Waffle Breakfast Sandwich

  • 8 Eggo Waffles flavor of your choice
  • 1 package of bacon
  • 6 eggs
  • cheese and maple syrup if desired

Simple Smoothie

  • 4 cups frozen fruit I used strawberries
  • 3 cups milk - I used skim

Instructions

Waffle Breakfast Sandwiches

  • Start by cooking the bacon on a griddle or stove
  • Cook the Eggo Waffles according to package instructions. We toasted ours.
  • Cook eggs as desired. I cooked ours over medium.
  • Assemble your waffle breakfast sandwich by layering the bacon and egg on one waffle.
  • Add cheese and/or maple syrup if desired.
  • Top with another waffle.
  • Enjoy!

Simple Smoothie

  • Add frozen fruit and milk to blender.
  • Blend until smooth.
  • Enjoy!

Notes

Feel free to experiment with your choice of Eggo waffles, breakfast meats and toppings.  Jalapenos would also be delicious!
We have made these Waffle Breakfast Sandwiches with apple cinnamon waffles, chocolate chips waffles and buttermilk waffles.
The smoothies can also be made with the fruit of your choice.  A favorite in our house for this simple smoothie is strawberries.  We also use blueberries and blackberries.  There is a Frozen Fruit Berry Mix at Publix that I usually grab.
