Easy Roasted Veggie and Hummus Tortilla Pizza

  • Oven


  • 1 flour tortilla I used the fajiata size
  • Thin Slices of Zucchini
  • Thin Slices of Squash
  • Diced bell pepper I used red and orange because that's what I had, feel free to substitute green or yellow.
  • 2 tbsp your favorite hummus I used roasted red pepper
  • 1 tsp extra virgin olive oil


  • Preheat oven to 400°
  • Lightly brush extra virgin olive oil on tortilla(s).
  • Place tortilla(s) on a baking sheet and bake for 3 - 5 minutes until crispy.
  • Remove from oven and let cool for a minute, just so they aren't too hot to touch when you spread on your hummus.
  • Spread hummus on tortilla.
  • Top your tortilla crisp with your fresh veggies.
  • Bake for 3-4 additional mins until vegetables are slightly tender.
  • Enjoy!
