French Toast Muffins

Ingredients

  • 6 cups cubed via hand or cut french bread approx. 1/2 loaf
  • 2 tablespoons sugar
  • 5 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups Florida milk

Streusel topping:

  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons cold butter cubed

Instructions

  • Preheat oven to 350
  • Spray muffin tin
  • In a large bowl combine the milk, sugar, eggs, vanilla and cinnamon.
  • Add bread
  • Divide the mixture between the 12 muffin cups. There should be about 1/3 cup in each cavity.

Streusel Topping

  • In a medium bowl, combine sugar, brown sugar, cinnamon, flour and chilled cubed butter.
  • Stir with a fork until the mixture is crumbly.
  • Set in the fridge until ready to use.
  • Prepare the streusel topping and sprinkle on top of the muffins.
  • Bake for 35-40 minutes or until golden brown. Allow the muffins to cool in the pan for 5 minutes before removing.
  • Top with powdered sugar and/or maple syrup if desired.
  • Serve with a glass of Florida Milk.
  • Enjoy!
