I read somewhere that all things french toast were trending this year and after I made these French Toast Muffins, I understand why! Classic, comforting, delicious and easy-to-make these breakfast muffins are perfect for indulging on the weekend or meal-prepping and using throughout the week.
I actually wanted to make these for you all for some Mother’s Day inspiration and what better way to do that than with some of my favorite moms?! I had a breakfast date planned with two of my best friends to head out to a local restaurant, but instead they came to my house and we made these muffins and sipped on mimosas. It was the perfect morning with the perfect breakfast with the perfect people 🙂 So, feel free to get friends and family in the kitchen when making these easy French Toast Muffins and make some memories along with a yummy breakfast!

Then, individually wrap each muffin in plastic wrap – (personally, I love press n seal) to prevent freezer burn. Place the wrapped muffins in a freezer-safe bag or container. Frozen muffins can be stored for up to 2-3 months.
- Thawing and Reheating: When you’re ready to enjoy the muffins, simply remove them from the refrigerator or freezer and let them thaw at room temperature for a few hours or overnight in the refrigerator. French Toast Muffins
Ingredients
- 6 cups cubed via hand or cut french bread approx. 1/2 loaf
- 2 tablespoons sugar
- 5 eggs
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- 2 cups Florida milk
Streusel topping:
- 2 tablespoons sugar
- 2 tablespoons brown sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- 2 tablespoons cold butter cubed
Instructions
- Preheat oven to 350
- Spray muffin tin
- In a large bowl combine the milk, sugar, eggs, vanilla and cinnamon.
- Add bread
- Divide the mixture between the 12 muffin cups. There should be about 1/3 cup in each cavity.
Streusel Topping
- In a medium bowl, combine sugar, brown sugar, cinnamon, flour and chilled cubed butter.
- Stir with a fork until the mixture is crumbly.
- Set in the fridge until ready to use.
- Prepare the streusel topping and sprinkle on top of the muffins.
- Bake for 35-40 minutes or until golden brown. Allow the muffins to cool in the pan for 5 minutes before removing.
- Top with powdered sugar and/or maple syrup if desired.
- Serve with a glass of Florida Milk.
