Equipment

Ingredients

  • ½ red onion diced
  • cups red or brown lentils
  • 2 cups butternut squash diced
  • 14 oz coconut milk - 1 can I used lite
  • 15 oz diced tomatoes - 1 can I used Garlic and Olive Oil variety
  • 1 lb lean ground beef
  • 1 tbsp curry powder
  • 2 tsp salt
  • 4 cups low sodium chicken broth
  • 2 cups water

Instructions

  • Add all the ingredients into the crockpot and cook on low for 6-8 hours

Notes

*You can also serve this over rice*
I did prep mine ahead of time and froze it, if you decide to do that as well - do NOT add the chicken broth and water to your freezer bag. Add in the chicken broth and water into the slow cooker when you are ready to cook the meal.
