Preheat oven to 425 degrees.
Clean and dice all veggies.
Warm an oven-safe skillet, spray with olive oil spray.
Add the onions, cook for 2- 3 minutes.
Add in the peppers.
While vegetables are cooking, mix eggs, fresh herbs, marinara sauce and milk in a medium bowl.
Once the vegetables are soft, add in the spinach and cook for 1 min. It will shrink a lot.
Gently pour in the milk/egg mixture to the skillet.
Allow it to cook for 5-6 minutes, until the edges have begun to set, undisturbed.
Next, sprinkle the cheese on top of the egg mixture.
Top with the pepperoni slices.
Transfer the frittata to the oven and allow it to cook for 6 minutes, until the eggs are cooked through.
Serve with a glass of Florida Milk.
