Cancer Survivors Park

Why limit cancer awareness to just one month? The Cancer Survivors Park in Jacksonville features miniature versions of local bridges, along with sculptures depicting cancer patients’ recovery. This park is all about sending messages of hope to those who are struggling with cancer, so you’ll find inspirational plaques all over!

Jacksonville is known for its many bridges. Although the foundation that designed this park has built many others, the replica bridges are unique to the Jacksonville park. Visitors can walk across them!

Public Beaches

Since Jacksonville isn’t full of partiers, the beaches here are (slightly) less crowded and more relaxing. It’s easier in Jacksonville!  Grilling, fishing, and surfing are allowed at most beaches, though Atlantic Beach has the best waves for beginner surfers. There are 22 miles of white, sandy beaches in Jacksonville, giving you plenty of options as you decide which beaches to visit during your stay!

Riverside Arts Market

Every Saturday, join the locals at the Riverside Arts Market. Vendors gather here with flea market items, food, and live music. It can get ridiculously hot and humid in Florida, but thankfully, this venue offers shaded areas so you can escape the heat!

The market is open on Saturdays from 10am-3pm, rain or shine. Don’t let the Florida wet season take away from your vacation!  And don’t forget to check out all the amazing murals on the buildings!

Jacksonville Skyway

Looking for a quick way to get from your hotel to the nearest restaurant? The Jacksonville Skyway is a free monorail train that takes riders through the best parts of downtown. The trains operate every few minutes on weekdays, so you won’t have to rush to make your train!

Aside from the convenience of a local monorail, the ride is often exciting for kids who have never been on one before. Even if you can drive or walk to your destination, opt for the Skyway at least once just for the experience!

Sunshine Park and Splash Pad

There’s no better way to beat the Florida heat than visiting a splash pad! The Sunshine Park and Splash Pad is a perfect way to spend an afternoon with your family. During Florida’s warmer months, the zero-depth aquatic attraction helps visitors cool off. Throughout the year, a playground and skate park offer recreation for kids and kids at heart. There’s so much for a family to do here!

Other fun amenities at this park include a basketball court, grilling areas, tennis court, and fitness trail.

Jacksonville Friendship Fountain

This isn’t your ordinary water fountain – the Jacksonville Friendship Fountain reaches heights close to 100 feet! When it opened, this fountain was the largest and tallest in the world. To this day, the 24/7 attraction is still iconic. The water even lights up at night, thanks to 265 lights!

Although you can park on-site, free parking is available under the nearby bridge. Don’t pay more than you have to!

Sally Corporation

On Tuesdays and Thursdays, this robotics company offers free tours! The Sally Corporation is the source of animatronics used in Disney films and amusement park rides.  Anyone over age 7 is invited to tour the factory for free, though you’ll need to call ahead of time to make a reservation. Sally Corporation also creates “dark rides,” which are indoor, interactive attractions that also function as games and storytelling mediums. If you’ve ever been to Sesame Place or Hershey Park in Pennsylvania, you’ve likely seen some of them!

Adults can learn how to make beer at GastroFest, while the Railroad Day Festival gives train lovers something exciting to look forward to during their visit. Kingsley Plantation

It’s time for a history lesson! Kingsley Plantation is home to the oldest plantation house in Florida. Free audio tours run until 3:30pm, but the plantation itself allows visitors until 5:00pm. Ingredients

  • 2 lbs ground chicken
  • 1 tbsp avocado oil
  • ¾ cup white onion - diced
  • 1 cup shredded carrots
  • 4 mini sweet bell peppers - diced, seeds removed
  • 3 tsp ground ginger
  • 2 tsp minced garlic
  • ¼ cup low sodium soy sauce
  • 2 tsp rice vinegar
  • 1 tsp sriracha
  • 1 tsp fish sauce
  • 4 oz diced water chestnuts
  • Lettuce cups or romaine hearts or cauliflower rice for servings

Dipping Sauce

  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • red pepper flakes to taste

Instructions

  • Put the avocado oil in skillet and heat
  • Add the onion, peppers and carrots. Cook until onions are soft, approximately 3 minutes
  • Sprinkle in the ginger and garlic, stir well
  • Add the ground chicken, be sure to break it apart into small chunks
  • Add 1 tsp salt
  • While the chicken is cooking, mix together the soy sauce, fish sauce, rice vinegar, sriracha and red pepper flakes
  • When chicken is cooked throughout, there is no more pink, pour in the soy sauce mixture
  • Mix cooking sauce in well
  • Stir in water chestnuts righht before serving
  • Serve on lettuce as a salad, cauliflower rice or in lettuce cups
  • Serve with dipping sauce
  • Enjoy!

Fall Sheet Pan Pork Tenderloin with Roasted Vegetables

When I think of fall recipes, I think of slow cooker meals basting in natural juices for hours. Or dinner in the oven slow roasting for hours on head. But who has time for that?! Just because the weather has gotten cooler, doesn’t mean our days got any longer. In fact, the days are getting shorter and we still have just as much to do.

So, while I appreciate the flavors of fall, I also appreciate a healthy dinner that is easy to make and flavor of flavor. Like this Fall Sheet Pan Pork Tenderloin with Roasted Vegetables. I grabbed brussels sprouts, butternut squash and a few peppers for my roasted vegetables and a Smithfield® Steakhouse Marinated Fresh Pork Tenderloin the last time I was at Walmart and just like that, dinner was particularly done. Well, besides the cooking part.

Best Sheet Pan Pork Tenderloin

I love using Smithfield Seasoned Fresh Pork Tenderloins for dinner because they are real fresh and have real flavor and I can have dinner ready real fast. The Steakhouse pork tenderloin was perfectly marinated so the only thing I really had to do was cut up the vegetables and season them a little before roasting. Overall, dinner was prepped in under 10 minutes and cooking time was about 30 minutes. If you don’t have 30 minutes, you can always slice the meat to help it cook faster.

To cook the pork tenderloin, I heated a large skillet over medium high heat, then seared the pork tenderloin all over for about 3 minutes total, until golden brown. If you don’t want to do this step, you definitely can, but it will look a little pale. Place the pork tenderloin on a baking sheet with your prepared vegetables and let the oven do the rest for about 30 minutes. Smithfield actually puts the directions right on the package too, so if you forget, it will be right there. Making dinner even easier!

Easiest Roasted Pork Tenderloin

You want the interior temperature of the pork tenderloin to reach at least 140 degrees. Once the pork reaches 140 degrees, remove it from the oven and allow it to sit for about 10 minutes. While it rests it will continue to cook getting the pork to the recommend temperature of doneness to 145 degrees. If you don’t have a thermometer, you can cut it open to check it out. Some pink is okay, but the majority of the pork will be a whitish color.

Now, here is my Fall Sheet Pan Pork Tenderloin with Roasted Vegetables recipe. Be sure to Print It and Pin It so that you can make it again and again. Feel free to substitute the butternut squash and brussels sprouts for your family’s favorite veggies, I used these because they reminded me of fall and they are so easy to cook.

Equipment

  • Oven

Ingredients

  • 1 Smithfield Steakhouse Seasoned Fresh Pork Tenderloin
  • ½ butternut squash, peeled and cubed
  • 10 - 15 brussels sprouts, cut in half
  • 2 peppers - I used one red bell pepper and one poblano pepper. Remove seeds and slice.
  • 2 tbsp olive oil - divided extra virgin
  • 1 tbsp your favorite table seasoning - I used Dust by Voodoo Chef

Instructions

  • Preheat oven to 425°
  • Prepare vegetables
  • Place the vegetables in a large bowl, pour on the 1 tbsp of olive oil and the seasonings. Gently stir to coat. Set aside.
  • Heat 1 tbsp olive oil in large skillet
  • Sear all sides of the Smithfield Steakhouse Seasoned Fresh Pork Tenderloin - this will take approximately 2 - 3 minutes
  • Place the pork tenderloin on the center of a sheet pan
  • Arrange vegetables around the pork tenderloin
  • Roast for 25 - 30 minutes until pork is cooked throughout
  • Allow pork to rest for 5 - 10 minutes before slicing
  • Enjoy!

Notes

If you would like dinner even faster than 30 minutes, you can slice the pork tenderloin before roasting, this will cut down on the cooking time.
Feel free to substitute other vegetables, whatever you family will like!  Broccoli, Cauliflower etc.  I used butternut squash because it reminds me of fall, and we all love roasted brussels sprouts.

A Reason To Celebrate Today

We spend most of our lives getting from one event to the next. We start summer already planning for back to school. We get the kids back to school and we start planning for Halloween. It’s not even Halloween yet and we are planning Christmas. Why aren’t we talking about today? Why aren’t we looking at today as a day to celebrate?

My son had spent the summer training and getting ready for high school baseball. I dropped him off at tryouts and 30 minutes later he called me and said that he was done and that I needed to pick him up and he may need to go to the doctors. Ok, ON MY WAY. Then, my phone rang again. It was my son again. I answered and there was a gentleman on the other line who said “Hi, Mrs. Shaw, this is the baseball trainer. Your son is in a lot of pain and he will need to be taken to the ER…” He continued to talk and explain what happened to me, but I was no longer listening. The only thing that mattered to me was getting to my son. He needed me.

I picked him up, he was in pain and anxiety ridden. We went straight to the ER and discovered that  the bone in his elbow was no longer attached. He would need surgery. After surgery, he would need 12 weeks of physical therapy.

I can’t tell you how many times in my parenting career I haven’t taken the kids up to the pool or to the beach or out to dinner because there wasn’t a special “reason” to.

Now, he can’t swim for 12 weeks. He can’t ride his skimboard for at least 12 weeks. He can’t fish for 12 weeks. He can’t cut his own food for 12 weeks. He can’t. He can’t. He can’t.

Can you imagine how much that breaks my heart? He can’t do the things he loves to do. And I can count at least 5 times in the few weeks before his “accident” that he asked me to take him somewhere or do something, and I just didn’t think that we had time or that we needed to. I mean, isn’t the day at the beach like a special occasion? Isn’t a dinner out something that we do when we are celebrating something? We would have a reason to do those things soon, just not today. Not today.

You can guess what I learned, right? TODAY is a special day. TODAY is a reason to celebrate. The moment that is occurring right now that we will never get back, this is a special moment. And it’s these little moments that will one day be the most important. The unplanned smiles, the simple celebrations of just making it to Friday, or that he got to take his arm brace off for 10 minutes today. We need to stop and appreciate the everyday, every moment. The now. Life isn’t all about getting from one event to the next, but enjoying the days in between.

So, to help us enjoy the NOW and what my son CAN do (no more can’ts,) we celebrated the fact that we made it to the weekend, and that Steven got his arm brace on and off by himself, by going out to dinner at Ruth’s Chris Steak House. I know most people don’t think to celebrate small victories; it may seem trivial to celebrate something as seemingly unimportant as the fact he got his arm brace off himself, but that small victory is going to lead to big victories. Dinner reservations don’t need to be made at your favorite restaurant for just the big victories or birthdays and anniversaries. They can be made simply because you want to spend time together. And that is exactly what we did.

My family and I went to Ruth’s Chris Steak House here in Tampa, and we were treated to world class hospitality and a charismatic staff that took the time to ask us about our day, and to ask about my son’s arm. These simple and unexpected warm gestures really made our night even more memorable. Well, that and the award-winning selection of wines and top-quality steaks from USDA Prime Beef.

We actually all ordered the 3-course Classics menu. Steak, shrimp, and lobster, oh my! It was the perfect option for all of us because we all wanted to try a bit of everything, and we did. We all chose a soup starter, but we could have also gotten the Heirloom Tomato & Cucumber Salad. For the entrées, my daughter and husband got the 6oz Filet and Shrimp, my son got the barbecued shrimp, and I got a beautiful ribeye. Each steak was served on a 500 degree plate, yes, you read that right…500 degrees! Ruth’s Chris’ perfected broiling method and seasoning techniques ensure each cut of USDA Prime beef they serve arrives cooked to perfection and sizzling on a 500 degree plate, just the way Ruth liked it. And we can verify, each steak was cooked to absolute perfection. For dessert, we all had a summertime favorite, strawberry shortcake served with fresh strawberries, berry jam, and a homemade vanilla whipped cream. Who can resist strawberry shortcake?!

Your furry friends are welcome, but they must be on a leash. If you could like to pack some food, there are picnic areas for you to enjoy. There is a lot of information available online, from suggested hikes, easy walks and what to wear, so be sure to check that out before heading out.

You do have to pay to visit this incredible reserve by car, the cost is $10.00 per vehicle, $9.00 per vehicle for seniors. If you choose to walk or bike, it’s free. The hours of the Armstrong Redwoods State Natural Reserve are 8:00 AM to one hour after official sunset. The Visitor Center is open 11:00-3:00 Daily.

Fort Ross State Park

Fort Ross has been a state park since 1906, but from 1812 to 1841 Russian fur trappers inhabited the area. There are many historical sites to see at Fort Ross including a windmill, a chapel, blockhouses, stockade, and barracks. The only original structure left is the Rotchev House which is an excellent example of Russian architecture of the time. There are also beautiful nature trails, whale watching, and a beach full of seals that you can explore. Visiting Fort Ross is free, but they do ask for a donation. There are many free walking tours as well, but if you would like a Group Guided Tour, you can do a walking one for a mere $5 (free for kids 12 and under). The Guided Tours are seasonal and offered at specific times, so be sure to check the website before you head out. But, even if you miss a guided tour, there is much to explore on your own. Fort Ross State Historic Park is open everyday. The Visitor Center and the Fort Compound hours are 10am to 4:30pm while the park grounds are open from sunrise to sunset. Call House Museum tours and Windmill Demonstrations are on the first weekend of each month from 1pm to 4pm.

Old Faithful Geyser of California

Have you always wanted to see a geyser of steam and hot water shoot it’s way 75 feet up into the air? If so, make sure that you check out the Old Faithful Geyser of California located in Calistoga. This is one of only three predictable geysers in the world, and if it is not erupting predictably that likely means an earthquake is due to strike in the coming weeks within 500 miles of the geyser. This geyser is one of the most photographed sites in the whole state of California with its rainbow reflecting sprays. In addition to the geyser, there are also gardens, an animal farm, a geology museum, and a gift shop to explore. There are also picnic areas and places to play Bocce.

Old Faithful Geyser of California is open every day, hours vary a bit depending on the season. Kids 4 and under are free, adults are $15 but there are discounts for Calistoga residents and seniors.

Lake Sonoma

Lake Sonoma is surrounded by Sonoma wine country and was created in 1983 when the U.S. Army Corps of engineers created the Warm Springs dam. This created a 2,700-acre surface area lake to prevent flooding in the area. In addition to the lake, there are nearly 18,000 acres of nature to explore. This is a beautiful place to hike, hunt, fish, picnic, ride horses or camp. There are of course recreational water activities as well and you can rent boats, jet skis and other watercraft at the park. If you are looking to camp while touring the Sonoma Valley wineries this may be just the place for you and your family to stay. You can man make reservations for your favorite activities.

Lake Sonoma Marina is open all year and prices vary on what activities you would like to participate in.

Bodega Bay

Bodega Bay is a popular spot on the Sonoma coastline for residents and visitors alike. You can hike, fish, golf, horseback ride, and even fly a kite there. The Bay is a popular place to bird watch and to watch seals and whales from the shore or on a boat tour. Bodega Bay is a picturesque fishing port with lots of shops, restaurants, and galleries for you to explore. If you are a movie buff particularly and Alfred Hitchcock fan you may want to head to the Potter Schoolhouse and the St. Teresa of Avila Church in the nearby tiny village of Bodega. Both were prominently featured in the film The Birds.

Point Reyes National Seashore

Point Reyes National Seashore is about an hour’s drive from Sonoma but the scenery, activities, and history here make it well worth the drive. Point Reyes is part of the California National Park system and encompasses several different places. From Alamere Falls where a waterfall flows directly into the ocean to Chimney Rock which is bursting with wildflowers, birds, and elephant seals there is a lot to see and do here. Point Reyes National Seashore is home to more than 60 species of mammals and 490 species of birds.

The Point Reyes National park is open daily from sunrise to midnight throughout the year, but is closed on Christmas Day and closes at 2 PM on Thanksgiving day. It is free enter and enjoy Point Reyes National Seashore.

Petrified Forest

The Petrified Forest Calistoga is also about an hour’s drive from Sonoma but well worth the trip to see trees that are over 3 million years old. The trees were knocked down by the force of a powerful explosion from the now-extinct Mt. St. Helena volcano. After being knocked down they were covered in thick volcanic ash that over millions of years petrified and preserved them. They remained covered and hidden from the world until 1870 when a Swedish farmer stumbled across them while raking out his fields. You can take a guided tour or just explore the trails on your own.

The hours of admission vary slight for the Petrified Forest depending on the season, so be sure to check out the website before you go. Admission is $12 for adults with discounts available for seniors and kids. Children under 6 are free.

Safari West

Safari West is a 400-acre wildlife preserve with over 100 species and 700 animals. The guided tours are about 3 hours long and include an approximately 45-minute walk and a 2 ½ hour open-air drive. Some of the animals that you can see on this tour include cheetahs, flamingos, zebras, wildebeest, cape buffalo, rhinos, and lemurs. There is also an open-air aviary that is home to many exotic birds. You can even spend the night at Safari West in tents they had imported from Africa.

Reservations are required for this incredible experience, and the fees vary on what you would like to do while you are there. While this may be a bit of a splurge, it definitely looks like an unique experience and one you will remember for a lifetime.

Charles M. Schulz Museum

Charles M. Schulz was the creator of the world-famous and much-loved Peanuts characters including Snoopy and his feathered friend Woodstock. In 2002 his family opened the Charles M. Schulz Museum in the heart of Sonoma, his hometown so that visitors could see his collection of drawings in person. This is the largest collection of Schulz’s work in the world, and there is also an awesome gift shop so you can pick up some of your Peanuts gear.

The Charles M. Schulz Museum is open on weekdays 11:00 am–5:00 pm and on weekends 10:00 am–5:00 pm. There are days they are closed for the holidays and they are closed on Tuesdays during the Fall, Winter and Spring. So be sure to check the website before planning your trip. The admission is free for members, otherwise it’s $12 for adults and there are discounts for seniors, children and students. Children 3 and under are free.

Take a Scenic Air Tour

Have a tour of Sonoma with a different type of perspective from high up in the air. Your flight will take you over the Russian River Valley where you will see vineyards and views of the California countryside. You will soar over the Sonoma Coast State Park and Penny Island, as you fly over the Pacific ocean make sure that you look for whales, seals, and dolphins.

Reservations must be made for these experiences, and pricing will depend on what options you select. This may also be considered a splurge for some, but the experience will be one you never forget.

Discover New Art

The Sonoma County Art Trails is the oldest juried open studio tour in the country, and it takes place on the 2nd and 3rd weekends in October each year. Not to worry if those dates do not coincide with your trip though. Art is welcome in Sonoma county and there are painted park benches, sculptures, and more throughout the community.

Drive America’s Most Beautiful Road

State Route 1, also known as the Pacific Coast Highway, is a major north-south highway in California that travels most of the Pacific coastline in the state. It is the longest state route in California at 659 miles, but what makes it a tourist destination is the scenery you will view while traveling it. Highway 1 runs for 56 miles through Sonoma County and there are lots of beautiful sites to see and explore. Some of these include Bodega Bay, Jenner, Fort Ross State Park, Stewarts Point Store, and Gualala Point Regional Park.

Tastiest Ranch Tomato Basil Chicken Crescent Rolls

Now, let me tell you how yummy these Tomato Basil Chicken Crescent Rolls are. I mean, isn’t just about anything better when it’s wrapped up in a crescent roll anyway? Fresh tomatoes, fresh basil (from our garden actually!), mozzarella cheese, roasted chicken and ranch dressing. The tomato, basil, roasted chicken and mozzarella instantly made me think of a healthy version of Chicken Parmesan. But this version of Chicken Parmesan has no breading and no red sauce and it’s wrapped in a crescent roll. It also made me think of a Caprese Salad, with the fresh tomatoes, basil and mozzarella it is pretty close. But this version of a Caprese Salad is wrapped in a crescent roll and instead of balsamic I used Marie’s Creamy Ranch Dressing. So, basically these Tomato Basil Chicken Crescent Rolls are a combination of a few of my favorite recipes, but wrapped in crescent rolls.

Tomatoes are they loaded with vitamin C, iron, and potassium, they contain lycopene, a powerful flavonoid that has proven to slow the onset of several kinds of cancer, so not only do they taste good but you can feel good about adding them into this easy dinner recipe.

Delicious Tomato Basil Chicken Crescent Rolls

You can use rotisserie chicken, baked chicken, shredded chicken basically any find of chicken you have on hand. I used grab a bag of the organic oven roasted short cut chicken slices in the deli section. It was easy and on sale. Mom win.

Easy Tomato Basil Chicken Ranch Crescent Rolls

To make these Tomato Basil Chicken & Ranch Crescent Rolls you simply spread on ranch dressing to each crescent roll triangle, then layer a small slice of mozzarella (I used fresh mozzarella), a half slice tomato, a slice of chicken, top with a fresh basil leaf, roll up the crescents and then bake. Done.

With a prep time of just 5 minutes and a short baking time of 10 minutes, these crescent rolls can be on the table in under 15 minutes. This means you can have a homemade dinner ready in no time, even on the busiest of evenings!

Prep time is less than 5 minutes for my Tomato Basil Chicken Crescent Rolls and bake time is about 10 minutes. That means you can have dinner on table in 15 minutes. Ingredients

  • 1 can crescent rolls 8 count
  • 8 ½ tbsp ranch dressing – I used Marie's Creamy Ranch
  • 8 slices fresh mozzarella – I used part skim cut thin
  • 1 fresh tomato – I used SUNSET on the vine cut in slices, then cut in half
  • 6 oz chicken – I used the oven roasted short cuts
  • 8 fresh basil leaves

Instructions

  • Preheat oven to 350 degrees
  • Open the crescent rolls and spread approximately 1/2 tablespoon of the ranch dressing onto each one
  • Place one slice of cheese on each crescent roll, long ways, so that the slice goes from top to bottom

  • Place one half of tomato slice near the wide end of the crescent roll, do this to each one
  • Place one strip of the chicken on top of the tomato, do this to each one
  • Top each piece of chicken with a fresh basil leaf
  • Roll each crescent roll
  • Bake at 350 degrees for 10 minutes or until golden brown

Notes

You can use shredded cheese if that is what you have on hand or prefer, I just love the way the chunk fresh mozzarella melted, plus it gave me the opportunity to slice it to my desired thickness.
If you use rotisserie chicken or baked chicken strips or shredded chicken, simply make sure you fill it on the wider side, but don’t put so much that you will have a hard time rolling it. 
I recommend serving with a fresh vegetable, like steamed green beans and a salad.

While the main meat and fish dishes are becoming well known to visitors to Ireland, the traditional side dishes are often overlooked. Three side portions that feature in traditional Irish cuisine are colcannon, champ, and Irish soda bread.

Colcannon

Chefs in Dublin and in other parts of Ireland will have their own recipe variations for the traditional Irish side dish, colcannon. Eveleen Coyle, based in Dublin, includes two colcannon recipes in her Irish Potato Cookbook. The first recipe ingredients are potatoes, cabbage, milk, butter and seasoning, and the second recipe uses potatoes, onion, parsley, milk, butter, soda, and seasoning.

Champ in Traditional Irish Recipes by George L Thomson is made with boiled potatoes, scallions (also known as spring onions), butter, and seasoning and “adding just enough milk to make it creamy smooth. In olden days, chopped fresh young nettle tops would be used in place of the scallions.

Gallagher’s Boxty House (located at 20-21 Temple Bar, Dublin 2, Ireland) offers 14 side dishes for Irish Soda Bread, ideal as a side order for coddle. Most side orders include Murphy’s Mushy Peas, Champ, Colcannon, carrots, and parsnips roasted in honey and thyme, sautéed cabbage and homemade herb dumplings.

Irish stew, coddle, steak in Irish stout and potatoes, rabbit pie, avoca, line-caught salmon from Ireland, corned beef and cabbage, Irish bacon, and traditional Irish large sausage will feature on the dinner menu in many establishments in Ireland. Colcannon, champ, and Irish soda bread are must-try side dishes to try on your culinary journey to Ireland.

The food, the culture, the land that is Mexico reflect the contrast that is Mexico. In bustling Mexico City, international business is transacted; in the Oaxacan countryside nearby, Hauve women patiently grind dried corn for tortillas.

In the northern-most regions of the country, vaqueros drive cattle across vast mountain ranges. Beef, dairy products, and flour tortillas are favored in this area where cattle and wheat fields abound. Highly gifted bakers produce hearty loaves, light rolls, and sweetbreads of every description.

In the high fertile plateaus of the Sierra Madre mountains, which extend down to the Pacific Ocean, oxen plow fields of corn, garlic, and onions. Where the mountains meet the ocean, seafood such as shrimp, scallops, and oysters are abundant.

Bread

Unleavened cornbread is an integral part of Mexican cuisine in countless forms and shapes: Tacos, enchiladas, tostadas, quesadillas to be layered between meats and vegetables, and in many other applications are found throughout the country.

Normal breakfast fare might include well fried (this is the proper term, not refried) beans. Frijoles, dried beans, are available in a wide variety. Their favorite method of preparation is either regional or personal.

This method of preparation is simple, humble, and results in, what some say, are the best tasting beans: Don’t soak them. Simply cook the dried beans gently in water with onion and garlic. Add salt and a bit of butter after they have cooked. Beans are best eaten a day or two after they are cooked, so simply refrigerate. When ready to serve, warm in a skillet, finish as you prefer, and enjoy with your favorite garnish.

Sauces

Every cuisine has a mark of distinction. In Mexico, the sauces make this mark.

Cooking with fresh, local ingredients is a passion throughout the country and is no better reflected than in the many sauces, all representative of the eclectic mix of regional flavors.

Oaxaca, the town of the seven moles, very well demonstrates a principle of Mexican cookery not to be missed. The mole sauce is usually prepared by the “expert” in the family who is eager to make the sauce respectfully and carefully in the traditional style, slow-cooked and infused with cinnamon, chilies, allspice berries, cloves, sesame seeds, and many other ingredients.

The more ubiquitous and simpler sauces are the salsas, uncooked combinations of chilies and vegetables as originally introduced in the United States. Guacamole with avocado is universally popular.

Desserts

Further west still, coconut, mangoes, and pineapple flourish among palm trees on the lush, tropical Pacific coast. Coconut is the main ingredient of sweets on this Pacific Coast, and even though introduced by the Spanish, coconut flan is highly popular today. Chocolate drinks and desserts are popular throughout the country. Fruit is normally offered with every meal.

I know Charlie! Well, kinda. I first saw Charlie and the Chocolate Factory on Broadway in New York City and my son’s friend was playing Charlie. I was able to take my mom on that trip and being able to see the show and actually know one of the actor’s was pretty surreal.

I watched Charlie and the Chocolate Factory when I was a child (the original) and watched it again when Johnny Depp starred as Willy Wonka in 2005.

Charlie and the Chocolate Factory is definitely an unique movie, it plays on the impossible to help teach life lessons. I think the bit of fun and funky, like bubble gum turning kids into blueberries, keep you watching. I mean, who doesn’t want to know what happens next?! But, the idea behind it is still that lesson…the lesson that I hope my kids pick up on 😉 And not the lesson that there could be gold in chocolate…if that were the case I would have found it by now.

Charlie and the Chocolate Factory is a world of pure imagination. Now watching the film(s) is a completely different experience from seeing Charlie and the Chocolate Factory live. The lessons are still there, the parts from the movie that you grew up loving are there, but you now get to be a part of it. You are invited into the small, yet quaint house where Charlie Bucket and his family live. You can actually see Charlie Bucket find that Golden Ticket. You watch as the stage transforms to the mysterious chocolate factory. You get to see the Oompa-Loompas! You actually get to witness the childhood story that we all grew up loving.

While Roald Dahl’s amazing tale is in Tampa, you will enjoy songs from the original film, including “Pure Imagination,” “The Candy Man” and “I’ve Got a Golden Ticket,” alongside a toe-tapping and ear-tickling new score from the songwriters of Hairspray.

Wineries to visit in Sonoma County

In the southwest corner of the Californian Wine Country lies Sonoma County. California is full of beautiful wineries to visit with delicious flavors all waiting to be savored and tasted, and many of these wineries are located in Sonoma County and the Russian River Valley. With numerous wineries, many of which host tours and tastings as well as other recreations, touring these lands is a treat.

Sonoma County California has a long growing season that includes mostly sunny days with minimal rainfall from May until September. The temperature averages between 70 and 90 degrees, but even in the warmest areas the cool evening temperatures are in the 40’s and 50’s. As you can see, we were there in the Fall, we definitely had some rain, cloud and cooler temperatures, but that didn’t stop us from appreciating the gorgeous views. In fact, being from Florida, we appreciated the cooler temperatures. Sonoma is primarily known for it’s Pinot Noir, Cabernet Sauvignon, and Chardonnay wines but some fine Merlots and Zinfandels are coming out of the area as well.

The soil in the Sonoma area is predominately Goldridge soil. The soil is comprised of a dark yellow fine sandy loam at the surface over a subsoil of golden yellow sandy loam, and fractured sandstone. This soil has excellent drainage and the roots of the grapevines can go as deeply as they need to produce very fine grapes.

There are over 400 wineries in Sonoma so it is going to take you a long while to get around to visiting all of them.

Copain Winery

The Copain winery was founded in 1999, and the name means buddy or pal in French. The winery focuses on creating Pinot Noir, Chardonnay, and Syrah wines inspired by the Rhone River valley region of France. They also make a seasonal Rosé, which is actually one of my favorite Rosés. Their Chardonnay is also incredible, in fact, it’s the reason we joined their wine club. The Copain winery sits atop a beautiful hillside with stunning views of the Russian River Valley. I strongly recommend planning extra time at Copain, because you will want to sit down and enjoy the views.

Complimentary tastings are available for wine club members but do require reservations. For non-members, Copain offers a Reserve Flight where guests are offered a tasting of six different wines from the Single Vineyard portfolio, paired with an assortment of fruits, cheese, and charcuterie. This experience lasts approximately 75 minutes and costs $60 per person. The Comparative Library tasting is an in-depth exploration of three select vineyards with both current and past selections from these vineyards available to try and compare. This experience is $90 per person or $45 per wine club member and lasts approximately 90 minutes.

The Copain winery was purchased in 2016 by Jackson Family Wines, but is still true to the unique vision, the winery was started with and focuses on vineyard-designated wines. One of the original founders Wells Guthrie remains on staff at the winery.

Ferrari Carano Vineyards and Winery

The Ferrari-Carano Vineyards and Winery was founded in 1981 by Don and Rhonda Carano. The winery was started with just 30 acres and has now grown to over 19 vineyards and encompasses over 1,500 acres. In addition to producing some really wonderful wines, people come to visit to explore the 5 acres of beautiful gardens. My uncle actually advised us to visit this one because the gardens are so beautiful to walk through. In the gardens, you will find some rare for the climate Portuguese cork oak trees. These are the trees that wine corks are made from.

The Ferrari Carano vineyards are open for tastings daily from 11 to 5 and unlike most wineries in the area do not require reservations. Their tastings are also extremely reasonably priced. You may taste their offerings at the Enoteca Reserve wine tasting bar underground in the cellar where it is $25 to taste four wines. They also offer tastings at the Villa Fiore wine tasting bar and shop where it is $15 per person to taste five of their wines. If you aren’t interested in a tasting you can take a seat at the Il Terrazzo, the outdoor terrace overlooking stunning views if you purchase wine by the glass or the bottle daily from 10 to 5. You are more than welcome to walk around the gardens and estate while you sip on your wine.

Francis Ford Coppolla Winery

Francis Ford Coppola, yes the six-time Oscar-winner also has a winery. If you are in Sonoma this is one winery stop that you definitely need to make. There are incredible wines to be found here but there are a lot of other things to see as well. The main building of the winery looks like a European chateau with a glass pyramid placed on top of it. When we were originally planning our trip to Wine Country I had several people tell me that Francis Ford Coppola Winery was the Disney World of wineries, and now that I have been there, I understand what they meant. You can easily spend the day here.

Inside the building, you will find a full-service restaurant Rustic, Francis’s Favorites, with an authentic Argentine grill, where an Asador (grill master) prepares South American style wood grilled meats. My husband and I ate here and the food was delicious. I had Mrs. Scorsese’s Lemon Chicken and my husband had the Rigatoni and Meatballs. You will also find a movie gallery that is full of memorabilia from Coppola’s movies including Don Corleone’s desk from The Godfather trilogy among many other cinematic treasures. My husband is a self-proclaimed movie-buff so this was definitely one of his favorite parts.

The winery also has pools that are opened seasonally and are family-friendly! There are not a lot of wineries that let you bring your kids along with you! You do have to have a pass for the pool, and you can make reservations for that ahead of time, which is recommended, online. There is also poolside dining featuring salads, paninis, wood-fired pizza, and gelato. All of this is of course in addition to the wonderful wines being produced here.

There are daily walking tours offered at 11:30, 1:30, and 3:30 that will give a behind the scenes glimpse at the bottling process and also the stories behind many of the wine labels produced at the winery. I definitely recommend taking the tour, it’s a great opportunity for you to see that there is so much more to wine than just drinking it. There are also a variety of tastings offered. You can take a First Flight tasting in the upstairs gallery bar that features vineyard-designate Reserve and Storyteller portfolios.

You can also participate in the Sonoma Inclusive tasting features wines from across the Sonoma Valley region. This tasting is offered at the Main Floor tasting bar. Both of these tastings are offered daily with no reservations from 11:00 to 5:30. These options are reasonably priced, and some of the tastings are even free for wine club members. You can also make reservations for a private tour and tasting.

Gary Farrell Vineyards and Winery

At Gary Farrell Vineyards and Winery you will drink in stunning views of the Russian River Valley as well as some of their award-winning small-batch Chardonnays and Pinot Noirs. In 1982 Gary Farrell produced his first Pinot Noir from grapes grown in the Rochioli vineyard. He made handshake deals with growers in the area, and today his vision lives on as the vineyard makes wines from 5 specific neighborhoods all with their own unique terroir.

Tastings at the winery are by appointment only at the tasting salon which is open daily from 10 to 4:30. They offer three different types of tastings here. The Exploration Tour includes a tour of the winery and bottling process and then a tasting of five wines paired with cheese. This tour lasts approximately 90 minutes and is $55 per person or complimentary if you are a Grand Crew member. The Inspiration tour is approximately 90 minutes and focuses on six different Pinot Noir wines paired with artisan cheese grown from the fruit in the Russian River Valley and beyond. This tasting is $75 per person or complimentary for Crew members at the Collector level. The Elevation tasting offers a tasting of 5 wines artfully paired with artisan cheeses and lasts approximately 60 minutes. Discussion with a brand ambassador centers on how wine pairs with foods to bring out the best in each wine. This tasting is $35 per person and complimentary for all Grand Crew members. Keep in mind that Gary Farrell wines may only be purchased through the winery so if Pinot Noir and Chardonnay top your list of favorite wines you may want to consider a membership option.

Top 5 Sonoma Wineries to Visit

Lynmar Estate

In 1980 Lynn and Anisya Fritz purchased Quail Hill Ranch and Vineyards, since that time they have purchased adjacent properties building their name and their presence in the Russian River Valley. With their purchase of Quail Hill they also became the proud owners of some of the oldest Pinot Noir and Chardonnay vines planted in the Russian River Valley.

Lynn and Anisya believe very much that the wine, the food, and the scenery should all be part of the whole experience and it shows in how they treat their guests and the tasting opportunities available here. The winery is only open for tours and tastings by reservation but they have several offerings available each week. When you are here, be sure to walk the breath-taking gardens and allow yourself some time to take in the views.

The Estate Flight leads you on a tasting of four wines from the Russian River Valley and Sonoma Coast and you are welcome to walk around the property as you enjoy your wines. This tour is $40 per person, lasts about an hour, and is available Wednesday through Monday from 10 to 3 pm. The Collector’s Flight includes tasting six of Lynmar’s Proprietary, Pinnacle and Vineyard Designate collections and lasts approximately 90 minutes. This Flight is offered Thursday through Monday from 10 to 2 and costs $90 per person.

There are complimentary tasting available for Lynmar Advocates but they do require reservations in advance. If you are interested in a delicious farm to table lunch paired with delicious wines you should definitely consider the Lynmar Experience. This is a 3-course meal prepared with ingredients from the estate and local area paired with the perfect Lynmar wines for your dishes. The meal last approximately 2 and ½ hours and is offered once per day Thursday through Sunday from April 3rd to November 4th. Cost is $95 per person or $75 per person for Advocates.

Kendall Jackson Vineyard Estate & Gardens

Come for the Chardonnay, stay for the gardens. The Vitner’s Reserve Chardonnay from the Kendall Jackson Vineyard Estate starts with a light aroma of green apples and honey. The first flavor to capture your attention is crisp apple, followed by sweet melons, pineapple, and toasted nuts. This barrel-fermented wine has a silky mouthfeel and a lingering taste.

Kendall Jackson Vineyard Estate & Gardens is located at 5007 Fulton Rd, Santa Rosa, CA 95403 and is open daily from 10 AM – 5 PM.

Cline Family Cellars

Cline Family Cellars is a family owned and operated winery located here in Sonoma. They produce extraordinary wines. And the Cline Ancient Vines is an outstanding Mourvedre, which some are made from original plantings dating back to the 1880s. Mourvedre is a full-bodied red wine that boasts hints of minty bay leaves and a strong blackberry and plum taste with chocolate overtones. With soft tannins, a hint of pepper, and a smooth mouthfeel, this wine is best served with darker meats, tenderloin, and dark chocolates and is guaranteed to bring out the smoky flavor of any grilled food, be it meat or vegetables. Be sure to give this wine a try while you are there.

Valley of the Moon Winery

This 60-acre vineyard specializes in Italian wines. Vally Of The Moon was established in 1863 with an original cellar. I just love old wine cellars! While you are here, be sure to try the Pinot Blanc. Pinot Blanc is probably one of the “lesser appreciated wines.” Valley of the Moon Winery has provided wine lovers with a Pinot Blanc that might change some minds. The light honeysuckle aroma is appealing. The taste of kiwi and pear lingers on the palate and finishes with a hint of tangerine. There is a slight mineral undertone. This wine is best paired with a seafood pasta dish.

Valley of the Moon Winery is located at 134 Church St, Sonoma, CA 95476 and is open Sunday – Thursday 11 AM – 7 PM.

B.R. Cohn Winery & Olive Oil Company

B.R. Cohn several amazing wines, but the rose is one of my favorites for summer. With a delicate combination of Syrah, Grenache, and Mourvedre, the Rose is a sweet, fruity wine with a smell of honeysuckle and raspberry but drifts into peach and nectarine overtones and finishes dry with a touch of spice.

B.R. Cohn Winery & Olive Oil Company is located at 15000 Sonoma Hwy, Glen Ellen, CA 95442 and is open daily from 10 AM – 5 PM.

There is little doubt that Sonoma County produces some of the top wines in the world. With varying soils and atmospheres, many flavors are unique to this area. Be sure to pick up a bottle the next time you are out. You might find a new favorite to add to your growing cellar.

These are just a few of the wonderful wineries available for you to visit in Sonoma. Keep in mind that all of these wineries will have special events throughout the year so be sure to check their websites before planning your trip. Most of the wineries listed here do require reservations in advance, but there are many that don’t, if you see one that looks nice or you recognize the name, don’t hesitate to stop in.  The employees will let you know if reservations are required.

You should also consider becoming a member at your favorite wineries. You may be able to attend tastings or special events for free or at a reduced cost and you will get the first choice picks of your favorite wines to sip at home.

Please drink responsibly.  Be sure to have a designated driver with you or hire a driver for the day while visiting the wineries.

There are of course plenty of things to do in Sonoma other than just tasting wine. If you need a break from the wineries you might want to visit the Armstrong Redwoods State Natural Reserve. The trees here seem to reach past the sky and they are 500 to 1000 years old, you don’t want to miss this site. The QuarryHill Botanical Garden is a mystical 25-acre woodland garden that is designed to be a living museum of sorts. There are thousands of beautiful flowers and plants to see here. You can also check out the Sonoma Plaza, it is the largest plaza in California and it is the place where a group of settlers proclaimed the Republic of California in 1846. There are a lot of historic landmarks here as well as galleries, boutiques, restaurants, tasting rooms, and more. You are sure to find an enjoyable activity for everyone in Sonoma.
