Preheat oven to 400°
Lightly brush extra virgin olive oil on tortilla(s).
Place tortilla(s) on a baking sheet and bake for 3 - 5 minutes until crispy.
Remove from oven and let cool for a minute, just so they aren't too hot to touch when you spread on your hummus.
Spread hummus on tortilla.
Top your tortilla crisp with your fresh veggies.
Bake for 3-4 additional mins until vegetables are slightly tender.
