Lemon Pasta Salad with Tomatoes, Cucumber, and Feta

Doesn’t that just sound refreshing?  This pasta salad is delicious.  And I will be the first to admit that I don’t normally make pasta salads because most are creamy and filled with unwanted fat and calories.  Well, this Lemon Pasta Salad is so light and so easy to make, I can’t wait to make it again!  It is the perfect dish to bring to a gathering, to serve as a side, or eat for a meal.  I have had it for lunch the past 2 days 😉

I told you guys a few weeks ago that I recently partnering with organicgirl and I was trying out some of their new products.  Well, what makes this Lemon Pasta Salad so easy and yum is the lemon agave salad love dressing.

Ingredients
  • 1/4 cup organicgirl Salad Love Lemon Agave dressing
  • 3 cups uncooked pasta – I used organic bowtie pasta
  • 1/2 cup grape/cherry tomatoes cut in half
  • 3/4 cup cucumber slices cut in quarters
  • 1/4 cup feta
Instructions
  1. Cook pasta according to package instructions and drain
  2. Pour in the organicgirl Salad Love Lemon Agave dressing and using a large spoon or tongs, mix well
  3. Allow pasta to cool for 5 – 10 mins
  4. Top with tomatoes, cucumbers, and feta
  5. Mix the veggies and feta in
  6. Serve chilled
  7. Enjoy!

  12. When I was little I took a big swig out of what I thought was a jug of juice. It was cooking oil! I haven’t been able to touch oil since! Having said that I’d probably use a balsamic vinegar/mustard dressing and actually this would be nice with the pasta still warm!
