Baked Avocado Fries Recipe

Baked Avocado Fries.  Doesn’t that just sound delicious?  I have used avocados in my smoothies, put them on my salads and my burgers, but this will be the first time I make them into fries.  The best part about this recipe is that when you buy the main ingredient – Avoacdos – at Publix – you are actually helping support Feeding America!  Produce for Kids and Publix have launched an in-store and digital campaign to educate local families on the benefits of healthy eating while raising funds for local Feeding America® member food banks.

Last spring, Publix was able to support Feeding America’s local children’s program by supplying 1.2 million meals to local families and children in need. Since 2002, Publix has raised more than $2.4 million through the Produce for Kids campaign for children’s organizations within the Publix footprint.

Baked Avocado Fries Recipe

Ingredients
  • 2 Mexican Hass avocados, sliced ½-inch thick
  • 1 lemon, juiced
  • 1 lime, juiced
  • 1 cup panko bread crumbs
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon lemon pepper seasoning, divided
  • 2 tablespoons lowfat Ranch dip
Instructions
  1. Preheat oven to 425°F.
  2. Combine lemon & lime juice in small bowl. Mix bread crumbs, ¼ tsp. salt and ¼ tsp. lemon pepper in separate bowl.
  3. Dip avocados into juice, season with ¼ tsp. salt and ¼ tsp. lemon pepper, and press into bread crumbs.
  4. Spray baking sheet with cooking spray, lay avocados single layer and bake 12-15 minutes, or until golden brown.
  5. Served with ranch dressing for dipping.

  2. I like that this great recipe gives you an awesome snack and helps out with a good cause! I am avocado crazy, and was over the moon when all those restaurants added avocado to their standby menu items. I am always on the lookout for a tasty new avocado snack (although nothing could replace my mom’s guacamole, best stuff on earth). Sounds fun and easy to make.
