If you are a vegetarian, you will definitely love quinoa. Unlike other grains, quinoa is loaded with lots of protein as well as fiber, vitamin E, antioxidants, magnesium, and potassium. Your pre-prepared quinoa can be eaten with soups or salad.

You can also make a batch of white rice or brown rice with your instant pot which can be used as a side dish or for meals like fried rice or instant pot jasmine rice.

When prepping your rice with the instant pot, ensure the seasoning is mild, this will enable you to be able to convert it to different kinds of meals. Also, ensure that you do not overcook the rice.

2. Cook a Large Portion of Oatmeal

Are you tired of nibbling on junk for breakfast just because you don’t have enough time to cook a proper meal? It’s time to dump the junk.

You can cook a week’s worth of healthy oatmeal within just a few minutes using an instant pot.

Both rolled oats and steel-cut oats can be cooked in an instant pot. Because of how long the oatmeal will last, it’s advisable to use almond milk instead of cow milk.

To give the oatmeal some flavor, you can add a pinch of salt, some cinnamon, vanilla, or maple syrup. You can also top the oat with fresh berries, apples, or banana slices before freezing it, this will save you the stress of having to add the fruits when you want to eat the oatmeal.

A very simple way to store the oatmeal is to let it cool and then freeze in muffin tins. Once the oatmeal is frozen, pop the oatmeal out of the tin and store in airtight plastic bags.

With your instant pot, you can cook a big pot of dry beans and store it rather than buying canned beans which cost more and come with certain health concerns. You can convert the cooked beans to awesome meals like black bean burgers, black bean chili and bacon, black beans burritos, black bean hummus, and lots more.

4. Poach Chicken Breasts

There are probably a lot of chicken recipes that you wish you could make but lack enough time to cook. With your instant pot, you can poach chicken breasts (including bone-in chicken) which can be easily turned to different amazing recipes, like this chicken salad or chicken pad thai.

You can season the chicken with some ingredients like cumin, dried chili, and salt, depending on the specific meals you will be making with the chicken.

A good thing about poaching chicken is that during the process of the cooking of the chicken, a delicious broth forms. This broth can be used to make soup later. When cooking with the broth, ensure you do not add too much salt to the meal because the broth is already well seasoned.

If the yogurt is plain, you can use it to make mashed potatoes, creamy sauce, and other yummy recipes.

Depending on how much yogurt you will need for each meal, you can store the yogurt in small containers. All you need to do is to take out one of the containers when the need arises. Also, to ensure that your yogurt lasts longer, always you store it in a refrigerator.

A Tampa Bay staycation can be a lot of family fun and save the family dollar. Learning how to have fun right here in Tampa Bay can not only help save money on travel expenses but perhaps even be a little gentler on the environment with less transportation. It’s time to become a tourist in your own hometown. Using creative planning and some imagination, your Tampa Bay staycation will be as fun as “traditional” vacations.

So, what to do on your Tampa adventure? If you are at a loss for activities, one easy way brainstorm is to examine all the your favorite places or even favorite restaurants in Tampa.  This will give you an idea of what are you would like to spend more time in.

Of course, this can vary greatly on what you and your family like to do. Perhaps you are into the arts, we have a variety of art galleries and museums here in Tampa Bay. Looking for amusement parks? We have Busch Gardens and Adventure Island right in our backyard. Other options might be some kind of fair or festival. State fairs, and county fairs often take place year-round in Florida. Now, you don’t have to be a pro-golfer to enjoy TopGolf, in fact, I am horrible at golf, but I always have a blast when we go. Each group gets their own bay complete with comfortable seating, a table and golf clubs for use. There are a variety of game options to pick from at TopGolf, so you can play the one that you think your family will enjoy the most. And if you want to change it, you can. We like the Jewel Game, Angry Bird Game, and the traditional one where you hit it into a specific color each time.

I love how competitive the kids get with each other at TopGolf! As I mentioned, I just try my best…but I always have a smile on my face. For breakfast, brunch, lunch or dinner datz is a must in Tampa.  We have been to datz on several occasions for dinner, but this Tampa adventure was our first time there for breakfast.  Dinner at datz is always amazing, served in an eclectic atmosphere with servings meant for sharing, we knew we were going to love breakfast.

After we checked in and took in the breathtaking view from the room, we walked along the water and looked at the boats. In the morning, Starbucks was a hop, skip and jump away making our morning coffee adventure incredibly easy.

I made chocolate chip cookies from scratch for the first time to make these adorable Halloween Monster Cookies! I actually had all the ingredients to make my homemade chocolate chip cookies right in the pantry, so I didn’t have to make an extra trip to the store.

The vanilla frosting is also made from scratch, it’s only 4 ingredients and it’s ready in just a few minutes. To get the bright Halloween colors in the frosting I recommend using food coloring gel. Food coloring gel will make your colors a bit more intense and they won’t alter the flavor of your frosting.

For the Halloween Monster Cookie decorations you can look through your pantry to see what you have that will work for eyes, teeth and even antennas. I used milk chocolate and white chocolate chips, marshmallows, and candy eyes. A few other ideas for decorating your Halloween Monster Cookies are licorice and pretzel pieces.

  • Mixer

Ingredients

Homemade Chocolate Chip Cookies Ingredients

  • 2 ¼ cups Flour
  • 1 tsp Baking Soda
  • 2 Sticks Softened Butter
  • ¾ cup Sugar
  • ¾ cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 2 Eggs
  • 2 cups Chocolate Chips

Vanilla Frosting Ingredients

  • 1 stick butter – softened/room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 2 tbsp milk
  • Purple Food Coloring Gel
  • Orange Food Coloring Gel
  • Green Food Coloring Gel

Spooky Decorations

  • Mini Marshmallows for teeth and/or eyes
  • Candy Eyes
  • Chocolate Chips and White Chocolate Chips for teeth or eyes

Chocolate Milkshake Ingredients

  • 2 scoops chocolate ice cream
  • 3/4 cup chocolate milk

Instructions

Chocolate Chip Cookie Instructions

  • Preheat the oven to 375 degrees.
  • In a large mixing bowl, combine butter, sugar, brown sugar, baking soda and vanilla extract using mixer.
  • Beat in the eggs one at a time.
  • Slowly add the flour 1/4 a cup at time.
  • Mix in the chocolate chips.
  • Prepare baking sheets with cooking spray or parchment paper.
  • Make small cookie dough balls, approximately 1 inch.
  • Place the cookie dough balls onto the baking sheet and bake for 10-12 minutes or until golden brown. Allow the cookies to cool.
  • While the cookies are cooling, make the frosting.
  • Once the cookies are completely cooled, place a spoonful of frosting between two cookies.
  • Add a little frosting on the top cookie to hold the eyes and other fun decorations in place.

Frosting Instructions

  • In a medium sized bowl (or in the bowl of a stand mixer), mix the butter until it is smooth.
  • Mix in the powdered sugar, a 1/4 cup at a time.
  • Add in the vanilla extract.
  • Add in 2 tablespoons of milk.
  • Blend until smooth.
  • Divide the frosting into four small bowls. Add green, purple and orange gel food coloring and mix well. Leave one white if desired, I did.

Chocolate Milkshake Instructions

  • Blend until smooth
  • Enjoy with Halloween Cookies!

Notes

My chocolate chip cookie recipe yield about 30 cookies for me, so depending how big you make your cookies you will be able to make approximately 15 monster cookies.  Each monster cookie requires 2 cookies.

I love roasted vegetables. I love all things pumpkin. I love salads. I love eating healthy. So this recipe was definitely a no-brainer for me. I basically combined some of my favorite things and made them into one incredibly delicious meal.

Roasting vegetables brings out a sweetness and adds a heighten flavor to your vegetables, and that is true when roasting pumpkin. Roasting pumpkin intensifies the natural sweetness of pumpkin; therefore making it perfect on it’s own but especially delicious on my Roasted Pumpkin Salad.

I also roasted onions and some pumpkin seeds for this easy salad recipe. Bring on all the roasted deliciousness!

I absolutely love the burst of the pomegranate seeds on this salad.

I used feta cheese, which was absolutely incredible. But my husband is not a feta fan, so he used goat cheese and it was equally as delicious. I mean, how could you go wrong with goat cheese on anything really?

Roasted Pumpkin

  • 3 ¼ cups Pumpkin
  • 1 tbsp Olive Oil
  • ½ tsp Salt
  • ¼ tsp Crushed black pepper
  • ¼ tsp Turmeric

Salad

  • 1 cup Lettuce
  • 1 cup Baby spinach
  • 2 tbsp Pomegranate
  • 1/4 cup Feta
  • 1 Sweet Onion
  • 2 tbsp Pumpkin seeds

Salad Dressing

  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Honey
  • ½ tsp Salt
  • ¼ tsp Crushed black pepper
  • Some fresh Thyme optional

Instructions

Roasted Pumpkin

  • Preheat oven to 400°
  • Clean and slice the pumpkin into thin wedges.
  • Take the pumpkin wedges into a bowl and add all the remaining ingredients expect the onion.
  • Give it a thorough toss until everything is evenly mixed.
  • Cut the onion into thin wedges and brush these with some olive oil.
  • Place the pumpkin and onion wedges on a non-stick or prepared baking sheet and roast these in a preheated oven at 400 for about 20 minutes.

Salad Dressing

  • Take all the ingredients into a bowl or a glass and whisk it until everything is evenly combined.
  • Set aside until ready to use.

Salad Assembly

  • Roast the pumpkin seeds in a pan with a few drops of olive oil until they turn crunchy, about 10 minutes.
  • Place the lettuce, baby spinach and roasted pumpkin wedges to a large plate or salad dish.
  • Pour the dressing all over the salad as evenly as you can.
  • Top it with the crumbled feta, roasted onion wedges, pomegranate and toasted pumpkin seeds and serve.

Notes

This Roasted Pumpkin Salad recipe will serves 2-3 people as a meal or 4-5 as a side salad.
If you aren't a fan of feta, you can substitute goat cheese.

I was craving clam chowder for dinner but it was already after lunch so it was too late to start it in the slow cooker. So, my friend let me borrow hers and I made my first ever Instant Pot Soup recipe.

  • 13 oz clams 2 6.5 oz cans (drained and juices reserved about 1 cup)
  • 2 cups whole milk
  • 2/3 cup flour

Instructions

  • Set Instant Pot to "Saute" function.
  • Add butter, onion, celery, carrots, and garlic.
  • Saute for a few minutes until vegetables are soft and fragrant.
  • Then add potatoes, shrimp, thyme, bay leaf,salt and pepper.
  • Then add reserved clam juice and water.
  • Seal and lock the lid of the Instant Pot and switch function to "Soup" or "High Pressure Cook" and set time for 15 minutes.
  • Once finished cooking, manual release the steam and carefully unlock the lid.
  • Switch back to the "Saute Function".
  • Add in drained clams and milk.
  • Then slowly whisk in the flour.
  • Whisk and simmer until thickened.
  • Taste and add more salt and pepper to taste.
  • Serve hot and enjoy.

Notes

You can add more flour for a thicker chowder.

This Instant Pot Clam Chowder recipe makes about 8-10 servings, so if you have leftovers, you can store then in an airtight container in the refrigerator for about 3-4 days.

Reasons To Buy An Instant Pot:

An Instant Pot is a true multicooker, it sears, browns and sautes food like a stove-top skillet. That’s why it was so easy to saute my vegetables in my seafood chowder. Instant Pots can also steam items such as fish, eggs and vegetables and even replace your rice cooker.

You can make bread, sweets, desserts and yogurt in an Instant Pot. I did try to make yogurt in an Instant Pot and decided the Dutch Oven was easier, but that may be just me.

The Instant Pot uses high pressure and heat. Which means that meals you would nornally let simmer all day so they can be flavorful and tender, you can get the same results in a third of the time.

Instant Pots operate within preset safety limits. So, you don’t have to worry about anything exploding from too much pressure.

There are sensors also detect whether the lid is locked or not. In fact, if you don’t have it closed correctly, the Instant Pot won’t take on pressure. And, once the cooker’s interior becomes pressurized, the lid automatically locks in place.

The Instant Pot also promises easy clean up. And I can attest to that. Since you just have to clean one pot and it’s dishwasher safe, clean up is a breeze. The inner pot is also pretty easy to wash by hand. The cooker’s various parts are also dishwasher-safe.

How To Choose The Right Wine Glass For Your Wine

You can’t make good wine from poor grapes. However, bad wine can be made from good grapes. The same principle applies to wine glasses. A good wine will always taste great from a good glass, but you can affect the taste of the wine if you use wrong glass.

Before snobbery infected the relationship between wine and food, wine was considered food. Then it became art and you needed to follow certain protocols to receive maximum enjoyment from it. The protocols quite naturally included choosing the right glass. But we’re getting ahead of ourselves.

A wine glass is more than just a vessel in which the wine rests until you are ready to drink it. The optimum way of enjoying a glass of wine is connected to the quality of the glass and the shape of the bowl. You don’t need a whole ‘wardrobe’ of glassware, four styles of glass are sufficient; however, if you can afford it, different glasses for different styles do actually make a difference.

Over the past three decades, glassware manufacturers have spent a lot of money on research to find out the shape of the ultimate wineglass: the shape of the bowl, the size, and the fineness of the glass have all been studied.

Wine as Art

In the beginning was the glass. Any glass. No distinction was needed between water glasses and wine glasses. Then came the stem. That signaled the beginning of a long evolution of design that continues to the present. The notion of the stem arose from the fact that wine is often prettier than water and using a glass that displays the wine in a bowl separated from nasty smudges and fingerprints was the first step toward thinking of wine as art.

The Beginning of Wine Glass Shapes

The first giant leap forward in the evolution of the wine glass after the universal adoption of the stem was the refinement of the bowl shape in 1951 by the French firm Baccarat. This very thin and elegant wineglass introduced the tulip-shaped bowl which would dominate virtually all wine stemware to the present. Beautiful as these “Perfection” glasses were, they had two faults that would not be significantly improved on for decades: the bowl held only 8 ounces and the sides of the bowl were straight, disallowing the vigorous swirling that is necessary to permit the wine to sing.

The Contribution of the Riedel Company

Even as late as the 1990s improperly sized and shaped wine glassware appeared on the shelves of the most upscale stores. Many were very attractive, but flawed in ways that had deleterious effects on the full enjoyment of wine. But a white knight was soon to rescue us from wine misery. The movement to perfect the wineglass had already begun in Europe. Claus Riedel began promoting his company’s uniquely-designed stemware as early as 1961, just 10 years after Baccarat’s failed design. Riedel not only attempted to perfect the shape of a general-purpose wineglass; he was the first producer to suggest that many slightly different shapes and sizes were needed to complement the wide spectrum of wine varieties. You needed a different volume and shape for Chardonnay than for Riesling. (The Chardonnay glass is larger and wider.) Champagne needed a special shape to highlight its unique bubbly texture. (This notion turns out to be wrong in the opinion of many Champagne producers.)

The notion pioneered by the Riedel company dominated the wine glassware scene until other companies—Schott, Bormioli, Spiegelau and others—offered similar lines of glassware, varying only slightly from the Riedel designs and offered at lower prices. Most modern glassware firms offer two or more lines: Riedel offers the popular no-nonsense “Vinum” line in addition to its top-of-the-line “Sommelier” line. Some very respectable firms offer a line of sharply angled bowls that provide an artsy alternative to standard shapes. And some offer a line with reverse curves at the lip. All of these alternative shapes give lie to the notion that there is an ideal shape for a specific variety.

Recent Developments

Perhaps the most notable recent development in the evolution of wine glassware is in the material itself. Lead crystal has always been the material of choice for the finest glassware. But because of the widespread fear that minute quantities of toxic lead might leach into the wine, today’s glassmakers are developing alternatives. The Italian firm of Luigi Bormioli substitutes barium for the lead to produce a glass of outstanding clarity and feel. And many of their shapes mimic the Riedel designs very closely.

It was easy to ensure that the color of the wine was correct, so they moved directly to the aromas. Have you ever tried that old trick of eating a slice of apple and a slice of pear blindfolded and holding your nose? If you eat the pear when it’s fairly crisp, it’s very difficult to tell whether it is the pear or the apple. The blindfold just prevents you from knowing what you’re eating, but holding your nose prevents your sense of smell working and nullifies any aromas from the two fruits, making it impossible to tell the difference between the two. Try it if you’ve never done it, you’ll be surprised.

With wine, every different variety and style gives off subtle nuances that add to the pleasure of the wine. White wines can have tropical fruits, limes, or even a flinty mineral flavor. Red wines can show violets, leather, tobacco, and raspberry jam, as well as many other aromas. How do you capture these aromas so that they stick around long enough to enhance your enjoyment?

What to look for in a wine glass

The first was to change the shape of glassware. Instead of being flared at the top, they changed and tapered in at the rim. Sparkling wine glasses underwent the biggest change; instead of the ‘coupe’ (an open bowl on a stem), they became flutes – a longer taller glass with a tapered rim that allows the ‘perlage or mousse’ to remain in the glass instead of effervescing out. The deepest point of the glass should have a ‘moussier’ ground in, (a pin-dot similar in principle to an active beer glass), that allows the bubbles to keep on breaking and rising to the top. The old-style allowed the bubbles to rise, but aromas soon disappeared.

White wine should be served in a medium-sized tulip-shaped bowl. The widest point of the glass should be approximately one third to halfway up from where the glass joins the stem. This allows the aromas to remain in the glass. White wine has a more delicate structure than a red. Therefore, the glasses are smaller.

A glass of red wine, such as a Cabernet Sauvignon, can be very robust and requires a larger glass. Basically the same shape, it allows the aromas more room to float and the wine allowed to breathe, important with older and more important wines. They should be eight to ten centimeters at their widest part, and the bowl should be wider approximately one third to halfway up from the stem.

The glasses should all have thin walls as glass transfers warmth to wine. If you’re drinking a chilled white wine or rosé, this will have an effect on the wine, and besides, finer glassware feels better on the mouth.

One thing to remember when using the glassware, make sure you rinse them properly when washing. A glass of wine can be spoiled by detergent left in the glass. Only use the smallest amount and rinse well. Another point is to store the glasses upright and never leave them in cardboard boxes if possible. Don’t do it unless you’re prepared to get the glasses out, wash them, and leave them out for a short period before using them.

Wine glasses also make for an excellent gift idea for the wine lover in your life.  Be sure to sneak a peek at which wine glasses they may need to add to their collection before making your purchase.  But trust me, they will appreciate the new glasses to enjoy their wine.

Healthy and delicious are two of my favorite words. Add in the words easy recipes, it’s even better. These healthy berry muffins are made with no added sugar and simple ingredients.  The one ingredient that you may not normally see in a muffin recipe is the avocado.  Avocado adds in extra nutrients and doesn’t affect these naturally sweet blackberry and raspberry muffins.

Blackberries offer many health benefits, so not only do they make my berry avocado delicious, they are also giving you a vitamin boost. Blackberries are full of vitamin C, vitamin K, and manganese. Blackberries are also high in fiber.

Best Avocado Berry Muffins

Avocados are an excellent source of vitamin C, vitamin E, vitamin K, and vitamin B-6. Avocados also have riboflavin, niacin, folate, pantothenic acid, and magnesium. Avocados actually have more potassium than bananas. They loaded with heart-healthy monounsaturated fatty acids and have approximately 12-14 grams of fiber per avocado.

I used a protein pancake mix to make my avocado berry muffins because a little extra protein is an excellent way to help us feel fuller longer and stay fuel for whatever the day is going to through our way. These avocado berry muffins are a great way to start your day or as a midday snack.

To make my berry avocado muffins you simply mix everything together and bake them for 25-30 minutes. Easy enough!

I am guessing that these muffins will be eaten up before you need to think about storing them, but just in case you make a double batch or happen to some leftover, I wanted to share storage recommendations.

Storage Recommendations

Proper storage ensures that your Healthy Protein Avocado Berry Muffins stay fresh and delicious for as long as possible.

  1. Room Temperature: If you plan to consume the muffins within a day or two, you can store them at room temperature in an airtight container or zip-top bag. Place a paper towel at the bottom of the container to absorb excess moisture and prevent the muffins from becoming soggy.
  2. Refrigeration: For longer storage, particularly in warmer climates or during hot weather, refrigeration is recommended. Place the muffins in an airtight container or wrap them individually in plastic wrap before refrigerating. They can last for up to 5-7 days when stored properly in the refrigerator.
  3. Freezing: These muffins are also freezer-friendly, allowing you to enjoy them later.   • Fill each one approx 3/4 full
  • Bake for 25 – 30 minutes or until cooked thoroughly – use a toothpick to check if needed

Notes

These healthy berry avocado muffins are approx 3 Weight Watcher points each. When I use cupcake liners, a small amount of the muffins did stick if I tried to eat them warm, they don’t stick when they are cool or coming out of the refrigerator.Feel free to just spray your pan, don’t use liners and they will slide right out without any sticking.

With Pumpkin Season upon us, I thought it was due time for me to make a pumpkin cocktail. Can you believe that I don’t have a pumpkin cocktail here on the blog yet? Until now. You will find a million other pumpkin recipes; pumpkin spice pudding pie, pumpkin cookies, pumpkin pancakes, pumpkin angel food cake, pumpkin smoothies, pumpkin soup and many more.

Boozy Witches Brew Pumpkin Spice Milkshake

So, when Leelanau Wine Cellars sent me some of their Witches Brew to celebrate Fall, I decided now was the perfect time to create that perfect pumpkin cocktail. They sent me the Original Witches Brew, Apple Spice Witches Brew and Pumpkin Spice Witches Brew. Each Leelanau Cellars Witches Brew is a Spiced Fruit Wine. And what better wine than a Pumpkin Spice Wine to create a Boozy Pumpkin Spice Milkshake?!

Pure Pumpkin
Vanilla Ice Cream
Pumpkin Spice Witches Brew
Spiced Rum

Tasty Boozy Pumpkin Milkshake

To make this tasty Boozy Spiked Pumpkin Spice Milkshake you simply blend all the ingredients together.  I just used my Ninja Nutri 1000 with Auto IQ, it’s the same one I use to make my smoothies.  It’s super to use and I am only getting one cup dirty.  If you are making more than 2 of these boozy milkshakes, I would recommend using a blender with a little more holding capacity.

When my mom made this, she said she preferred 1/4 cup of the pure pumpkin, feel free to play with the measurements to adjust as needed for your taste.

Homemade Pesto Gnocchi

Do you have basil in the garden? Did you have a bunch of basil growing so you froze some? Well, I have a delicious way to use up some of your basil. This Homemade Pesto Gnocchi is absolutely delicious. If the idea of making homemade gnocchi is a little scary for you, don’t be scared! It’s actually easier than you think!

To make homemade gnocchi you only need a few simple ingredients and you probably have them all in your pantry right now. You will potatoes, flour, an egg and salt to make homemade gnocchi.

You will have to make the dough and cut the gnocchi, the overall prep time to make homemade gnocchi is about 30 minutes. If you want to speed up the process, you can use store-bought gnocchi, but I recommend making homemade gnocchi at least once.

I simply used homemade pesto for the sauce in this homemade pesto gnocchi recipe, and next time I will try my Pesto Alfredo Sauce. My Creamy Pesto Sauce is the perfect mixture of pesto and skinny alfredo sauce. YUM.

Can you use store-bought pesto? Sure. But making homemade pesto is really easy and only takes a few minutes.

When making homemade gnocchi, ideally you will have a potato ricer. However, I do know that not everyone has a potato ricer. Me included. Can you make homemade gnocchi without a potato ricer? Yes. To make homemade gnocchi without a potato ricer you can can mash the cooked potatoes with a fork making sure there are absolutely zero lumps. You can also use the back of a large spoon or a smaller bowl and push the potatoes through use a colander. You will get in your arm workout in, but it will work.

Easy Homemade Gnocchi

Once the potatoes are prepared you will make the dough by adding the flour, egg and salt.

How to make Homemade Pesto Gnocchi

Once the gnocchi dough is made, you will roll the dough into long strips and cut them into pieces. You just roll the pieces over the prongs of a fork to get the classic gnocchi look.

To cook the gnocchi you simply boil it until it floats to the top, about 1 minute. Be careful to not overcrowd the pot.

Ingredients

Gnocchi

  • 4 cups mashed potatoes about 2-3 lbs of potatoes
  • 1 egg
  • 2 cups flour
  • 1 tsp salt

Pesto

  • 2 cups fresh basil leaves washed and packed
  • ¼ cup pine nuts you can substitute almonds or walnuts
  • 2 large cloves or 4 small cloves of garlic peeled and minced
  • ½ cup extra virgin olive oil you may need a little more or a little less
  • ½ cup freshly grated Parmesan or Romano Cheese
  • Salt and fresh ground pepper to taste

Instructions

Gnocchi

  • Start by washing the potatoes.
  • Either boil the potatoes or poke holes in them and microwave them for eight minutes, or until they become soft.
  • Let them cool completely and remove the skin from them.
  • Mash them in a large bowl or use a potato ricer.
  • Sprinkle the 1 ½ cups of the flour, add the egg and 1 teaspoon of salt and continue to mash.
  • Use your hands to form a smooth ball.
  • Sprinkle the remaining flour onto a counter or cutting board and knead the pasta dough for five to six minutes adding flour when it gets a little sticky.
  • Once the dough has become elastic, cut it into 24 equal parts.
  • Roll the dough into long strips and cut them into ½ inch pieces. (Optional: roll the pieces over the prongs of a fork to get the classic gnocchi look.)
  • Boil a large pot of water over high heat and add 1 tablespoon of salt to the water.
  • Add 10 to 12 pieces of gnocchi to the water and let them boil until they float to the top.
  • Remove and set on a plate.

Pesto

  • Place the basil and pine nuts in the food processor and pulse a few times.
  • Add the garlic and pulse a few more times.
  • Slowly add olive oil in a constant stream while the processor is going.
  • You should get a smooth, creamy consistency.
  • Scrape downsides of the processor and add grated cheese pulsing until well blended.
  • Add salt and pepper and give a final pulse or two to mix in.

Plating

  • Add as much fresh pesto to the gnocchi as you would like before serving.
  • Enjoy!

Notes

You can use store bought gnocchi and/or store bought pesto to speed up the process if desired.
