir well. Add tomato juice to taste. Stir again and serve.

How To Make A Pumpkin Mary

1/2 cup tomato juice
3 tbsp unfiltered apple cider or juice
1 oz. vodka
1 1/2 tsp. fresh lemon juice
1 1/2 tsp. bread & butter pickle juice
1/2 tsp. freshly grated ginger
1/2 tsp. hot sauce (such as Cholula), depending on desired level of heat
1/4 tsp. pumpkin pie spice
pinch kosher salt
pinch freshly ground black pepper

Ahh, the smell of turkey roasting away, potatoes bubbling on the stovetop, and the pies all baked and steaming on the countertop. These are the staples of a holiday meal, but when your guests arrive, the first thing they’ll want is a drink. And what to serve with the turkey?

The challenge that the host faces at Thanksgiving dinner is all the flavors that are on the table. When pairing wine with food there are many options and even the most traditional of Thanksgiving dinners are open to all different kinds of wine.

Appetizers are a great way to begin the Thanksgiving tradition. It sets a tone and gives everyone a chance to mingle and meet before the meal. Here are two options that are bound to please at least 50% of your guests. A light sparkling wine of any kind and for those football fans here is a real treat “Biere de Champagne”. It is bubbly, but still has the yeasty flavor of well brewed beer.

Since turkey has both dark and light meat. White wines and red wines are both appropriate. It will also provide guests a choice. For red wine a Pinot Noir would be an excellent choice. It has very little tannin so it will not overwhelm the meat. Pinot Noir is the obvious choice, and while a classy bottle from Burgundy might be just the thing for small holiday gatherings, there are plenty more moderately priced options that you won’t mind splashing around a bit during your feast.

Several high quality less expensive Pinot Noirs are available from Chile and a few from California though these tend to go up again in price.

Another great red wine option is a Carmenere, also from Chile. A relative of Cabernet (and we really should invite relatives to these special occasions now and then shouldn’t we?) Carmeneres are rich and complex though lighter than a Cabernet or Merlot, making them a good pairing for turkey, especially with dark meat.

They are typically very inexpensive; quality Carmenere can usually be found for around $10-$12. Don’t let the low price fool you or your guests out of this pleasurable wine experience; just make sure to peel the price tag off before serving so aunt Ethel won’t turn up her nose without a taste.

No matter what you choose to serve, remember to put down the peeler, open your wine, and let it take a deep breath with you about 15 minutes or so before your guests arrive.

Best Wines To Pair With Turkey

It is also important to consider those guests who prefer white wine. Most chardonnays are fermented in oak barrels and have a great flavor. There are so many choices, anything in your price range will probably serve the purpose well. An oaky Carneros Chardonnay from California can complement the rustic and earthy nature of some holiday foods though it may overwhelm the turkey itself.

A nice dry Sancerre should leave none disappointed and will go quite nicely with tart cranberry sauce or garlicky haricot vert (green beans) should these delicacies be found alongside the turkey on your table. Sancerre is also a fabulous compliment to spreadable cheeses, shellfish, and raw vegetables, which makes it a good choice to offer as your guests file in before dinner.

If sweet potatoes are a big part of the meal experts say that a good Riesling may be exactly what you are looking for. It is high in acid and will help cut through the richness. A sparkling wine is also a good option. A little Champagne may make those sweet potatoes extra special.

And of course, there should be Champagne, at least enough to fill everyone’s glass for a toast to health, happiness, and the joys of living to excess a minimum of two or three times a year.

Most guests coming to Thanksgiving dinner will ask what they can bring. A savvy hostess will not ask them to cook, but bring a favorite wine. This way everyone will have something that they truly enjoy. It gets a little tricky, but have enough appropriate glasses within each reach for all the wines available.

Tips For Pairing Wine With Seafood & Fish

Just as different types of seafood vary in flavor, texture, and personality, so do the best wines that can be chosen to accompany them. The fat contained in a fish is a major determinant of its flavor profile. Most white-fleshed fish are mild in taste while also being lean. Darker-fleshed fish contain more fat and are stronger in flavor. To choose a wine that will be great with any given type of seafood, it is wise to consider the fat content of the fish as well as how it will be prepared. Will, it simply be broiled with herbs, or will it be fried or served with a rich, creamy sauce?

Of course, choosing the right wine to have with seafood is a matter of personal preference, and whatever a person likes is what they should choose. But in general, choosing a wine that is equal to a seafood dish in intensity, fullness, and richness will ensure a more memorable dining experience.

One general rule for wine and food pairings is to “Pair like with like.” For example, delicate, white-fleshed fish nearly always pairs well with a wine with similar delicacies, such as a dry, crisp Sauvignon Blanc. This light to medium-bodied wine may vary in flavor from grassy or herbal to citrus or tropical, but it is not likely to overpower a mild, simply cooked seafood dish.

Seafood that is served with a rich, creamy sauce needs a wine that is more full-bodied. A Chardonnay is often a good choice, with its buttery, oak, and sometimes vanilla-like flavor. This wine also complements lobster and crab served with butter.

Pinot Gris, from the Alsace region of France, and Pinot Grigio of Italy are two other great white wines that can be paired with seafood. The Italian Pinots are light and crisp, often with notes of citrus or melon, and pair well with light seafood dishes such as steamed cod. Oysters also pair well with this wine. The Pinots of the Alsace region are a bit richer, with notes of almond and honey. They pair well with smoked fish or with seafood served in a creamy sauce.

German Riesling wines can be served with almost any type of seafood because there are as many variations of this wine as there is seafood. Riesling wines have notes of apple, pear, and peach, and they vary in sweetness and are categorized by their style. The driest Riesling is Kabinett, which works well with Asian or Thai seafood dishes. Spatlese, which is off-dry and medium-bodied, complements lobster, and scallops. Auslese, which is sweeter, goes well with the crab. The remaining Riesling wines are even sweeter and are dessert wines.

Fried fish, shrimp, and similar dishes require a bold wine that can stand up to the high amount of fat used in cooking them. Sparkling white wines are excellent for this purpose. Prosecco, which is usually moderately priced, is a great choice, with high acidity that can take on the strong flavors of fried or spicy seafood and can cleanse the palate. Of course, Champagne is always appropriate, too.

Some other general considerations for pairing wine and food that also apply to white wines and seafood are that the sweetness levels of the wine and the dish should be somewhat similar. The wine chosen should be equal to or greater than the amount of sugar in the dish. For salty dishes, a crisp wine, such as Sauvignon Blanc, is needed to balance the flavor.

Similarly, weighted wine and food also complement one another. For example, lobster and Chardonnay go well together because they are both medium-bodied. Wines can also be paired by color and acid levels. Sauvignon Blanc is pale yellow and pairs well with citrus flavor, and a dish that is high in acid should be paired with a wine that is also high in acid.

Of course, there are many other white wines available on the market in addition to the ones mentioned above. But in any case, knowing the characteristics of the wine, such as color, acidity, sweetness or dryness, and body is key to making a good choice of wine for any given seafood dish.

The most important thing to remember when pairing wine with your meal is that you are the one drinking it and therefore the one enjoying it. So, if you want to open a bold red wine, like a Cabernet Sauvignon, go ahead and give it a try. Then try your seafood dish the next time with one of the white wines listed to see which you enjoy better. Wine is made to compliment food and will indeed change it’s flavor profile with what you are eating.

Is Archery a Safe Activity for My Kids?

In a word, yes! Not only is archery a safe activity, it’s (somewhat surprisingly!) one of the safest activities to get involved in. A recent study done by the National Safety Council found that archery has one of the lowest injury rates of any popular sport, and that it’s actually three times safer than golf. Yes, golf! 

The most important safety aspect of archery is supervision. Kids need to know the rules, and they need to be supervised by an adult who keeps them following those rules. Archery ranges all have staffed specifically trained to keep kids focused while still having fun (and we’ll talk more about ranges in a moment).

Do Kids Actually Like Archery?

Also a big yes! Kids have an intuitive understanding that bows and arrows aren’t just toys—that they’re fun, but also that they’re to be taken seriously—and that gives them a unique appeal. It’s interesting to see how so many kids are drawn to it, more-so than other activities.

Archery equipment has come a long way, too. You may remember archery from your youth, at a sleep-away camp or an after-school program, and you may remember being very frustrated! The bows and arrows we used 25 years ago were poorly-made and shoddy, and that’s a shame, because it turned a lot of kids off to the pastime. Modern bows designed for kids are far more intuitive and easy to use, and you may be surprised at how accurate your kids will be with a quality bow. Kids get a lot of satisfaction when they hit the target (and you might, too, by the way!).

There’s one thing we should mention, and that’s the appeal of archery to girls. There’s a perception that archery is a “boy’s sport,” and that’s a shame—and nothing could be further from the truth. Girls absolutely love archery, and with all of the female archery heroes we’ve seen in the last few years—from Katniss Everdeen in the Hunger Games movies to Merida in Disney’s Brave, there are a lot of positive female role models for archer girls to look up to!

We mentioned earlier that there are dozens of places throughout Florida where your child can learn archery. The easiest way is to enter your zip code on Archery 360’s “Where to Shoot” tool. It’s an incredible directory that they keep up-to-date, and it’s got ranges, schools, and stores all over the U.S.

As for Florida, there are dozens of hundreds of archery ranges all throughout the state—and just as many private archery clubs—but here are some of the best-known, in the biggest population centers for archery for kids in Florida:

Tampa Archery School, Tampa, Florida. The Tampa Archery School is a great outdoor option, with some really talented staff: the school is certified with USA Archery (the organization that sends archers to the Olympics), the NFAA (which is the National Field Archery Association), and the and ASA (which is the National Archery Shooter’s Association). The school is great for youngsters looking to get into different types of archery, such as traditional archery, Olympic recurve, and compound target shooting.

Herb N Chick’s, Jacksonville, Florida. Herb N Chick’s is a great place for archery, but it’s also a great day-trip location—especially if you’re looking to get the kids outside: the facility is located on four acres of land, with a petting zoo, a walk-in garden, an eight-acre lake (with fish, for those interested in fishing), and an archery program organized for field trips and birthday parties. It’s a unique place (and great if you’ve got one kid who wants to explore archery… and one who doesn’t!).

Orlando Archery, Orlando, Florida. Orlando Archery is the only indoor range located in Orlando (which makes it the perfect spot if you need to entertain the kids on a rainy day), and their range features kid-friendly shooting distances of 10, 15, and 20 yards (just for reference, Olympic archers shoot at targets that are 70 METERS away!). You can book online, too, which is a nice option for those of us who are too busy to get on the phone (and by “those of us,” we mean “all of us”!).

Fort Lauderdale Archers, Fort Lauderdale, Florida. Fort Lauderdale Archers is the “Disney World” of archery: it’s got an Olympic-sized archery range with a distance of 90 meters(!), 3-D courses with 28 targets at various distances, and a field archery course that takes participants through the outdoor environment. It’s got LOTS of events, from classes to leagues to competitions, and some games that kids absolutely love, including “Zombie Shoots,” where the targets look like life-sized monsters. This is more of an option if you know your child is really into archery—you’ll need to bring your own gear—but if your young one is into the sport, this the place to be!

Klondike Archery Park, Pensacola, Florida. The Klondike Archery Park is actually a public recreation area, and it’s managed by the Florida Fish and Wildlife Conservation Commission. It’s a very large park—119 acres!—and it’s got some great features, including: a 15-target field archery range, a youth field designed specifically for kids, and two stations that are wheelchair-accessible for archers with movement issues. Here’s the best part: they’ve got free lessons! There’s no charge on Thursday evenings, and lessons are provided (but you’ll want to call for times and specifics). Annual memberships are also available (and they’re pretty affordable), so if you find your little one making a commitment to archery, those memberships can save you a bundle.

Some Helpful Hints / Things Parents Need to Keep in Mind

If you’re going to take your child or teen to the range, and there are a few things to keep in mind about archery for kids in Florida:

Archery Can Make a GREAT Birthday Party. Archery ranges usually have “pre-packaged” birthday events, where parents can rent a number of lanes, and the range itself will emcee fun activities for the kids. Archery birthday parties are a fun and unique way to bring people together (and don’t be afraid to negotiate on the price—most ranges are small businesses, and they’re open to reasonable requests to bring the cost down a little).

Well-Fitted Gear Helps a Lot. Luckily, archery ranges usually have a lot of gear for kids—a good chunk of their business comes from lessons and after-school leagues—and they should able to find appropriately-sized gear for your kids. Many leagues meet once a week and have season-long competitions, with prizes, giveaways, and free food—it’s similar to a bowling league, but instead of rolling bowling balls, you get together and shoot at targets. It’s a lot of fun, and it’s a great way to reserve some face-to-face time with the kids (and it’s a clever way to get them to reduce their “screen time”!).

And, as a “side bonus,” it can be a great way to see your own friends, as well. Having kids can rob you of time that you used to spend hanging out with your pals, and having a weekly time set up to meet—one that includes your kids—can be a great way to get some face-time with people you may not get to see.

This is a new one for me. My husband and daughter have made homemade pasta on several occasions, but we have never tried to make sweet potato gnocchi before. Until now. And since you all loved my homemade pesto gnocchi, I decided a new version would be fun to try.

What is gnocchi?

Simply put, gnocchi is pasta made from potatoes. You will also use flour, egg and salt when you make gnocchi at home.

In this gnocchi recipe, I used sweet potatoes.

I added pecans to dish, pecans and sweet potatoes are a natural pair to me, but if you don’t like pecans feel free to leave them out.

I also added shrimp to my Sweet Potato Gnocchi with Creamy Sun Dried Tomato Sauce. We love shrimp and it also gives your meal an extra boost of protein. Again, if you don’t want to add the shrimp when you make this dish at home, you don’t have to. It will still taste delicious, I promise.

Ingredients

Sweet Potato Gnocchi

  • 4 cups smashed sweet potato about 3 sweet potatoes
  • 1 egg
  • 2 cups flour
  • 1 tbsp salt
  • 1 tsp salt

Creamy Sundried Tomato Sauce with Shrimp

  • 4 tbsp butter
  • 4 oz sundried tomatoes with oil
  • 1 cup heavy cream
  • ½ tsp ground black pepper
  • 1 tsp crushed chili flakes
  • ¼ cup pecans add more or less to your desired taste
  • 12 oz uncooked small shrimp tail off and cleaned

Instructions

Sweet Potato Gnocchi

  • Start by washing and poking holes in the sweet potatoes.
  • Microwave them for eight minutes, or until they become soft.
  • Let them cool completely and remove the skin from them.
  • Mash them in a large bowl and add in the egg, 1 and ½ cups of the flour and 1 teaspoon of salt and continue to mash. If you have a potato ricer, use it. If not, be sure to mash the sweet potato until there are no lumps left.
  • Sprinkle the remaining flour onto a counter or cutting board and knead the pasta dough for five to six minutes adding flour when it gets a little sticky.
  • Once the dough has become elastic, cut it into 24 equal parts.
  • Roll the dough into long strips and cut them into ½ inch pieces. (Optional: roll the pieces over the prongs of a fork to get the classic gnocchi look.)
  • Boil a large pot of water over high heat and add 1 tablespoon of salt to the water.
  • Add 10 to 12 pieces of gnocchi to the water and let them boil until they float to the top.
  • Remove and set on a plate.

Creamy Sundried Tomato Sauce with Shrimp

  • While you are boiling the gnocchi in batches, prepare the sauce by adding the butter to a large frying pan.
  • Toss the shrimp with the pepper and remaining salt and add the shrimp to the pan. Let them cook for about two minutes on both sides or until they turn pink and start to curl.
  • Dice the sun dried tomatoes into small pieces and add them, along with 1 to 2 teaspoons of the oil to the pan. Cook until the tomatoes start to turn a darker shade.
  • Pour in the heavy cream and continue to cook until it starts to boil.
  • Reduce and simmer for five to six minutes.
  • Sprinkle in the chili flakes, the pecans and add in the gnocchi. Stir completely.
  • Garnish with some parmesan cheese, parsley or cherry tomatoes and serve with fresh bread or garlic bread.
  • Enjoy!

Notes

Feel free to customize the sauce some, you can leave out the pecans if you would like and increase or decrease the red pepper chili flakes.
If you don't like shrimp or have it on hand, you can also leave out the shrimp.
