Spaghetti Squash and Meatballs Bowl

We were traveling a lot this summer and when we got home, I couldn’t wait to get back into the kitchen.  Fresh vegetables and home-cooked meals were calling out to me!  Restaurant food is nice now and again, but there is nothing like a hot meal and my family around MY dinner table.

I wanted to make something nutritious, fun, and fairly easy to make, so I decided I would make Spaghetti Squash with Homemade Meatballs…and serve it in it’s own bowl!  I am all for easy clean up.

Spaghetti Squash is not only easy to make, but it’s delicious!  It is a low-carb option to pasta, it’s inexpensive, it’s good for you, and great with a variety of sauces.  Why is it called spaghetti squash? Well, when you prepare it, it actually resembles pasta noodles.  I even had my kids fooled for a few 😉

Why I chose Spaghetti Squash:

  • It’s easy to prepare.
  • Spaghetti squash is loaded with vitamins. It has vitamin C, A, B-6, k, thiamin, riboflavin, niacin, folate, and more.
  • Spaghetti squash also contains several minerals, the most important one is manganese. Manganese can assist the body with metabolism, regulation of blood sugar, absorption of calcium and the functioning of the nervous system.
  • Spaghetti squash also fiber, fiber has been linked to weight loss as it makes you feel fuller longer.
  • It’s low-calorie AND low-carb!  There is only 42 calories and 10 carbs in a 1-cup serving of cooked spaghetti squash.

Why I chose to make my meatballs with lean ground beef:

  • A single serving of lean beef is 3 ounces (approximately the size of a smart phone), has an average of 150 calories and less than 10 grams of fat.
  • One serving of beef meets 50% of your recommended daily value of protein.
  • Not only does beef provide complete, high quality protein, but also contains high amounts of zinc, iron, and vitamins B6 and B12, along with other key vitamins and minerals your body needs.

As you can see, my Spaghetti Squash and Meatballs Bowl is a meal that is loaded with vitamins, minerals, fiber, and protein!

Now, here’s how to make this meal for your family.

Use a sharp paring knife to pierce the squash several times (I did it about 10 times) around the center, then put it on a microwave-safe plate and microwave it on high for 6 to 8 minutes, flipping it half way through.

While your squash is in the microwave, start making your meatballs.  I used 1 pound of lean ground beef, but you can easily double the recipe and freeze some for later.  Meatballs are easy to make and taste so much better when they are homemade.

Once the squash a bit softer thanks to the microwave, use a sharp knife to cut the squash in half lengthwise.

Once it’s cut open, remove the seeds with a spoon and the part of the squash that is around the seeds, think of it like a pumpkin 🙂

Spaghetti Squash and Meatball Bowls Recipe

Place a piece of foil on a cooking sheet and spray it with cooking spray.  Place the spaghetti squash halves on the cooking sheet, and drizzle the insides with olive oil and season liberally with salt and pepper.  Now you can toss them into the oven at 400 degrees for 50 minutes to an hour.

After 15 minutes, add your meatballs to the oven, letting them cook for 35 – 45 minutes.

When the 50 minutes is up, let the squash rest for a few minutes, and once it’s cool enough to handle, use a fork to scrape the insides.  You can do it in all directions, you will see spaghetti-like strands of squash. You can get really close to the shell, as it is hard and pretty unlikely to collapse.

How to make Spaghetti Squash and Meatballs

Once your spaghetti is ready, top the squash with 6 meatballs (more or less to your liking), your favorite marinara sauce, and sprinkle on some mozzarella or Italian blend shredded cheese.

Toss your Spaghetti Squash and Meatballs Bowls back in the oven for 5 to 10 minutes until the cheese is melted.

Equipment

  • Microwave

Ingredients

  • 2 spaghetti squash
  • Olive oil
  • Salt and pepper
  • 24 oz Marinara sauce
  • 1/2 cup shredded cheese - mozzarella or Italian cheese blend

Ingredients for Meatballs

  • 1 lb lean ground beef
  • 1 egg
  • 1/4 - 1/2 cup bread crumbs - just enough to firm up the meat mixture
  • 1 tbsp your favorite seasoning I used VOODOO Chef Dust

Instructions

  • While your squash is in the microwave, get started on making your meatballs.
  • Mix the ingredients into a large bowl.
  • Using a tablespoon scoop the beef out and form the meatballs, I used my hands.
  • Place the meatballs on a baking sheet.
  • After the squash has been in the oven for 15 minutes, add your meatballs to the oven, letting them cook for 35 - 45 minutes.

Summer in the literal sense is just about over here in Florida, kids are back in school and gone are the late night of playing with friends and no homework. This was our first week back to school, and while it is nice to get back into a routine, you can’t help but reminiscence about all the fun things that happened over the summer.

Every summer we drive from Florida to Michigan to go camping with my entire. That’s a total of a 30 hour drive ONE WAY. We camp with about 35 family members for over a week and we have a blast. We even celebrate Christmas in July 🙂

Every single moment is a beautiful memory, everything we do is some fun, but this year something extra special happened. My son learned to Slalom water ski. My 11 year boy dropped a ski. Now, if you live in “unsalted” waters, you may have a child and think this is no big deal. But, since we live in Florida and have a fear of gators and sharks, we only let him ski while we are in Michigan. That means for about 10 days a year, he gets the chance to practice his skills.

So, when he lifted his foot and that ski came off, we all yelled in encouragement! Mind you, it didn’t last all that long, BUT HE DID IT! Proud Mama tears welled up in my eyes as I smiled at the little man my boy was…and what a little boy he still is…he still likes his naps on the boat 🙂

Fresh Green Bean Salad

This green bean salad with sweet mini peppers is light, refreshing and the perfect side dish to just about any meal.

Ingredients

  • 12 oz bag of fresh green beans I used Pero Family Farms
  • 8 oz bag of Mini Sweet Peppers sliced - or get the rings I used Pero Family Farms
  • ½ cup halved Cherry Tomatoes I used NatureFresh
  • ¼ cup apple cider vinegar
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • Salt and Pepper (or your favorite seasoning) to taste

Instructions

  • Bring a medium-sized pot of water to a rolling boil
  • Add beans to the boiling water for 2 - 3 minutes
  • Drain and chill immediately by adding beans to a bowl of cold water and ice
  • Drain
  • Add beans to medium serving bowl
  • Add in the other vegetables
  • Pour in the olive oil, apple cider vinegar, and minced garlic
  • Stir gently
  • Season to taste
  • Enjoy immediately or chill until ready!

Lasagna is one of my family’s favorite meals, my Traditional Lasagna is on our menu on a fairly regularly basis. Lasagna is just one of those meals that brings the whole family to the table. Since I have been seeing many beautiful vegetables at the stores and farmers markets lately, I decided I would make a Vegetable Lasagna. Zucchini and Squash are definitely some of my favorite vegetables, they are so easy to cook with and have great flavor.

So, when my family asked for lasagna, I decided I would add in those beautiful zucchini and squash this time.  My kiddos started a pepper garden not too long ago and we had a chili pepper that was red and ready to go, so we added that in with our zucchini and squash to add in a bit of heat.  We also had some sweet peppers in the refrigerator, so we added in one of those too.  If you are not a pepper fan, you can leave those out, but they do add in an extra layer of flavor that we really enjoyed.

Prepping is a breeze, as you only have to saute the vegetables until they are tender, which only takes a few minutes and by using Ragu Homestyle Thick and Hearty Traditional Sauce you don’t have to worry about adding in any additional seasoning. Ragu Homestyle Thick and Hearty Traditional Sauce is not only delicious and full of flavor, but it really hugs the noodles and vegetables in this dish.

Ingredients

  • 3 small squash sliced, approx 1/4 inch thick or a little less
  • 3 small zucchini sliced, approx 1/4 inch thick or a little less
  • 1 chili pepper diced
  • 1 mini sweet pepper sliced
  • 1 jar Ragu Homestyle Think and Hearty Traditional Sauce
  • 12 oz part skim ricotta
  • 1 egg
  • ½ tbsp Italian seasoning
  • ½ cup mozzarella/provolone shredded cheese
  • ¼ cup shredded Parmesan cheese
  • 1 box oven ready lasagna noodles

Instructions

  • Saute vegetables in a 1 teaspoon of olive oil until tender
  • Combine the ricotta, egg, Italian seasoning and 1/4 cup of the mozzarella cheese blend in a mixing bowl and set aside
  • Pour a small amount of the Ragu Homestyle sauce on the bottom of an 8x8 baking pan, just enough to lightly coat the bottom
  • Place a layer of the noodles over the sauce
  • Spread a layer of the ricotta mixture over the noodles, sprinkle a bit of Parmesan cheese if you would like
  • Add a layer of the sauteed vegetables
  • Add a layer of Ragu Homestyle Thick and Hearty Sauce
  • Place a layer of the noodles over the sauce
  • Spread a layer of the ricotta mixture over the noodles, sprinkle a bit of Parmesan cheese if you would like
  • Add a layer of the sauteed vegetables
  • Add a layer of noodles
  • Pour on the remainder of sauce over the last layer of noodles
  • Sprinkle on the shredded mozzarella and the remainder of the Parmesan
  • Cover with aluminum foil and bake at 375 degrees for 45 minutes
  • Uncover and bake for an additional 15 minutes or until heated throughout
  • Enjoy!

Avocado Banana Power Smoothie

Smoothies.  Power Smoothies.  Fruits and vegetables blended together into creamy, healthy deliciousness.  Any way you say it, smoothies are a great addition to your daily diet.  I have created so many smoothies and shared them here on the blog and I love sharing my favorite creations.  Today I have a smoothie that I hope you all will enjoy, it is an Avocado Banana Power Smoothie.

Here are the ingredients I used in my smoothie, and why I blended them to perfection for breakfast.

Avocado – Not only does it make your smoothie amazingly creamy, it’s loaded with healthy fats, fiber and lots of important nutrients. Avocados are very high in potassium, in monounsaturated oleic acid (which is a “heart healthy” fatty acid) and are high in antioxidants.

Banana – I think we all know that bananas are loaded with Potassium, which is great for you!

Cucumbers –  Are great for rehydration and are also a great source of vitamin B, so that means they are a natural pick-me-up.

Carrots – Give you vitamin A and aid in digestion.  They are also linked to preventing cancer and giving you healthier looking skin.

Mango – I will be honest on this one, I had a slice left in the refrigerator and decided to throw it in 🙂  They also add great mango and are good for you as well!

Chia seeds – Are nutritional powerhouses, I add them into every smoothie.

Turmeric – I add it into every smoothie I make, it has so many benefits, but one of the main ones is it helps with inflammation.

Cinnamon – This is another one that I add it into every smoothie I make, it also many benefits, one of my favorites is that it helps increase your metabolism.

  • 5-6 baby carrots
  • 3 slices cucumber
  • 1 slice mango
  • ½ banana
  • ½ avocado - peeled and pitted
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1 tsp chia seeds
  • 4-6 oz coconut water - or your choice of liquid

Instructions

  • Place all ingredients into your blending device as listed above
  • Blend until smooth

My family and I love BBQ Chicken.  There’s nothing quite like starting the grill up, using your favorite BBQ sauce and cooking your chicken breast to a sweet and smoky perfection.  Unless of course, you forgot that the grill was out of propane.  Been there, done that!  That’s why I came up with this easy and delicious Slow Cooker BBQ Chicken recipe.  In fact, I made mine as a Freezer Meal, when I picked up my last stocked up Chicken when it was on sale, I prepped two of easy slow cooker BBQ chicken meals.

  • 1½ - 2 lbs boneless skinless chicken breast
  • 1 bottle your favorite BBQ sauce we used Sweet Baby Rays
  • ¼ cup Apple Cider Vinegar
  • ¼ cup brown sugar
  • 1 tsp garlic powder

Instructions

  • Place all ingredients into slow cooker and cook on low for 4-6 hours or until chicken is cooked throughout
  • If making as a Freezer Meal, place all the ingredients into a Freezer Bag and when ready to make, dump into slow cooker and cook for 6-8 hours on low or until chicken is cooked throughout
  • Enjoy!

Sunday mornings are a big deal at my house.  We have several of the neighbors come over with their kids and we host breakfast.  It is affectionately known as Pancake Sunday.  The kids have their pancakes the same way each Sunday – loaded with chocolate chips and mini M&Ms 🙂  Sugar rush anyone??  While us adults do like variety, so when we take a break from pancakes and eggs, I like to get a bit creative.   Never complicated though, as Sunday mornings I can have up to 20 people at my table, just a little creative 🙂

  2. I make it the day before, so in the morning all I have to do is toss it in the oven and then I can get back to talking with my friends and family
  3. It’s easy to make
  4. It’s delicious

The process of making this breakfast recipe is actually pretty similar to my Breakfast Strata, but this is a sweet version.  Instead of cooking sausage, you are cooking the apples 🙂

And once the apples are cooked, you pour the egg/bread mixture on the bottom of a baking dish, then pour on those amazing apples!

Breakfast is the most important meal of the day, and it will be the most delicious when you serve up this Apple Caramel French Toast Overnight Bake.
Ingredients
  • 3 tablespoons butter
  • 2 bags of tart Crunch Pak Sliced Apples
  • ⅔ cup brown sugar
  • 1 tablespoon cinnamon
  • 3/4 loaf of bakery bread – I used sourdough
  • 6 large eggs
  • 2 cups skim milk
  • 1½ teaspoons vanilla extract
Instructions
  1. Combine eggs, milk and vanilla in a large bowl
  2. Rip the bread into small pieces, about 2 in x 2 in, and drop the pieces into the bowl with the egg mixture. Set the bowl aside.
  3. Melt the butter in a frying pan and add apples, brown sugar, and cinnamon.
  4. Cook on medium heat until apples are slightly softened.
  5. Pour the bread/egg mixture into a 9×13 pan or similar baking dish.
  6. Top with the apple mixture
  7. Cover with foil and refrigerate overnight
In the morning
  1. Preheat oven to 350 degrees
  2. Bake covered for 35 minutes
  3. Remove foil and bake an additional 10-15 minutes or until bread is firm.
  4. Enjoy!
