That being said, let’s great started on my Fresh Strawberry Breakfast Tacos 😉 You only need a few ingredients, which you may have on hand right now and about 5 minutes to have this yummy breakfast ready for you and your family. In fact, I also enjoy these strawberry tacos as my midday snack. You can easily prep extra strawberries and the sweet cream cheese mixture so that they are ready to go throughout the day and for the next few mornings.  I swear everyday come 3 PM I am starving and looking for something to snack on, and most of the time what I grab isn’t the healthiest option, so now I am getting in the habit of making one of these strawberry tacos. They satisfy my sweet tooth and that hunger pain.

Simply Sweet Strawberry Cheesecake Tacos

These strawberry cheesecake tacos are easy to make, delicious, and nutritious! These strawberry tacos are great if you are on the go or looking for an easy breakfast at home.

Ingredients

  • 2 cups Fresh From Florida strawberries quartered
  • 4 oz 1/3 less fat cream cheese softened
  • 1/2 cup non fat Greek yogurt
  • 1 tablespoon honey
  • 1 tsp vanilla extract
  • 1 teaspoon ground cinnamon
  • 6 flour tortillas 6 inches
  • Butter

Instructions

  • In a small skillet, heat a small amount (approx 1 teaspoon) butter over medium-low heat.
  • Add one tortilla to the skillet and cook each side until light golden brown, 1-2 minutes.
  • Remove from skillet and set aside.
  • Repeat with remaining butter and tortillas.
  • Mix together cream cheese, honey, cinnamon and Greek yogurt until blended.
  • Spread sweet cream cheese mixture on top of tortillas.
  • Top with strawberries.
  • Sprinkle with cinnamon if desired.
  • Enjoy!

Notes

Prep extra strawberries and the sweet cream cheese mixture so it’s ready to go for the next few days to make breakfast or snack time even easier!

    Can these be prepared ahead of time for a brunch, or should the tortilla shells be fresh and warm? Ie. Prepare and take to a brunch rather than at your home.

    1. Hi Alisa! I actually love the tortillas at room temp, so no warming needed! My only concern about making them too far in advance is that the yogurt will soak into the tortilla and get a little soggy. BUT, if you are only making them and then transporting them – you will be totally fine! I hope that helps…and be sure to let me know how they turn out 🙂

    They turned out fantastic. I precut the strawberries and made the spread the night prior. I then fried the tortillas in the morning and took everything with me to the brunch where assembled quickly there upon arrival (just wanted to be safe to not be soggy). They were a big hit! My 20 year old son tried the leftovers later even and likened them to a crepe. Thank you for a quick, easy and delicious idea!!
