Frozen Cool Whip Sandwiches

These are a super easy and tasty Summer treat for a party or the kids. Or just a lighter dessert when you are craving something sweet. A great treat with fresh strawberries!

Ingredients

  • 8 oz Cool Whip 1 tub
  • 1 ½ cups strawberries diced
  • 28 Graham Crackers approx 2 sleeves
  • ¾ cup mini chocolate chips

Instructions

  • In a medium mixing bowl, combine the Cool Whip, and diced strawberries.
  • Fold everything in until well combined.
  • Crack the graham crackers in half and spoon the Cool Whip mixture onto one half of the graham crackers.
  • Place the other half of the graham cracker on top and slightly press so that the filling goes towards the edges.
  • Use a butter knife or spatula to smooth the filling along the edges.
    Spreading creamy Cool Whip mixed with fresh strawberries onto graham crackers to assemble frozen ice cream sandwiches.
  • Then dip each side into the mini chocolate chips.
  • Repeat until all sandwiches are made.
  • Place the sandwiches onto a plate or baking dish that will fit into the freezer.
    Cool whip ice cream sandwiches on parchment paper ready for the freezer.
  • Freeze at least 4 hours before serving and enjoying.
  • After they are frozen, you can wrap in plastic wrap and freeze individually for an easy grab and go treat!
