Freezer to Crockpot Meal

A few weeks ago I stocked up my chicken, so my neighbor and I were on a mission to make some delicious freezer to crockpot meals.  This Garlic Honey Chicken was the first one my family tried and my son said “Mom, I think this is your best chicken recipe yet!”  I love it when I get praise like that 🙂

I love garlic and I love honey, so in my mind this recipe was going to be fabulous!  The garlic is not over-powering at all, and the honey adds a bit of sweetness.  As you can see, I served mine on a bed of beautifully sauteed veggies.  My kids skipped out of the zucchini and squash and opted for rice 😉

Now, here is my Garlic Honey Chicken Crockpot recipe.  You don’t HAVE to make it as a freezer to crockpot meal, if you decide to not do it that way, just place all the ingredients into the crockpot and cook it for the specified time.

Equipment

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • tbsp minced garlic
  • cup low sodium soy sauce
  • cup ketchup
  • ¼ cup honey

Instructions

  • Write on freezer bag name of recipe and cooking time
  • Place all the ingredients into the freezer bag
  • Place in freezer until ready for use
  • When ready to use, thaw overnight and cook on low for 4-5 hrs
  • When chicken is tender shred with forks or break apart with spoons and let sit in juices in crockpot for at least 1 hour to ensure it is moist
  • Serve over vegetables or rice
  • Enjoy!

Notes

You can also place the ingredients directly into the crockpot frozen - I do all the time! - just add an additional 1 - 2 hrs to the cooking time.

  14. Loving all the crock pot meals. They’re so easy to do and it feels good making a good meal without all the work. I’d love to see some easy camping meals though. We have a week long camping trip coming up and it’s hard to come up with easy camping meals that can be cooked over the fire ( and I’m so tired of hot dogs on sticks LOL) for a whole week. We want to try some different meals, not the same ol, same ol campfire meals. So I’d love to see some food experiments for campfire meals.
