Ingredients

Rhubarb Strawberry sauce

  • 1 - 1 1/2 cup strawberries greens removed and diced
  • 2 stalks rhubarb diced
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice

Milkshake

  • 3 cups vanilla ice cream
  • 1 1/2 cup whole milk

Toppings

  • Whipped cream
  • Fresh strawberries

Instructions

  • Add all the sauce ingredients into a small saucepan.
  • Bring the mixture to a boil over medium-high heat.
  • Reduce to medium-low and simmer the mixture for 10-12 mins, stirring frequently.
  • Remove from the heat and allow the mixture to cool completely. To speed up the cooling process, store the sauce in a bowl and place it in the refrigerator.
  • Once the rhubarb strawberry sauce is completely cool, add the ice cream, milk and ¾ of the sauce into a blender. Blend until smooth.
  • To serve, smear the remaining strawberry rhubarb sauce in glasses, pour in the milkshake and top with whipped cream and a strawberry if desired.
  • Enjoy!

Notes

The sauce doesn’t have to be entirely smooth, as it will be blended with the remaining ingredients.
