Loaded Cowboy Baked Potatoes

I recently had the amazing opportunity to spend some time out in Gainesville, FL with the Florida Beef Council learning all about….you guessed it….BEEF.  I learned about everything from how cattle is raised to what the different cuts of beef are and how they are priced.  I even had the opportunity to get to know some of the amazing Florida Ranchers.  It was definitely an experience I will never forget!

In the midst of all my learning, I also had the opportunity to do some cooking!  My Sunday Supper family was divided into teams, sent to Winn Dixie to get ingredients, then sent to a kitchen at University of Florida to get cooking! Each team was responsible for coming up with something delicious and fun with beef.  My team and I were inspired by all the cowboys that we had met and came up with a Loaded Cowboy Baked Potato.

What I love about our Loaded Cowboy Baked Potatoes is that they are LOADED with delicious vegetables, lots of flavor, and of course….beef.  The Loaded Cowboy Baked Potato is a meal by itself, in fact, I would be impressed if you could eat a whole one 🙂  I will be re-creating these at home for my family soon, we all love a good baked potato!

Loaded Cowboy Baked Potatoes

Ingredients
  • 4 medium – large Idaho potatoes, washed and dried
  • 1 lb lean ground beef
  • 1 yellow squash – sliced thin
  • 1 zucchini sliced thin
  • 8 ounces sliced baby Portobello mushrooms
  • 1 medium onion – sliced
  • 1 bottle Sam Adams Summer Ale – you can choose a different variety if you prefer
  • 2 teaspoons garlic powder
  • 1 teaspoon red pepper flakes
  • Salt and Pepper, to taste
  • Cherry tomatoes, halved (as garnish)
  • Green onions, sliced (as garnish)
  • Four cheese shredded cheese blend (as garnish)
  • 2 tablespoons Green Onions – diced
  • Butter
  • 1 cup sour cream
Instructions
  1. Preheat oven to 450 degrees F.
  2. Bake potatoes for 1 hour – until knife inserted in center releases easily.
  3. While the potatoes are baking you will get all the toppings ready.
  4. In a small bowl combine the sour cream with 1/8 cup sliced green onions. Refrigerate until ready to use.
  5. Add the ground beef to a skillet and season with garlic powder, salt and pepper.
  6. Once the beef is fully cooked, drain and discard any fat drippings and set aside.
  7. Heat 2 tablespoons butter in the same skillet and add the mushrooms and sliced onions.
  8. Pour in 1/2 cup Sam Adams Summer Ale to the skillet along with sauté until soft and liquid has evaporated.
  9. While the mushrooms and onions are cooking, heat another pan and add 1 tablespoons butter and the red pepper flakes – sauté squash and zucchini until softened.
  10. Add the beef to the skillet with the onions, and mushrooms so that it is heated through.
  11. Remove potatoes from oven and slice as you would if you were serving a baked potato. Squeeze potato open and break up potato inside, being careful not to crack the potato shell.
  12. Add butter and mix it into the potato.
  13. Add a layer of the sauteed zucchini and squash.
  14. Add a layer of the beef/mushroom mixture.
  15. Add a dollop or two of the sour cream and green onion mixture.
  16. Top with shredded cheese, halved cherry tomatoes and sliced green onions.
  17. Serve hot.
  18. Enjoy!

Now, at first glance I know that this recipe means to have a bit more steps that I usually post – you all know that I like an easy and delicious meal, BUT these potatoes are actually very easy to prepare.  And trust me, it’s worth the effort 🙂

Inhale deep and exhale out all those bad vibes. Taking several deep breathes will help you clear your mind, help you focus, and even lower your blood pressure.

Focus

Stop what you are doing, all 100 things, and just slow down for a moment. Once you slow down you can take a step back and focus on what really needs to be done and what is important.

Talk to a friend

I know I can’t live without human interaction. Sometimes all it takes is a call to a loved one to help calm you.

Kid Friendly Smoothie Recipe – Including Hidden Veggies

You all know that I love starting my day with a smoothie.  It’s one of the easiest ways I have found to get a large portion and fruits and vegetables all in one sitting.  My kids, however, are the waffles and cereal kinda breakfast people.  But, we have been getting better about getting a good amount of nutrients in with their “special” smoothies.  They will now happily drink a smoothie along with their breakfast as long as there isn’t anything “extra” in it.  It has to be Kid Friendly.

A kid-friendly smoothie in my house is one that isn’t a “weird” color, like anything green or orange would be totally out, and it can’t taste like bananas.  While some folks just love bananas, like me, my kids refuse to drink them.  I have tried numerous times to sneak some into smoothies for them and I got told “Do you want to finish this one? I think I am full.”  I have found that I can get away with a strawberry or two, my trick is that the fruit and vegetables (EEK! VEGGIES?!) have to have little flavor and don’t add much color to the smoothie.

SO, I am SUPER EXCITED to say that I am posting my very first MY Kid-Approved Smoothie recipe!  If you are one of those lucky parents that have kids that don’t mind the green color or fun and unique flavors, I have a ton of recipes posted that you need to check out, because I get very creative with my smoothies.  But, if you have kids like me that are on the less adventurous side about drinking fruits and vegetables, I have a recipe for you to try out.

Kid Friendly Protein Smoothie

I will openly admit, that I did not tell my kids that there were a few cucumber slices and baby carrots in this smoothie.  And I am not ashamed of it at all 😉  I actually put cucumbers and carrots in probably 99% of my smoothies too, they are cost-effective, great for us, and add very little flavor to your smoothie.

Breakfast is the most important meal of the day. It is the meal that gets your body going and ready to face the day. While I start the weekdays with a smoothie, I love to cook up something fun for my family and friends on the weekend. And this past weekend I kicked it up a notch with green chiles. Not too spicy, but full of flavor.

This Green Chile and Egg Breakfast Casserole takes under 10 minutes to prep and one hour in the oven. Which was the perfect way to start our Sunday morning. I came downstairs, started my coffee and had the “adult breakfast” in the oven before the kids even woke up and were ready for Pancake Sunday to commence!

I love that this Green Chile and Egg Casserole has minimal ingredients too, many of which you probably already have on hand. You will need a can of green chiles, frozen hash browns, shredded cheese, eggs, flour, milk, and Stubb’s Green Chile Anytime Sauce and that’s it! Layer the main ingredients and you will have a delicious breakfast underway.

When you think Green Chile, you may think that this breakfast casserole is spicy, I assure you that it isn’t! I used Stubb’s Green Chile Anytime Sauce in it, and sauce is the flavorful mix of Hatch green chiles, garlic, and lime will give a true Southwest flavor.

Equipment

  • Oven

Ingredients

  • 2 cups frozen hashbrowns
  • 8 oz shredded sharp cheddar cheese
  • 4.5 oz chopped green chiles 1 small can
  • 5 large eggs
  • 4 tbsp flour
  • ½ cup milk I used skim
  • ¼ cup Stubb's Green Chile Anytime Sauce
  • cooking spray or butter for pan

Instructions

  • Preheat oven to 350 degrees
  • Spray or butter an 8x8 baking dish
  • Put hashbrowns on the bottom of the baking dish
  • Layer 4 oz of shredded cheese
  • Layer the can of chiles on top of the cheese
  • Layer on the remainder of the shredded cheese
  • In a small bowl, mix the eggs, flour, milk, and Stubb's Green Chile Anytime Sauce
  • Pour the egg mixture on top of layer of the last layer of shredded cheese
  • Bake for one hour uncovered or until center is firm and you can insert a knife and it comes out clean
  • Enjoy!

You may remember my Korean Beef recipe, it’s actually a family favorite and I usually make a double batch and still end up with very little leftovers.   I have made it with ground beef and ground turkey, so the last time I was doing some meal prep, I figured why not make Korean Chicken.

Since I was freezing this Korean chicken recipe and making it in the slow cooker, I did increase the amount of the sauce a little from my Korean Beef recipe. I didn’t want it to dry out at all, and I wanted it to be nice and flavorful.

Healthy and full of flavor, this Korean Chicken Crockpot Meal can be prepped and tossed in the freezer or made today. Get the recipe!

Ingredients

  • 1½ - 2 lbs boneless skinless chicken breasts
  • ½ cup packed brown sugar
  • ½ cup low sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tsp crushed red-pepper flakes, or more to taste
  • ½ tsp ground ginger
  • 1 ½ tbsp minced garlic
  • Cooked rice and quinoa for serving

Instructions

  • Write recipe name and cook time on a gallon size freezer bag with a permanent marker
  • Place all the ingredients into a freezer bag and seal until ready for use
  • When ready to prepare, dump all the contents into your slow cooker
  • Cook on low for 6 hours or until chicken is tender enough to shred
  • Shred the chicken and put it back into the slow cooker for at least 10 minutes so it can soak up all those flavorful juices
  • Serve immediately with rice and quinoa - or just rice if you prefer
  • Enjoy!

Do you like Stuffed Cabbage? I feel like it’s one of those meals that you either love or hate. Either you are thinking ” Oh, I love cabbage!” or “Uh, I don’t like cabbage at all.” Well, I actually teetered close to the “No thanks” side of the cabbage spectrum. But, the last time I picked up ground beef on sale, my mom was here and she promised me that this recipe wasn’t really “cabbage-y”, it was healthy, and really tasty.

So, I did it. I prepped Lazy Man’s Stuffed Cabbage with some of my lean ground beef and tossed it in the freezer. And that is where it sat for at least a month. You know when you have things in the freezer that you buy and then when you get home you decide you don’t want it anymore? That’s what I was feeling like. Not that I didn’t want it, but that I would make it and my family would all turn their noses up at it. Then one day I did it, I rescued my Lazy Man’s Stuffed Cabbage from the freezer and tossed it in the crockpot.

Are you sitting there wondering if this story has a happy ending, I mean I really went out of my way to tell you how nervous I was about this recipe…

The answer is YES. I served my family and EVERYONE ate it and better yet, LIKED IT! My kids don’t eat many veggies at all, so I was worried that they wouldn’t like it. And my hubby, well, he is definitely one of those folks that doesn’t like cabbage.

  • My husband had two bowls.
  • My kids cleaned their plates.
  • I really enjoyed it!
  • Will I make it again? YES!

So, if you LOVE stuffed cabbage, I definitely recommend this recipe, and if you are one of those people that aren’t the biggest fans, I still say you should give this one a try. Everything cooks together so nicely in the slow cooker, and the flavors blend together perfectly.

If you follow Weight Watchers like I do and want to save a few points, you can substitute the lean ground beef with 99% fat free ground turkey.  99% Fat Free ground turkey is ZERO points on the WW Blue Plan.

This recipe is super customizable. You can switch up the protein by using ground turkey, chicken, or even a plant-based meat substitute for a vegetarian twist. Add a little spice with a dash of cayenne or paprika for some heat.

Lazy Man’s Stuffed Cabbage

Equipment

Ingredients

  • ½ head shredded cabbage Medium size
  • 1 ½ lbs uncooked lean ground beef
  • 2 14.5 oz cans diced tomatoes I used the garlic and onion variety
  • 1 diced red onion you can use yellow onion if you prefer
  • 1 tsp minced garlic
  • 1 10.75 oz can tomato soup
  • 1 cup Minute Rice I used brown rice

Instructions

  • Get a gallon size freezer bag and label it with recipe name and instructions
  • Put 1/2 the shredded cabbage in the freezer bag
  • Add in the meat to the freezer bag
  • Layer the onions and garlic into the freezer bag on top of the beef
  • Pour in one can of the diced tomatoes
  • Pour in the rice
  • Add the rest of the shredded cabbage to the freezer bag
  • Pour in the 2nd can of diced tomatoes
  • Pour in the can tomato soup
  • Seal the bag and toss in the freezer until ready to use
  • When ready to use add the freezer prepped meal to the slow cooker, cook on low for appox 8 hours or until cooked throughout if cooked from frozen, if thawed cook for approx 6 hours or until cooked throughout
  • Enjoy!

I love smoothies.  How else can you get in multiple servings of fruits and vegetables in one serving and have it taste great?  I have found that smoothies not only give me energy and fill me up, but they also make me feel good.  I would guess because I am giving myself all those nutrients that my body is craving.

I had several Natalie’s Juices in my refrigerator and from the first moment I saw the Orange Beet Juice, I knew it would be the perfect addition to my next smoothie.  I wasn’t worried about adding extra calories or other yucky stuff into my smoothie because Natalie’s Juices are made of what they say.  So, my Orange Beet Juice is made of FLORIDA Oranges and Beet Puree.  That’s it.  100% goodness in a bottle 🙂

Turmeric – It has so many benefits, but one of the main ones is it helps with inflammation. So, if you work out a lot or have tired muscles, it’s great for you!

Protein Powder – When my smoothie is a meal replacement for me and especially before a workout, I like adding in protein powder.

  • 3 strawberries greens removed

  • 3 ice cubes
  • 1 scoop scoop of your favorite vanilla protein powder
  • ½ tsp turmeric
  • ½ tsp chia seeds

  • 4-6 oz Orange Beet Juice from Natalie's Juices

Instructions

  • Place all the ingredients as listed above into your blending device

Grilled Salmon and Strawberry Salad

It’s not secret that I love salmon.  I order it fresh from Anderson Seafoods, it’s the best salmon I have EVER had.  My husband and I eat it about once a week, and 95% of the time we bake it.  But this past week we tried grilling it, and adding to a simply fresh simply.  It was DELICIOUS!  In fact, we have already made it twice 🙂

Now, it can be a bit tricky to grill fish, as it usually flakes when you cook it, so you can do a few things:

  1.  Put it on foil when on the grill
  2. Use a cedar board
  3. VERY carefully put it directly on the grill, and only flip once

We have done placed it directly on the grill and used foil.  When you use the foil, you don’t get the nice “char” that you would normally get from the grates of the grill, but it was still good.  My preference is definitely directly on the grill, the result is crispy and just that grilled texture that we all love.  Putting it directly on the grates is trickier though, make sure to don’t lose any of the fish through the openings!

This Grilled Salmon and Strawberry Salad is a delicious way to enjoy salmon! With a touch of sweet, savory, and saltiness you are bound to love this salad.
Ingredients
  • 2 fillets of Salmon – I get mine from Anderson Seafoods
  • Mixed greens
  • Crumbled blue cheese
  • Fresh strawberries – quartered
  • Candied walnuts – make your own or buy ready-made
  • Cherry vinaigrette – or something similar
  • Salt, pepper, and butter for seasoning the salmon
  • Ingredients for candied walnuts
  • 1 bag chopped walnuts – I bought the 4 oz bag, this was plenty for 3-4 salads
  • 1 tablespoon butter
  • 2 tablespoons of white sugar
Instructions
  1. Season the salmon with salt and pepper
  2. Grill salmon until cooked throughout
  3. Right before taking it off the grill, lightly brush a butter compound or melted butter of the fillets
  4. Prepare your salad with greens, strawberries, cheese, and the candied walnuts
  5. Top with salmon and dressing
  6. Enjoy!
Instructions to make your own candied walnuts
  1. Put the butter in a pan
  2. Once butter starts to melt, add in the sugar and walnuts
  3. Stir constantly
  4. You will see the walnuts start to darken by the sugar coating
  5. Remove from heat and place on wax paper and spread them out immediately, they will stick to each other
  6. Once cooled, enjoy!
Notes
My mom and I split a salmon fillet, while my husband ate his salad with a whole 6oz fillet.

How To Plan The Ultimate Burger Bar Party

Who doesn’t love to grill?  I know I do.  And a day with friends and family around the grill is even better.   The day before school started we had friends and family over for the Ultimate Burger Bar Party!  We had 21 people and lots of food 🙂

Here’s What You Need For Your Ultimate Burger Bar Party:

Invite friends and family at least 1 – 2 weeks in advance so that they can plan to enjoy the fun

Paper plates, napkins, and cups – unless you are ready to do lots of dishes

Tablecloth – makes cleaning the table a lot easier 😉

Drinks – for adults and kids

Coolers and ice – Since we all wanted to enjoy the weather outside too, we made sure that we had drinks outside as well as a stocked refrigerator

How To Plan the best Burger Bar Party

Burgers – I have always preferred to make my own, you can make the patties the night before your party to make the day of the party a bit easier, just put them on a baking sheet, cover them and keep them refrigerated.  Use a burger press if you have one to make sure they are all about the same size.  I like 1/3 lb burgers, not too big and not too small.  I use 93/7 lean ground beef, it tends to cook more evenly and isn’t as fatty.

How To Plan an easy Burger Bar Party

Seasonings – A great burger starts with a great rub.  We used two of our favorite Stubb’s Rubs (BBQ and Beef) for our burgers and followed this tip from Rocky himself (over at Stubb’s!) Create over–the-top burgers by coating each patty with a Stubb’s Rub, then sprinkle with a little smoked sea salt to really enhance that smoky barbecue taste. Let the patties sit for a while before cooking – you can actually see the flavor seeping into the meat!

Grill – I am guessing that part is obvious, but here’s another insider tip:  Before you throw them on the grill, make a thumbprint in the middle of the patty to get a flat, evenly cooked burger instead of a plump, rounded one that is undercooked in the middle. You can also use a burger press to get even burgers too.

Toppings – What good is a Burger Bar without all the fixins?!  Here’s what we had:  Crispy Jalapeno rings, lettuce, tomatoes, guacamole, sliced cheese, grilled pineapple, mustard, ketchup, sliced onions, bacon, and pepper rings.

Buns – I realize that may be self-explanatory, but you would be surprised about the things you can forget if you don’t right it down!

The Ultimate Burger Bar

Sides – I know the burgers and the fixins are definitely the star of the show, but sides are always an appreciated addition.  We had fresh watermelon, baked beans (because who can start the grill without craving baked beans?!) and chips.  Our sides were simple and perfect!

Now, it’s time to have fun!  Burgers are actually really easy to make and are a meal that is enjoyed by all, so get your favorite Stubb’s Rubs and start planning!  With Labor Day coming up, I think we may have to have another Burger Party ourselves!
