I love a good pasta dish, but sometimes there’s the guilt of the carbs and the heaviness of the sauce. So, I make this skinny alfredo sauce instead…and serve it with a low carb pasta! Problem solved 😉 Save the carbs for the yummy fresh bread you serve it with! Alfredo sauce is one of those things that can make an ordinary dinner feel a little more special. The only problem? Traditional Alfredo sauce can be pretty rich, which is why I love making this easy, lighter homemade Alfredo sauce.

This easy Alfredo sauce recipe comes together in about 10 minutes and uses simple ingredients you may already have in your refrigerator and pantry. Milk, butter, garlic, cream cheese, and Parmesan cheese come together to create a creamy, cheesy sauce that’s full of flavor without relying on heavy cream.

And here’s my favorite way to serve it: with sautéed mushrooms!

Mushrooms are such an easy addition to Alfredo sauce. They bring a savory, earthy flavor that pairs beautifully with the creamy Parmesan and garlic. Plus, they make a simple bowl of pasta feel a little more like something you’d order at your favorite Italian restaurant.

Creamy homemade Alfredo sauce made with Parmesan cheese, milk, and garlic

Ingredients for Homemade Alfredo Sauce

One of my favorite things about this recipe is that you don’t need a long list of specialty ingredients. Here’s what you’ll need.

Milk: Skim milk is used in this lighter Alfredo sauce. It provides the creamy base without the need for heavy cream.

Butter: A little butter adds flavor and helps get the sauce started.

Garlic: Minced garlic gives the sauce that wonderful savory flavor. If you love garlic as much as I do, you’ll appreciate how much it adds to a simple sauce.

All-purpose flour: The flour helps thicken the milk, giving the sauce its creamy consistency.

Salt: A little salt brings the flavors together. Parmesan is naturally salty, so taste the sauce before adding extra.

Low-fat cream cheese: Cream cheese adds creaminess and helps give the sauce a smooth texture.

Grated Parmesan cheese: Parmesan is the star of Alfredo sauce! It provides the salty, savory, cheesy flavor that makes this sauce so good.

Sautéed mushrooms: These are my favorite addition when serving this sauce. Cook sliced mushrooms in a skillet until tender and nicely browned, then spoon them over your pasta and Alfredo sauce. You can also stir them right into the sauce before serving.

How to Make Easy Homemade Alfredo Sauce

Making Alfredo sauce from scratch is easier than you might think. You only need a skillet, a spoon or whisk, and a few minutes at the stove.

1. Melt the butter.

Add the butter to a skillet over medium heat and allow it to melt.

2. Cook the garlic.

Add the minced garlic and sauté for about one minute, just until it softens and becomes fragrant. Keep an eye on it so it doesn’t burn.

3. Stir in the flour.

Add the flour and stir for about one minute. This helps create the base that will thicken your sauce.

4. Add the milk and salt.

Slowly whisk in the milk and add the salt. Stir continuously to help the sauce stay smooth and prevent lumps from forming.

5. Let the sauce thicken.

Continue stirring for approximately three minutes, or until the sauce begins to thicken.

6. Add the cheeses.

Stir in the cream cheese and grated Parmesan. Continue stirring until the cheeses melt into the sauce and everything is well combined. This usually takes another two to three minutes.

7. Serve and enjoy!

Pour the warm Alfredo sauce over your favorite cooked pasta or zucchini noodles. Top with sautéed mushrooms for an extra savory touch, and enjoy!

How to Make Sautéed Mushrooms for Alfredo

If you’ve never added mushrooms to Alfredo sauce, I highly recommend giving it a try. They pair wonderfully with the garlic and Parmesan, and they add a little extra texture to every bite.

To make them, slice your mushrooms and heat a little butter or olive oil in a skillet over medium-high heat. Add the mushrooms in a single layer when possible and let them cook until they release their moisture, begin to brown, and turn tender. Stir occasionally and season with a little salt and pepper.

For the best browning, avoid crowding the pan. If you’re cooking a large amount, work in batches.

You can cook the mushrooms while preparing the sauce in a separate skillet, or make them first and set them aside until you’re ready to serve. Spoon the mushrooms over the finished pasta or gently fold them into the warm Alfredo sauce.

It’s a simple addition, but it makes this easy dinner feel extra special!

Tips for the Best Homemade Alfredo Sauce

Keep stirring. Whisking the milk into the flour mixture and stirring as the sauce thickens helps prevent lumps and creates a smoother consistency.

Use freshly grated Parmesan when possible. Freshly grated cheese generally melts more smoothly than some pre-shredded varieties, which can contain anti-caking ingredients.

Keep the heat moderate. Once you add the cheese, avoid boiling the sauce. Gentle heat helps the cheese melt without making the sauce grainy.

Adjust the consistency. If the sauce becomes thicker than you’d like, stir in a small splash of milk until it reaches your preferred consistency.

Brown the mushrooms separately. Cooking mushrooms on their own allows them to develop a deeper flavor instead of releasing excess moisture into your Alfredo sauce.

Taste before adding more salt. Parmesan adds plenty of savory, salty flavor, so it’s best to adjust the seasoning at the end.

What to Serve with Alfredo Sauce

This easy homemade Alfredo sauce is versatile, so you can use it in plenty of different ways.

  • Fettuccine Alfredo: A classic choice for soaking up all that creamy sauce.
  • Penne or rotini: These pasta shapes hold onto the sauce beautifully.
  • Zucchini noodles: A fresh alternative when you’re looking for a lower-carbohydrate option.
  • Chicken Alfredo: Add sliced grilled or sautéed chicken for a more filling meal.
  • Roasted vegetables: Drizzle a little sauce over broccoli, cauliflower, or roasted asparagus.
  • Mushroom Alfredo pasta: Toss cooked pasta with the sauce and plenty of golden sautéed mushrooms.

You can also use the sauce as a base for a quick Chicken Alfredo pasta bake. Combine it with cooked pasta and your favorite additions, transfer to a baking dish, and finish in the oven until heated through.

Frequently Asked Questions

Can I make Alfredo sauce without heavy cream?

Yes! This recipe uses skim milk and low-fat cream cheese instead of heavy cream. The flour helps thicken the milk, while the cheeses give the sauce its creamy texture and flavor.

How do I keep homemade Alfredo sauce smooth?

Whisk the milk into the flour mixture gradually, stir as the sauce thickens, and keep the heat moderate after adding the cheese. If the sauce gets too thick, add a little milk to loosen it.

Can I add mushrooms directly to the sauce?

Absolutely. Sauté them separately first so they brown and develop flavor, then stir them into the finished sauce or spoon them over your pasta.

Can I use this Alfredo sauce with zucchini noodles?

Yes! Zucchini noodles are a great option. Because they release moisture, cook them separately and avoid letting them sit in the sauce for too long before serving.

Can I double this Alfredo sauce recipe?

Yes. The original recipe is easy to double when you’re cooking for more people. Use a larger skillet and allow a little extra time for the sauce to heat and thicken evenly.

How should I store leftover Alfredo sauce?

Refrigerate leftover sauce promptly in an airtight container and use it within three to four days. Reheat gently on the stovetop, stirring frequently and adding a splash of milk if needed. Discard leftovers that have been left at room temperature for more than two hours.

An Easy Alfredo Sauce You’ll Want to Make Again
