Avocado and Mixed Berry Muffins

  • Oven


  • 1 medium ripe banana
  • 1 ripe avocado
  • 1 ½ cups Protein Complete Pancake Mix
  • 4 oz water
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh raspberries


  • Preheat oven to 350°
  • Mash banana and avocado in a medium size bowl
  • Add in remaining ingredients besides the berries and mix well
  • Gently fold in the berries
  • Spray muffin pan or place cupcake liners to muffin pan
  • Fill each one approx 3/4 full
  • Bake for 25 - 30 minutes or until cooked thoroughly - use a toothpick to check if needed
  • Enjoy!


These healthy berry avocado muffins are approx 3 Weight Watcher points each. When I use cupcake liners, a small amount of the muffins did stick if I tried to eat them warm, they don't stick when they are cool or coming out of the refrigerator.Feel free to just spray your pan, don't use liners and they will slide right out without any sticking.
