Blackened Fish Sandwich Recipe with Mango and Jalapeño Slaw

Ingredients

  • 2 pounds of fresh fish - I used cod but you can substitute with grouper or mahi
  • 2 tsp Blackening seasoning
  • 8 oz shredded coleslaw 1/2 bag
  • ½ mango peeled and diced
  • ½ jalapeno diced, seeds removed if desired
  • 1 tbsp mayo
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp sugar
  • 4 hamburger buns I used King’s Hawaiian Sweet Hamburger Buns

Instructions

  • Season both sides of your fresh fish with blackening seasoning
  • Preheat the grill to about 350 degrees
  • Grill fish until fully cooked - approx 3-5 mins per side depending on the thickness of your fish filet
  • While the fish is grilling, make your slaw
  • Dice 1/2 mango and roughly chop 1/2 jalapeno (leave seeds in for extra heat)
  • Pour 1/2 bag of shredded coleslaw into a medium size bowl
  • Add the jalapeño, mango, 1 tbs of mayo, 1 tbs olive oil, 1 tbs red wine vinegar, 1 tbs sugar to the coleslaw. Stir well.
  • Top your favorite Hamburger Buns with the blackened fish and mango jalapeño slaw
  • Serve immediately
  • Enjoy!
