Chicken Pad Thai

This resturant favorite meal is actually easily made at home. Enjoy this homemade chicken pad thai recipe with your family in less than 45 minutes.

  • Stove


  • 8 oz pad thai noodles
  • 1 lb boneless skinless chicken breasts
  • 3 mini sweet peppers - sliced lengthwise
  • chopped peanuts for garnish if desired

Pad Thai Sauce

  • 1 tbsp creamy peanut butter
  • 3 tbsp soy sauce - I used low sodium
  • 1 tbsp sriracha
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil extra virgin
  • 2 tbsp brown sugar

  • Mix all ingredients well in a small bowl and set aside

Chicken Pad Thai

  • Heat oil in large skillet and saute chicken along with a splash of soy sauce
  • Prepare noodles according to package instructions
  • While chicken and noodles are cooking scramble 2 eggs, put them in a bowl and set aside
  • Saute the diced peppers until soft - this will take just a few minutes
  • When the chicken is cooked, cut it into strips or bite size pieces and set aside
  • In a large skillet or wok, combine noodles, cooked chicken, peppers and sauce

  • Top with chopped peanuts if desired
  • Enjoy!


If it doesn't seem like this will be spicy enough for you and your family, feel free to add red pepper flakes or extra sriracha.
