Peel and pit peaches. Roughly chop if desired.
In a large skillet, pour in the water, lemon juice, sugar, and cornstarch.
Cook at medium-high heat until mixture becomes thick. About 5-7 minutes. Stir regularly to avoid getting clumps.
Remove from heat.
And add vanilla extract, cinnamon, and peaches.
Gently mix everything together.
Allow the filling to cool down completely before using in your favorite pie or in cookie bars. Enjoy!
