Wash and slice the strawberries, remove greens.
Add strawberries, sugar and water into a saucepan over medium heat and simmer for about 10 minutes.
Strawberry sauce will thicken slightly.
Pour the strawberry mixture through a fine mesh strainer to remove all seeds if desired. Use a spoon to press the strawberries against the strainer, to make sure you are getting as much juice as you can.
Allow the syrup to cool before adding in the milk. You can simply put it into the refrigerator for a few minutes while you prep your popsicles.
When the syrup is cool, combine the milk and homemade strawberry syrup and stir gently.
