Nutty Apple Banana Protein Cookies

These protein cookies are perfect for breakfast or a healthy snack. Made with only 5 ingredients and ready in 15 minutes these Easy Apple Banana Protein Cookies are a must for back to school season and beyond.

Ingredients

  • 1 cup ground almonds I ground mine in my food processor
  • ½ cup ground sunflower seeds I ground mine in my food processor
  • 1 medium ripe banana
  • 1 package Crispy Green Apples broken into small pieces, I did not grind these up but you can if you prefer
  • tsp cinnamon
  • 1 tsp maple syrup or honey optional

Toppings

  • 1 kiwi - sliced I used Zespri Golden Kiwi
  • Yogurt I used my homemade vanilla yogurt

Instructions

  • Preheat oven to 400°
  • Prepare muffin tin by spraying with non-stick cooking/baking spray. Set aside.
  • Add the ground almonds, ground sunflower seeds, cinnamon (and maple syrup or honey if desired) and banana into food processor and pulse until thoroughly combined.
  • Stir in Crispy Green Apple pieces.
  • Scoop out a heaping tablespoon of the cookie "batter" and press into prepared muffin cups. You want to fill each cup about 1/3 to 1/2 way. I was able to use 8 of the muffin cups.
  • Bake for 10 minutes, the edges will be slightly brown.
  • Allow to cool.
  • When ready to serve top with a scoop of your favorite yogurt, I used my homemade vanilla yogurt and a slice of kiwi.
  • Enjoy!

Notes

Feel free to experiment topping these yummy protein cookies with other fruits.
If packing for a lunch, I recommend putting the yogurt and kiwi slices on the side.
I did not add in the ample syrup or honey when I made these yummy protein cookies, but if you think you will need an extra dose of sweetness, feel free!
