Easy Waffle Breakfast Sandwiches
We have all been making a lot more breakfasts at home. A lot. And if you are like me, you have run out of ideas and the kids are tired of the same ole things. And now that school has started back up, mornings are a bit more hectic. That means easy breakfast options are a must. Easy breakfast options that are delicious and can keep all of us fueled during the day are a must. Easy breakfast recipes that the kids won’t say is boring is a must.
Say hello to my Easy Waffle Breakfast Sandwiches. I use Eggo Waffles for the “bread” portion of our easy breakfast sandwiches and the kids love it! We have been having fun picking which Eggo Waffles to use. Personally, I like chocolate chip Eggo Waffles with bacon and an egg. A little sweet and a little salty is always a winning combination for me. The eggs add in the much-needed protein to start my day and the bacon…well, it’s bacon.
My son likes his Waffle Breakfast Sandwich with the Apple Cinnamon Eggo Waffles. Like his mom, he likes the bit of sweet from the Eggo Waffles with the bit of salty from the bacon.
My daughter and husband’s daughter favorite version of our Waffle Breakfast Sandwiches are made with the Buttermilk Eggo Waffles.
I like to serve our Waffle Breakfast Sandwiches with a quick fruit smoothie. You all know I love smoothies and serving up a simple smoothie in the morning gives the kids (and me!) an extra boost of nutrients. I am all about getting as many nutrients in as possible, as easily as possible π To make these simple smoothies just grab frozen fruit and some milk then blend until smooth.
I grabbed the Eggo Waffles and frozen fruit while I was at Publix stocking up on my other must-haves for the week. I recommend grabbing a few different varieties of Eggo Waffles when you are there to see which ones are your family’s favorite when making these Easy Waffle Breakfast Sandwiches.

Waffle Breakfast Sandwiches
Equipment
- Griddle or Stove
- Toaster
Ingredients
Waffle Breakfast Sandwich
- 8 Eggo Waffles flavor of your choice
- 1 package of bacon
- 6 eggs
- cheese and maple syrup if desired
Simple Smoothie
- 4 cups frozen fruit I used strawberries
- 3 cups milk - I used skim
Instructions
Waffle Breakfast Sandwiches
- Start by cooking the bacon on a griddle or stove
- Cook the Eggo Waffles according to package instructions. We toasted ours.
- Cook eggs as desired. I cooked ours over medium.
- Assemble your waffle breakfast sandwich by layering the bacon and egg on one waffle.
- Add cheese and/or maple syrup if desired.
- Top with another waffle.
- Enjoy!
Simple Smoothie
- Add frozen fruit and milk to blender.
- Blend until smooth.
- Enjoy!

These Waffle Breakfast Sandwiches make for an easy weekday breakfast, but they are also great for weekends. You can switch up the meat if you prefer; sausage, turkey bacon, you name it! These Waffle Breakfast Sandwiches can easily be customized. I think we will add some jalapeños the next time we make them, sweet, spicy and salty. Yum!
