Chocolate Chip Pumpkin Dump Cake

Ingredients

  • 1 15 oz can pure pumpkin puree
  • 1 10 oz can evaporated milk - I used fat free
  • 3 eggs
  • 1 box vanilla cake mix
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • ¾ cup brown sugar
  • ¾ cup graham cracker crumbs
  • ¾ cup chocolate chips - I used semi-sweet
  • 1 stick butter - melted

Instructions

  • Preheat oven to 350 degrees
  • Spray 9x13 baking dish with cooking spray
  • In a large bowl add the pumpkin, milk, brown sugar, eggs, pumpkin pie spice and cinnamon and mix well
  • Pour the pumpkin mixture in baking dish
  • Sprinkle the vanilla cake mix over the top
  • Sprinkle on the graham cracker crumbs
  • Sprinkle on the chocolate chips
  • Drizzle the butter over the top
  • Bake for 45 - 50 minutes or until edges are golden brown
  • Allow to cook for 5 - 10 mintues before serving. If you can wait that long!

Notes

To make the graham cracker crumbs, I put about 7 graham crackers in a ziploc bag and smashed them with the back of a spoon.
We served ours with vanilla ice cream.
Refrigerate leftovers.  I recommend trying it cold too!  We actually liked it better cold than warm.  Don't get me wrong, we loved it warm, but we were pleasantly surprised that it was even better cold.
