Have you made marinara sauce at home before? I mean no canned goods, all fresh ingredients simmering on the stove to utter deliciousness. My husband and daughter did it last weekend and it turned out amazing! It is definitely more involved than opening a jar from the store, but I will admit that you can taste the difference.

We used all fresh ingredients: tomatoes, a little green pepper, garlic, onion, basil from our garden, some seasonings and chicken broth. The hardest part (just because we have never done it before) was blanching the tomatoes.  Which actually isn’t that bad.

How to blanch tomatoes:

  • Fill a large pot with water and bring the water to a boil.
  • Cut a shallow X on the bottom of each tomato. This helps the tomato skin to split so you can get the skin easily with your fingers once the tomatoes have cooled.
  • Prepare a large bowl of water with ice.
  • Add the tomatoes to the boiling water.
  • Cook for 30 to 60 seconds or until the tomato skins start split open.
  • Using a slotted spoon, transfer tomatoes to the large bowl of ice water.
  • When the tomatoes are cool enough to handle, use your fingers to peel the skin off the tomatoes.

For this spaghetti sauce recipe, we also removed the seeds. To remove the seeds from the blanched tomatoes simply cut them in half and gently squeeze them to get the seeds out.

We actually made homemade pasta too, which was also incredible but you can serve your homemade marinara sauce on any noodle you prefer. Or just grab a loaf of bread and dip it in the sauce…I may or may not have eaten a half loaf of bakery bread 😉

Ingredients

  • 1 tablespoon olive oil
  • 1/4 large medium onion diced
  • 4 cloves of garlic diced
  • 10-12 fresh tomatoes approx. 2-2.5 lbs., blanched, seeded and chopped
  • 1/4 green pepper diced
  • 1 tablespoon Italian seasoning
  • Salt
  • 3-4 basil leaves chopped
  • 16 oz chicken broth

Instructions

  • Heat olive oil in large pot on medium low flame.
  • Add the diced onion with a pinch of salt. Cook until translucent, make sure they don't burn!
  • Stir in the garlic and stir for about 30 seconds.
  • Add the tomatoes, green pepper and basil to the pot.
  • Bring everything to a gentle simmer.
  • Partially cover with a lid and cook down until reduced, approx an hour or so. Be sure to stir a few times.
  • For a less chunky sauce, add everything to a food processor and blend until smooth. We did this, my house does not like chunky tomatoes.
  • Transfer back to the pot, add in chicken stock and Italian seasoning.
  • Allow sauce to simmer until deserved thickness.
  • Season with salt as needed.
  • Serve with over favorite pasta with fresh basil or transfer to jars and refrigerate up to one week.
