If you are looking for an easy appetizer recipe that is also healthy and full of flavor, then look no further. Cowboy Caviar is made with lots of your favorite fresh produce and you can serve it with tortilla chips or celery and bell pepper strips. Honestly, no matter how you serve it, you and your guests are going to love it.

I made Cowboy Caviar for our brunch this past weekend, and I have also made it for card nights with our friends. In fact, my husband and I actually had leftovers for lunch the other day 🙂 In fact, as I am thinking about it…Cowboy Caviar would be amazing on top of grilled chicken! Oh, all those fresh flavors, then the heat from the jalapenos and the citrus from the lime…YUM. Ok, I am going to have to try that next!

Healthy Cowboy Caviar

To make Cowboy Caviar you need:

3 tomatoes seeds removed, diced – I used vine tomatoes
2 ripe avocados, diced
1/2 cup red onion, diced
1 15 oz can black beans rinsed and drained
1 15 oz can black eyed peas rinsed and drained
1 1/2 cups fresh corn, cooked and cut off the cob – approx 3 ears
1 bell pepper, diced
2 jalapeno pepper seeds removed, diced
1/3 cup fresh Cilantro finely chopped

You will also make your own simple dressing to toss all goodness in. You will need a few basic ingredients that you probably have at home right now.

To make the dressing for your Cowboy Caviar you will need:

1/3 cup olive oil
Juice from 2 limes, approx 2 – 3 tablespoons
2 Tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon minced garlic

And to make it, you simply mix all your veggies together, drizzle on the dressing and stir well to coat! I like to put mine in the refrigerator for 15 – 30 minutes before serving so that all the flavors get a chance to marinate together before everyone digs in.

Ingredients

Main Ingredients

  • 3 to matoes seeds removed diced - I used vine tomatoes

  • cup Cilantro finely chopped

Dressing Ingredients

  • 1/3 cup olive oil
  • Juice from 2 limes approx 2 - 3 tablespoons
  • 2 Tablespoons red wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon minced garlic

Instructions

  • Combine all the produce and vegetables into a large bowl and mix well by stirring gently
  • Pour dressing over top and gently stir

Dressing Instructions

  • Combine all ingredients and stir well
  • Enjoy!

Notes

Serve with tortilla chips and/or celery and bell pepper strips.
