My husband and I recently went to France and while we did dedicate several days to visiting extraordinary wineries, there is so much more to the wine regions than just wine! Bordeaux is located in southwestern France, just saying the name conjures up images of fine wine. Vineyards have been cultivated in Bordeaux for centuries, since the time of the Roman empire!

However, there is much more to Bordeaux than fine wine and I wanted to share some of the highlights of Bordeaux France, beyond the wineries.

Bordeaux is not only filled with stunning vineyards and chateaus but it is also an historic destination with an eclectic art, music and culture scene. You don’t have to tour the wineries to enjoy your stay in Bordeaux, but of course, I would still recommend seeing one or two (or ten 😉 ). Stay in the city center and you will have a great time exploring the metropolitan atmosphere.

Bordeaux is easily visited from various parts of France. There are direct flights available, however trains and buses are more practical. Plus, it is a more scenic way to the see the countryside. If you are coming from Paris (that’s what we did), you can just hop on a train and be to Bordeaux in about 3 hours. Don’t worry too much about scheduling your train ride from Paris to Bordeaux, there are about 25 daily trains that depart from Paris and head to Bordeaux’s Gare Saint Jean main train station.

From the Gare Saint Jean main train station, you can take any of the available buses straight to the town center, but if you prefer a taxi, they will be there too. Once you get to the city center, you can just walk your way around the many sights and attractions. You can also rent a bike if you want to cover more area. You can also take a scenic ferry ride on Le Bus du Fleuve to get to the eastern part of the city from the west or vice versa – the bonus is you can just use a standard bus ticket for this trip.

Different parts of the region offer different things to do, so it is best to base yourself in a part of the city that offers most of what you are interested in. If you enjoy a good nightlife scene, then you may be interested in staying in La Victoire. La Victoire is a university area that comes to life at night with many bars and things to do.

During the day, walk around and appreciate the impressive architecture of Pharmacy University and the historical Victory Arch, plus you are just minutes away by foot from the Pedestrian Center where great shopping awaits.

If you want to relax and enjoy the stunning countryside views of Bordeaux France, then head to Les Quais of Bordeaux. It is located at the old harbor, north of the railway station. You can take the ferry to get close to the splendid Aquitaine bridge; you can also take a bus to cross the bridge if you want to see it from a different perspective. The area is also perfect for lazy strolls along the picturesque banks of the Garonne River.

It is also easy to get to Quinconces Square from Le Quais. The square is the largest in Europe and provides wonderful views of the river below. It is an atmospheric area featuring two gorgeous fountains and historic monuments. The place comes alive in the summer when it is transformed into a vibrant venue for carnivals and concerts. You can also take a walk northwest to the Jardin Public. Jardin Public is a perfect place to escape the hustle and bustle of the city center and simply relax amidst verdant surroundings.

Finally, don’t miss the gorgeous rich district of Gambetta Square, whose charms are likened to that of Paris. There are beautiful old churches in the area like the 13th century St. Andre Cathedral that will leave you in awe. Art aficionados will also delight in what Musee des Beaux Arts and Musee DíAquitaine have to offer. You will not find it difficult to find fun touristy things to do in Bordeaux in addition to indulging (or not) in its famous wines.

Looking for a dip for your fresh vegetables or chips that easy to make and is actually healthy?  This Creamy Mexican dip brings all your favorite flavors together in one appetizer…and the heat!  Use it as a dip or on sandwiches,wraps or burgers.

My family and I love having friends over and entertaining, so having easy appetizer recipes on hand is a must.  I originally made this creamy Mexican dip for my cheesy quesadillas, but since they we have served it with chips and with fresh sliced vegetables.  This healthy Mexican dip definitely serves up the heat, but you can customize it to your family’s tastes.  I used Mango Habanero Salsa and 1 teaspoon of red pepper flakes, if you don’t like that much spice, you can use a different salsa and less red pepper flakes.

You can definitely make this Weight Watchers friendly dip a day or two in advance, in fact I recommend making it the night before you plan on serving it because the flavors intensify when as it sits.  And those flavors consist of sweet onions, cilantro, your favorite salsa and a dash of cumin and salt…yum!

Weight Watchers Mexican Dip

I mentioned that this dip recipe is Weight Watchers friendly, in fact, the only part of this creamy Mexican dip that has any points is the salsa, most store bought salsas are 1 point for 2 tablespoons.  You use a half cup of salsa and a full cup of non-fat plan Greek yogurt, so as you can tell, this dip makes a lot!  It’s perfect for serving to a crowd or serving it a few nights in a row with your favorite Mexican dishes…that’s what we did:)  We also added it to chicken wraps that we made for lunch and used it on burgers instead of ketchup…add in a few slices of avocado and you got one incredible burger!

This creamy mexican dip is spicy, delicious AND healthy! The only ingredient in this recipe that has ANY Weight Watcher points is the salsa, and that's just 1 point for 2 tablespoons.

Ingredients

  • 1 cup Plain Non fat Greek Yogurt
  • 1/2 cup your favorite salsa - I used Mango Habanero

Instructions

Spinning Basics: Spinning For Beginners

Before you walk into your first spin class there are a few spinning basics you should know. There is spinning terminology you should be familiar with and I wanted to share some tips to help you get the most out of your spinning class.  Spin class is fantastic cardio, but it also provides some Strength & Conditioning training as well.

What happens at Spin Class?

During a spin class, you’ll pedal an indoor bicycle while the instructor guides you through a workout that’s similar to outdoor cycling. Your spin class instructor will set the pace for the class. The pace in which you spin during spin class will fluctuate but always do your best to go at a pace that feels comfortable for your workout.

Most spin classes allow you to wear regular sneakers, whereas other classes may require you to wear a specific type of cycling shoe. You can purchase cycling shoes if the gym requires it or you feel like spinning is going to become a regular part of your workout routine. Cycling shoes have a hard clip that fits into the pedals snug to give you more security as you fluctuate speeds during spin class.

During a typical spin class, you’ll be spinning with a group of other people who are looking to get a fabulous workout, just like you. The instructor will guide you through the steps of getting a solid workout during spin class, making it easier to know you’re benefiting from spin class as a workout regiment.  Some spin classes are in the dark, and most have loud music to keep your pumped up and motivated.  If you go to a spin class that is in the dark, they will probably have black lights, the ones I went to did.  I actually liked being in the dark, it gave me the chance to zone out a bit and just focus on the instructor’s words.

Here are some Spinning Basics:

Bring Water and a Towel

You’ll work up a sweat during your first time (and every time!) spinning, so be sure to bring a towel. Some gyms provide you with a towel, it’s always good to bring your own for your first spinning class. Bring a bottle of water with you and take continuous small sips during your spinning class to stay hydrated.

Check Your Bike

Before you start to spin, it’s important to check your bike. Make sure the saddle is stable, the bike is on an even surface, and that the pedals and straps can hold your feet in securely. You’ll want your bike to be in tip-top shape so that you’re as safe as possible before spinning.

Take a Break

It’s okay to go at your own speed at a spin class. Don’t be afraid to take a break if the workout is too much, you’ll build up your tolerance to spinning as you attend more classes. The key is to make sure the workout is reasonable for your skill and health level.

What terms do I need to know before spinning?

There are some terms that spinners use and know, you should become familiar with basic spinning terminology. This will help you fit in during the spinning class, and know what others in the spinning class are talking about even though you’re a beginner.

Resistance – this refers to how much tension you have on the pedals. The more resistance, the harder it will be to push the pedals during your spinning session.

Gear – the part of the indoor bicycle that allows you to adjust the resistance during your spinning class. Turning the gear right or left will help you adjust the resistance.

Cadence – this is a spinning term that refers to how many complete circles your pedals will go during a minute. If your cadence is 50 cadence, it means the pedal goes around 50 times per minute.

Sprinting – this spinning term is all about moving fast, it’s usually when you have your bicycle set to a lower resistance and can pedal faster to get your heart rate up to get a good cardio workout.

Saddle – the saddle refers to the seat of your indoor bicycle while spinning

Brake  – the brake is the same as the gear except you push down on the knob to stop during spinning.

These are a few of the spinning basics every spinning beginner should know before heading to class for the first time. Spinning is a popular way to enjoy a good workout indoors all year round. Many people opt to take a spinning class in their local neighborhood, but you could purchase your own indoor bicycle, like a Peleton or other spinning bike, to do spinning on your own terms at home.

New Orleans, Louisiana is full of culture and excitement. The “Big Easy” is best known for its music scene, Creole food, and Mardi Gras. That makes New Orleans a great tourist destination for anyone who likes to party or likes to eat great food and enjoy a piece of history!

Perhaps the best thing about New Orleans is how inexpensive it is to visit the city. Food, hotels, and even alcohol are affordable for travelers on a budget. The only exception is during Mardi Gras, when the cost of lodging can double or even triple.  Instead of putting your trip on hold until the summer and missing out on one of America’s biggest parties, fill your itinerary with free things to do in New Orleans to lighten the burden of lodging costs!

Mardi Gras Parades

The Mardi Gras season begins on January 6th each year, and it ends on Easter. The largest celebration of the season always falls on the day before Ash Wednesday, giving it the name Fat Tuesday. Every parade during the Mardi Gras season is free to attend, and there’s often a parade every night during the carnival season!

At a large parade, you’ll see floats, lavish costumes, and marching bands. Parade hosts (known as krewes) throw different items to spectators, including shoes and coconuts! So watch out! Even if you aren’t in town on Fat Tuesday, visiting New Orleans anytime during the Mardi Gras season is sure to be a blast!

Garden District

Take a stroll around the Garden District, one of the most beautiful areas in the New Orleans. In this uptown neighborhood, you’ll see picturesque mansions and large oak trees. During the Mardi Gras season, you may even see some Southern royalty!

The Garden District is also home to dog-friendly parks, which make for great places to read, relax, and play. Surround yourself with the scenery and the locals!

Farmers’ Markets

Local markets in New Orleans are great sources of free fun! I love shopping local and free entertainment!  On Saturdays, Crescent City Farmers’ Market is the place to go for live music, cooking demonstrations, and a variety of cultural food. Although parking isn’t free for this particular event, it’s only $3 for 2 hours, and the event itself is free.

If you’re looking for a weekday market to attend, Crescent City Farmers’ Market also hosts a weekly event on Wednesdays from 3-7pm. Musicians perform at this market, too!

City Park

Want to see the largest collection of oak trees in the world? Yes please!  Head down to City Park! You can also see moss canopies, a sculpture garden, and a botanical garden in this urban park. Walk down the path on Big Lake, which is filled with art installations and wildlife.  There’s so much to do at the park, and a lot of it is free!

If you’re visiting New Orleans with kids, bring them to one of the playgrounds at City Park. Every playground except for Storyland is free to climb on, and they have some fun features like rope walls and monkey bars. There’s something for every child!

Above Ground Cemeteries

Not only is New Orleans known for parades and parties, they are also known as the Cities of the Dead. There are many above ground cemeteries in New Orleans, and they are filled with history and haunting beauty. Most offer guided-paid tours, however there are some that allow self-guided, free tours.

You can wander the resting places of voodoo queen Marie Laveau, musician Al Hirt and Civil War general P.G.T. Beauregard and many more.

Jackson Square

Located in the French Quarter of New Orleans, Jackson Square is a great place to catch street performers and local artists. The area is open seven days a week, and it’s easy to find. Watch painters create masterpieces, tap dancers performing, and “live sculptures” from disciplined actors. There are also some live musical performances behind Jackson Square, so you can stay occupied for hours!

Although it isn’t free, you can also tour the St. Louis Cathedral for just $1. There’s a lot of Louisiana history inside and beneath this building, so stop by to learn more!

Lower 9th Ward Living Museum

Admission to this museum is always free! The Lower 9th Ward Living Museum explores the state of New Orleans before, during, and after Hurricane Katrina. The horrific 2005 storm devastated the Southeast, but it’s hard to truly imagine what it was like to live in New Orleans at that time if you weren’t there. At the Living Museum, you can hear oral accounts of these hard times and other moments in New Orleans history.

The museum also features exhibits that explore earlier times, like New Orleans’ role as a colony for escaped slaves in the 1700’s. You can also find archives from the Civil War, desegregation, and other important periods in American history.

Second Line Parades

Even when Mardi Gras season is months away, you can join a parade in New Orleans! There are thousands of second line parades each year, which commemorate jazz, fallen citizens, and newlyweds. On Sunday afternoons, you’re likely to see a second line parade in the French Quarter and Treme neighborhoods. Everyone has an opportunity to participate in this New Orleans cultural activity!

Some of the larger second line parades occur during the French Quarter Festival in April, Mardi Gras, and the Satchmo Summerfest in August. If you’ll be in town for these festivals, check out the daily parades!

House of Dance & Feathers

This free museum is all about culture. Here, you can learn more about the Mardi Gras Indians, Social Aid & Pleasure Clubs, and the Skull & Bones Gangs. Curator Ronald Lewis aims to educate visitors and locals on New Orleans’ history and conception as an economic hotspot. The museum is intimate and colorful, and you’ll be interacting with the curator himself!

The House of Dance & Feathers is hosted in Ronald Lewis’ backyard, so visits are by appointment only. After seeing the work he’s put into his museum, you’ll likely feel moved to make a donation!

Jazz in the Park

Every Thursday in the spring and fall months, there’s a free jazz concert at Louis Armstrong Park! Jazz in the Park is a reoccurring program that brings cultural entertainment to everyone in the city. Even when bands aren’t playing, Louis Armstrong Park commemorates the jazz legend on its 31-acre land. Head to Congo Square to enjoy this historic landmark!

NOLA Brewery

Free brewery tours? Yes, please! The NOLA Brewery has local beers on tap by tradition – the founder was inspired to open the brewery after reading that his supposedly Dixie beer was actually made in Wisconsin.  His infuriation with this discovery fueled this fun tap house full of Southern pride. Every Friday and Saturday afternoon, you can tour the brewery for free!

But after my mom took me to a few of her yoga classes, I realized that is exactly what yoga is for. Many people who practice yoga feel a sense of connection with their body that is not attained through any other type of exercise.  I would have to say that this is one of my favorite potential benefits of yoga, I don’t know about you, but I could definitely handle a little less stress.  You can visit these 7 yoga postures that help promote relaxation.

It also lowers respiratory rates because of the breathing exercises involved in many poses. Your body learns to use oxygen more efficiently when you control your breathing. People who practice yoga daily also enjoy an improved digestive system. Although practicing yoga is not necessarily a fast way to lose weight, it creates a mentality which encourages healthy eating. Yoga is recommended by many physicians as a way to alleviate back, shoulder and neck pain, it is also often prescribed with massage to treat chronic lower back pain.

Anyone who’s interested in Georgia’s state history will find the Historic Oakland Cemetery exciting. Here, famous Georgians are laid to rest, surrounded by 48 acres of beautiful greenery. With elaborate architectures, sculptures, and art, it’s no wonder Georgians use the cemetery as a wedding venue! Yep, you read that right!  Would you get married at a cemetery?

While you’re at the cemetery, you can meet former Georgia governors Joseph Emerson Brown and Joseph M. Brown. You can also learn about Atlanta’s first African-American mayor and the author of Gone with the Wind, Margaret Mitchell.

Vendors in this shopping center give out free samples on Wednesdays! Who doesn’t love a yummy free sample? Regardless of the day, Underground Atlanta is a fun place to hang out and window shop. There are three floors of restaurants, shops, and entertainment venues on this 225,000-square-foot property. If you’re in Atlanta for New Year’s Eve, watch the 800-pound giant peach drop at midnight!

Woodruff Park has a free reading area that’s filled with books! Since it’s outdoors, it’s not technically a room – it’s a seated outdoor section of the park with literature for all reading levels. Once a pop-up display, the Reading Room turned out to be so popular that the installation was made permanent!

If your family doesn’t enjoy reading, Woodruff Park is still worth visiting! There’s a sculptural playground for kids, a fitness station for adults, and table tennis at the park.

Free Family Friendly Things To Do In Atlanta

Window shop in this quirky Atlanta neighborhood – if you’re able to resist making a purchase, that is! I love unique finds like this! Check out all kinds of oddities at Junkman’s Daughter (seriously, there’s no theme for this store), but perhaps bring the kids somewhere else, like Criminal Records.

If you want to grab a bite to eat, Vortex Bar and Grill claims to have Atlanta’s best burger. Even if you aren’t hungry, take a photo next to the cool-looking restaurant!

This museum is all about money, but it doesn’t cost you any to get in.  At this free museum, you’ll learn about the history of financial transactions, currency, and federal financial policies. See rare coins and old American currency on display, and watch money get made right in front of you! Self-guided tours don’t need to be scheduled in advance, but you’ll need a form of government-issued ID to enter.

Although the museum is very educational, the interactive and visual exhibits can be exciting for kids. One display has one million dollars in one big pile!

The Silver Comet Trail is a fun place to take a leisurely walk, but you’re not going to want to walk the entire trail. It’s 61.5 miles long! If the Atlanta heat isn’t too oppressive, take an afternoon walk down the trail to see Georgia’s beautiful countryside. Although it’s 13 miles away from Atlanta proper, Silver Comet Trail makes for a peaceful afternoon trip!

Since the water fountains along the trail may not be working, be sure to bring enough water for the entire afternoon. You may also want to bring some food and a picnic blanket to have a nice lunch on your route. Remember, any distance you walk is the same distance you’ll have to walk back to your car!

Atlanta is home to a free science museum! Visit the Fernbank Science Center to see a planetarium, live animal exhibits, and other exciting displays. Some of their exhibits aren’t commonly found at other science museums – where else can you find a seismology lab?!

One of the science center’s cooler exhibits is their live honeybee hive. You can find this habitat in the exhibit hall, along with a meteorite and taxidermy collection.

Float down the Chattahoochee River for free! Located in Atlanta, this water sports rental company also allows visitors to bring their own equipment. If you have your own canoe, kayak, or water tube, bring it to this site for some relaxing summer fun!

If you choose to go in the water, make sure you have a life jacket, you can receive a ticket for not wearing one. If you don’t have a life jacket, you can buy one at Shoot the Hooch for $20. There are several rental locations, but the Island Ford station is in Atlanta. The others are just outside of it.

Free & Affordable Things To Do In Atlanta

Atlanta, Georgia may be an expensive place to live, but it doesn’t have to be an expensive place to visit! There’s so much to do in this Southern city, even if you’re on a budget. By sticking to free or low-cost activities, your trip to Atlanta will be just peachy 😉  Speaking of peaches, don’t forget that Georgia is The Peach State, so be sure to enjoy a few while you are there.

Who else likes easy breakfast options?  I know I do!  Whether it’s for the kids as they run out the door to make the bus, for me as I run out the door for exercise, having breakfast ready to go without even thinking about it really makes my mornings a lot easier.  Especially depending on when I’ve had coffee 😉  I love these muffins for a few reasons: they are easy to make, they are healthy – in fact, if you follow Weight Watchers you will be happy to know that they are only 1 point, and they freeze well!  So, you can make 12 or 24, wrap them up individually and toss them in the freezer and when you want one, just grab one!  You can pop them in the microwave for a few seconds for a quick thaw, or by the time you get out of your subdivision it will be ready to enjoy.

I did use frozen cherries, you can use fresh ones if you prefer, but either way make sure the pits are removed and you break them in half or quarters so that they aren’t really big inside of your delicious little muffins.

For your healthy cherry muffins you need:

Egg
Water
Some cinnamon and vanilla extract

Ingredients

  • 2 medium ripe bananas
  • 1 ½ cups Protein Complete Pancake Mix
  • 4 oz water
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup frozen cherries you can use fresh if you prefer

Instructions

  • Preheat oven to 350 degrees
  • Mash bananas in a medium size bowl
  • Add in remaining ingredients besides the cherries and mix well
  • Gently stir in the frozen cherries
  • Spray muffin pan or place cupcake liners to muffin pan
  • Fill each one approx 3/4 full
  • Bake for 25 – 30 minutes or until cooked thoroughly – use a toothpick to check if needed
  • Enjoy!

Notes

These healthy homemade cherry muffins are 2 Weight Watcher points.  When I use cupcake liners, a small amount of the muffins did stick if I tried to eat them warm, they don’t stick when they are cool or coming out of the refrigerator.Feel free to just spray your pan and they will slide right out without any sticking.

Can you use another fruit other than cherries?

You can substitute the cherries for another fruit of your choice, like blueberries, raspberries or even strawberries.  I have used raspberries and they were also delicious, but raspberries tend to get a little mushy, so keep that in mind.  Blueberries stay together great, but they didn’t have as much flavor as cherries.  Feel free to experiment!  And when you do, be sure to let me know what fruit you tried and which was your favorite.  I actually have some frozen peaches and saskatoons, so I will be trying those soon.

It’s here, it’s here, it’s finally here! The long-awaited Star Wars Galaxy’s Edge at Disney’s Hollywood Studios is now officially opened and it is absolutely magical! From rides, food, exhibits, and workshops from galaxies far, far, away there is something here for everyone, and complete in Disney-style there is more yet to come!

Star Wars Galaxy’s Edge at Hollywood Studios officially opened on August 29th and while the Star Wars Rise of the Resistance ride is not scheduled to open until December 5th, 2019 there is still plenty to explore right now. In fact, I got a behind-the-scenes tour back in July when I was there for the Disney Social Media Celebration Conference and I honestly felt that I walked into a new world. The details were like no other, but would you expect anything less from Disney? No, I think not. From the moment you walk into Star Wars Galaxy’s Edge at Hollywood Studios you are transported to planet Batuu. It is actually like you are THERE, you really have to witness it for yourself, it’s just amazing!  When I went, I was unable to take pictures, so the pictures here are actually from the Disney Parks Blog.

Here is a quick rundown of what you can expect on planet Batuu:

Savi’s Workshop

At Savi’s workshop, you can build your very own custom lightsaber under the guidance of one of the master’s. This promises to be an unforgettable experience but it is pricey. Each custom lightsaber comes with a $199 price tag and reservations are HIGHLY recommended. You can make reservations up to 180 days in advance and cancel up until the day before with no penalty, but no show reservations are charged. Each reservation holder can bring one guest to observe the building process, and the whole experience takes about 20 minutes.

Droid Depot

At the Droid Depot, you can build either a BB series or R series astromech droid to interact with around the galaxy and at home. This is another activity where it would be best for you to have reservations before you plan your visit. Each droid costs $99 to build and you can customize your droid even more for additional fees. Just like Savi’s workshop reservations can be made up to 180 days in advance, and each reservation holder can bring along one guest to observe the building process.

Oga’s Cantina

Ever wondered what the people of planet Batuu like to drink? Then head on over to Oga’s Cantina and sample some of the local favorites. The cantina features both alcoholic drinks and non-alcoholic drinks. Seating is limited at the cantina so reservations are recommended. You can make your reservations up to 180 days in advance of your visit and a $10 credit card charge is made for each guest in your party. You can cancel your reservations up until the day before with no charge or penalty but no show guests are charged. There is a two-drink maximum at the cantina and visits are limited to 45 minutes.

Docking Bay 7 Food and Cargo

Built in a working hangar bay, here you will find a wide variety of menu items from across the galaxy sure to tempt even the pickiest of taste buds. Some of the menu items you will find include pot roast, cold shrimp noodles, fried chicken, pork ribs, or marinated chicken. This restaurant is open for breakfast, lunch, and dinner.

If a sit-down meal is not what you are looking for you can check out:

Ronto Roasters where they serve a grilled sausage and roasted pork wrap.

Kat Saka’s Kettle where they dish up sweet, savory, and spicy popcorn for a delicious treat!

At the Milk Stand, is where you can taste one of the blue or green milk drinks that Luke Skywalker treated himself to in the Star Wars movies. This frozen treat is a sweet way to quench your thirst while you travel the galaxy.

Millennium Falcon: Smugglers Run

Smugglers Run is a personalized intergalactic ride for you and five team members. The real-time video technology puts you in control of how the mission is completed. The ride consists of a six-person crew, two each in the position of pilot, gunners, and flight engineers. Each mission is guaranteed to be different so every time you will see and experience something different.

Shopping

Galaxy’s Edge also hosts a variety of interesting shops from toy makers to resistance suppliers. There are street market stalls, creature stalls, even a First Order cargo store. No matter what kind of trinkets or memorabilia you are looking for you are sure to find it as you wander the galaxy.

To enter Star Wars Galaxy’s Edge you will have to join a boarding group, you can do this by using the My Disney Experience app on your phone or through one of the available guest kiosks in the park. If you have a reservation for Oga’s Cantina, Savi’s workshop, or Droid depot you may enter without a boarding group one hour before your scheduled reservation time. Galaxy’s Edge is not currently available for FastPass customers, however, it is eligible for Extra Extra Magic Hours if you are staying in certain Disney Resorts.

Just remember that this is a new attraction for Disney’s Hollywood studios so there are a LOT of people waiting to explore it. I mean, A LOT. You can definitely expect long wait times through the end of this year, especially since the Rise of the Resistance ride opens on December 5th. Is it worth it? Absolutely, even if you aren’t a die-hard Star Wars fan, just to see how Walt Disney World created this whole new planet is really mind-blowing.

HELLO FLAVOR TOWN! Seriously y’all, how amazing does that Grilled Blackened Shrimp and Watermelon Salad look? I love combining spicy and sweet, then make it an easy meal…that’s a huge win in my book. And that is exactly what this recipe is! My son, who admittedly doesn’t like watermelon (how weird is that?!) loved this meal, the addition of the jalapenos and blackening seasonings won him over.

So, are you wondering how the heck I came up with the idea of combining shrimp and watermelon? I can see that. My daughter’s first comments when I served this Grilled Blackened Shrimp and Spicy Watermelon Salad was “At first look you think it will be weird, then you wonder how the textures will work, then you take a bite with everything and realize it’s really good.” Simple, yet accurate coming from a 12 year old 🙂 Well, earlier this month my mom and I took my daughter and her friends out to the mall for some shopping and dinner for her birthday and my mom and I ordered a shrimp appetizer and it was delicious, we ate every single last bite. It was shrimp and watermelon. I decided at that moment I needed to create something similar but with a spicy flair. My crew loves spicy, and if I was going to convince everyone to try it, it needed some heat. Mission accomplished. And, if I wanted to toot my own horn, I would say that this shrimp dish was better than the one at the restaurant.  Hmmmm…toot toot!

Easiest Grilled Blackened Shrimp

You will also be happy to know that this incredibly flavorful dish is also healthy. Fresh fruit, fresh veggies, grilled shrimp. And if you happen to follow Weight Watchers, this is a ZERO point meal. Well, you can add in a point for the olive oil that you lightly coat the shrimp in, but that would be it! My mom was down for a few weeks this summer and is doing great on Weight Watchers, so I got used to which foods were low in points so that she could stay on track while she was here. And now two of my best friends are doing Weight Watchers so we are constantly chatting about meals that can be full of flavor and not points. Mission accomplished. AND, this Grilled Blackened Shrimp and Spicy Watermelon Salad is gluten-free and dairy-free. Delicious. Healthy. Gluten Free. Dairy Free. That’s a quadruple whammy my friends!

Be sure to grab a Florida watermelon if they are in season. I love creating dishes with in-season fruits and vegetables. Watermelon is in-season here in Florida April, May, June and July.

Tastiest Grilled Blackened Shrimp

Here are the fresh ingredients you need to make the perfect Spicy Watermelon Salad to accompany your Grilled Blackened Shrimp:

Watermelon
Sweet Mini Peppers – you could use a regular bell pepper if you prefer
Jalapeno
Lime – for the juice
Cilantro
Green Onion

That’s it!

And for the grilled blackened shrimp you will need:

Shrimp
Blackening seasoning

That’s it!

I do recommend using skewers (bamboo or metal) when grilling your shrimp so you don’t lose any through the grates of the grill, or if you have a grill plate, that’s fine too.  These blackened shrimp are too good to lose to the abyss of the bottom of the grill.  If you use bamboo, be sure to soak them for 20 minutes before use in cold water, and if you use metal, remember that metal gets hot, so grab them with a hot pad when you do to remove it from the heat of the grill.

Healthy Grilled Blackened Shrimp

Now, it’s no secret that I am a wine lover, so if you are wondering what wine to pair with this incredible meal from Flavor Town I got ya covered! The spice from the meal calls for a crisp, sweeter pairing and since I had a bottle of CK Mondavi and Family Moscato in the wine cooler, that is exactly what I grabbed. Moscato is floral and fruity, serve it chilled and enjoy. CK Mondavi and Family brought back Moscato for a limited time, so be sure to look for it the next time you are in the grocery store.

Sauvignon Blanc would also be delicious with this, the crisp citrus notes would balance the spice beautifully.

Another CK Mondavi and Family wine to keep a look out for is the new Sunset Sweet Red Blend. It’s not like any other red wine you have ever had. It’s the sunset in a glass! In fact, the sweet notes would also make for a perfect pairing with my Grilled Blackened Shrimp with Spicy Watermelon Salad. So grab the Moscato and the CK Mondavi and Family Sunset Sweet Red Blend when you are at the store and do a little tasting to see which pairing you prefer.  But grab it soon, as it is only available for a limited time.

Equipment

Ingredients

  • 1 lb raw shrimp, shells removed
  • 1 tsp blackening seasoning
  • 1 tsp olive oil extra virgin
  • 3 cups watermelon, cut into small chunks
  • 2 mini sweet peppers - sliced lengthwise
  • 1 jalapeno pepper - cut into slices, seeds removed
  • cup chopped cilantro
  • ¼ cup diced green onions
  • 1 lime, for juice

Instructions

  • Make the spicy watermelon salad by adding the watermelon, sweet peppers, jalapeno, cilantro and green onion to a bowl. Squeeze on the lime juice, stir gently to mix, then toss into the refrigerator until ready to serve.
  • Place raw shrimp in a medium bowl and toss with olive oil and blackening seasonings until thoroughly coated
  • Soak bamboo skewers for 20 minutes in cold water before use or use metal skewers, place the shrimp on the skewers
  • Grill shrimp at medium high heat for approx 2 - 3 minutes per side or until cooked throughout
  • Plate your spicy watermelon salad and top with grilled blackened shrimp
  • Enjoy!

I used a store bought blackening seasoning, feel free to make your own if you prefer!

We are always looking for the best beef empanadas when we are at the farmer’s market or out shopping, and now I have found the perfect empanadas. I MADE THEM! My family and I think that these are the best beef empanadas, and I think you will too!

One of our favorite things to get to snack on at the Farmer’s Market is beef empanadas. My daughter’s absolute favorite ones are the ones we get in St. Augustine twice a year and my husband’s favorite are ones we found in St. Pete. I figured it was about time that I figure out how to make beef empanadas at home so that we can enjoy them more than two or three times a year.

I actually prepped these a few hours in advance, covered them and told my husband to bake them when he got home because I was going to an event with my mom and we would be missing dinner. I know, I’m a pretty darn nice wife 😉 So, if you want to make the beef mixture the night before because that’s when you have more time…go for it! If you want to prep the empanadas and toss them in the refrigerator and tell the kiddos to pop them in the over before you get home…go for it! These beef empanadas are fairly easy to make, the most time consuming part is the stuffing and sealing of the crust, but it is definitely not complicated. In fact, if you have kids that like spending time in the kitchen, they can totally help with this part.

Easiest Beef Empanadas

The beef mixture consists of ground beef, onions, mini sweet peppers, a habanero from our garden, spicy tomato sauce, and some seasonings.  The “crust” is simply refrigerated pie crust.  I used two boxes and that made 16 empanadas, if you don’t need 16 emapanadas, feel free to half the recipe or make all 16 and freeze some for an easy dinner on a different day.  Depending on how much filling you put in each empanada, you may have some leftover meat, we used our leftover meat to make these easy cheesy quesadillas.

Tastiest Beef Empanadas

I went the easy route when making the empanadas, I am all about ease and saving some time, so what I did was unroll one pie crust at a time, then I simply cut that in 4.  Cut the pie crust once up the center, then once from side to side.  You will have four equal pieces that are in the shape of a wedge…think large slice of pizza.  I wasn’t worried about making them into the perfect half circle, it tastes the same in triangle form, I promise.

Delicious Beef Empanadas

After you cut the wedges, sprinkle a little bit of cheese on each piece, then add in the beef mixture.  To close your empanadas, simply fold over one side, then seal the edges with a fork dabbed in a bit of water.

Then you are ready to bake up the best empanadas you have ever had!  I can honestly tell you that my husband texted me after they ate that night and said “Holy crap, those are the best empanadas I have ever had, you better post those!”  He doesn’t say that all that often, so that was one heck of a compliment.  So, here’s the recipe so that you can say HOLY CRAP those are the best beef empanadas ever too…and so I don’t forget how the heck I made them 😉

Ingredients

  • 2 lbs ground beef
  • 1 large onion - chopped
  • 1 ½ tbsp minced garlic
  • 4 mini sweet peppers - chopped
  • 1 habanero pepper - chopped you can use a jalapeno if preferred
  • 1 tbsp ground cumin
  • 1 ½ tsp salt
  • 2 tsp your favorite seasoning, I used VooDoo Chef DUST
  • 2 tsp red pepper flakes
  • 1/2 tsp chili powder
  • 1 ½ cups Spicy Marinara sauce - I used The Jersey Tomato Co. Sauce
  • 1 cup Mexican blend shredded cheese you can use more if desired
  • 2 boxes Refrigerated pie crusts

Instructions

  • Saute in a large frying pan onions, garlic and peppers until onions are translucent
  • Add in the ground beef and cook until no longer pink
  • Drain out grease if needed
  • Add seasonings and stir well
  • Add spicy tomato sauce, stir and let simmer for at least 15 minutes
  • Preheat oven to 375
  • Unroll pie crust on a lightly floured surface
  • Cut one piece of the pie crust into quarters
  • Sprinkle each section with a little shredded cheese
  • Fill each section with the meat mixture
  • Close and seal edges with a moistened fork
  • Repeat until all 16 empanadas are made
  • Bake for 18 minutes or until crust in golden brown. Broil for last 1 minute if desired
  • Enjoy!

Notes

We served our beef empanadas with a jalapeno verde salsa.  You may have leftover meat mixture depending on how full your make your empanadas, use it on a taco salad or in these cheesy quesadillas!

Best Homemade Beef Empanadas

As mentioned in the recipe, I used a Spicy Tomato sauce in this recipe, it added extra flavor that I feel these empanadas needed, I picked up The Jersey Tomato Co. Spicy Sauce at Sprouts, as a Sprouts Partner I was able to pick it up for free, but I can honestly say that I plan on getting it again!  We also used it as the sauce for homemade pizzas, it has incredible flavor!
