Main Ingredients

matoes seeds removed
diced - I used vine tomatoes

diced

red onion
diced

can black beans rinsed and drained

can black eyed peas rinsed and drained

fresh corn
cooked and cut off the cob

bell pepper
diced
▢

jalapeno pepper seeds removed
diced

Cilantro finely chopped
Dressing Ingredients

olive oil
▢
Juice from 2 limes
approx 2 - 3 tablespoons

red wine vinegar

sugar

salt

teaspoon
pepper

minced garlic
Instructions
Combine all the produce and vegetables into a large bowl and mix well by stirring gently
Pour dressing over top and gently stir
Dressing Instructions
Combine all ingredients and stir well
Enjoy!
Notes
Serve with tortilla chips and/or celery and bell pepper strips.
