Easy & Healthy Cherry Muffins – 1 Weight Watchers Point

Mornings just got easier…and tastier! Make a batch of easy and healthy cherry muffins and grab one in the morning before you run out the door or for a snack. These cherry muffins are 1 Weight Watchers Points each.

Who else likes easy breakfast options?  I know I do!  Whether it’s for the kids as they run out the door to make the bus, for me as I run out the door for exercise, having breakfast ready to go without even thinking about it really makes my mornings a lot easier.  Especially depending on when I’ve had coffee 😉  I love these muffins for a few reasons: they are easy to make, they are healthy – in fact, if you follow Weight Watchers you will be happy to know that they are only 1 point, and they freeze well!  So, you can make 12 or 24, wrap them up individually and toss them in the freezer and when you want one, just grab one!  You can pop them in the microwave for a few seconds for a quick thaw, or by the time you get out of your subdivision it will be ready to enjoy.

Best Healthy Cherry Muffins

I did use frozen cherries, you can use fresh ones if you prefer, but either way make sure the pits are removed and you break them in half or quarters so that they aren’t really big inside of your delicious little muffins.

For your healthy cherry muffins you need:

Bananas
Protein Complete Pancake Mix – I used Kodiak pancake mix
Cherries
Egg
Water
Some cinnamon and vanilla extract

Equipment

  • Oven

Ingredients

  • 2 medium ripe bananas
  • 1 ½ cups Protein Complete Pancake Mix
  • 4 oz water
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 cup frozen cherries you can use fresh if you prefer

Instructions

  • Preheat oven to 350 degrees
  • Mash bananas in a medium size bowl
  • Add in remaining ingredients besides the cherries and mix well
  • Gently stir in the frozen cherries
  • Spray muffin pan or place cupcake liners to muffin pan
  • Fill each one approx 3/4 full
  • Bake for 25 – 30 minutes or until cooked thoroughly – use a toothpick to check if needed
  • Enjoy!

Notes

These healthy homemade cherry muffins are 2 Weight Watcher points.  When I use cupcake liners, a small amount of the muffins did stick if I tried to eat them warm, they don’t stick when they are cool or coming out of the refrigerator.Feel free to just spray your pan and they will slide right out without any sticking.

Can you use another fruit other than cherries?

You can substitute the cherries for another fruit of your choice, like blueberries, raspberries or even strawberries.  I have used raspberries and they were also delicious, but raspberries tend to get a little mushy, so keep that in mind.  Blueberries stay together great, but they didn’t have as much flavor as cherries.  Feel free to experiment!  And when you do, be sure to let me know what fruit you tried and which was your favorite.  I actually have some frozen peaches and saskatoons, so I will be trying those soon.
