Pizza Frittata

Ingredients

  • 8 eggs
  • 1 cup whole Florida Milk
  • 1/2 cup marinara sauce
  • 1 teaspoon fresh oregano - chopped
  • 1 teaspoon fresh basil - chopped
  • 1/2 cup whole milk mozzarella shredded
  • 12-14 pepperoni slices
  • 1 sweet onion diced - I used a Vidalia Onion
  • 1 jalapeno diced - remove seeds for less heat
  • 4 mini sweet peppers diced
  • 1 1/2 cups fresh spinach approx 2 handfuls

Instructions

  • Preheat oven to 425 degrees.
  • Clean and dice all veggies.
  • Warm an oven-safe skillet, spray with olive oil spray.
  • Add the onions, cook for 2- 3 minutes.
  • Add in the peppers.
  • While vegetables are cooking, mix eggs, fresh herbs, marinara sauce and milk in a medium bowl.
  • Once the vegetables are soft, add in the spinach and cook for 1 min. It will shrink a lot.
  • Gently pour in the milk/egg mixture to the skillet.
  • Allow it to cook for 5-6 minutes, until the edges have begun to set, undisturbed.
  • Next, sprinkle the cheese on top of the egg mixture.
  • Top with the pepperoni slices.
  • Transfer the frittata to the oven and allow it to cook for 6 minutes, until the eggs are cooked through.
  • Serve with a glass of Florida Milk.
  • Enjoy!
