Easy Chicken Cordon Bleu Recipe

I just love an easy meal that the whole family comes back for seconds that doesn't involve alot of prep or clean-up! AD You too? Well, this one pan pasta bake checks allllll the boxes!

Know what else I love? I love cooking with dairy! In this dish, it makes it extra creamy and delicious and you are adding protein and nutrients.

But did you know that dairy farming goes beyond milk production? The amazing @floridamilk dairy farmers really prioritize sustainability and taking care of Mother Earth.

Some examples are:
🐮 The cows love Alfalfa and this soil-friendly crop doesn’t need to be replanted each year, making it a champion in protecting our precious topsoil from erosion.

🚜 Dairy farmers convert the methane in cow manure into renewable fuel, which powers the farm and generates power for the entire community!

♻️ Many Florida dairy farmers have methane digesters for a renewable energy source that decreases their carbon footprint.

Now let's make some pasta shall we?!

Ingredients:
1 lb low fat ground turkey - cooked
3/4 cup diced Vidalia onion - approx 1 onion
1/4 cup diced sweet peppers
8 oz pasta (half 1lb box) - I used mini farfelle
1 cup half & half
1 cup chicken broth - I used low sodium
1 pint (1 container) quartered cherry tomatoes
15 oz whole milk ricotta (1 small container)
2 cups spinach
1/2 cup parmesan (save some to top)
1 tsp garlic powder
1 tsp favorite all-purpose seasoning

Instructions:
Preheat oven to 400 degrees
In a 13x9 baking dish, add the cooked ground turkey, seasonings, tomato, onion and peppers
Add the uncooked pasta
Pour on the chicken broth and half & half
Mix well
Cover with aluminum foil
Bake for 35-45 minutes - you want the pasta to feel al dente
Mix in the ricotta and spinach, stir well
Top with parmesan cheese
Bake uncovered for 10-15 minutes
Serve with a cold glass of milk!

Note: if you use a different type of pasta, cooking time may vary

This is it. The last 2 weeks of his Spring semester at UCF. AD He gets one week off to study for his exams and then one week of exams. Read - Please send all the good study vibes to him starting now pretty please!

A few weeks ago he picked his classes for Fall. In a few days he’ll pick his classes for Spring. Thanks to a higher GPA he can select his classes early! Read - Proud Momma moment.

Honestly, he gives me sooooo many reasons to be proud. I couldn’t be more thankful to be his momma.

I also couldn’t be more thankful for the Florida Prepaid College Plans my husband and I opened up YEARS ago for both kids. My daughter’s first official college tour! AD She has visited her brother several times, and did the tour at UCF with him, but this was HER first dedicated tour. I can’t believe next year she’ll be a senior. My baby will be applying to colleges soon! Like REAL SOON. She just took the SAT. So many things to do and prepare for. Thankfully, saving for tuition isn’t one of those things. She has a @myfloridaprepaid 529 Plan, just like her brother. And just like her brother, she will be able to graduate from college without a mountain of student loans. She’ll be able to spend her time planning for the future instead of dreading being in debt. I couldn’t be more thankful that we were able to give her that. The future… without added stress ❤️

I’ll keep you all posted on our next tour! I can’t believe it’s her time already…I know I’ve said it and everyone has heard it, but man, time sure does fly. Before you know it, your little ones will be on college tours too, give them the opportunity to graduate with little to no debt.

95% of the time I am hot coffee....my daughter is 100% iced ☕️

Well, in all honesty, I start with a hot cup of coffee and by the time I'm done with it...It's just about iced 🤣
