Ingredients for Slow Cooker Chicken Pot Roast
One of the best things about this easy chicken dinner is how straightforward the ingredient list is. Here’s what you’ll need.
Whole chicken: A whole chicken is the centerpiece of this recipe. Make sure it is completely thawed before placing it in the slow cooker, and remove any giblets from the cavity.
Fresh carrots: Carrots add a little natural sweetness and pair perfectly with the savory chicken. Peel them if desired and cut them into evenly sized pieces so they cook consistently.
Fresh potatoes: Potatoes make this feel like a traditional pot roast dinner. Cut them into similar-sized pieces so they have a better chance of becoming tender at the same time.
Fresh green beans: Green beans add color and another serving of vegetables to the meal. Trim the ends before adding them to the slow cooker. For a firmer texture, add them during the last 1–2 hours of cooking rather than at the beginning.
Low-sodium chicken broth: A little chicken broth adds moisture to the bottom of the slow cooker and contributes to the savory cooking juices.
Chicken rub or seasoning: Use your favorite chicken seasoning blend to make the flavor your own. Check the label for salt content before adding extra salt.
How to Make Easy Slow Cooker Chicken Pot Roast
This is a simple, mostly hands-off dinner. Once the chicken is seasoned and the vegetables are prepared, the slow cooker takes care of most of the work.
1. Prepare the slow cooker.
Place the celery stalks on the bottom of the slow cooker. They create a little space between the chicken and the bottom of the pot.
2. Prepare the vegetables.
Wash and prepare the fresh carrots and potatoes, cutting them into evenly sized pieces. Trim the green beans and set them aside if you plan to add them toward the end of cooking.
3. Season the chicken.
Pat the fully thawed chicken dry with paper towels. Sprinkle with seasoning.
6. Place the chicken and vegetables in the slow cooker.
Set the seasoned chicken on top of the carrots and potatoes around the chicken, placing the firmer vegetables toward the bottom of the slow cooker where possible. Pour the chicken broth into the bottom of the slow cooker around the chicken.
7. Cover and cook.
Cover and cook on LOW for approximately 6–8 hours, depending on the size of the chicken and your slow cooker. If using fresh green beans, add them during the last 1–2 hours if you prefer them to retain more texture.
The chicken is ready when it reaches a safe internal temperature of 165°F in the thickest part of the breast and the innermost part of the thigh, without touching bone. Use a food thermometer to verify doneness rather than relying on time alone. Check that the vegetables are tender before serving.
8. Serve and enjoy!
Carefully remove the chicken from the slow cooker and let it rest briefly before carving. Serve with the cooked vegetables and spoon some of the flavorful cooking juices over the chicken.
Tips for the Best Crock Pot Chicken
Start with a fully thawed chicken. Always thaw poultry in the refrigerator before putting it in the slow cooker. A frozen chicken can take too long to reach a safe temperature.
Cut the vegetables evenly. Similar-sized pieces help the carrots and potatoes cook more consistently. Larger pieces may need more time to become tender.
Pay attention to the green beans. Fresh green beans can become very soft during a long slow-cooking time. Add them toward the end if you prefer a firmer texture.
Don’t skip the thermometer. Slow cooker temperatures and chicken sizes vary. Check that the thickest parts of the chicken reach 165°F before serving.
Season to your taste. Different chicken rubs can have very different salt levels. If your seasoning blend is already salty, reduce the added salt and adjust after cooking if needed.
Handle the chicken carefully. A fully cooked whole chicken can be very tender and may fall apart when you lift it. Use sturdy utensils and take care when transferring it to a cutting board.
Want more vegetables? You can serve this chicken with additional steamed, roasted, or sautéed vegetables if you’re feeding a crowd or want to stretch the meal.
Can You Use Canned Vegetables Instead of Fresh?
Absolutely! Fresh vegetables are my first choice for this version of the recipe, but canned vegetables are a convenient alternative when you’re short on time or working with what’s already in your pantry.
Canned carrots, potatoes, and green beans can all work. Because canned vegetables are already cooked during processing, they don’t need the same amount of cooking time as fresh vegetables.
For the best texture, drain the canned vegetables and add them toward the end of the cooking time, just long enough to heat them through. If you add them at the beginning and cook them for the full 6–8 hours, they may become very soft.
This is an easy way to adapt the recipe to your schedule. Use fresh vegetables when you have them, or keep canned options on hand for a convenient dinner shortcut.
Is This the Same as Slow Cooker Rotisserie Chicken?
Not exactly, but the recipes have a lot in common! Both use a whole chicken seasoned with herbs and spices and cooked until tender.
Traditional rotisserie chicken is cooked while rotating, which helps produce the familiar browned, crispy skin. A slow cooker uses moist, enclosed heat, so the chicken will be tender but won’t develop that same crispy exterior.
If you’re searching for Slow Cooker Rotisserie Chicken because you want an easy way to cook a whole chicken at home, this recipe is a great option. You get seasoned chicken, simple preparation, and flavorful cooking juices without needing a rotisserie.
What to Serve with Slow Cooker Chicken Pot Roast
This chicken and vegetable dinner can be served on its own, but there are plenty of easy ways to round out the meal.
- Dinner rolls: Soft rolls are perfect for soaking up the savory cooking juices.
- A fresh green salad: A crisp salad adds a fresh contrast to the warm chicken and vegetables.
- Rice: Serve rice alongside the chicken to make the meal go a little further.
If you’re serving a larger family, dinner rolls are simple ways to round out the meal without adding much work.
Frequently Asked Questions
Can I cook a whole chicken in a slow cooker?
Yes, provided the chicken fits properly in your slow cooker and is completely thawed before cooking. Follow your slow cooker’s instructions and verify that the chicken reaches an internal temperature of 165°F in the appropriate locations with a food thermometer.
How long does a whole chicken take in the slow cooker?
Plan on approximately 6–8 hours on LOW for this recipe, depending on the size of the chicken and your slow cooker. Always check the internal temperature to confirm the chicken is fully cooked.
Can I use this as a Slow Cooker Rotisserie Chicken recipe?
Yes, if you’re looking for a simple way to cook a seasoned whole chicken in your slow cooker. The chicken will be tender and flavorful, although it won’t have the same crispy skin as traditional rotisserie chicken.
Can I use canned vegetables instead of fresh vegetables?
Yes! Canned carrots, potatoes, and green beans are convenient substitutes. Drain them and add them near the end of cooking so they heat through without becoming overly soft.
Do I need to add water to the slow cooker?
This recipe uses low-sodium chicken broth. The chicken also releases moisture as it cooks, so additional water generally isn’t necessary. Avoid adding excess liquid, which can dilute the flavor of the cooking juices.
Can I use boneless chicken breasts instead of a whole chicken?
You can make a similar dinner with boneless chicken breasts, but the cooking time will be different. Chicken breasts generally cook faster than a whole chicken, so use a thermometer to check for doneness and avoid overcooking them.
How should I store leftovers?
Refrigerate leftover chicken and vegetables in shallow, airtight containers within two hours of cooking. Enjoy refrigerated leftovers within three to four days, or freeze them for longer storage. Reheat leftovers to 165°F before serving.

Living in Florida when it’s too hot to turn the oven or stove on, even with the A/C on!, I use my slow cooker several times a week. I’m always looking for new recipes and this one sounds great! What a time saver too, using canned vegetables! Thank you for sharing!
I love crockpot meals. Easy prep and easy cleanup.
I like chicken cooked in the slow cooker. I only use boneless skinless breast meat. I never cook it with the skin on. Not only is it fatty, I’m not fond of the texture. The recipe itself is good and easy. I would just change it to use breast meat only.
I love using chicken breasts as well – check out my most recent Chicken Recipe here: https://www.foodwinesunshine.com/2016/01/apricot-chicken-recipe.html I hope you enjoy them both!
