1lblow-fat breakfast sausage - you can also use turkey sausage
1small sweet potato - shredded *we used a potato peeler to get our finesee notes for other option
4ozbutton mushrooms - finely chopped
1/4sweet onionfinely chopped
3slicesof baconcooked crispy and chopped
1garlic cloveminced *you can use 1 teaspoon of minced garlic if you have that on hand
2tablespoonsmaple syrup
Instructions
Preheat oven to 375 degrees.
Place the shredded sweet potato, mushrooms, and onion into a medium bowl with breakfast sausage, maple syrup, garlic clove, and cooked bacon
Mix well - using your hands is the easiest way
Once mixed well, make 1-2 inch size meatballs with your hands and place them on a baking sheet
Bake for 30-35 minutes until meatballs are golden brown and completely cooked through
Drizzle with maple syrup right before serving
Serve with waffles, pancakes or eggs if desired

Notes
If you have a shredding attachment on your food processor, you can use that to "chop" the mushrooms, sweet potato, and onion. You can easily make this recipe the night before and toss it in the oven in the morning.
